WELCOME 2019 HOLIDAY HOURS OF OPERATION We can’t believe that it’s already time to start thinking about the holiday season. Between all the parties to attend and holiday shopping to do, we hope you and your family find time to relax with us at The Clubs by JOE. Please take note of the following club hours of operation as you make your plans for this holiday season. Thanksgiving Week Both Shark’s Tooth and Camp Creek Golf Clubs will be open 7 days this week. Members have the opportunity to showcase their Clubs with 3 days of competitive golf accompanied by a long list of activities for all golfing participants. LOCAL EVENTS OCTOBER TOGETHER WE REMAIN STRONGER HURRICANE BENEFIT Thursday, October 3 – Saturday, October 5 from 10 AM – 9 PM & Sunday, October 6 from 12 – 4 PM | Destin Commons The one year anniversary of Hurricane Michael is drawing near and our neighbors to the east are still in need of our help. Destin Commons has partnered with Save The Closet, Rachal’s Recovery Relief, Inc., and The Sonder Project to hold a donation drive. The drive will take place at the storefront between Express and Steve Madden from Thursday, October 3rd through Sunday, October 6th.To conclude the drive, on Sunday, October 6th from 12:00 PM -4:00 PM, the three non-profit organizations will be at Center Plaza taking donations, sharing their mission, and telling stories of the recovery.

We would first like to say thank you to all our staff at the Clubs for an amazing summer season! Labor Day weekend rounded out the perfect summer and it was a hit with the most amazing weather and flawless sunsets. We are so happy to see all of you throughout the year and our staff appreciates each one of you. We enjoy getting to see the kids grow up. We enjoy watching your families grow as grandbabies are born and kids are married. It’s such a blessing to know that you choose to spend time with us and allow us to help you create memories that will last a lifetime.

As we move into the fall season, we hope that you’ll join us for one of the many events that Carolyn Webre have our calendar filled! We kick off October with the annual SharkFest Member-Guest Golf Tournament. This year’s field is full and we can’t wait to see who takes home the win! We’ve got a Mixology Dinner at the Beach Club on October 10 and a Tennis Margarita Mixer the following night on October 11. You’re sure to enjoy one of these events as Hollie Parker the drinks will be plenty! The Couples Golf Nine & Dine is Sunday, October 13 and themed for Oktoberfest. The Watersound Origins community is hosting their annual Porchfest with live entertainment in the community on October 13 and the familyfriendly Flutterby Festival on October 19-20. Plan to attend one of these events as it will be a great time for all!

GOLF A MESSAGE FROM THE DIRECTOR OF GOLF Sean McGaughey, PGA Director of Golf September has come and gone and hopefully so have the hot days! It’s been wonderful seeing all the play we’ve been having at the clubs and I hope you all are enjoying everything The Clubs by JOE has to offer. Last month we hosted a September Couples Nine & Dine at Shark’s Tooth with 18 couples in the field. The theme was college game day and many teams showed up in their school colors. Emerging victorious was the team of Laura Maxwell, Ellen Balduf, and Darlene & Gary McCaghren with a score of 24.9. Great job team! Thank you to all of our Members for making these couples events so much fun. If you haven’t had a chance to join us, we invite you to participate in our final Couples Nine & Dine for 2019 on October 13. There are some new and exciting things are taking place at the clubs and we hope you have a chance to participate. First off, our Men’s Stag Night takes place each Thursday at 4 PM at Shark’s Tooth. This 9 hole event consist of a formatted game with dinner following in the Grill. Attendance continues to increase and we hope to see you come out and enjoy some great golf and socializing with other Members! We have also recently added The Clubs by JOE Ladies Golf Association. The Ladies Golf Association will host events at 10 AM each Thursday morning at Shark’s Tooth. The season runs from October 10 to March 26, 2020. We are very excited to host these events and encourage all ladies looking to get involved in the sport to join us. Another new event is The Clubs by JOE’s junior golf program starting this month. The program will kick off on Wednesday, October 9 at Shark’s Tooth Golf Club from 4 – 5 PM. Your children will learn basic fundamentals of the game in a fun, friendly environment to help them grow in their skills. Please be on the lookout for this information in your email and call Shark’s Tooth at 850.249.3041 if you have any questions. With Camp Creek closed, we will continue to experience more play at Shark’s Tooth the next few weeks. In an effort to make sure our golf course stays in pristine shape, we ask for your help in raking bunkers, repairing ball marks, and especially filling divots in the fairways. Our turf care team is also asking that no play turn to the back side before 9 AM. This will allow them ample time to manicure the course for the day’s play. We greatly appreciate your help and thank you for taking pride in our wonderful facility. As always I look forward to seeing you at the Clubs!

