WELCOME CAMP CREEK GOLF COURSE RENOVATION All Lifestyle, Signature, and Limited Golf Members should have received or will be receiving the following letter via mail. Dear Member, After years of planning, we are excited about the proposed Camp Creek amenity expansion. Over the next month we anticipate commencing construction on this new offering for Members. This proposed expansion has provided an excellent opportunity for us to renovate our golf course conditions. We are committed to maintaining your private club at the highest level and improvements at Camp Creek were not a matter of if, but when. The Camp Creek renovation project will consist of new Celebration Bermuda grass to replace existing turf, including tees, fairways, and surrounds. The project will also include bunker and driving range refurbishment, cart path repairs, and a significant amount of native area improvements. Construction on the proposed amenity expansion provides us with the chance to renovate the course during the heaviest period of construction. The main goal of the course renovation project is to ensure the long-term viability of the golfing experience for our Members. A large project like this requires a great deal of thought and planning. The St. Joe Company executive team and club management have met with industry leaders from Auburn University and the University of Florida as well as third party turf-grass experts. Together we have created a formal plan for the renovation. This plan has been shared with and endorsed by The Clubs by JOE’s Member golf committee. We believe that, like them, you will be pleased with the direction that we have decided to take. Background Camp Creek Golf Club was built in 2001 by renowned architect Tom Fazio. Today, nearly 20 years later, we find ourselves at a point where renovations are imperative to the future of Camp Creek. We feel the timing of this project is especially advantageous, given the proposed expansion of amenities at Camp Creek anticipated over the next couple years. There are also several agronomic reasons for this renovation. Over the years, the original El Toro species of zoysia grass used to highlight the bunkers has taken over our Bermuda grass. We have also found that the El Toro species is undesirable in the long-term. While the grass may look healthy and play well, El Toro becomes very weak and harder to recover over time. If left unrepaired, the course could continue to deteriorate and will never regain the high level of standards our Members are accustom to at The Clubs by JOE. Scope of Work The Clubs by JOE has enlisted the services of Landscapes Unlimited, a reputable golf course construction firm. We are confident that their experience and expertise will meet our standard of excellence for the project. The scope of work includes a total re-grassing of the course, except for the greens, to Celebration Bermuda. Along with the transition to Celebration Bermuda, we plan to refurbish bunkers with G-Angle sand. During this process, the Camp Creek maintenance staff will focus on all the details that make a golf course exceptional.

WELCOME This includes cleaning up native areas and repairing cart paths. We plan to create some new natural walking paths from green to tee for those that enjoy walking the course. We will also take this opportunity to do some tree work where needed. We have selected a process called a no-till procedure. This process involves spraying the existing grasses over a period of months to kill them before they are re-sodded. The advantage of no-till is that it requires less down-time compared to a complete reconstruction. However, this construction plan will require us to close Camp Creek Golf Club for Summer 2020. Timeline Our current plan is to close Camp Creek in mid-March 2020 and aim to reopen in Fall 2020. We will begin spraying the existing grasses, except for the greens, starting July 29th. We will spray several times over the next few months and again in Spring 2020 before closing. To maintain quality playing conditions throughout the spraying process, we have decided to overseed the fairways and tees. We plan to continue to treat the greens as usual so that they can maintain their level of play throughout the process. During the closed summer months, we will re-sod and sprig the course and aggressively aerify the greens. During the closure, Shark’s Tooth will be open seven days a week, and guest play will be limited to after noon. We want to ensure that Members have adequate time to enjoy their course. Much like the recent renovations at WaterSound Beach Club and the proposed plans for the future amenities at Camp Creek, the decision to pursue the project at this time was made to ensure that we are consistently elevating your Member experience. We are confident that coupled with the proposed amenity expansion, this necessary golf course renovation will position Camp Creek, and The Clubs by JOE, among the top private clubs. As stated earlier, we plan to reopen Camp Creek in the Fall of 2020, and we believe that you will be delighted with the changes that you will see. The Clubs by JOE will continue to identify future opportunities to deliver on our goal of creating a unique club experience, enabling you and your family to create lifelong memories together. We experienced an amazing summer at WaterSound Beach Club as we introduced the new Costa Chica restaurant, bar and lounge area. What a wonderful amenity that has added a fast-casual option for dining, a bar surrounded by TVs and comfortable seating with the most perfect pool and Gulf-views. The rave reviews of the continued increase in food quality, outstanding service levels and an enhanced feeling of southern hospitality were shared by so many Members to staff throughout the past few months and we’re so happy to know that our efforts are exceeded your expectations.
If you didn’t have a chance to visit this summer, we hope to see you in the fall. The crowds have started to disperse on 30A so our hope is that you will try something new and plan to attend Bingo or Trivia Night that are planned in August. Both will be a fun time for the whole family and you certainly won’t want to miss the prizes!

