>>> I like to think of myself as a hot chocolate connoisseur. Each year my Christmas stocking is full of flavored cocoas. I count my discovery of the secret of the Library Café’s hot chocolate (a few pumps of vanilla syrup) a major accomplishment from my years at Northwestern.

Thus, I provide you with a recipe for a unique take on traditional hot chocolate: Mint Frozen Hot Chocolate. What better to go with a cup of hot chocolate than gingerbread cookies, or better yet, gingerbread cake balls. These treats make a decadent, easy-to-package gift – either for self-indulgence or to sweeten the days of those around you! Mint Frozen Hot Chocolate

2/3 package of Andes Crème de Menthe Thins (found in the grocery candy aisle) 2 teaspoons mint cocoa mix (my favorite is Land O Lakes Cocoa Classics: Mint) 1 ½ tablespoons sugar 1 ½ cups milk 3 ice cubes whipped cream

Directions:

Chop the Andes chocolates and place in a microwave-safe bowl. Microwave on medium power until melted, stirring in 30-second intervals. Stir in cocoa mix and sugar until completely dissolved. With a whisk, slowly add ½ cup of the milk and let cool to room temperature. In a blender, mix the mint chocolate mixture, the ice, and the remainder of the milk on high speed until smooth. Garnish with whipped cream and serve.


Gingerbread Cake Balls

1 cup vegetable oil 1 cup sugar 1 cup molasses 2 large eggs 3 cups all purpose flour 1 tablespoon ground ginger 2 teaspoons ground cinnamon 1 teaspoon salt ¼ teaspoon ground cloves 1 cup water 1 tablespoon baking soda 2 cups powdered sugar ¼ cup butter, softened 2 tablespoons milk ½ teaspoon vanilla 2 bags white chocolate Wilton Candy Melts or white chocolate chips vegetable oil, as needed (You could also use Gingerbread Cake mix and canned frosting to save time)

Directions:

Preheat the oven to 325° and butter a 13x9” pan. In a large bowl, mix the oil, sugar, molasses and eggs until smooth. In a separate bowl, mix the flour, ginger, cinnamon, salt, and cloves. Using a whisk, mix the wet ingredients and the dry ingredients until well-combined. In a small saucepan, bring the water to a boil. Once boiling, remove from heat and add the baking soda. Add the water mixture to the batter and pour into the pan. Cook for about 45 minutes or until a toothpick comes out clean. Let the cake cool completely. Next make the frosting. Use an electric mixer to combine the powdered sugar, butter, milk, and vanilla until creamy. Then cut large pieces of the cake and crumble into a large bowl by rubbing two pieces of cake against each other. Combine the cake crumbs with frosting until they reach the consistency of cookie dough. Refrigerate the mixture for about 30 minutes.

Next, roll the mixture into 1-inch balls and place on a wax paper-lined cookie sheet and freeze while you prepare the white chocolate. Place one bag of white chocolate in a microwave-safe bowl and microwave on medium power, stirring at 30-second intervals. If using chocolate chips and the chocolate is too thick, add vegetable oil, one tablespoon at a time, and stir to reach a creamy consistency. Once chocolate is melted, remove cake balls from freezer and dip in the white chocolate using a fork, replenishing white chocolate as needed. Let cake balls cool on the cookie sheet and serve. - Kirstin Nordhaus
