M

y first passport stamp came from South Korea when I was 11 years old. My sixth-grade teacher met—and became fast friends with—an educator from Seoul while in Beijing at a conference, and they decided to organize an independent exchange between both classes. We spent the better part of the year fund-raising, learning about Korean culture, and preparing for the experience. Though it was optional to host a student and go on the two-week adventure,

my parents were adamant I avail of the opportunity. I remember feeling fearful and telling my mom (who ended up chaperoning) I didn’t

want to go. Traveling out of the country, no matter your age, is indeed scary. How will you survive without speaking the language? What if you get sick? Who in their right mind would want to sit on an airplane for more than 10 hours? It’s all too easy to let doubt discourage you. In the case of Korea, I ended up going, and it was the start of my lifelong love of gallivanting the globe. I tried, and became a fan of, (then) foreign foods; met friends I still keep in contact with; and realized that people, though we may physically and culturally be vastly different, are similar in so many ways. It should come as no surprise then that this month’s feature, “Explore More: Your Passport to Adventure” (page 51) was an especially fun one. Understandably, overseas voyages aren’t for everyone, so we have destinations both near and far—including “grape” escapes with where to sip, snack, and stay; summertime festivals worth traveling to; and a 10-day journey to Japan that will hopefully have you eager to explore one of the safest, most scenic, and cleanest countries. We also consulted local travel

agents for their top tips and must-see places. I hope it inspires you to jump out of your comfort zone and do something different, or go somewhere new, sometime soon. Keeping with the travel theme, Kerrie L. Kelly, our über talented and accomplished Home Design contributor, takes us “Around the World in 7 Designs” on page 44, providing plenty of ideas on how to bring your favorite country’s aesthetic into your own crib. In Taste, take your appetite on an adventure with the recipe for Creamy Cucumber and Dill Gazpacho on page 76. And in this month’s Cause & Effect article (page 42), Linda Holderness writes about the international nonprofit Rotary—an organization whose “1.2 million members from all continents and cultures come together to exchange ideas and form friendships and professional connections while making a difference in their backyards and around the world.” I’d love to know where you’re headed this summer and would be delighted if you brought Style along for the ride. What’s the best dish to make if you’re new to Asian cuisine? Randy Gibbs l Dorado Hills resident Randy Gibbs grew up on the slopes of Minneapolis, his feet in skis

not long after he could walk. When he was in six grade, his parents bought a resort in Northern Wisconsin, and he looks back fondly on the two years he spent snowmobiling, skiing, and hanging out with resort guests. He also helped his dad groom the slopes, a skill that would later come in handy. After many years as a competitive skier and ski coach, Gibbs is now a ski service technician—a job that’s taken him all over the world, including the 2018 Winter Olympics in Pyeongchang. Yet life hasn’t always been easy for Gibbs. In 2007, his sister Jenny took her own life and the life of her infant son, Graham. The incident

was later attributed to a case of postpartum depression that became postpartum psychosis, a rare but serious condition that affects one in a thousand new mothers. Since then, Gibbs and his family have made it their mission to prevent what happened to Jenny and Graham from happening to others. To that end, they founded Jenny’s Light (jennyslight.org), an organization whose primary goal is to save lives by spreading awareness about perinatal mood disorders. Gibbs has even spoken in front of U.S. Congress about this issue, advocating for increased perinatal mental health screenings in hospitals and the eradication of the social stigma that keeps new mothers from reaching out for support. “We want mothers to know that what they’re feeling is totally normal,” he shares, “[and that] it’s okay to ask for help.” —Amber Foster

Keep your family entertained this summer with these activities and events presented by Folsom Parks and Recreation.

THROUGH JULY 27 Summer Concerts in the park

JUNE 9, JULY 14, & AUGUST 11 Celebration Saturdays

These free open-air concerts take place from 7-9 p.m. in Folsom City Lions Park and feature a range of genres, from country and rock to reggae. Bring your own picnic or purchase food and drinks onsite from a variety of local food trucks.

Calling all party animals! Come celebrate the summer birthday or adoption anniversary of some of the animals who live at the Folsom City Zoo Sanctuary every second Saturday of the month from 11 a.m. to 2 p.m. Make a special card or treat for your favorite animal; all supplies are provided with regular zoo admission.

