In the restaurant industry, the term PX is used to describe VIP patrons extraordinary people meant to be shown extra care.
Adam Garcia, our Director of
Operations and Executive Chef, describes it this way:
"When Chef would call out “PX”, I would think to myself, “maybe it’s a celebrity, or an athlete”. But more often than not, it was the dishwasher who brought in his family, or the young cook who never really had a chance to dine in a nice establishment.
It was a server who wanted to
impress his date, or a busser who wanted to bring her parents for their anniversary.
It was
someone who was proud of where they were in life and wanted to share it with someone special. They were always the most important people. It was about making their night memorable. “Make sure they’re taken care of. They’re extraordinary people."
