D
oug Hawkins has been part of our community for generations and is giving back to the community he cares about. “I feel it is my duty to give back to the people of El Dorado County and help ensure quality healthcare.”
Doug graduated from Ponderosa High School and began his career as a nurse at age 21. “Working with the Elderly is a calling and passion for me. My goal is to help keep Skilled Nursing up here in the foothills and for families to not take their loved ones out of the area for their care,” Doug commented. Doug takes pride is serving as the Hospital Administrator for Western Slope Health Center here in Placerville. “Our Hospital was awarded the Centers for MediCare 5 STAR rating and we occupy up to 99 people. We average close to 40 admissions and discharges a month with a home return rate of 92%.” Western Slope Health Center is a Post-Acute Hospital caring for those requiring short term rehabilitative services. We employ talented registered nurses, physical therapists, occupational therapists, speech therapist, registered dietician, nurse practitioners and our house physician. “My hobbies, well to know me is to know I enjoy my wife and children on our small ranch in Shingle Springs. It’s summer-time which means the County Fair. This is my favorite time of year! I love raising chickens and goats.” Being an advocate for youth programs, Doug has been active with coaching soccer and little league, and mentoring 4-H kids with livestock raising for the El Dorado County Fair.

editor’s note What’s in a name? When it comes to picking one for your pet, there’s a lot on the line. WikiHow even has a seven-step process to help owners decide (with amusing illustrations to boot).The option of going with a human name— like Lucy, Lola or Lloyd—remains increasingly popular, but can get awkward if your dog’s name is Kevin and you start dating an actual guy named Kevin. There’s the cliché, cutesy names like Spot, Spike, Fluffy or Fido, which work well— until your cat named “Lucky” doesn’t make it to nine lives. And then there’s my personal favorite—pets named after random foods that the animal might resemble or somehow be associated with (a chocolate lab named Nutella seems fitting, right?). My family’s animals were a mix of monikers; we had a Wiggles (mini rex rabbit), Forrest and Jenny (desert tortoises), Moe (German shepherdlab mix) andYawnie (Siberian cat), and—though my choices didn’t always win in the name game (my older siblings usually won that battle)— each one brought an abundance of joy and laughter to our lives, just as your own creatures clearly do for you. From the moment we put the call out asking for“People & Their Pets” submissions, the photos came pouring in. And while some of the names made me laugh a little (namely the cat named Benjamin Button), it was the tales behind the tails that really had me feeling all fuzzy. It’s clear that our community is one pet-obsessed place. Not only are there heaps of parks and trails that welcome fur friends with open paws, but a plethora of Fido-friendly patios as well. Flip to page 53 to see a list of our favorites and to peruse the pictorial of our region’s hottest dogs and cutest cats. For those who aren’t pet people, fret not! We have plenty of other fun stuff in store. In The Hit List (page 74), we celebrate the region’s best BBQ with our roundup of the tastiest joints in town to get your meat on; and—when it’s time to detox after all that finger-lickin’ good fare—we have a “Juice Bar Roundup” (page 38 ) with what to order at each place. Fortunately, yes—there are several options available. Though difficult to treat, indentations can be filled, and the texture can be softened and thickened to feel more like your pre-scar skin. My swimming goggles always leak and are uncomfortable. Can you help? It’s important to find goggles that are the right size and fit for each swimmer. Goggles should fit snug around the eyes for proper seal, but should not be so tight that they’re squeezing your head. When trying them on, you should be able to pull the nose piece and feel a little suction. We also suggest goggles that have two straps, which help keep them in the right spot on the head. Goggles are cut in different shapes and sizes by different manufacturers, so it’s recommended you try a variety of brands and styles. What may fit for one swimmer can be different for another. // Ken Huseman has been a volunteer usher with the Harris Center for the past six years. The 92-year-old World War II veteran served in the Battle of the Bulge, spent 38 years working, and raised a family, which now includes six greatgrandchildren. He has a lengthy resume, but that doesn't stop him from adding to it. "I'm a people person," explains Huseman. And he often is—if not volunteering, you can find him at the Harris Center as a spectator taking in a ballet performance or symphony concert. He describes himself as "not one to sit around," and has previously donated his time at the Folsom Police Department, his church and the local food closet, in addition to assisting seniors with their taxes. He saw the enjoyment his beloved wife got from volunteering and, once she passed, knew he had to keep himself busy. Taking after his neighbor who was a volunteer at the Harris Center, he's been hanging around ever since. "They call me a troublemaker here!" he says, but staff and patrons appreciate him; so much so that he was recently awarded the Harris Center Hero Award, which celebrates someone whose contributions have made a great impact on the Harris Center. His 1,500 hours of volunteering were commendable, but it was his smiling face, sense of humor and kind heart that truly earned him the honor. "Money couldn't buy what I get from these people. I get my therapy for free," he says.—Emily Peter

