editor’s note The word “may” may have multiple meanings, but to me it only means one thing: the start of summer. Though the official season of barbecues, sun-kissed skin and long, lazy days that call for poolside revelry doesn’t begin until next month, in my book, it commences on Memorial Day. As a youngster, I remember it was typically the first weekend of the year when my family would set sail on our family friend’s boat (the best kind of friend-ship to have, right?) at Folsom Lake. We’d bring a cooler packed to the gills with sandwiches, Capri Suns, chips and dips aplenty; and swim, water-ski and inner tube until the sun dipped down and our fingers and lips pruned. The tradition would continue every Friday throughout summer and—despite all the camping trips and other sun- and fun-filled memories—remains the one I hold most dear. My fellow Stylers also agree that summer should come early, hence this month’s feature, “Your Perfect Summer Day,” where Sharon Penny shares 99-plus ways to make this year’s unforgettable. Whether you’re a foodie looking for seriously sweet ice cream parlors with fantastically funky flavors, a night owl hunting for post-sundown adventures that are a hoot, or a parent seeking kid-friendly activities, we have it all (even five places to get away without going far away). It’s a guide to all things summer that’ll have you eager as a beaver for the temps to rise. Amidst all the warm-weather thrills, however, let’s not forget to celebrate the original leading lady —Mark Twain in our lives: the moms. May 14 is a day dedicated to them and, if yours is anything like mine, she’s worth raising a glass and toasting to; after all, there was (and continues to be) a lot of blood, sweat, tears and years put into making our family functional. Flip to page 20 for 10 local ways to say “thank you” and make the celebration extra special. ask the experts Why don’t traditional fad diets work longterm for most people? Fad diets focus on cutting ca lor ie s ; howe ve r, manipulating calories really has nothing to do with longterm weight loss. If this were true, then everyone who cut out soda and ate more vegetables would all be skinny, while those who consumed tacos and beer would all be obese—neither of which is true. The main problem with dieting is the foundational premise stating you must eat less. Diets that encourage eating less perpetuate a false oversimplification of “calories in, calories out.” Your body does not work that way. When you cut calories, your body adapts over time, and usually within a couple of weeks your metabolism will slow down to conserve energy. Weight is lost, but you end up with a slower metabolism; then the weight comes back and this vicious cycle often gets repeated. Before long, your metabolism is reduced to a slow crawl and your weight is no longer manageable. A healthy metabolism is the name of the game. Improving your metabolic function is key to sustained weight loss and, unfortunately, diets do not address the root cause of metabolic insufficiency.

Mikuni Restaurant Group CDO (Chief Dreaming Officer) Taro Arai grew up on a small island in southern Japan and was often bullied for his refusal to conform. Once, he shaved a strip of hair down the center of his scalp. “I had a reverse mohawk,” he says, adding with a laugh, “I got into trouble for that.” His role model growing up was his father, a pastor, who—despite their family’s limited income—regularly fed up to 15 people in need out of their kitchen. When Arai was 16, his family moved to California and opened a Japanese restaurant. They had no prior experience, and the early days were a struggle, much of which is documented in his memoir Abundance: Finding the American Dream in a Japanese Kitchen. He became a self-taught sushi chef, and his flair for experimentation eventually helped make Mikuni a success. On May 9, the

group is hosting its 30th anniversary party, of which a portion of proceeds will go to 3Strands Global, UC Davis Children’s Hospital, and Cosumnes Oaks High School’s Culinary Arts Academy. Indeed, Arai has continued to follow in his father’s footsteps. Through the annual Mikuni Summer Golf Classic, the Mikuni Charitable Foundation has raised tens of thousands of dollars for local and national nonprofits, including over a million dollars for breast cancer awareness. And these days, even when Arai shaves his head, he does so for a cause— most recently to raise money for childhood cancer research. “My dad always says, ‘be humble, give back to God, and give back to the community,’” he shares. “I believe we’re here for that reason.” —Amber Foster

