WELCOME EXPLORING WALTON COUNTY’S COASTAL DUNE LAKES

What is a Coastal Dune Lake? Coastal dune lakes are permanent water bodies, typically shallow and irregularly shaped, found within two miles of the coast. They are primarily freshwater systems, but most of Walton County’s coastal dune lakes are brackish, composed of both fresh and saltwater. The lake-water is generally dark or tea colored - not dirty! The water soaks pine needles, cypress needles, leaf litter, and other organic matter in swampy areas causing tannic acids to leach into the water, resulting in the dark coloration. Coastal dune lakes are reportedly found in limited number throughout the world along the coasts of New Zealand, Australia, Madagascar, and along the coasts of Oregon and Northwest Florida in the United States.

How are coastal dune lakes formed? Coastal dune lakes develop from various coastal processes, most commonly when sand deposition fills an inlet to a tidal basin or lagoon. Once isolated from the direct effects of tides, the water may become hyper-saline because of salt water intrusion through sandy substrates and rapid evaporation of surface water. Lake water may also gradually become less saline if there is a decline in subsurface saltwater intrusion and greater freshwater inputs from rain and watershed drainage.

Are all of Walton County’s coastal dune lakes the same? Each coastal dune lake has its own personality, based on the combination of its size, shape, watershed features, surrounding land uses, and outfall characteristics. Some of the dune lakes can be completely freshwater, some brackish, and some saltwater. Varying degrees of salinity occur between different lake stages and between different portions of each lake. The changing condition of water chemistry makes them dynamic, biologically diverse ecosystems.

What is an Outfall? Most Walton County dune lakes have an outfall - a natural opening to the Gulf of Mexico that occurs when a lake reaches flood level. Outfalls open and close intermittently based on varying conditions of the wind, tides, and lake water levels. Depending on tides and weather conditions (particularly winds and storms), saltwater from the Gulf may enter the lake, along with saltwater plants and animals. Outfall openings vary greatly in length, frequency, and duration.

LOCAL EVENTS SEPTEMBER PEPSI GULF COAST JAM Friday, August 30 – Sunday, September 1 | Frank Brown Park, Panama City Beach Pepsi Gulf Coast Jam is a three-day country music festival in Panama City Beach, Florida over Labor Day weekend, August 30th - Sept. 1st, 2019 at Frank Brown Park. Headliners include: Tim McGraw, Jason Aldean and Kid Rock. Tickets available for purchase on April 7th. General admission tickets are $139 with $10 from each ticket being donated to panhandle hurricane relief. Tickets and info at gulfcoastjam.com. ALYS BEACH 5K & 1 MILE FUN RUN Sunday, September 1 | Alys Beach | 7 AM – 12 PM The 8th Annual Alys Beach 5K & 1 Mile Fun Run takes place Labor Day weekend on Sunday, September 1 from 7am til 12pm. The crowds have dispersed from 30A and fall weather will be arriving soon. It’s time to soak it all in. Over the years, WaterSound Beach Club has evolved to become much more than just a Beach Club. It’s a place where new friendships are made during Wine Down Wednesday and relationships are revived over Sushi Date Night. It’s a place you’ve told us where you feel at home. And hearing these things make this place more special than ever. Although it’s still our favorite place to build sandcastles and lounge by the pool with a Sunny Day Lemonade, make it the first place you think about for sunset dining on 30A.

We also want to remind our Beach & Sport and Limited Members that there are no accompanied guest fees charged to Members after 4pm daily. So this is the BEST time to get your friends together and take a seat to dine, relax and indulge in the food and beverage offerings at WaterSound Beach Club.

GOLF A MESSAGE FROM THE DIRECTOR OF GOLF Sean McGaughey, PGA Director of Golf I hope this edition of The Clubs by JOE newsletter finds you well and staying cool from the heat. August brought us a lot of great things, but I’m not sure the 90 degree weather was one of them. One great thing it did bring, though, was the start of our re-grassing project at Camp Creek Golf Club. The course has undergone its initial stages of the project and we are excited to see the finished product. In August the Clubs hosted our 10th Annual Norman-Fazio Golf Classic with a full field of 54 teams. This year gave us a few twist and turns thanks to Mother Nature, but in the end we prevailed. Taking home the overall gross championship with a score of 137 was the team of Tommy Cooley and Michael Riley. Following that incredible score we had the team of Jim Parrish and Briggs Shreve taking home the net overall title with a score of 125. Very well played gentlemen and congratulations. It’s always great to see all of our Members participating in these wonderful events and I hope everyone had an amazing time. Back in July, we were forced to cancel our Couples Nine & Dine at Origins due to poor weather. Luckily we were able to reschedule it for the following month! We had 40 couples participate and coming out victorious was the team of Nico & Gail Brekelmans and their guests Terri & Andy Kurkjian. The team shot a very impressive 21.6 and won the event in a scorecard playoff. Congratulations team and keep it up! At the end of the month, I was fortunate enough to take 8 Members to picturesque Ireland for this year’s annual Getaway. The group played 5 beautiful golf courses and immersed themselves into the Irish Culture. The group played a net stableford point tournament and the man emerging as our champion was Basil Mattingly with an amazing total of 140. Congratulations sir, and thank you to everyone who was able to participate. Lastly, I would like to ask for everyone’s help in keeping our golf carts a safe distance from our greens and tees. Excess traffic near greens and tees can damage the grass and playability of our wonderful golf courses. In an effort to make sure that our course conditions are always at their highest level we would appreciate your assistance in this endeavor. As always, I look forward to seeing you all out on the course!