Folsom resident Aaron Hutchinson saw his first Ironman competition on TV when he was just 12 years old. He remembers thinking, “I’m going to do that someday,” but it wasn’t until many years later that he would make his dream a reality. Now in his forties, Hutchinson has swum Alcatraz 10 times, completed 12 marathons and eight full Ironmans, and raced in over a hundred triathlons. He credits his mother, Denise Sichel, for influencing much of his competitive drive. Born as an amputee below the left knee, she never let her disability stop her, or even slow her down. “She taught me that when you fall, you get back up,” Hutchinson attests. “It doesn’t matter how quickly you get to the finish line.” In addition to racing, Hutchinson is an author, triathlon coach, yoga instructor, events director,

and the CEO and founder of Body on the Move (bodyonthemove.com), an organization that facilitates fitness and running events throughout Northern California. He firmly believes that races are an important way of building community while also helping others. He’s volunteered at events for Blue Heart International and 3Strands Global (both anti-human trafficking organizations), and has been instrumental in raising tens of thousands of dollars in race proceeds for local and national nonprofits. For Hutchinson, it’s all about serving as a role model, especially for his 21-year-old daughter Hayden. “I found my calling when my daughter came along,” he says. “I realized I wanted to bring people together— and to give back.” —Amber Foster

The Folsom City Zoo Sanctuary recused 13-year-old Xena, a bobcat lynx rufus, in January. She came to Folsom via Washington where she was found as a kitten and raised as an illegal pet before being relinquished to a local rescue center. As of late, Xena has been growing more social and friendlier toward the zookeepers. She enjoys playing with and tearing open by Guy Easterling pizza boxes with mice in them and has been known to mark her territory by spraying her scent; a few of the zookeepers have even come close to a direct hit. Remember: Wild animals don’t make good pets. If you find one, leave it be; the parents will come back and care for it. Dry kibble is manufactured through an extruder, a machine that turns the base ingredients of protein, fruits, vegetables and added vitamins and minerals into chewable bits. To ensure the various ingredients stay in one piece, an “adhesive” item must be added; in most cases, this is a starch—potatoes or rice—which some people believe increases the occurrence of diabetes. The holistic pet food industry has taken the lead on replacing these added st arches with certain vegetables and/or legumes (e.g., chickpeas), which act as the “adhesive” and,
in turn, reduce blood sugar levels. CAN OLD DOGS REALLY LEARN NEW TRICKS? All dogs crave leadership— even older dogs. Leaders provide rules, boundaries and structure; when dogs are being led and know what’s expected of them they’re less stressed. In addition, dogs are habitual animals, so it’s important to create good habits and stop bad ones. When an older dog has been allowed to exhibit a behavior for a long time, it can take more time to create a different behavior—but it can be done. Work on the following training skills daily to provide dogs with the leadership they crave: »» Teach them how to do a focused walk and to walk at the “heel position.” When you lead the walk, you’re showing the dog that you’re in charge and they’re more likely to listen when it comes to other obedience skills. »» Teach them to go to a place, lie down and stay. We spend at least 90 percent of our time with our dogs in the house. If we can get them to lie down on a bed and stay, and we can walk freely around the house, it shows we have the freedom and they are controlled. »» Teach them to wait at the doorway rather than bolt through to help provide boundaries in the home. The “wait” command allows you to dictate when they can have freedom in the backyard and to learn it’s not OK to run through the front door for safety reasons. Try the skills mentioned above, and remember to be patient, repeat the task over and over, and be consistent. In time, your older dog will learn new tricks. Holding both a decorative arts degree and a master’s in civil engineering, Statescu uses both skill sets when creating her award-winning masterpieces. “When I create my art, I want it to be pleasing to the eye and touch the soul,” shares Statescu. Participating annually in the EDHAA Studio Tour, Statescu has upcoming shows at the Harris Center’s Bank of America Gallery, Sacramento Fine Arts Center, and the KVIE Art Auction. HLB: WHAT ARE SOME OF YOUR MAJOR INFLUENCES? AS: From my early childhood years in Romania, art has always been present. My dad, an accomplished physician, was also a talented painter. We had a large collection of art books and he always encouraged my creativity, [which gave] me wings. The simplicity of lines in