GOLF A MESSAGE FROM YOUR SUPERINTENDENTS Josh Parker Superintendent, Shark’s Tooth Golf Club

As we start to wind down the summer months, we are still working hard on general maintenance and small projects on the course. We will continue to add sand to bunkers where needed and try to improve some high visual areas around and on the course. October should be a great time to take advantage of the weather and get out and enjoy the course. We do ask to please keep the carts on the paths around the tees and greens, as it will be increasingly difficult to keep these areas grown in as it get cooler. The consistent traffic pattern and compaction makes it extremely difficult to keep the turf healthy. Thank you for your cooperation in this.

Ryan Dykes Superintendent, Camp Creek Golf Club

As you may know by now, the course renovation project at Camp Creek is underway. In late September, construction crews began installing a drain pipe for the amenities expansion. While this is something that is subcontracted out, we are still keeping a close eye on the project as the drain will be run underground between 9 and 18 greens. During the first week of October we will be applying a final herbicide package to eliminate all the existing turf outside of the greens. Some of the Zoysia lingered and recovered after the first spray, but the second application has put it to bed. This third spray is a security measure to ensure that all of the existing zoysia will be eliminated. This was advised by some of the top minds in the Southeast turf profession from the University of Florida, Clemson University and Auburn University, as well as multiple chemical representatives. We will also be supplementing our recommended spray program with an additional spray in the spring of 2020 before re-grassing begins. While overseeding will be our main focus once temperatures cool down, we will also continue work in the beds along the cart path while Camp Creek is closed. We are cleaning these beds out in order to address any Zoysia that may have crept over into these areas. Once the seed is on the ground, all of our focus will shift to getting the seeds to germinate and grow to get a successful and consistent stand of Rye for winter play. We have decided to go with a higher rate of seed to ensure the best quality surface. We plan to overseed at a half rate seven days apart in case we have a washout rain. The overseeding project is a large investment into our winter playing conditions and we want to ensure we do it properly. We will be seeding the fairways, tees, and the greens surrounds. Our original plan was to only do the short grass but after consideration for playing conditions around the greens we have decided to incorporate some the roughs surrounding the greens into the seeding plan to give better playing conditions in those areas. We look forward to seeing play resume and we appreciate your patience through this process.

How to Make It 1. Preheat oven to 350 degrees. Combine graham cracker crumbs, sugar, and butter in bowl of a food processor or stand mixer. Blend until crumbs stick together. Press crumbs onto the bottom of a 10-inch spring-form pan with 3-inch-high sides. If an outer edge of crust is desired, press crumbs up 2 inches on the sides. Bake crust for 10 minutes. Cool. 2. Reduce oven temperature to 300 degrees. In the bowl of a mixer with a paddle attachment, mix cream cheese until soft. Add the sugar, vanilla, and salt; mix on low until very smooth. Remove the bowl from the mixer; scrape the sides of the bowl. Return the bowl to the mixer. Slowly add eggs just until blended, stopping occasionally to scrape sides of bowl. Carefully add and fold ½ cup of salted caramel sauce and bourbon into the mixture. Pour batter into crust. 3. Wrap foil around the outside of cheesecake pan. Place a sheet tray or larger pan underneath the wrapped cheesecake. Slowly add water to the pan to create a water bath approximately 2 inches deep. 4. Carefully place the cheesecake in the oven. Bake until its center is set and the rest of the cake has a uniform jiggle, at least 50 minutes. 5. Start checking the cake after 30 minutes. If the top gets too dark, gently cover with foil. Remove cake from the oven as well as the water bath pan. Cool to room temperature, and then cool completely in the refrigerator. When ready to remove from the pan, gently run a knife around the outside edge of the cheesecake and unlock the spring-form. Cover the top with ¼ cup of caramel sauce and chopped pralines. Cut and serve from the bottom pan or carefully slide a cardboard cake circle underneath.

Wine dinners are a great way for me to explore new regions of the world. Through the food you learn old family traditions, cultural influences, and how that region’s cuisine is progressing with the times. I usually research the area’s more traditional cuisine and see how I can build a plate that would bring you to that place with the first bite. I start by finding the food and then choose a wine that would add another dimension to the dish, but you can start from any inspiration you have. A couple of “rules” (because you can always break the rules) to follow include: • Choose earthy wines for earthy foods • With lighter meats like pork or chicken, pair the wine with the sauce • Match rich reds with tannic reds • Try low alcohol wines with spicy food

Come join us on the courts for an evening of round robin match play as we conduct the Fall edition of the Margarita Mixer! The event will take place October 11 at Shark’s Tooth 5 – 7 PM. Registration is now open and limited to the first 16 players. Enjoy all the friendly competition and, of course, the margaritas! Our ladies team league season is in full swing. Home matches are played on Tuesday morning at the Shark’s Tooth Tennis Courts. Please note that courts will be unavailable between 8:30 AM – 1 PM on those days. Our only home match scheduled for this month is October 8th. If you are a beginner interested in learning the game or if you have past experience and are ready to get back in the game, group and private lessons are available for juniors and adults.