GOLF A MESSAGE FROM YOUR SUPERINTENDENTS Josh Parker Superintendent, Shark’s Tooth Golf Club

Shark’s Tooth finished its yearly maintenance in early August. The greens were aerified with ½” inside diameter hollow tines to a depth of around 4 inches, then top-dressed. The following day, the greens were drilled with 5/8” bits to a depth of 10 inches. The tees and surrounds were aerified with ½” hollow tines as well. The fairways and surrounds were verticut to help reduce thatch and grain. All this work is a necessary evil with turf grass for the overall health of the plant. We also spread fertilizer over the entire golf course in order for it to heal up nicely. The turf thanks you for your understanding during these cultural practices!

The month of August began a huge change to our course. We have begun the regrassing project by applying our initial dose of chemicals to the turf to begin the killing off part of the project. For the most part the course is brown. We have seen the zoysia begin to rebound but that was completely expected which is why we have two more applications to all the turf planned in the coming months. We are excited about the success we had with the first application and feel confident that we are moving in the right direction on the project. We have also prepared a bunker on the course to the specifications we are proposing for all the bunkers that are not waste bunkers on the course. The bunker is the small green side on 17. We will monitor its conditions and adjust our plans if needed. We have secured our seed for the overseeding process to be done to the fairways and tees in October and look forward to the unique definition we will experience throughout the winter months. Our greens are doing well and were aerified with ½ “ tines on August 19 and drilled with a 10 inch tine on the 20th. This will help us as we move toward the fall and winter months with the compaction and overall long term health of the greens. Just remember, Brown is the new Green. We have also purchased a mulching skid steer and you will see us taking advantage of this equipment clearing a lot of undergrowth and opening up areas throughout the course and Driving Range areas. 1 cup pitted kalamata olives 1/2 small red onion, coarsely chopped 3/4 cup coarsely chopped fresh mint leaves 1/2 cup coarsely chopped fresh parsley 2 teaspoons lemon zest 3/4 cup panko (Japanese breadcrumbs) 1/2 cup ricotta cheese 2 large eggs 1 1/2 teaspoons kosher salt 1/2 teaspoon freshly ground black pepper 1 pound ground beef 1 pound mild Italian sausage, casings removed 1 (6-oz.) can tomato paste 3 cups beef broth 1/3 cup hot pepper jelly

How to Make It 1. Preheat oven to 450°. 2. Pulse first 5 ingredients in a food processor 8 to 10 times or until chopped. 3. Stir together panko, next 6 ingredients, and olive mixture in a large bowl until well combined. Shape mixture into 1-inch balls, and place 1 inch apart on aluminum foil-lined jelly-roll pans. Bake at 450° for 12 minutes. Cool 5 minutes. 4. Meanwhile, heat a large saucepan over medium heat for 2 minutes. Add tomato paste to dry pan, and cook, stirring occasionally, 3 minutes or until paste begins to brown and coat bottom of pan. 5. Increase heat to high, and add beef broth, stirring to loosen bits of tomato paste from bottom of pan. Whisk until smooth. Whisk in hot pepper jelly until combined. Reduce heat to low. Add cooked meatballs, and serve warm. 6. For serving, keep them warm in your slow cooker, in a Dutch oven over low heat, or in a fondue pot. Note: Sauce may be refrigerated in an airtight container up to 3 days.

Inspiration for a chef can come from almost anything. While growing up, family dinner was the one of the only mandatory things my parents asked of me. Dinner was always made from scratch and I was able to learn a lot from my Grandmother and Mother while watching. Once I was on my own, all of these things I watched became my means of survival. I was able to barter throughout college by cooking for people and learned to throw a pretty nice dinner party. Nowadays, besides my children, true joy comes from seeing attendance grow at all of our events. Knowing people are coming back because they enjoy what you are offering really keeps the yearning to create new dishes alive. I try hard not to repeat too many menus in order to keep things fresh, so I am always trying to find things I haven’t made before both to excite the taste buds and learn something new!

Fall weather will be arriving soon and our Fall tennis programs are in full swing! Ladies team matches begin play each Tuesday morning and Junior small group clinics are conducted each afternoon weekly. Registration is now open for the upcoming Margarita Mixer scheduled on Friday, October 11 at Shark’s Tooth. Come join us for any evening of friendly competition and socializing on the tennis courts. Don’t miss this event, as space is limited to the first 16 players entered. When it comes to working out there maybe strength in numbers. A recent study in the journal Mayo Clinic Proceedings looked at the activity habits of 8,577 participants and found that those who play team and partner sports added more years to their lives than solo exercisers. Tennis was linked to the biggest life-span increase (9.7 years), while jogging added 3.2 years and the gym just 1.5.