the arts modern art or cave paintings, the softness of impressionist colors, the sincerity and vibrancy of folk art from different countries, and of course nature and [my] surroundings, are all influences. HLB: HOW DO YOU INTERPRET YOUR INSPIRATION? AS: I want to create art that makes people happy. The glazes I use on my ceramics are also food-safe, so they can be used in more than decorative ways. Besides art in general, nature is a huge influence on my work. I love fall colors, which you will frequently find in my pieces. I also use a lot of things found in nature (flowers, leaves, pine cones, pebbles, shells, etc.) to create textures, or as inspiration for decorating my ceramics. HLB: DO YOU HAVE ANY ADVICE FOR DEALING WITH ARTIST’S BLOCK? AS: In an old movie, a famous writer advises a young one on writer’s block by saying: “Put a blank page in the typewriter and start by typing a word, any word. The others will follow.” In my case, I go into my studio, roll a slab of clay, and the inspiration starts flowing; other times, I look for inspiration in my files containing photos of past works, places, or things I like. Sometimes just a walk in nature works, too. HLB: WHAT DO YOU ENJOY MOST ABOUT OPEN STUDIO TOURS? AS: For the artist, they’re a great way to share your passion with art lovers. To see that people appreciate what you do is not only rewarding but a great incentive to continue developing as an artist. You meet a lot of nice people, hear a lot of interesting stories, and get a lot of ideas. hen the dismissal bell rings, school kids typically skedaddle.
What child wants to attend more classes? In the Sacramento area, 150 of them eagerly do. They’re “Lil’ Pups,” at-risk youngsters enrolled in Playmakers, an innovative after-school program that offers catch-up reading instruction with character-building and active play. Now on seven area elementary campuses, Playmakers reaches up to 30 third- through sixth-graders per school for an hour and a half every Tuesday through Friday. Classes cover three segments: reading, values-building and activity. On a recent visit to Playmakers at Blanche Sprentz Elementary School in Folsom, a dozen students were quietly navigating their online reading practice. At the end of 30 minutes, teachers/coaches Anthony Viveiros and David Villaneuva, two recent Sacramento State grads, tossed out questions about character and leadership. What is integrity? How do we pay forward? What is character? All the kids knew that one: “Doing good things when no one is watching.” The session ended with

TWO LOCATIONS NEAR YOU outdoor play—that day it was tug of war with a thick rope, kids against coaches. The two former football players proved a tough challenge. For many of these youngsters, life is a challenge. Greg Roeszler, a former NFL player, founded Playmakers in 2009 after learning several of the high school football players he coached were struggling with school and family issues. “Coach Roz,” as everyone calls him, realized coaching methods could help these kids grow academically, as well as instill selfconfidence, character and leadership skills. The key, Roeszler says, is giving them a sense of belonging. “We make them part of a team, part of a family, and they want that.” Their new self-confidence enhances learning, which has helped improve reading skills. Playmakers is free to the children, thanks to generous donations from individuals, businesses and civic groups. As in the grown-up world, the kids’ successes are rewarded. Their final treat is an annual bus trip to Stanford University—where Playmakers volunteer Harrison Phillips is a standout defensive end—to tour the campus and attend a football game. Sprentz Principal Andy Smith praises Playmakers’ results. “It’s a good program, because they’re all about [teaching] values, [staying] on task, and being responsible, respectful and kind,” he says. “We definitely see an improvement in behavior that’s reinforced throughout the school.” School may be out for summer, but the learning won’t stop. The program is operating eight weeks of summer camp for ages 8-12 at Oak Hills Church in Folsom. When asked what they liked most about the program on my recent visit, all the students wanted to talk at once. “It’s awesome,” according to Karina. “My favorite thing is the coaches,” Olivia says. “They coach us hard, but I like it,” Jose says. Hard or not, the coaches are soft on the kids. “Supporting these kids is passion to my heart,” Viveiros says. “Only good things happen here.” theplaymakers.org

In the dining room, we splashed black paint on the walls to create a room that feels cozy and curated, then offset the darker color with hues of blush, ivory and gold. Spaces like the living room and bedroom are perfect areas to embrace texture; select a foundational piece (like a rug or large piece of furniture) and build around it, using natural textures like jute or wood with metallic hues like lacquered pots and vases, gilded furniture legs and flowy fabrics.

