Minted English Pea Gazpacho - Serves 4 people

Ingredients

1Tbsp. EVOO

3 cups Fresh English Peas shelled

½ English Cucumber peeled and chopped

1 small White Onion peeled and chopped

1 cup Low Sodium Vegetable or Chicken Broth

1 cup Water

1 clove Garlic peeled and smashed

1 Tbsp. Lemon Juice

¼ cup Mint leaves torn

½ cup Sour Cream

S & P to taste

Pea Tendrils

Cooking Directions

Combine all ingredients in blender and process at high speed until smooth. Add salt and pepper to taste.

Immediately serve in mini cups or shot glasses, garnish with pea tendrils or fresh mint leaves and enjoy.

Congratulations John (Johnny) Taylor , winner of the February Employee of the Month!

Johnny has been with the maintenance department at the Club since July 2015, he is a popular member of the team and takes pride in working for SPYC. Johnny is a "jack of all trades". He is here every weekend and can be found working on a wide variety of tasks from breakdowns and repairs to helping out with the annual classic car show. Thank you, Johnny, for your hard work and dedication to the Club!