This free event—where more than 30 miles of beautiful country roads (centered around Scott Road) are open solely to cyclists and pedestrians for seven hours—is made possible by the City of Folsom, Sacramento County, El Dorado County, the City of Rancho Cordova, the 50 Corridor Chambers of Commerce and a variety of community sponsors. Fast riders can access the course from 8-10 a.m.; from 10 a.m.-3 p.m., the speed limit slows for family-friendly rides. It can be difficult picking a nonprofit to donate to, but with Big Day of Giving (BDOG), you can put those worries aside. Their website covers 600 local nonprofits with information about the organization and its needs. Once you’ve chosen one (or more) to support, wait until midnight on May 4 to donate, as this is the main event for BDOG. For 24 hours, donations can be made online and will be tallied as the day goes on. This community-driven event is only in its third year and has already raised over $16 million. “Everyone whose life is touched by the important work that nonprofits in the Sacramento region do benefit from BDOG. They make our neighborhoods vibrant, empower young people, protect our landscapes, and serve our most vulnerable populations,” explains Sacramento Region Community Foundation Marketing Associate Vasey Coman. Local nonprofits participating include the Folsom Historical Society and Friends of Lakes Folsom and Natoma, and some have activities happening the day of. Ernie is an 11-year-old zebu—sometimes known as indicine or humped cattle— and has been at the Folsom City Zoo Sanctuary since 2011. Originating in South Asia, they’re one of the world’s smallest species of cattle and are characterized by a fatty hump on their shoulders, a large dewlap, and sometimes droopy ears. Ernie was raised as a pet and became a resident at the sanctuary when his owners could no longer care for him. Although he loves by Sharifa Moore spending time with his fellow pasture animal residents—Dasher, Rosie, Hallie, Gus, Fanny and Jasmine—he has a tough time getting around due to arthritis. He’s looking forward to moving into his new home at Barnyard Experience, which will have a much larger pasture on beautiful grassy, non-sloped terrain. According to zookeepers, Ernie has quite the personality. He loves to sneak up—well, slowly walk up—behind them while they’re carrying his food and grab a mouthful of hay. Kimberly Godinho Versatile Virtuoso

Award-winning ar tist Kimberly Godinho not only creates breathtaking pieces in an array of mediums, but also illustrates children’s books, teaches art in multiple subject matters, and commissions murals and other projects across the country. What’s more, she’s the owner and founder of The Painted Cork in Folsom and Sacramento. With a goal to produce even more art, Godinho’s future is looking bright. HLB: HOW’D YOU GET YOUR START IN THE ARTS? KG: I started wearing glasses when I was two years old, and as a way to strengthen my eyes and avoid surgery, my mother had a constant string of art projects for me to work on. This was never a torturous act; I loved every bit of it! Over the years, I developed my drawing skills and was considered the “artist” of the family. In high school, I excelled in art and even earned a couple of scholarships. I attended Ringling College of Art and Design where I obtained my bachelor’s degree in fine art and graduated with honors. During my time there, I won numerous grants and scholarships, including the New York Studio Residency Program, where I got to live and work in New York City my junior year. HLB: DO YOU HAVE A FAVORITE MEDIUM? KG: I’ve enjoyed and dabbled in all aspects of art and have welcomed the skills that came with it—oil, acrylic, watercolor, pastel, colored pencil, stone carving, wood and plaster sculpture, and printmaking. I’ve always tried to develop myself as a “jack of all trades” when it comes to creating art, and I like to claim no single medium as my one and only. As the years progressed, I developed an ironclad love for teaching art, which has led to my current status as owner and operator of The Painted Cork.

HLB: WHERE DO YOU SEEK INSPIRATION? KG: I find inspiration everywhere and in all aspects of my busy life; however, when I have time, I love to be in nature. The beach, lake, mountains, rivers and any other place where I can find peace are great places to clear my head and find inspiration. 4

HLB: HOW DO YOU INTERPRET THAT INSPIRATION INTO YOUR WORK? KG: I’m constantly in search of images for our classes [at The Painted Cork] and am inspired by the beauty of day-to-day subject matters and simplistic compositions. I have a series of paintings called Journal Pages where I’m inspired by words, poetry and the construction of words and images to make different meanings. I paint these in thick and thin textures of different mediums and consistencies; their surfaces are like frosted cakes with gooey drips of information. I also have a series called Coin Paintings, which originated from my father’s passing where he left me a small coin collection. Studying these tiny treasures, I unearthed an obsession with how the surface metal of old coins can become a dusty montage of scrapes and earth tones; or, if perfectly preserved, they turn into the most beautiful color combinations imaginable. They’re each individual, unique masterpieces, and I love trying to mimic their beauty in paint. coinpaintings.us