GOLF A MESSAGE FROM THE DIRECTOR OF GOLF Sean McGaughey, PGA Director of Golf I hope this edition of the newsletter finds you well. We had a great July at the Clubs and thank you all for coming out to visit us on the courses. The Clubs hosted a few fun events last month starting off with our annual Junior Golf Camp at Origins Golf Club. Ten juniors joined us in learning some valuable tips for their game and were able to brave the heat! Hux Tucker took home camper of the week and won 4 passes to play mini golf with a few of his friends. Great job Hux! I would like to thank the parents who allowed us the opportunity to help their children advance in this wonderful game. Towards the end of July, the Open Championship was held at Royal Portrush and man, was it exciting! Even though we didn’t have Brooks Koepka take home another Major this year, I would like to congratulate the Irishman Shane Lowry for winning the Open Championship in his home country. In conjunction with the tournament, we hosted our Open Championship – Pick a Pro at Shark’s Tooth Golf Club with 17 participants in the field. We ended with two gentleman tying for a first place spot, Danny Chance and Matt Woolen. Both men had a two-day total with their pro of 141. Congratulations gentlemen and thank you to everyone who participated! This month the golf courses will undergo their annual Greens Maintenance. We encourage you to take note of closed and open dates for both Shark’s Tooth and Camp Creek Golf Clubs in August. We hope this information helps you with your travel plans and thank you for your support. If you haven’t had time to stop by the Clubs lately, please do so that you can see all that we have to offer. We have worked hard to continually improve our Member’s golfing experience. To aid in this process we have established a Golf Committee to help us understand and support the needs of our Members. The committee has been extremely helpful and I would like to thank them personally for their support and commitment to the Clubs. If you have any questions or suggestions please stop and chat with these gentlemen so that we can continue to move forward. The golf committee consists of Mack Corbin, Billy Brewer, Danny Chance, Jim Henderson, Gary Turner, Jeff Roland, AC Cooper, Ray Petta, John Norris and Ray Delp. GOLF A MESSAGE FROM YOUR SUPERINTENDENTS Josh Parker Superintendent, Shark’s Tooth Golf Club
Shark’s Tooth will be closed for turf maintenance from August 5-13. During that week, we will be vertical mowing, aerifying and fertilizing the greens, tees, fairways and surrounds. This is a necessary evil with turf-grass. It will take a little time for the course to recover aesthetically, but playability should not be bad at all. Other than that, normal course practices throughout the month of August.

With the month of August on the horizon we are at the heart of our mowing season. We are trying our best to keep the grass cut and maintain the details. We fell behind a bit on our bunkers in the past few weeks but we are reprioritizing them and hope to get them back in line with the quality you expect when playing Camp Creek. Aerification week is August 19-26. We anticipate that we will get a lot done on the course during this time. We will be aerifying greens with 1/2” tines and then following that up the next day with deep tine drill. We are currently planning on aerifying all other short grass. Look forward to seeing you on the course.

CHEF’S CORNER GRILLED PEACHES & RUM CARAMEL SAUCE Recipe courtesy of: Christopher Waycuilis, Executive Chef at Shark’s Tooth Golf Club Peaches are perfectly ripe this time of year and make for a wonderful, light after dinner delight! Add a scoop of raspberry swirl or vanilla ice cream for an extra level of deliciousness!
RUM CARAMEL SAUCE • • • • • •
1 1/2 cups granulated sugar 3 tbsp unsalted butter 3/4 cup heavy cream 2 tbsp dark rum 1/2 tsp Kosher salt 1/4 tsp vanilla extract
1. Mix the sugar and 1/3 cup cold water in a heavy-duty 3-quart saucepan and bring to a boil over medium-high heat. 2. Cook, covered, checking occasionally, until the mixture starts to darken slightly, about 5 - 7 minutes. 3. Immediately remove the lid and using your hands, swirl the pan frequently until it is a dark amber. Do not stir. This will happen quickly. 4. Reduce the heat to low and carefully whisk in the butter. It will bubble. 5. Keep whisking until the bubbles stop. 6. Add the cream, whisking until the caramel is smooth, about 2 minutes. 7. Remove from the heat and whisk in the rum, salt, and vanilla.
GRILLED PEACHES • 4-6 fresh peaches cut in half and pits removed • 1/2 tsp cinnamon • Olive oil or grape seed oil 1. Heat your grill to medium-high heat. 2. In a small bowl, mix the cinnamon and sugar. 3. Brush the cut-side of the peaches with the oil. 4. Place on the grill, cut side down, for about 3 minutes. Rotate 90 degrees, and cook for 3 more minutes. 5. Meanwhile, brush the tops with the oil, but be careful with flair-ups if you use too much oil! 6. Turn the peaches over and move to in-direct heat. 7. Sprinkle cut sides with cinnamon sugar. 8. Cover grill and cook until sugar is melted and fruit is tender, about 6-8 extra minutes. 9. Remove and place on platter. Pour caramel sauce over the top.

At this point in my career, I get all my inspiration from the team I work with. The people who surround me at WaterSound Beach Club inspire me every day. I enjoy getting to learn about them as individuals and hear what motivates and inspires them. This helps me to carefully craft a plan for my culinary team’s success that fits around everyone’s strengths and future goals. I work hard to put people in an immediate position to succeed. No matter what you’re doing, getting buy-in from your entire team is important to being successful. Developing a “total ownership and team concept” in every facet of operating the kitchen is crucial. I want our team to be comfortable enough to provide their input on all decisions. Whether that be menu decisions, operations, purchasing, storage or service. I have found over the years that leaders are developed much faster in an environment where input is encouraged and heard from the very beginning. Hearing other people’s opinions and seeing their creativity come to life fuels my inspiration. It is a team effort where we can share in our successes and grow together. Watching my team grow, lead and be successful motivates me to be a better chef and leader.

Summer is winding down and the start of the new school year is just around the corner! Now is the time to organize your tennis Junior Small Group. Small Groups consist of 4-6 players at or around the same age and ability level. Lessons are held each week at WaterSound Beach Club on your reserved day and time. This is an great opportunity for your young ones to build lasting friendships and learn a sport that can be played for a lifetime! Team clinics are held each Monday and Thursday from 9 – 10 AM at the Shark’s Tooth Tennis Courts. League home matches are played on Tuesday beginning 9:30 AM to 1 PM also at Shark’s Tooth. League format consist of five courts doubles and best two of three sets. If you are interested in joining a team, please contact me to discuss details.
