Try this recipe created by Chef John of House of Walls Culinary Magic where Cilantro is the star. • 1/2 Tablespoon of Finely Chopped Green Apple • Lemon Rind and Fresh Squeezed Wedge of Lemon • Pinch of Crushed Coriander Seed • 1/2 Tablespoon of Diced Cilantro • Fine White Wine (Township 7 Pinot Gris was used in this recipe) • Soda Water 1. Cocktail pops When the weather heats up and summer is in full swing, get ready to grab one of these icy, grown-up treats to cool down. Photo & text by Linda Horn
Ah, summer! I'm a fan, for sure. I love lazing around in my backyard, pretending it's a tropical resort. You can bet I'll be lounging in my oversized sunglasses and maxi dress, clutching a colourful cocktail. And when the temperature rises, a frozen cocktail cools me off perfectly. The fact that it's on a stick is beautifully effortless.
Coconut Cream & Limoncello Ingredients 2.5 cups coconut milk 1/2 cup limoncello 2 Tbsp fresh lemon juice Wooden treat sticks Method Mix all ingredients together and pour into pop molds. Freeze until solid.

Frozen pop molds come in all shapes and sizes. The mold I use makes ten pops, using about three cups of liquid. These recipes have been designed to fill my mold; you may need to adjust the amounts to fill your mold. If you have liquid leftover, well consider that your bonus cocktail! Your mold may also have its own sticks, saving you from purchasing extra.

Ingredients 1 cup crushed pineapple 2 cups orange juice 3/4 cup tequila 1/4 cup Grenadine Wooden treat sticks
Ingredients 3 cups tonic 2 Tbsp fresh lime juice 2 oz gin Thin slices of lime or cucumber Wooden treat sticks
Method Mix all except grenadine; pour into molds until about 3/4 full. Pour one teaspoon of grenadine into each mold (it will sink to the bottom). Freeze until solid.
Method Put fruit slices in pop molds. Mix remaining ingredients and pour into molds. Freeze until solid.

ucked some 40 kilometers up a packed gravel road out of Clinton, B.C., my wanderings took me into the south Cariboo region of our beautiful province for a visit to Echo Valley Ranch in Jesmond. Not sure what to expect, I made the five hour drive from the lower mainland up the Fraser Canyon to this serene spot flanked by Mount Bowman with its snow capped peaks and low grasslands. My drive in itself was a much needed reminder of the beauty of our province and the value of taking time away from the continual distraction of my cell phone.