Halotherapy, also known as dry salt therapy, is a holistic approach that mimics the microclimate of a salt cave and can help treat conditions such as allergies, asthma, eczema, psoriasis, snoring, sleep apnea and stress, among others. “Dry salt air is dispersed into an enclosed or sealed room through a unique process generated by a halogenerator,” says Erica Colby, owner of SALTS in Granite Bay. “This type of treatment is a safe and effective way of using salt’s natural antibacterial, anti-inflammatory and super-absorbent properties to provide relief for respiratory and skin conditions.”

It’s the same salt that hospitals use and the same type [that] all the research has been conducted on.” When salt is heated, it becomes extremely dry and kinetically more active. “This heated and dry pure sodium chloride is then crushed into microsized particles and dispersed into the air in an enclosed environment,” Colby continues. “When microparticles of dry salt are inhaled into the respiratory system, it does its job by absorbing and removing allergens, toxins and foreign substances in your lungs and throughout your respiratory tract. Salt also reduces any inflammation and opens airway passages, [thus] making it easier to breathe.” Halotherapy offers the best results when practiced regularly. The benefits are accumulative where consistency and frequency is the key. Colby says halotherapy is also safe for children, and that they often respond to the natural treatment faster than adults. Rachelle Brendlin, marketing manager at Heavenly Salt Spa in Sacramento, says you may salt safely two times a day, though it could become quite costly in the long run, as most sessions cost around $40-$50. She also recommends going daily for eight to 12 days if you have severe ailments and would like quick results. Otherwise, most would benefit from weekly sessions. “Clinical studies support that breathing in hypertonic saline creates an improved lung function and clears mucus in an accelerated capacity,” Brendlin says. “Respiratory diseases, such as cystic fibrosis, bronchial asthma, and chronic obstructive and non-obstructive bronchitis, all benefit from natural salt therapy.” What is the experience like? For the 45-minute session, you’ll enter a room with Himalayan salt on the walls and on the floor. In the adult suite, you’ll find comfortable recliners to relax in and you can choose to listen to relaxing music, read a book, meditate or simply rest. Trojans, the school’s mascot, this group of parents, alumni and community members are warriors—dauntless in their quest to make Oak Ridge High School one of the top performing high schools in California. The foundation wears its Trojan armor proudly and is confident in its mission “to support and enhance Oak Ridge High School and the El Dorado Hills community by promoting interscholastic, academic and cultural programs, as well as capital improvements that promote continual learning.” N e a r ly t wo d e c a d e s ag o — w h e n Oak Ridge had a much smaller school

population and El Dorado Hills was on the verge of a huge housing boom—Ann Root and Anthony Scotch recognized the need for the community to provide more to the school, so the two launched the foundation and began conducting fund-raisers and donation drives. One of their first contributions was assisting in building a new football stadium. “With vision, determination and hard work, photos by DANTE FONTANA

Trojan Stadium rose to be the standard for the El Dorado Union High School District’s athletic competition facilities,” President Brooke Van Komen explains. “Over the years, the foundation has donated more than $2 million to Oak Ridge. It has helped to upgrade and add to the funds from the district to provide more classroom technology, music and performing arts support, science equipment, gymnasium reconstruction, baseball and softball field renovation, netbooks, software, and the list goes on.”

Van Komen has been involved with Oak Ridge High School for the past eight years in various capacities, including Sports Boosters, chairman of the Blue and Gold Auction, a parent volunteer supporting ASB Leadership, and secretary to the foundation before assuming her current role as president. “I literally became involved by going to teachers and administration and asking, ‘How can I help?’” she says. Currently, the foundation is collaborating with the El Dorado Hills Community Services District—along with the El Dorado Union High School District—to create an outdoor learning experience along the New York Creek Trail. “With curriculum from the State of California Education Environment Initiative, we hope to provide residents, educators and students with an outdoor lab experience for field trip opportunities and educational, family-friendy hikes,” says Van Komen. “We also support the administration and faculty of Oak Ridge with ongoing teacher training, classroom grants and software updating.” This summer and fall, the foundation will coordinate a football ticket sale fund-raiser for the Trojans (reserved seats for all varsity home games—much like season tickets for college or pro teams). A POOLSIDE PERCH

