M
y first taste of “real” quality coffee was in Auckland, New Zealand. I was en route to Perth, Western Australia, with a week to kill in the “Land of the Long White Cloud” (and apparently the land of flat whites, too). The 13-hour flight and sudden shift from blazing hot summer temps to cold, wintry weather had me foggy headed and in dire need of a pick-me-up. Wanting to sightsee as opposed to sleep, I headed into the nearest café and asked for the biggest cup of drip coffee they could pour. With deer-in-the-headlights stares, the employees looked at me dazed and confused. As I reiterated my order, it was soon determined that drip coffee and super-sized cups didn’t exist on this side of the world (at least not in 2006). No pots of burnt coffee sitting for hours on a burner here. When they handed me a six-ounce “long black” (essentially an Americano), I wanted to laugh. How would this teeny tiny cup of caffeine possibly cure me of my jet lag? But I quickly discovered that, when it comes to coffee, less is sometimes more. Never had I ever tasted espresso so smooth and robust, and never had I ever gotten a buzz so strong. Luckily, American coffee has come a long way since then, and we’re fortunate to have some of the best baristas and cutest cafés in our own backyard. From places that roast their own beans and make scones from scratch every morning, to others that offer house-made syrups and live music, there’s no denying that the coffee shop craze is here to stay. In this month’s feature, “Café Society: 20+ Cool Coffee Shops” (page 47) we take you on a caffeinated crawl through the region’s most buzzworthy ones and give recommendations on what to eat and drink at each. Tear it out, take notes, and give it your best “shot” to experience them all. I can almost guarantee that after your adventure, you’ll no longer think Folgers is the best part of waking up. If you need an extra pep in your step, we also have a rundown of local coffee cocktails that’ll have you bouncing (and buzzing) off the walls, an “Espresso Explained” so you can become a real bean brainiac, and random world records related to coffee. I hope you agree that it’s truly a brewtiful piece—full of interesting info and fun facts. —Denis Waitley Coffee aside, there’s many more reasons to fall for this month’s issue. Be sure you have a good Facebook page and a website (just as important for those who are buying talent as it is for fans), and use as many forms of social media as you can. You also need to have highquality photos and decent video of live performances. The jerky camera videos done by a friend? Not so good. Do your homework. Check all community calendars, nonprofits, etc., and see which ones include music, and then work forward—months out. If an event is right around the corner and it’s been going on for some time, chances are they’ve booked a band for the current year; calendar all the events so you can work forward to the following year. Send links—and only links—to your musical assets. Be diligent, and be willing to work for nearly nothing in the beginning…and build. Get quotes/testimonials from those you do get work from, and use those quotes in your pitch with references. Work the phone and email, but foremost: Have fun and enjoy your passion. andall Ross, the president and CEO of Mercy Hospital of Folsom, grew up in the suburbs of Seattle. He
recalls being a roughand-tumble kid, and a big fan of the great outdoors. “I always seemed to end up in the emergency department for falling out of trees,” he says with a laugh. He also spent time in hospitals for other reasons: His father was a hospital administrator for 37 years, and he looks back fondly on the days when he’d have the chance to tag along and interact with the doctors and nurses. As a young man, Ross dabbled with the idea of pursuing a career in law

enforcement, and even enlisted in the U.S. Army where he spent three years in Germany as a military police officer. After returning to the U.S., however, he soon discovered his calling for hospital administration. These days, even after more than three decades in the health care field, Ross still gets a thrill out of watching the day-to-day operations of hospital staff. “They deal with life and death situations every day,” he explains. “It’s very grounding.” He also stays grounded by volunteering his time as a member of numerous community boards, including the Folsom Lake College Foundation, the Folsom Police Foundation, and the Folsom Chamber of Commerce. And although he and his wife have two adult children and two

grandchildren, he retains his love of the great outdoors. elp create holiday magic for the community! Individuals, families and service groups are needed to assist with an assortment of tasks for the Folsom City Zoo Sanctuary’s annual Wild Nights and Holiday Lights extravaganza. To prepare for
The zoo is divided into various sections for decorating and LED lights are supplied, but many hands are needed to install them! To help, simply gather a group of 4-10 helpers, a few tools and some holiday spirit. The decorating date is scheduled for November 4, with a rain date of November 18. This year’s event has an extended run and goes from 5-8 p.m. on December 1-2, 8-9, 15-23 and 26-30. On December 20, Food Truck Safari takes place just outside the zoo entrance in Folsom City Lions Park. All event proceeds benefit the Folsom City Zoo Sanctuary animals.

