hoever said pare n ti n g i s n ’ t fo r wimps should receive a Nobel prize. It nearly brings me to tears to say that I’m well into my 12th year of motherhood. My baby is now a spunky independent tween whose innocent infant face I can no longer recognize, but sure do miss. It’s a hard thing for any mother to accept—their child growing up, that is. Oftentimes I wish I could press pause and just linger for a moment in awe of who she has become, who she is in that moment, before the sands of time take her away to another stage in life that will again slip away before I have time to relish it. Questions of what I have done wrong and that which I have done right race through my mind on a daily basis. his month marks Randy Boxell’s 49th year as a barber. He didn’t always know he wanted to be one, however. Prior to moving to the region, he was an electronics assembler for Hughes Aircraft Company, but couldn’t deny his interest and great appreciation for the art of barbering. Eventually, Boxell attended and finished barber college, and following an 18-month apprenticeship, became certified as a master barber. After a decade at a shop in Foothill Farms, he went on to open Randy’s Barber-Stylist in Folsom, eventu-

These days, Boxell is a familiar face around the community—not just for his affable chair-side manner, but also for his outreach. He’s been an active member and past president of various local Lions Clubs, including the Roseville Sunrise Lions Club, for over three decades. He also served as an ambassador of the Folsom Chamber of Commerce for several years, and was even honored with the Folsom Community “Man of the Year” Award. For
Boxell, the Folsom community—which includes his customers—have become like family over the years. As a result, he has no plans to retire any time soon. “As long as the Lord gives me good health, I’m going to stand behind this chair!” he says with a laugh. — Amber Foster

ernie, an orphaned newborn raccoon, was found and rescued at McArthur-Burney Falls State Park (hence her name). She was so young that her eyes weren’t even open, and naturally wild birds were attacking her. Just by luck, some savvy humans were on hand to rescue her and provide some much-needed tender loving care. t’s always a good time to have pizza—for meals, between meals and despite meals—so when I stopped by Sacramento Pizza Company in Folsom, I was convinced before I even entered that it would become my second home. This trendsetting eatery offers a fixed price 10-inch pizza with your choice of any of the multiple sauces and cheeses, plus unlimited meats and veggies for toppings. From the numerous mind-boggling options, I managed to pick a creamy Parmesan-Alfredo sauce, with ricotta and Mozzarella cheeses, spicy Italian sausage and meatball crumbles, colorful red onions, green bell peppers and black olives, some minced garlic, fresh spinach and basil, and a sprinkling of Italian seasoning including ground black pepper. Once the toppings were put in place, my pizza was cooked and out in just a few minutes. The crust was light and crisp, while the silky cheese was melted precisely into the medley of meat and veggies. Without missing a beat, I took one bite, then another and one more still, until I was searching for crumbs around my plate. On Sunday, May 22, professional cycling teams from around the world will end the grueling 10-day, 11th annual AMGEN Tour of California by crossing a finish line on the north side of the State Capitol, where spectators will line the streets. “We are engaging local restaurants and bars to host watch parties,” says Sidney Scheideman, events manager for the Sacramento Convention and Visitors Bureau. On Friday, May 20, Folsom has the honor of hosting the time trial events, relatively short races in which riders are up against the clock. “If you hang out in the Historic District, you can see the start, the finish, and [attend a] lifestyle festival,” says Lesley Miller, marketing director for the Folsom Local Organizing Committee. At each of the eight statewide stages, the globally televised race will offer free lifestyle festivals with food trucks, cycling gear vendors, beer and live music (10 a.m. to 4 p.m. on May 22 in Sacramento and May 20 in Folsom). In Folsom’s true cycling-obsessed style, spectators are encouraged to ride in and make use of the bike valet. thearts HLB: When do you know you’ve captured “the one”? LE: I rarely know I have “the one” when I shoot. I’m somewhat of a purist because my goal is to reflect on paper something almost exactly as I experienced it. Even though I use editing software, I do very little manipulation. My definition of “the one” has to speak to me with emotion and expression of the animal. Some of my personal favorites are the close-up shots I take. You’ll see many cropped images of just the eyes of an elephant or leopard—[those images] speak a thousand words to me.