ots of surprises await those who decide to try Folsom’s new gastropub Grist Beer Hall. What
struck me initially was its location—a “beer hall” in a high-end retail setting. The next thing that caught my eye was a digital beer menu displaying 50 selections just above the concrete bar, and 50 tap spigots protruding from the stainless steel and white tile backsplash. A beer lover’s nirvana, indeed. The epicurean bill of fare continued the trend of twists. Seldom, if ever, would you find chicharones, poutine, bahn mi, and chicken and waffles cohabitating on the same menu. For those keeping score, that’s one each for Mexico, Canada, Vietnam and the American South. I star ted w it h THE CHICKEN WAS the chicharones— made to order with CRISPY, JUICY AND THE a dusting of orange PERFECT COMPLEMENT cor iander salt. Perfectly crunchy TO THE HERBED WAFFLE. and not oily, adding a splash of hot sauce and a crisp, cold beer officially triggered the salivation mechanism. Next up was the aptly named Big Ol'Board—an artisically presented smorgasbord of cured meats, artisan cheeses, house marmalade, mixed olives, spiced nuts, hoppy pickles and rosemary focaccia—that's perfect for a party of two. Out of the norm and into the realm of gigantic came the chicken and waffles. The plate—large enough to easily feed three—featured savory Belgian waffles, house-cut and breaded chicken breasts, fiery Tabasco maple syrup, apple-bacon jam and spiced honey butter. Yes, it’s a lot of competing flavors, but if its too much, leave one out—they’re served on the side. The chicken was crispy, juicy and the perfect complement to the herbed waffle. Last but not least was the crispy poutine—something most Folsomites should have no idea about since its origins and popularity hail from the very North and very East. The twist here was the stout beer gravy. Rich with a hint of sweetness, I could HOURS: 11 a.m.-9 p.m. (Sundayhave gulped it out of a pint Wednesday), 11 a.m.-10 p.m. (ThursdaySaturday) glass. TAB: $$ Just a couple other things of note: The omnipresent HEADS UP: Happy Hour (3-6 p.m. Monday-Friday); 5 oz. pours and beer pigeon you’ll see is part of flights available; 50, constantly rotating their branding (the amazing craft beer taps; kids’ menu available; communal-style seating mural was done by local artist Raphael Delgado) and there’s a story behind it, but I’ll let you find out when you stop in. Firehouse Subs // I took one look at the Firehouse Hero specialty on Firehouse Subs’ menu and knew I had to try it. How could I
not? It looked like the ultimate sandwich, packed with roast beef, smoked turkey, Virginia honey ham, melted provolone, lettuce, tomato and onion. When I finally got my hands on the sandwich—along with a drink and glorious chocolate chip cookie that was part of the combo—it was everything I’d envisioned and more. The loaded sandwich was a great way to get my protein intake for the day—nay, week. Each meat shined on its own and wasn’t lost in a cacophony of flavors. The bread was warmed to have the perfect bite, and the mayo and mustard only added to the cohesiveness. I was tempted to try one of their hot sauces that are rated mild to hot, but thought I’d sauce out next time. And the pickle that came on the side? That was the icing on the cake (I might even prefer it to actual cake). I love coming here, mostly because of the stellar service, but also because a portion of my purchase goes to the Firehouse Subs Public Safety Foundation, which provides lifesaving equipment to first responders. They say they do it “all because at Firehouse Subs we believe that making great subs is not enough; you have to do good, too.” So far, so great. Bravo, Firehouse Subs! Firehouse Subs, 1001 East

10 oz. fresh Mexican *chorizo, casing removed 1 medium-sized red bell pepper, diced 1/2 cup diced poblano chile (from 1 small chile) 1/2 cup vertically sliced red onion (from 1 small onion) 1/2 tsp. kosher salt 1/4 tsp. black pepper 12 corn tortillas, coarsely chopped 8 large eggs, lightly beaten 4 oz. Monterey Jack cheese, shredded (about 1 cup) 2 oz. pepper Jack cheese, shredded (about 1⁄2 cup) 1/3 cup whole milk 1/2 cup chopped fresh cilantro Hot sauce Sour cream *Mexican chorizo easily crumbles, unlike its Spanish counterpart, which is dried, cured and similar to salami.

Heat a camping stove to medium-high (about 375°-400°F). Preheat a 10-x-3-inch cast-iron fryer with a lid on the camping stove for 5 minutes. Add the chorizo, and cook, stirring to crumble, until cooked through, 6-8 minutes. Using a slotted spoon, remove the chorizo to drain on a plate lined with paper towels. the vegetables are softened and lightly browned, 4-6 minutes. Stir in the chopped tortillas.

