bundt cake Chocolate
A classic for a reason, the bundt cake is a winner year-round but come Christmas, this cult-favourite (even Nigella’s a fan) takes dessert to a whole new level. Impress your guests with this easy and delicious recipe.
FOR THE CAKE:
1 cup unsalted butter
⅓ cup Dutch-processed cocoa powder
1 tsp sea salt
1 cup water
½ cup sour cream
1 tsp vanilla essence
2 cups flour
1 ¾ cups white sugar
1 tsp baking soda
2 large eggs (room temp)
FOR THE ICING:
120g 60% cocoa chocolate (cut into small pieces)
1 tbsp honey
½ cup thickened cream
1 tbsp white sugar
METHOD
Place a rack in the centre of your oven and preheat it to 180°C. Prep a 10-inch bundt cake tin using butter and flour.
Combine butter, cacao powder, salt, and water in a saucepan over medium heat. Cook, stirring frequently until the butter is completely melted. Remove it from heat and let cool for 15-20 minutes.
In a small bowl whisk sour cream and vanilla until combined, set aside.
In a large mixing bowl, whisk together the flour, sugar, and baking soda.
Pour in the now cooled cacao mix into the flour mix, half at a time, whisking as you go until all ingredients are blended. Whisk in the eggs one by one, making sure that they are fully incorporated into the mixture. Next, add in the sour cream and vanilla mix, whisk until smooth.
Pour the batter into the prepared pan and bake in the oven for 40-45 minutes.
Let the cake cool in the pan for 30 minutes before removing onto a cake platter.
Next, to make the icing, place the chocolate and honey in a bowl and set aside.
Put the cream and remaining sugar in a small saucepan and heat on medium until the sugar is fully dissolved. Pour the warm cream mixture into the chocolate and honey and stir until smooth.
Spoon icing generously over the cake to your liking.
Decorate as you wish! We usually just sift some icing sugar over the top, but cherries and crushed pistachios make a great festive touch too!