HLB: What’s the best advice you’ve been given? LE: The most powerful is “shoot from your heart,” which I’ve interpreted to mean photograph what I love in a way that shows compassion and love. I’ve taken that same philosophy into my new venture of painting and try to reflect that in my watercolor renditions of my photographs.
HLB: What are your goals for the future? LE: I’m learning how to print my photography onto transparencies and then transfer that onto various surfaces like wood, glass or acrylics—which is quite different from normal printing. I have done a few small images on birch wood using this process, which [are on display at] the Gold Country Artists’ Gallery.
HLB: Tell us about the unique stamp on your artwork. LE: I’m very concerned about the survival of many of the species of animals I’ve been up close and personal with, so I’ve

Government recommendations state three cups of dairy should be consumed daily for optimal health, but depending on whom you talk to, there are both pros and cons when it comes to dairy in your diet.

THE PROS Along with milk, dairy includes cheese, yogurt, cottage cheese and milk-based desserts. “Dairy builds strong bones and teeth, as well as providing a great deal of vitamins and minerals such as calcium, potassium, magnesium, phosphorus and vitamins A and D,” says Vicky Bourdaniotis, RD, CDE, a registered dietitian at Sutter Medical Foundation. “It also provides protein, which is needed for building muscle, and cell growth and repair. For example, one eight-ounce glass of milk can provide seven to nine grams of protein.” Ann Wallace, RD, a registered dietitian at Kaiser Permanente, Roseville Medical Center, says consumption of dairy products, especially low-fat dairy products like yogurt, can also reduce the risk of type 2 diabetes and is linked to better weight management. “Dairy products can provide an economical and high-quality source of protein that can help prevent loss of muscle mass and strength associated with aging,” she says.

S
uch is the philosophy behind Ripples to Waves, a charitable organization in Folsom whose members are “spreading results” by assisting families in need and making a
difference in the community. The nonprofit was established after cofounder Nicole Estabrook became disabled in 2014. Within a few months, she came to a realization. “I wanted and needed to help people,” Estabrook recalls, “so I began volunteering with local groups, and I met some really amazing women.” Among them was Breanna Burns, with whom Estabrook founded Ripples to Waves. Since then, Burns has resigned to focus on other obligations, and Mavery Selvidge assists Estabrook in running the organization. Ripples to Waves organizes and manages multiple types of needs, including assistance for the homeless—providing
items such as home furnishings, food, clothing and baby essentials, and has even bestowed a vehicle to a homeless family. “Our goal isn’t to just hand out donations to people in need, but to inform and educate them on how to overcome their struggles,” explains Estabrook. “We engage personally with our members and teach them how to apply for jobs, write a resume or clip coupons to save money.” As an example, a homeless mother of three who was camping nearby contacted Ripples to Waves. “She had only three packets of Top Ramen left,” recalls Estabrook. “We reached out to our members and within an hour received camping gear and food. Members also paid for extra nights at the campground. The woman was a housecleaner by trade, so we promoted her on our group page. She began to get clients and jobs and is now living in a house and working full-time. We couldn’t be [prouder] of her and her success.” When the devastating Butte and Napa County fires swept through in 2015, Ripples to Waves conducted a donation drive to provide resources to the many families who lost their homes. In addition to funding, fire victims received tents, food, pet food, toys, clothing, shoes and much more. “Our members have the most generous hearts,” Estabrook enthuses. “They have gone above and beyond in helping families, even though some are complete strangers.” Estabrook recognizes that the group wouldn’t be where it is today without the support of local businesses—too many to name, but each one greatly appreciated. “We also have our membership, and they are the ones who make it all happen,” she says. “A special thank you goes to all of our members for being a part our organization.” Plans are in the works for summer activities, school supply drives and holiday programs, as well as a Valentine’s Day arts and crafts party and an Easter Eggstravaganza in 2017.