Until dinnertime rolls around, long summer days are often spent in the water. Pool spaces require a couple of intentionally layered design elements, including somewhere to sit, tabletops and a safety feature, along with waterproof essentials like a patio umbrella or lounge chairs. If your home is the hangout for families, it’s key to have a place to stow sunscreen, pool toys and flotation devices. Have a more adult-friendly pool? Keep the refrigeration center near, a stereo system in place, and plenty of cozy seating for lounging in the sun.

COOL DOWN WITH COLOR

Here in our region, the sun is especially hot. We’ve all felt the perils of decorating with darker colors, especially when sitting on a black cushion that’s been in the sun all day. Your outdoor space will already be warm enough with the constant sun exposure, so why not cool it down with lighter hues? We love the way soft blues and greens look in outdoor spaces—the soothing coloration offers not only a clean palette but a cooler space to take a seat.

Not in the market for refreshing your entire space, but still need a little pickme-up? Hit the accessories department of your favorite home goods spot. It’s amazing what a few hurricane candle holders, outdoor glasses and bistro lights can do to brighten up a backyard. Sacramento’s full of great riverside beaches. Relax or have a gentle paddle in the river at the popular Paradise Beach, a great downtown oasis for water lovers. If you’re feeling a little adventurous, bring along a floatie and take a float trip along a portion of the American River—it’s DIY so take safety precautions, travel with a group, hydrate, and slather up with sunscreen. Try starting from under Guy West Bridge (right by Sacramento State) and finish up at Paradise Beach, or take a longer trip past Paradise Beach to Sutter’s Landing (just past the I-80 overpass). It’s a popular spot during summer, so be sure to get there early to avoid crowds. Tip: Bring along a paddle to help steer you out of trouble or dead spots, and make sure you stash your valuables and dry clothes in a sealable waterproof bag. The Gift of Kids currently has 32 wonderful, loving, professional teachers and over 200 children. We provide care for infants, preschoolers, private kindergarten, and school agers. thought to myself, “Italy on a plate!” At this point, I had to decide between Chef Scott McNamara’s award-winning scallops, or the risotto with three types of mushrooms and white truffle oil. Never wanting to disappoint new friends, I ordered both. The scallops were served seared and tender atop a creamy cauliflower purée, and showed the chef’s deft hand at combining ingredients without overwhelming the delicate mollusk. At the risk of being labeled an Italian rice fascist, let me just state, I know good risotto. I’ve sent overcooked risotto back more often than the patrons of Hell’s Kitchen. What I got from the kitchen was pure perfection, and I was not willing to share, new friends or not. Silky and creamy, yet impeccably al dente, it perfectly showcased

I was greeted warmly ALCOHOL: Beer and offered a seat at the bar, as the tables for and extensive wine selection the evening were already reserved. I started with the roasted beet salad, TAB: $$ a well-balanced dish that highlighted the HEADS-UP: “Wine earthy, roasted beets and featured a salty, Lounge Membership” nutty undertone from the ricotta salata and include various discounts and perks; pistachio vinaigrette. “Tasting Tuesdays” Next, I shared the Prohibition Pizza with with a featured winery from 5-8 p.m.; some new friends seated near me. It’s easy Happy Hour (all day on Monday, 3-6 p.m. to meet mates when you offer them a slice Tuesday-Saturday); of thin-crust pie covered in house-made live music on Friday and Saturday from fennel sausage, fontina cheese, broccoli 8-11 p.m. rabe, ricotta and a not-overly-pungent garlic cream sauce. With each bite, I

the shiitake, chanterelle and oyster mushrooms, and was wonder f ully accented by nutty asiago cheese and a light finish of white truffle oil. Bravo! My choice of dessert was the tartellette—a colorful swirl of blood orange, key lime and lemon curd with whipped cream and citrus zest in a buttery shortbread crust. One of the most-requested desserts at my house is anything with lemon curd, and Prohibition’s homemade tartellette nailed it. Rumor has it they have an exceptional wine selection, which should be no surprise; after all, it’s Prohibition.