Enjoy a docent-guided walk through the Folsom City Zoo Sanctuary from 9-9:45 a.m. Admission is $15 for one parent and one child; after, stay and explore the zoo.

FRIDAYS THROUGH AUGUST 10 Little Dippers The Folsom Aquatic Center hosts this program from 10:30 a.m.-noon to provide an opportunity for children ages six and under to increase their water confidence; parental supervision required.

If you’re a fan of the food truck craze, we have good news: Our region is host to a handful of special events all month long! Cameron Park Community Services District, in partnership with SactoMofo, is bringing Trucks and Tunes to Christa McAuliffe Park from 5-8 p.m. on June 13. Trucks—including Costa’s Finest Kettle Corn, La Mex Taqueria, and Rollin Roadhouse—will serve up a variety of sweet and savory selections, so you can chow down as you listen to live tunes and soak up the sunshine. El Dorado Hills Promise Foundation’s Food Truck Festivals and Beer Garden: Luau Party is on June 20 from 5-8 p.m. at EDH Community Park. All Star Que, Cowtown Creamery, and India Jones are just a small sampling of the trucks that’ll be available. The event is put on by Food Trucks in the Foothills and raises funds for the EDH Promise Foundation, which directly benefits the community by providing public parks, senior and youth services, education and recreation programs, and more. April 7 // Folsom to Auburn The most iconic and second largest 50-mile endurance run in the U.S. returned for its 39th year— bringing together athletes from the area and overseas. This year, 282 men and 191 women put their months of hard work and dedication to the test and ran from Brown’s Ravine Marina, along Folsom Lake and the American River Parkway, to Auburn. racy Rodriguez, the founder and CEO of Folsom Theatre Co., has been involved in performing arts since she was eight years old. Her new youth musical theater nonprofit is currently housed at the Palladio, although a move might be in the cards soon, in order to accommodate the rapidly growing start-up. “We truly want to partner with every performing arts business in the community to give our youth as many opportunities as possible to succeed,” says Rodriguez. Their first production, Into The Woods, Jr., is slated for June 28-30 at Cordova High School’s Performing Arts Center; in early September, they’ll begin auditions for their production of Annie.

HLB: HOW DID FOLSOM THEATRE CO. BEGIN? TR: I’ve always had a love for live theater and performing arts—and recognize the positive impact it has on individuals as well as communities—so I got my children involved in theater at a young age. When our family moved to the area last year, we found there was a huge community of “theater families” yet only a limited amount of spots available to participate in productions. The existing theaters have been doing exactly what I hope to do: Bring a love of live theater to our youth. Although starting a theater when we moved here wasn’t the plan, we saw a vision and took a chance! HLB: WHAT IS YOUR MISSION? TR: To inspire youth to dream, explore, think, and connect through imaginative storytelling—onstage, in the classroom, and in the community—all while developing character and confidence by training in the arts. Our programs encourage youth to navigate our complex world in a way that’s healthier, smarter, and kinder. In addition, our goal is to become the premier home for diverse performing arts programming and education by collaborating with artists, organizations, schools, and the community to encourage the creation, appreciation, and understanding of the arts.

e spend about one-third of our lives sleeping. It’s no understatement to stress how important quality sleep is to our overall well-being. “Sleep should be a major priority,” says Chuck Tolbert, clinical sleep specialist at Specialized Sleep Diagnostics in Roseville. “While you sleep, your body moves through different phases of shallow and deep sleep, which allows your body and mind to realign. This is also when physical healing occurs. [Over time, lack of proper sleep can cause] health problems to occur—everything from fatigue and headaches, to weight gain, memory loss, and more.” To help you hibernate, we asked local doctors and sleep experts to share their tips for getting the best night of sleep each and every night.