Stir together the eggs, cheeses and milk in a medium bowl. Return the chorizo to the fryer, and stir to combine with the tortilla mixture. Pour the egg mixture over the top, and cook until the eggs just start to set on the bottom and outside edges of the fryer. Gently draw the eggs from the outside edges to the center, repeating the process until the mixture is very loosely set. Reduce the camping stove heat to low (about 275°-300°F). Cover the fryer, and cook until the eggs are set and the mixture is cooked through, 8-10 minutes. Sprinkle with the cilantro, and serve with the hot sauce and PAIRS WITH... sour cream on the side. Serves 6.

I’ve been in the jewelry industry for over 18 years. I started during my senior year of high school and am very fortunate to have had the opportunity to excel in all aspects of the business—from being a bench jeweler to an appraiser, buyer and manager in both independent and corporate jewelry stores.
A little bit of both! My business has grown and changed to become what it is today. Mosaic Art Therapy is a result of combining my passion for creativity and helping others. I began studying psychology in high school and was immediately captivated when learning of art therapy. It’s an ideal combination of my interests and quickly became my career goal. I’m inspired by the healing power of creativity that I’ve witnessed and personally experienced. After many years of providing therapy in different settings, I’m excited to be focusing solely on my private practice.
How are you involved with both the community and your customer? I’m involved with the Rotary Club of Folsom and the Folsom Chamber of Commerce.
Who is your role model in business or in life, and why? My mentor and former boss showed me everything I know about the business. He took me under his wing and opened a lot of doors in the industry for me. I learned that without integrity you’ll never earn respect. The importance of giving back to the community was something he emphasized a lot, too.
Where do you go when the going gets tough?
How are you involved with both the community and your customer? I offer therapy services for children and adults in the community and hope to facilitate art therapy groups in the future.
What life accomplishments are you most proud of? I’m a new mom and loving it! Although it’s one of the most challenging roles I’ve ever had, I am proud and grateful to embrace it.

Being involved in people’s journeys. Partnering with clients to work toward their goals is an absolute honor and often very rewarding.
I can sing, play the guitar and am a tequila aficionado—all at once.
What’s your favorite childhood memory? As a kid growing up in the Philippines, it was like an adventure! I immigrated to the U.S. (to Davis) when I was 15, and the type of independence I grew up with really helped me adapt when I moved here.
Where do you go when the going gets tough? I’m very thankful for my support system. My family, husband and close friends are amazing and always there for me.
What are your favorite places to eat out locally? Hop House, Milestone Restaurant and Chicago Fire.

Very personal. I work for the customer and am honored that I get to celebrate life’s precious and momentous moments with them.
The foundation of effective therapy. Active listening, empathy, acceptance and support are integral parts of both therapy and customer service. Developing a trusting relationship and respecting the client are always key.

Paws-itive Parenting 6 Types of Pet Owners

clothes for your dog than I have for myself. You tell yourself your dog loves wearing an ugly Christmas sweater. They’re fine with it! That’s a smile on her sweet, furry face—not a grimace. She’s not embarrassed, she’s just shy. I have a friend who bought her dog goggles, so he wouldn’t get sand in his eyes while they were at the beach. Very thoughtful. I will admit, however, that I’ve dressed my cat, Agnes, up in a costume at one time or another.

The category above goes hand in hand with the carrytheir-pet-in-a-purse owner. No explanation needed, and no, I have not done this, but have you seen that commercial for the sweater that has a pouch on the front so you can carry your cat around like you’re a mama kangaroo? I’m a little tempted.

How about the I-have-more-pictures-of-my-petthan-I-have-of-my-family owner? I’m guilty of taking pictures of my cat. She’s adorable. Why wouldn’t I? Some friends of mine took that to another level. They took their dogs, all shih tzus, to a portrait studio in the mall and had group photos taken. I witnessed the whole thing and even have a photo to prove it. There’s nothing wrong with sharing your pet with the social media world—just don’t go crazy.

The exotic pet owner likes to be a little different. Sure, puppies are cute, but these people love their pythons. Try putting a sweater on him, though. I suppose it would be more like a tube top.
We all love our pets, whether they’re dogs, cats, hamsters or ducks, but not everyone shows their love in the same way. If you have a pet now or have had one in the past, you may relate to at least one of these types of pet owners. Or, like me, you could be a mix of several. Perhaps you’re the casual owner— one who has a dog or a cat but doesn’t do much else besides feed them and take them for their annual vet appointment. If so, your love is low-key. You don’t expect much from your pet. You’re roommates. Just so long as they don’t eat your yogurt without asking, everything is cool.