New, safer flooring is a seniorizing improvement that’s reasonably cost-efficient, according to Kent Eberle, president of Eberle Remodeling and a Certified Aging in Place Specialist (CAPS). He recommends removing carpet and installing smoother floors with good traction. “Creating continuous flooring in the main living areas and throughout high traffic areas of the home will allow for ease of movement now, as well as down the road when walkers or wheelchairs may become a reality,” he says. “Minimizing floor transitions (moldings) between rooms is also helpful.”
3 / Update furniture. Krakow sees many seniors still using bedroom furniture purchased 30-50 years ago. “Scandinavian and Asian designs were common at the time, and their beds are very low. Consider raising the bed or replacing it with a higher one, making it easier to get in and out. The
same consideration should be made for chairs,” he urges.
4 / Be sure the home is well lit— inside and outside. Walkways and hallways should have good lighting with easily accessible on/off switches. Krakow points out that stairs should always be well lit, since depth perception is a common issue for seniors. In addition to lighting, all stairs should have handrails.
5 / Modify the master bathroom to include a “curbless” shower. “This is the number one way to ‘future-proof’ your home,” says Katherine Kawaguchi, ASID allied interior designer, CAPS-certified (through the National Association of Home Builders) and owner of Guchi Interior Design. “A curbless shower will ensure that today’s homeowners are as secure as possible,” she confirms. “I also add rated support bars—not only in the shower but in every area a traditional towel bar might be placed.” Kawaguchi and Eberle both emphasize that support (grip) bars, as well as other bathroom modifications, can be decorative as well as functional.

happy birthday, folsom! Celebrating 70 Years by Jerrie Beard
O
n a wet day in April, the City of Folsom held its 70th Anniversary Jubilee. What started as a young man’s vision back in the 1850s has grown into a vibrant community along the American River. The first Europeans to visit this area were probably fur trappers who came up the river in the 1820s. After John Sutter established his fort in Sacramento, other Americans and Europeans began settling the area. William Leidesdorff, a successful trader, acquired a Mexican land grant of 35,000 acres along the south side of the American River; sadly, he died in 1848, before gold was discovered and the mining camps of Negro Bar, Prairie City, Salmon Falls and Mormon Island sprang up in the area. Captain Joseph Folsom was the visionary who purchased Leidesdorff’s property. He hired Theodore Judah to plan the town of Granite City and a railroad terminus. The first train on the first railroad west of the Mississippi arrived in Granite City from Sacramento in February 1856—a year after Folsom’s death—and Sutter Street became a commercial center. The town was renamed Folsom that year and began to prosper. The Sacramento Valley Railroad brought supplies to Folsom, which were then loaded onto wagons headed for mining towns in the foothills. During 1860-61, the railroad also served as the western terminus of the Pony Express. Folsom became a railroad town manufacturing railroad ties, passenger cars and boasting maintenance shops and a foundry. The last train pulled into Folsom in the 1970s. In 1999, the city and the railroad association undertook the reconstruction of the railroad turntable and began development of the railroad block in the Historic District. When placer mining had played out, dredge mining began. As early as 1894, a