“The pre-bedtime routine is underrated,” says Caitlin Siegle, sales manager at European

Taking a warm bath or shower or drinking noncaffeinated tea can also help set the mood for sleep,” says Analila Valencia, ND, from Revolutions Naturopathic, with locations in Folsom and Roseville. “Anxious individuals should schedule worrywart time two hours before bed to journal any ideas, concerns, etc., which can often alleviate ruminating thoughts,” advises Kimberly Hardin, MD, professor of pulmonary, critical care, and sleep medicine at UC Davis Health and director of UC Davis Health System’s Veterans Administration Hospital Sleep Lab. “To get the sleep you need, three things [are essential]: giving yourself sufficient time for sleep, the mind switching from busy mode to calm mode (for sleep onset and to maintain sleep), and the ability to easily and freely breathe through the nose,” says Amer Khan, MD, a neurologist and sleep specialist with Sutter Health Independent Physicians and founder of Sehatu Sleep Clinic in Roseville.

“Staying disconnected in the morning allows your mind to wake more gradually, instead of being confronted by the rapid information processing that comes from scrolling on our phones. Meditating before bed can help your mind to quiet and unwind. Stretching in the morning helps your body wake up after being stagnant throughout the night, while doing so before bed can be relaxing for some and stimulating for

others; check in with yourself and see how you’re responding,” Siegle says.

Timing Is Everything

“Someone who gets four hours of deep sleep and cycles through two full REM cycles is going to be more well-rested than a person who sleeps for eight hours and wakes up tossing and turning every 30 minutes. Each time we interrupt the REM cycle, it must start over from the beginning and all five stages of REM sleep can take up to two hours to complete,” says Steve Metzgar, chief executive officer at Sleep Choice Mattress Centers with locations in Folsom and Citrus Heights. “[Don’t] lay in bed for hours watching the clock at night. If you’re unable to sleep for more than an hour, get out of bed and try to do something non-stimulating, like reading a book, listening to calm music, or drinking a warm non-caffeinated beverage, until you’re truly tired and ready to go back to sleep. Stay away from all electronics and bright lights,” Tolbert recommends. “Don’t over-focus on sleep. Fitbits and other means of constantly measuring one’s sleep can often lead to more anxiety regarding it,” Hardin says.

Set The Scene

“Optimal sleeping temperatures range from about 65-68 degrees. Make sure your bedding is clean and free from potential allergens. The best thing to do is always have a backup set of linens—have one in the wash and one on the bed. An allergy encasement can also protect your mattress from absorbing

“When traveling to a new time zone, it can take several days for our circadian rhythm to adjust and get back to its original schedule. Adjusting your sleep time forward or backwards—about a week before your trip— should help you adjust to the new time. And if your schedule allows, don’t be afraid to take a nap,” Tolbert says.

Get plenty of sunlight,” says Robert Chase, MD, ENT specialist with Marshall Medical Center. “Humans are creatures of habit, and our bodies can take up to 60 days or longer to adjust to a changed level of support. nce dreaded, polio outbreaks are now a fading memory. In the world, only 17 cases occurred last year —and those in just two countries: Afghanistan and Pakistan. Much of the credit for conquering this cruel disease goes to an unusual source: Rotary International’s PolioPlus campaign. The worldwide service club has been working to eradicate polio since 1979, and its success, notes Rita Gordon, public image chair of Rotarys District 5180 —which covers 41 Northern California clubs— will be the first time a non-government organization has wiped a disease off the planet. Members of Rotary—1.2 million worldwide—literally put boots on the ground delivering the oral vaccine to more than three billion children. “Boots on the ground” has been a Rotary hallmark since Paul P. Harris of Chicago founded the organization in 1905 to provide humanitarian services and advance peace around the world. But Rotar y’s sights are set not only on diseases—such as polio, malaria, HIV/AIDS, and diabetes—but also on improv ing education and economic conditions for disadvantaged people both internationally and locally. With polio nearly extinct, “clean water is now bubbling to the top of the list,” Gordon says. Most of the world takes clean water for granted, but contaminated water in developing nations causes around 842,000 diarrheal deaths a year, according to World Health Organization data. With “Service Above Self” as Rotary’s motto, local clubs are responsible, often quietly, for a variety of local programs, including dental care for disadvantaged kids, literacy suppor t, refurbishing bikes for needy youngsters, student

in other cities have achieved marked success, says Roseville Rotarian Brian Gladden, who—along side past district governor from East Sacramento Rotary, Bob Deering—is spearheading the effort. Women have been active since 1987 and once-stringent attendance rules have been relaxed. “Meetings are fun,” says Rotary Club of Placerville President Cher Williams. “Through the fellowship, we build lifelong relationships.”

