GOLF A MESSAGE FROM THE DIRECTOR OF GOLF Sean McGaughey, PGA Director of Golf I hope this edition of the newsletter finds you well and enjoying the cooler weather. Fall has arrived and I have to say, I’m welcoming it with open arms. Our biggest news of the month is that Camp Creek is back open. Our overseeding went as planned and we are pleased with the progress that the course is continuing to make. Moving forward, Camp Creek will be closed on Mondays and open Tuesday – Sunday. Shark’s Tooth Golf Club will be closed on Tuesdays and open Wednesday – Monday. Construction crews will continue to work on the site of the expansion as Camp Creek is open. You may notice portions of the parking lot and the surrounding area have been fenced off. We kindly ask that you avoid these areas for your safety as well as the safety of our construction crew. We appreciate your patience and cooperation with us through this process and we look forward to welcoming you back to Camp Creek! We hosted the Sharkfest Member-Guest early last month with 120 players in the field. I’d like to give a big thank you to the entire Shark’s Tooth staff on doing such a great job this year. The course was in incredible shape and the food by Chef as his team was fantastic. In the end there can only be one champion and holding up the 11th Annual Sharkfest trophy was the team of Randy Short and Tom Curtin. Congratulations gentlemen! It’s always great to see such excitement following an event and thank you all for making this year’s Sharkfest so special. We also hosted our final Couples Nine & Dine of the year at Shark’s Tooth Golf Club. These events have been extremely popular all year and if you haven’t had a chance to play, please make sure you come join us next season. We had a record crowd in October with 48 total players competing and we couldn’t have asked for better weather. Emerging victorious was the team of David Goble, Peggy Geppert, Steve Howard & Payson Howard with an impressive score of 23.2. Lastly, I would like to leave you with some golf course etiquette that will help ensure that we always have the best possible course conditions. Some of the best ways for our beautiful golf courses to stay in great shape is to make sure we are fixing our ball marks, repairing our divots and raking any bunker we enter. These three simple course etiquette reminders will protect our courses and make sure all our Members receive the best quality playing conditions. As always, I appreciate your support and look forward to seeing you out on the course!

GOLF A MESSAGE FROM YOUR SUPERINTENDENTS Josh Parker Superintendent, Shark’s Tooth Golf Club

The cooler weather has finally arrived! As we transition to the cooler months, our attention will shift more to tree and bed maintenance. We will be cutting trees that need removing, as well as pruning others. Adding and moving around of sand in bunkers will also continue. You will notice we did a demo of the DryJect process on #14 and #16 greens. This process uses water pressure to create a cavity in the green profile and then fills that cavity with a soil amendment, such as sand. Enjoy the beautiful golfing weather!

Ryan Dykes Superintendent, Camp Creek Golf Club

We have overseeded all of the short grass on the course and have begun the process of getting the rye grass where we want it. This process will take a few weeks to get it down to the height we want. We should be able to have it consistent and at the desired height in the next couple of weeks in plenty of time for the holiday season. We do have a few areas to address due to washouts and ripples from the rain. We will be continuing to work these areas until they are consistent with the rest of the course. In the coming weeks, we will continue to lower the height of the mowers until we are happy with the conditions. Thank you for your patience on this playability aspect.

The greens have rested for a while and are ready for some putting. We haven’t been able to roll in a bit due to the slickness of the surrounds as a result of no living grass. The rye grass is almost ready to have a roller on it without causing damage and as soon as we can we will resume our regular rolling schedule. But for now we will just mow them and observe. With the cooler temperatures on the horizon we should be able to maintain them at a speed that everyone will be happy with.

We will continue to work on the beds and native areas and get them to the level we desire aesthetically and make them easier to maintain for the long term plan of the property. The project is going as planned thus far and we look forward to the future at Camp Creek. We look forward to seeing our Members back on the course!

CHEF’S CORNER APPLE CRANBERRY SAUCE

THANKSGIVING PROBLEMS SOLVED

Ingredients • ¾ cup sugar • ½ cup orange juice + juice of zested orange • ½ cup water • 12 oz fresh cranberries, rinsed and picked through • 1 ½ cups your favorite apple, peeled, seeded, and diced • A pinch of salt • 1 cinnamon stick • Zest of 1 Orange

Christopher Waycuilis, Executive Chef Shark’s Tooth Golf Club

How to Make It 1. Combine sugar, orange juice, and water in a large saucepan over medium heat. Stir to combine. 2. Add cranberries, apples, salt, cinnamon stick and orange zest. 3. Bring to a simmer over medium heat, stirring frequently. 4. Continue cooking, for about 10 minutes, or until all or most of the cranberries have popped. I like to leave a handful of berries whole. 5. Let cool for at least 30 minutes. Cover and refrigerate until ready to use. 6. Can be made up to 3 days in advance.

Problem: 1 turkey + 5 side dishes + 2 desserts ÷ 1 stove = complete and total chaos. Solution: To keep organized, create what caterers call a prep list, which lays out, in order, all the tasks that need to be done in the two days prior to your Thanksgiving dinner. • First, figure out which recipes can be made at least one day in all be prepared ahead of time and refrigerated. Find make-ahead Thanksgiving recipes. • Second, identify which of the dishes to be made on Thanksgiving Day will take the longest. Work backward from the time you want to eat, allowing 10 extra minutes per recipe. • Third, look at cooking temperatures and see what can go in the oven at the same time. Use multiple timers to keep track of what’s in the oven and on the stovetop. Put a Post-it note on each timer so you won’t forget which dish it’s for.

Barry Webb Director of Tennis

With the beautiful fall weather in place, now is the perfect time to get out on the tennis court! We offer opportunities for all skill levels to learn and improve your game. Private, semi-private and group lessons are available each week. Please contact me for placement and registration. I can be reached via email at Barry.Webb@stjoeclub. com or by phone at 205.903.8743. Our last Margarita Mixer of the year was held on October 11. The group enjoyed an afternoon of friendly round robin match play, followed by appetizers and margaritas. Be on the lookout for the next edition coming this spring. Ladies team league play is in full swing. Matches are scheduled for Tuesday morning 9:30 AM at Shark’s Tooth. We have one home match this month scheduled for November 19. Please note that all courts will be in use until 1:00 PM on this day.

Pro Tip-Racquet Preparation Early racquet preparation is essential to the quality of your shot production. Try starting your take back before the ball even crosses the net and have your full back-swing ready before the ball bounces on your side. When you prepare early you will be ready to take the ball early and in turn take time away from your opponent. Practice this tip the next time you are on the court and be ready to experience immediate improvement!