grab-dredger began working the Natomas area. Bucket-line dredging soon followed. By the early 20th century, the Natomas Company controlled most of the dredging operations, which covered the area from Folsom to Fair Oaks to Natomas and down to Mather Field. Dredging continued until 1962. It is estimated that over $125 million in gold was obtained and that over one billion cubic yards of gravel was displaced. The tailings left from these operations are still visible along Highway 50, along the river and bike trail, and throughout Folsom. In 1880, Folsom Prison was built on land donated by the Livermore family in exchange for prison labor to build a sawmill. The Livermores were also instrumental in building the Folsom Powerhouse, which supplied electricity to Folsom and Sacramento and, at the time, boasted the longest overhead run of electricity in the country. The transcontinental railroad bypassed Folsom, but the community remained a commercial center for families and ranches in the area. Sutter Street saw a resurgence of business around 1915, as highways and automobiles brought tourists to the Historic District. In 1946, Folsom was incorporated as a city. The first city council included Leland Miller, Harry Patton, Eugene Kerr, Wendell Van Winkle and Norbert Relvas, and Eugene Kerr was elected as the city’s first mayor. Folsom Dam was built in 1955 to aid in flood control for Sacramento and to produce hydroelectric power. The lake completely covered Mormon Island, a once thriving Gold Rush town. In 1960, Folsom had a population of 4,000, and the first shopping center was

built in the 300 and 400 blocks of East Bidwell. To counter the competition of the new shopping area, Sutter Street merchants spiffed up historic downtown. Folsom continued to slowly grow for the next 20 years until 1984 when Intel moved into the area. The city expanded south to Highway 50 and east to the El Dorado County line, and by 2000 claimed a population of 52,000. Today, Folsom’s Historic District encompasses the original 90-block town site created by Joseph Folsom and Theodore Judah back in the 1850s.

Year established: 1988 Location: Sited in Folsom, ARCN is bounded on the north by Granite Bay and on the west by Santa Juanita Road, on the south by Oak Avenue Parkway and on the east by Baldwin Dam Road. Price range: According to the Purdys, 75 percent of the ACRN homes are in the $600,000-$800,000 range with a few around $500,000. The rest of the homes go to and exceed $1 million. Style of homes: This neighborhood features custom, single-family homes, with most of them having two stories. The majority of lots range from about 1/41/2 acre. Some homes along the westerly ridge have impressive views of Sacramento. Average square footage: The average size of recent sales is 3,685 square feet with a range from 2,4005,000. “Two gated communities, directly adjacent to ARCN, are also part of this neighborhood,” say the Purdys. “The Cascades and Canyon Falls provide options 56 stylefedh.com - May 2016
for homeowners who prefer less exterior maintenance and the additional security of gate code entry. These homes range from 1,000-2,450 square feet.” Occupants: The vast majority of ARCN homes are owner-occupied, with a wide age range—from new families with school-age children to seniors. Is more development planned? Yes, the initial wave of development from 1988-1995 produced about half of the homes in this neighborhood. An additional 20 percent of homes were built between 1996-2003. The current building adds to the total.
Neighborhood appeal: “The most memorable feature is the much-photographed, iconic waterfall that greets you at the entrance to this beautiful community,” say the Purdys, explaining the area also boasts a network of walking paths as well as a two-mile circle for walkers, runners and cyclists. Davies Park, a City of Folsom facility in the area, has tennis courts, a basketball court, kids’ play area and large all-purpose fields. “This is a neighborhood that embodies pride of ownership,” say the Purdys, explaining the annual $100 HOA dues helps maintain the standards of exterior appearance and promote a sense of community through social events, including an annual picnic and a Christmas dinner party.

n the summer of 2014, after 30 years in the Bay Area restaurant and bar industry, Jim Fales decided it was time for a change. As luck and timing would have it, the location that once housed Po’Boys Bar and Grill in the American River Canyon area of Folsom became available, and that summer, Jim opened the doors to The Canyon Grill and Alehouse. This is an authentic “neighborhood” locale where folks gather over a pint of craft beer, enjoy one of Chef Steve Neal’s gastropub-style dishes and listen to live music. I sampled both food and drink on a recent visit, which coincidentally, just happened to be during Sacramento Beer Week. (OK, so I knew it was Beer Week when I detoured on my way home from