futuristic, white-nosed bullet train for a detour to Hakone, a mountainous town home to hot springs, views of Mount Fuji, and an abundance of natural beauty. A stay at the newly opened, ultra plush Ten-yu means bathing in mineral-rich waters at either your in-room onsen or the public baths (one of which boasts an infinity pool and magnificent mountain views); modern, minimalistic rooms that still hold tight to tradition; and artful, multi-course meals prepared with hyper-local ingredients that are almost too pretty to eat.With nearby hikes, morning yoga, easy access to nearby attractions, and the aforementioned baths, leaving here is the hardest part. As anyone who’s been to Japan can attest, it’s a country that surprises, delights, and inspires—a place that’s easy to love and will have you longing to return. A

fter almost two years in the making, Rocklin’s popular Out of Bounds Brewing Company has launched their new facility in Folsom: Out of Bounds Craft Kitchen and Biergarten. Featuring 5,500-square-feet indoors and another 10,000 outside, owners Kevin Brooks, Anthony Brown, and Eric Johnson are providing the area with an adult entertainment mecca. Indoors, they present over 45 beers from their Rocklin brewery, as well as local ciders and wines for the hop-averse. Patrons can also relax and enjoy their favorite sporting event from one of 20 TVs strategically placed throughout the bar area. Outside is a stage for live music, five fire pits, and two bocce ball courts. And then there’s the food. The owners tapped their chef from Farmhaus in Granite Bay to run the kitchen. My friend and I sampled their namesake burger: the Out of Bounds Craft Burger, featuring Angus beef, smoked cheddar, and an homage to my childhood and possibly yours, too—potato chips (albeit Peruvian purple chips). The thing that stuck with me was seasoning and the medium-rare cook on the beef. Both were spot-on, which, in an era of frozen patties and over-salted food, was a pleasant surprise. We also sampled the Boundless Brie Burger, which was essentially a cheese plate on a burger. The combination of Brie, sliced apples, walnut-fig jam, and balsamic reduction was possibly one of my top five favorite burger bites ever. Pineapple on pizza…yay or nay? For me, it’s a resounding yes, and the BBQ Piña Peño Pollo did it better than any I’ve had. There’s a lot going on here, and the pizza purist police may hold a protest march over the combination of grilled chicken, red onions, cilantro, jalapeños, mozzarella, crema, and yes, pineapple. The thin-crusted pie and its payload ignited the senses with heat, sweet, and savory—a perfect foil to one of their handcrafted brews. My companion on this day was somewhat of a mac and cheese aficionado, so I deferred to his opinion on the offering with a smoked cheddar blend, cavatappi pasta, and breadcrumbs. Speechless was the response. The “fork to mouth and repeat speed” was blinding and left no time for more than an occasional grunt of approval. There’s something for everyone here (even kids): music, games, food, and drinks. I recommend you stop by and try some of everything. // Summertime calls for frozen treats, and Whips Desserts delivers just that…with a twist. For the past six months, this family-owned confectionery has been fulfilling Folsom's sweet tooth with their unique take on what you could call the bread and butter of the dessert world: cake and ice cream. The bright, charismatic shop has over 20 flavors of cakes and pies from local bakeries Sweetcakes and Little Bliss Cakery, plus multiple flavors of ice cream. But here’s the kicker: Instead of picking just one type of treat, they have you choose a piece of cake or pie and a flavor of ice cream, then blend everything together to create what they call a “whip.” I was in need of something refreshing on my visit so I went with their Dreamsicle Whip: homemade orange cake mixed with vanilla ice cream. It tasted exactly like the Creamsicle bars I devoured as a kid and was a sweet reminder of summers past. My friend decided on one of the owner's favorites: the sugar-free Coconut Cream Pie with vanilla ice cream. Given that she devoured the entire thing, I'm going to assume she liked it. Glutenintolerant individuals or those avoiding added sugar or dairy are in luck, too: There are numerous ice cream and pastry options that fit the bill. Seasonal Recipe and Beer Pairing CREAMY CUCUMBER AND DILL GAZPACHO WITH PEA SALSA AND SUMAC This is my Swedish take on a Mediterranean classic. The Greek yogurt and avocado give it a wonderfully creamy texture and trick you into thinking you’re having something really quite rich and indulgent when actually this is a fresh, light dish with a major focus on vegetables. Add the chillies according to your taste—they vary a lot, so do taste a little before deciding. I prefer a decent kick.