// Over the course of my life, perusing books and magazines has never made me particularly

ravenous—but after visiting Barnes and Noble Kitchen, I can’t even glance at them without fantasizing about my recent post-read meal. The restaurant is one of only three in the U.S., making wholesome Folsom quite lucky. The gourmet dine-in section is nestled behind the café, making it feel separate from the books but connected with the calming atmosphere. Excited to see what their kitchen could create, I tried the Hummus and Kale Salad. I couldn’t believe my eyes when I spotted the rainbow of colors heading my way. The market-fresh, brightly hued cauliflower and carrots, alongside house-made hummus and lavash (crispy, unleavened flatbread) would entice any epicurean who appreciates a pretty plate, including yours truly. My kale salad quickly accompanied it, letting me literally veg out. The apple cider vinaigrette added a tang to the softened kale, while sweet and crunchy toppings like apples and almonds balanced it out. Thanks to the waitress’ advice, I wandered around the casual eatery and admired the intricate details of my surroundings—from the unique upholstery fabric to the posters that have hidden messages (there are even magnifying glasses hanging from them!), it’s safe to say I was impressed. Not only was the food and ambience top-notch, but eating among books had me feeling more intellectual with every bite. MARINATED TRI-TIP STEAK WITH YAM FRIES AND DIJONNAISE Steak is de rigueur for game-day barbecues, and the tri-tip is a totally underrated version that is unbelievably flavorful—and won’t break the bank. This recipe offers easy prep, fast cooking, a knockout sauce, and double-knockout mustard. The yam fries bring it home. 2 lbs. yams or sweet potatoes, peeled and cut into 1/2-inch strips 1 tbsp. dry mustard 3 tbsp. raw honey 6 tbsp. grapeseed oil 3 tbsp. red wine vinegar 2 tsp. chopped garlic cloves 1 tsp. kosher salt

1 tsp. black pepper 3 lbs. beef tri-tip steak, cut into 6 portions 1 tbsp. ground cumin 2 tsp. chipotle chile powder Dijonnaise (recipe follows)

Preheat the oven to 400-degrees Fahrenheit. Place the yam strips, dry mustard, honey, 3 tablespoons of the grapeseed oil, 2 tablespoons of the red wine vinegar, 1 teaspoon of the garlic, and 1/2 teaspoon each of the salt and pepper in a large bowl; toss to combine. Divide the mixture between 2 aluminum foil-lined rimmed baking sheets. Bake in preheated oven until golden brown, 30-40 minutes,

rotating baking sheets top rack to bottom rack halfway through. Meanwhile, whisk together 2 tablespoons of the oil and the remaining 1 tablespoon of red wine vinegar. Pat the steak pieces dry; rub each with the oil mixture. Stir together the cumin, chile powder, remaining 1 teaspoon of garlic, and remaining 1/2 teaspoon each of salt and pepper in a small bowl. Sprinkle on both sides of the steaks. Heat the remaining 1 tablespoon of oil in a heavy, ovenproof 12-inch skillet over mediumhigh. Sear the steaks in the hot oil, about 1

Moonraker Brewing Co. is currently the hottest brewery in the Sacramento region. Barre Nor Cal is a ballet-based cardio workout using isometric and compound movements that’s high-energy and low-impact and targets all of your major muscle groups. Our mission is to help clients become fit and healthy with an effective full-body, 60-minute workout in a fun, safe and welcoming environment. We also hope to inspire fitness, a sense of community and a healthy lifestyle among our teachers and clients. I would say that the business found me as much as I found it. My journey began in 2010 in San Francisco, where I was working in the corporate world in fashion and looking for a way to stay in shape. I come from a dance background and never fit in at traditional gym settings. I had been taking a few dance classes a month for fun, but needed something I could do regularly to stay fit. I lived near a barre studio, and for my birthday my fiancé gave me a one-month unlimited membership to try it out. I was in love after my first class! Shortly after, I began teaching classes for a franchise barre company on the side. Over the years, I craved being at the barre studio more than at my desk job. In 2015, I made the leap and left my corporate career to create my own version of barre—combining traditional barre movements with my own dance influences. I’m so happy for the opportunity to share my love of barre and help individuals become fit and flexible!