Tahoe.) If you’re a beer lover, Canyon has you covered, thanks to an abundance of bottled selections like Pliny the Elder, Anderson Valley Bourbon Barrel Stout, and Rogue Sriracha Hot Stout. On tap, you’ll find 20 more reasons to stay for awhile: Drake’s 7x70 IPA, Loomis Basin Mandarin Wheat, Drake’s Hella Fresh Pale Ale, Napa Smith Hop Java Coffee Infused Pale Ale Nitro, etc.—so many choices, that a return visit (or several) is mandatory. Oh yes, the food. How about one of their signature spring rolls like pulled pork, chicken cordon bleu or Philly cheese? The latter offering resonated with all the flavors of a traditional cheesesteak but had the added bonus of being deep-fried in a wonton wrapper.
I’m a Cuban sandwich fanatic, so next I was obliged to try Canyon’s version featuring pulled pork. It wasn’t the South Florida classic, but a keeper for sure. I sampled the Buttermilk Soaked Fried Chicken Sliders next and discovered they were moist, crispy and addictive. Another must try is their homemade Pesto Cheesy Bread served warm and gooey, which, when accompanied by a

taste SEAFOOD FETTUCCINI Meet Me in My Cape Cod Kitchen: Recipes for Seaside Living by Linda Maria Steele (Schiffer Publishing, 2015, $24.99)
1. Cook the pasta, al dente. 2. Prepare the fish separately from the pasta. You can either grill the fish wrapped in an aluminum foil wrap with fresh squeezed lemon or bake in your oven at 350 degrees for about 20 minutes for an average size piece of fish. Fish can be delicate, so choose a good piece and handle with care when cooking. 3. In a medium-sized skillet over low heat, melt the butter and add the shallots, garlic, basil and green onions. Allow the vegetables to soften. Toss in the salt and red pepper. 4. Add the cream and 1/4 cup Parmesan cheese, and let simmer over low heat while stirring regularly. 5. On a large plate, place the cooked pasta, and top with the cream sauce, fish, and remaining cheese. Serves 4. Cook’s note: When fresh ripe tomatoes are in abundance on the vine during summer, toss in a cup of fresh chopped tomatoes.

Describe your business. Did you find it, or did it find you? I’ve always been active in fitness, whether it was group or individual sports, going to the gym, or doing outdoor activities. I loved the idea of combining those hobbies with my passion for helping others, and I decided running a gym would allow me to have both in one package. How are you involved with both the community and your customer? We are very involved in both our local and global communities. We have done multiple fundraisers and awareness campaigns for organizations and causes such as St. Jude Children’s Research Hospital, breast cancer awareness and prevention, and autism awareness. We also acted as a drop-off and collection site for supplies to help victims of the Butte Fire in Amador and Calaveras Counties. Why is your staff the best in the business? We are constantly educating our staff on fitness techniques and methods and stay on the cutting edge of the fitness industry. What’s more, we’re always striving to bring the absolute best service to our customers on a daily basis. We utilize a “hands-on” approach, meaning we’re always coaching every member who enters our doors and continually working to help them reach and accomplish their goals. What life accomplishments are you most proud of? Helping people to move better, be more confident, break harmful and destructive habits, and help them lead a more productive and enjoyable life using fitness and nutrition. What’s your hidden talent? I can walk on my hands. Most people wouldn’t guess a guy of my build could do such a demanding movement. What’s your favorite place to eat out locally? Aji Japanese Bistro and Ruffhaus Hot Dog Co. And finally, customer service is…? Listening to what each customer wants to get out of your service and delivering that to them. Everybody has different wants and needs, and it is our job to discover what they are and help clients achieve their goals.