Lagom: The Swedish Art of Eating Harmoniously by Steffi KnowlesDellner (Quadrille Publishing, 2018, $29.99)

• 3 tbsp. extra virgin olive oil

• 2 yellow bell peppers, roughly chopped

• 1 avocado, stoned, peeled and cubed

• 1–2 green chillies (depending on taste), finely chopped • 1/2 garlic clove, very finely chopped • 2 spring onions [scallions], roughly chopped

• 1 cup Greek yogurt, plus extra to serve • 1 small bunch of mint, roughly chopped • 1 small bunch of dill, roughly chopped • Pinch of sugar, or to taste

• 1/2 red onion, finely chopped

Blitz the cucumber, peppers, chillies, garlic, spring onions, 2 tablespoons of the oil, and all but 1 tablespoon of the cubed avocado together in a food processor. Add the yogurt and most of the herbs and continue to blend until smooth. Season with salt, pepper, and sugar to taste. Add a little water if the soup seems too thick.

FOR THE SALSA:

• 3/4 cup frozen peas

Blanch the peas in a pan of boiling water for a minute, then refresh in cold water. Drain thoroughly, then mix with the red onion, lemon juice and zest, remaining oil, and reserved avocado. Sprinkle in any leftover herbs. To serve, pour into chilled bowls and top with a dollop of yogurt, the pea salsa, and a sprinkling of sumac. Serves 4.

Describe your business. Did you find it, or did it find you?

I’m a wedding photographer for the greater Northern California area. As much as I would like to say I found photography, it really found me. When my oldest daughter was born, I bought a nicer camera (or so I thought at the time) and found myself carrying it around constantly, and the passion really started developing (pun not intended).

We decided to bring the Denver-based franchise to El Dorado Hills and are the first SwimLabs in Northern California. We started this venture in February 2016 as a husband-and-wife team and currently have 16 other employees, including front desk staff and instructors.

What was the first job you ever had, and what did you learn from the experience? I was a waitress. It taught me that customer service—no matter what business you’re in—controls whether you have a lifelong client or a one-and-done visitor.

Why is your staff the best in the business? Felice, one of my second shooters, is incredibly talented, gets the most artistic and outside-the-box pictures, and has such a fresh take on ordinary moments. Tyler is in training to be a second shooter. Right off the bat, he’s shown great potential and has the ability to blend into the room and capture amazing, genuine moments.

Where do you go when the going gets tough? Mexico (after my editing is done of course)!

What’s your biggest job perk? I'm invited into my clients’ lives to capture and witness intimate and joyful moments.

What’s your favorite place to eat out locally? Aloha Sushi.

And finally, customer service is…? An attitude, not a department.

What was the first job you ever had, and what did you learn from the experience? Darin's first job was lifeguarding and teaching swim lessons. He enjoyed being able to work in the aquatics environment at the age of 13. My first job was working as an after-school nanny to a family with two kids. As a teenager, I learned how to take care of children and be responsible for their homework, dinner, and bedtime routine.

How are you involved with both the community and your customer? We enjoy being able to provide quality services to the residents of El Dorado Hills and the surrounding counties. We’ve been able to adapt our programs based on the needs of our community and have also developed clinics and team days to support swimmers getting ready for the summer swim season. In addition, we’re part of local events, including Saturday Night in the Park and the Gold Country Half Marathon, and continue to provide donations to area elementary schools, the library, and other small businesses. What’s more, we’ve established a corporate membership with a local gym as part of a wellness program for our staff. We’re so grateful for our partnership with the El Dorado Hills Chamber of Commerce and look forward to building more relationships with the community.

What’s your favorite local business other than your own? Hop House and Gold Country Run and Sport.

And finally, customer service is…? Providing utmost respect for the clients and swimmers who walk through our doors or contact us each and every day.