Arriving to the ranch, fittingly, I was greeted first by the dogs, who happily followed my car up the driveway. Coming through the doors of the main lodge is like arriving on the doorstep of welcoming friends. Ranch owners and hosts, Norm and Nan Dove, have literally opened their home and invited guests to a seat at their table — providing a surprisingly perfect balance of guest and friend.
Accommodations at the ranch include a combination of room styles within the main lodge coupled with cabins dotted in close proximity, offering your own private space to retreat to. Television and cell phone service is replaced by the breathtaking views, stillness of nature, and quiet hum of a well orchestrated team of staff who keep this home-away-from-home running seamlessly. As you would expect at a ranch, there are many outdoor activities for guests to enjoy including horseback riding, fishing and hiking one of the eight trails on the 65 hectare site. The ranch is also known for their east meets west spa experiences, having previously been ranked one of 100 of the world’s best spa experiences. The spa menu provides a combination of traditional western style treatments and authentic Thai therapies. Like with any visit to good friends, meals at the ranch are served family-style, at set times, in the main lodge. I was fortunate to arrive on a Thursday—it’s an important detail as Thursday’s are Thai night. Guests and staff are treated weekly to a traditional and delicious spread of Thai dishes made by the Ranch’s spa director, Yalaporn. Aside from Thursday evenings, the menu offered by Chef Kaelhub provides a fantastic selection of dishes incorporating ingredients from the ranch. A lovely touch was the packed lunch I was provided for my drive home. We toured the grounds and various out buildings with fellow guests who were visiting from London, England, we marvelled at the joy Nan and Norm share as they told stories about their incoming pigs (to help with managing food scraps), the greenhouse, garden, and general love of the land and their animals. After 24 years building and living on their ranch, it is refreshing to see two people whom still have genuine excitement and love for their slice of the province. 24
In a hurry to go nowhere, here are my tips for this trip: Check your transport. My friends will tell you I love to drive. I was extra excited by the idea of a road trip when provided a 2016 Ford Edge courtesy of Ford Canada. While it took the worry out of possible roadside breakdowns, I made sure I hit the road with a full tank of gas, topped up oil, and tire pressure and a paper map (gasp, your Google maps won’t work here). Enjoy the journey. Leave yourself some breathing room to stop along the way. A favourite is the Blue Moose in Hope; they offer a great latte and food options as well as a clean bathroom. The scenery of the Fraser and Thompson rivers provide some Instagram worthy snaps. Music is a must have and the 12 speaker Sony bluetooth stereo in the Ford Edge did not disappoint. Plan ahead. Echo Valley Ranch offers a number of great activities to add to your stay. Be sure to check their website for specific details around the different experiences and book ahead. Appropriate footwear. If you’re staying in the main lodge most guests remove their shoes upon entering, so bring a pair of slippers. Also, pack some waterproof footwear for exploring the ranch. MODERN TECHNOLOGY Dental Cone Beam CT (CBCT) is a special type of x-ray machine used in situations where regular dental imaging is not sufficient for diagnosis. It generates a 3-D image and is most commonly used for the treatment and planning of orthodontic issues. 3-D IMAGING With the development of the Cone Beam CT (CBCT) for dental use, a 3-D image of the teeth, jaws and surrounding structures is possible with only about 2% of the radiation emitted by a medical CT scan.
JOINT IMAGING CBCT is an excellent diagnostic tool in determining joint health. A healthy joint will appear with a rounded ball-and-socket appearance and wide spacing between the bones. An unhealthy joint will have a distorted shape and diminishing spacing.

Dog Cookies

Cheesey Dog Cookies Makes about 2 dozen Special tools Dog bone-shaped cookie cutter Ingredients 1 cup large flake oats 1/3 cup butter 1 cup boiling water 3/4 cup cornmeal 1 cube or 2 tsp instant chicken bouillon 1/2 cup milk 1 cup shredded cheddar cheese 1 egg, beaten 2 cups + 1 cup flour
Method Preheat oven to 325°F. Line baking sheets with parchment paper and set aside. In a large bowl, stir together oats, butter, and boiling water. Let stand for 10 minutes. Stir in cornmeal, bouillon, milk, cheese, and egg. Add flour 1 cup at a time, mixing well after each addition until a stiff dough is formed. On a floured surface, knead in remaining 1 cup of flour or as much as is necessary to make a smooth dough that is no longer sticky. Roll out to about 1/2 inch thick, and cut into shapes. Bake cookies for 35 to 45 minutes or until golden brown. Cool completely before storing in airtight containers.

T
he sun is out, it’s warm and beautiful and there is a temptation to rush everyone out the door to enjoy summer. Not so fast!
Before you reach for the leash, remember the best place for fourlegged family members is within the cooler comforts of your home when the mercury rises above about 24°C. Stimuli chatted with Jen Pinch, manager at Cloverdale’s The Bone and Biscuit Company, about ways to keep pets safe this summer. First and foremost, Jen advised observing the 8 to 8 rule. Keep pets out of the sun from 8a.m. to 8p.m., so plan walks early in the morning, around dusk or after dark.

Dogs can get heat stroke. “Excessive panting and drooling is the beginning,” Jen says of the early warning signs. She explains that heat stroke in dogs will advance much the same as humans with vomiting, white gums, irregular heartbeat and other signs of distress and dehydration. “Take them to a cool spot, give them lots of water – coconut water increases electrolytes – and apply a cool compress to the skin,” she adds.