Describe your business. Did you find it, or did it find you? Busykidz Interactive Museum is a place geared toward kids who are walking to about eight years old. It’s designed with exhibits reflecting businesses in the local area (an art studio, market, doctor’s office, home, diner, and more), and children are able to learn skills through interactive and imaginative play. We also offer a weekly story time and recently added a number of classes. We hope this becomes a place where the community can come together, as we know it takes a village to raise a child and what better place to help do so. Last July, we took over ownership of the business, completely remodeled, and opened August 1. It’s been quite the adventure! Why is your staff the best in the business? Anyone willing to deep clean 3,500 square feet of children’s pretend play toys with a smile on their face is the best! What life accomplishments are you most proud of? This! It’s a dream come true for both of us. Jessica is in her mid 20s, and I’m in my early 30s. We have dreamed of owning a business of our own for quite some time now. Who is your role model in business or in life, and why? Our families have supported us and pushed us to do our best. Many of our exhibits are named after some of those who have guided us along the way. What’s your biggest job perk? Getting to know so many families in the area. Where do you and your family go locally to have fun? We like to go to the lake and be outdoors. If you could meet someone living or dead, who would it be and why? Martin Luther King, Jr., because of his ability to inspire and bring together the community. And finally, customer service is…? Priority!

ext time you start feeling sorry for yourself, think about Brittany Gaines. Then shut your pie hole. While other kids this month are preparing to receive their high school diplomas, the 23-year-old Shingle Springs resident earned hers back in March, something she would’ve done at an earlier age if she didn’t have the hassle that comes with, you know, being a legally blind quadriplegic who’s unable to speak without great difficulty. Disclosure: I’ve known this remarkable young lady for several years. Her dad, Bill, is a wildlife conservation lobbyist. as caring for her. Brittany hoped to graduate from her public high school back in 2011. And while I could explain what happened, it’s only fitting that, like everything else in her life, Brittany does it herself. In an email exchange, she said, “The school wasn’t accessible for my needs, both physically and academically. I dreamed of graduating with my friends, but the school district wanted me to settle for a certificate instead of a diploma.” As anyone who knows her can attest, the word “settle” doesn’t really work for Brittany. This is an active girl: she loves boating with her family, goes hunting with her dad, and stays up late attending every country concert that rolls through town. So, in 2010 she withdrew from that school and enrolled instead in the Hadley School for the Blind, a correspondence school in Chicago. It wasn’t easy—and by not easy I mean the difference between hiking up a small hill and climbing Everest in a blizzard, strapped to a motorized wheelchair. Even though academically she only had two years left,
earning that coveted diploma took four. But she did it—with a 3.8 GPA to boot. Why was she so determined? “Because I knew I could do it,” she fairly roared in her email back to me. I’m surprised she didn’t punctuate it with an all-caps DUH. “I have all of the same goals and desires as any other 23-year-old. I want to be successful, and a productive member of society. I want to be independent and live on my own.” What’s next? More goals. More dreams to follow through on. “I plan on going to college and studying to be a counselor for students like myself.” I was going to write that she hopes to be enrolled in Folsom Lake College this fall, but she will be. I have zero doubt. Cerebral palsy (CP) is a cruel cage of a disease. It keeps its victims locked inside themselves. I knew a guy in college with CP. John Jankey. He was lucky. He could walk, but only with much difficulty. A 4.0 engineering student, he was also a surprisingly deadly pool shark and possessed a wicked sense of humor, often wearing a shirt that said “Help, I’m trapped inside a human body.” And that’s exactly what CP is like. But what people like him, or like Brittany can’t do physically, they can still do mentally. And they do, with a determination few could ever understand. It’s funny how those of us blessed with all the good health in the world can be such a whiny bunch, while those with actual, bona fide reasons to gripe, complain and…settle… rarely do anything of the sort. I’m impatient if I have to wait too long at a red light. Brittany gets frustrated with “everyday needs, like eating, grooming, restrooms, etc.” Suddenly that red light isn’t such a big deal. People like her are the best of us. All of us should aspire to be the kind of dreamers, doers and fighters that they are. That she is. So, since we’re lucky enough, let’s all unclench our pie holes for a moment and say a prayer of thanks for our good fortune. Let’s think about Brittany, and yes, let’s cheer her on. But we should also let her inspire us, because she’s the kind of person who shows the rest of us what’s truly possible. If only we refuse to settle.
