Heat a large wok over high heat, then add a little oil and swirl around the wok 高火热大锅,加入少量油,转油热锅

Add eggs one at a time and cook on both sides till golden brown and ensure yolk is still runny, then remove and set aside 一次打入一个鸡蛋,煎至两面金黄,蛋黄保持仍是 溏心,出锅备 用

Hainanese Chicken Rice 海南

Preparation For Serving

To prepare the chicken, lightly rub salt on the outer part of the chicken

Rinse and pat dry with a paper towel, then pour soya sauce into the chicken and spread it evenly 用纸巾打湿整鸡后再用纸沾干,再将生抽倒入鸡腹 ,涂抹均匀 02

锅中倒水浸过鸡肉后煮开,再加入香葱和小萝卜 03

Boil chicken in a pot with enough water to cover it, then add spring onions and radish

水开后,将鸡翻面,盖好锅盖后小火慢炖20分钟 04

Once soup boils, turn the chicken over and cover the pot to let it simmer for 20 minutes

Remove chicken from pot and dip it into a bowl of iced water for 10 seconds, then leave aside

Mix sesame oil and 1/2 tablespoon of salt to glaze the skin of the chicken, at the same time, continue to simmer the broth for at least another 40 minutes

Chicken Satay 沙爹烤

Cut the chicken meat into small cubes 将鸡肉切成小方块

Blend all the marination ingredients in a food processor, add a little water as needed

Mix beef, garlic, soy sauce, sugar and sesame oil in a mixing bowl, then leave it to marinate for at least 30 minutes