The opportunity to go off on my own arose around my 39th birthday, and I surprised myself by not just letting it come in, but enthusiastically welcoming it!

What’s your biggest job perk?

The ability to research topics and go in different directions to meet market trends.

Being able to work out alongside the nicest women in El Dorado Hills.

What’s your favorite place to eat out locally? I love Milestone Restaurant!

What’s your favorite local event that you go to? Rocks and Rhones, which is hosted by the Pleasant Valley wineries.

How are you involved with both the community and your customer? I volunteer with Blue Star Moms at the VFW Hall as a breakfast cook and care package packer and with the Folsom Library as one of its commissioners. Previously, I was a classroom aide at my daughter’s school, where I also ran the spelling bee contest. I find that community involvement and customer engagement go together.

What life accomplishments are you most proud of? Having a successful career and a beautiful family, but perhaps more importantly, being cognizant of how lucky I am—way too often we forget about that.

Where do you go when the going gets tough? I lose myself in a book; perspective always comes out.

What’s your biggest job perk?

What’s your favorite place to eat out locally? La Rosa Blanca and Back Bistro.

What’s your favorite local event that you go to? A River Cats game.

What’s your favorite local business other than your own? Sutter Street Theatre—great plays!

And finally, customer service is…? Not hesitating to do the right thing for a customer.

Dance to Make a Difference Evening of Dreams

Kooper Richardson is a big, tough kid. He played for his dad, Kris Richardson, on the recently successful Folsom High School football team. He now digs in on UC Davis’ offensive line. His freshman stats list him as 6’6” and 298 pounds. He’s literally a “Big Man on Campus,” no matter what campus he happens to be on. But, for the past three years, Kooper has never been bigger than on a certain night in May. That’s when he sets everything aside—his free time, his comfort zone and, in 2016, his senior trip, so he can escort young ladies with special needs to a dance. It’s not just any dance, either. It’s Evening of Dreams, which has been held at Capital Christian Center since 2009. The red carpet event was the brainchild of Joe Alves and Michelle Raby. The idea? Pair young men and women who, because of physical or mental challenges, might not otherwise ever get to experience prom with “students of influence” from high schools throughout the region—frequently those active in sports or Student Government. Volunteers with cameras position themselves strategically as paparazzi. Cheers go up as every name is announced. Some of the kids boogie and dance down the carpet. Others shyly and quickly hustle inside. Still, others walk with the aid of their escort, or are pushed along in their wheelchairs. All of them smile—big, huge smiles—the radiant, face-stretching kind of smiles that only appear when they can no longer be contained; in other words, the best kinds of smiles. The escorts all have them, too. Inside, the gym is a prom director’s fever dream: hundreds of balloons, thousands of sparkling lights, miles of crepe paper, and music thumping loudly enough to crack your fillings. And there are no wallflowers: Everybody dances. And dances. And dances more. Raby recalls the time one young lady danced all night, on her knees, because her date was in a wheelchair. Kooper called his decision to skip his senior trip last year to escort Maddie “a no-brainer,” adding, “we had so much fun together. To see her so happy was something I’ll never forget.” This year’s event is May 20 and if by chance you come out and see those smiles parading down the red carpet, you’ll learn exactly what Kooper means; it’s something you will never forget, either. 1. She says most of the now 250-plus spots are filled up by midday by students like Kooper. “I became involved as a sophomore when they reached out to our football team,” he says. He joined high-profile teammates like Jake Browning and Cole Thompson, even though, Kooper admits, “my first year I was nervous, because I didn’t know what to expect.” But that changed quickly when he realized “people with special needs aren’t any different.” A YouTube video from last year of Kooper asking Maddie Morley, a Folsom High School student with autism, to Evening of Dreams went viral. Even though he’s in college now, he plans on being back. “This will be my fourth year, [and] it has changed my life in so many ways.” Most particularly, “it’s taught me to respect everyone, and treat everyone with kindness and equality.” Spiffed out in tuxedos and prom gowns, the kids and their escorts roll up in front of Capital Christian’s gym in classic cars and walk the red carpet like it’s some kind of world movie premiere. (Disclosure: I’ve been lucky enough, along with my radio partner Pat Still, to emcee this portion of the event twice. It is by far one of the most