At the end of World War I, a simple poppy became a sign of honor for those who didn’t make it back home from the war. The Buddy Poppy Program (“buddy” as in buddies who didn’t return from battle) has been continuing to honor lives lost with the flower, all of which are made by disabled and needy veterans. Folsom Mayor Andy Morin has declared Buddy Poppy Weekend on November 4-5—the weekend before Veterans Day. In three separate locations—Walmart, Safeway and Mary’s Gold Miner Café—the Veterans of Foreign Wars (VFW) Post 6604 in Folsom will hand out Buddy Poppies to our community in exchange for donations to local veterans. The motto “remember the dead by helping the living” encourages those to donate, in order to help veterans needing assistance by remembering those who made the ultimate sacrifice. Cedar came to the Folsom City Zoo Sanctuary as an ill orphan at four months old. Last month, she celebrated her eighth birthday. If you want to bring her a belated gift, she loves catnip and perfume. The zookeepers often hide catnip in various enrichment devices—including cardboard boxes and tubes—for her to find and shred; they’ll also spray perfume in different spots for her to sniff or rub against, and sometimes surprise her with something different to play with, by Guy Easterling such as a large pumpkin. Puma concolor—commonly known as a mountain lion, panther, puma or cougar—is a large feline native to the Americas, from the Andes to the Canadian Yukon, which is the greatest range of the large wild terrestrial mammals in the Western Hemisphere. Mountain lions are carnivores and in the wild prey primarily on deer. Here at the sanctuary, they eat a variety of raw meat and sometimes eggs. Mountain lions love to be up high and have excellent jumping ability—vertically, they can leap 15 feet and horizontally 40 feet! oming to the Folsom-based Sacramento Guitar Society (SGS) last fall as a grant writer eager to further the organization’s mission, Lili Williams
is now the nonprofits’s succeeding president. SGS, which has roots back to the early ’60s, has a volunteer board of directors that centers around celebrating and sharing classical and experimental guitar music to all. You can see SGS in action on November 19, December 17 and February 18 at the E. Claire Raley Studios for the Performing Arts (The Clara) in Sacramento, or at the Harris Center on March 17 for An Evening with Alex De Grassi and Andrew York. HLB: WHAT DOES SGS’ MISSION MEAN TO YOU? RT: The SGS works hard to bring world-class guitar artists to Sacramento’s guitar-loving patrons, but the charitable portion of our mission is to help enrich the lives of disadvantaged children through music education. While I personally love attending classical and flamenco guitar concerts, the educational component of our mission is what compelled me to volunteer my time. HLB: ARE YOU A MUSICIAN YOURSELF? LW: Throughout my life, I always dabbled in various instruments, not really mastering any. However, when I was 21 years old I witnessed a group of [young children] attending a Suzuki conference. It was then when I became committed to the idea that someday my own children would pursue music at a young age. own. Music changed their lives, and I believe it can change the lives of other kids who may not have access to musical education. Giving children the skills to play an instrument gives them confidence in many other parts of their lives, including academics.

HLB: HOW CAN READERS GET INVOLVED WITH SGS? LW: They can become a member (one doesn’t need to be a guitar player, just a guitar-music enthusiast), make a monetary or guitar donation, attend our major concerts or our free monthly meeting featuring local musicians in intimate settings, join the Guitar Orchestra, become a business sponsor, join the board of directors, or get on our mailing list. HLB: WHAT ARE SGS’S FUTURE GOALS? LW: Artistic Director Daniel Roest will continue to focus on bringing world-class concerts to our region. My focus is to grow the organization, [so it becomes] known by the community as a leading nonprofit that’s focused on changing the lives of young people through music. We’re currently working on getting SGS classes as course offerings at various local recreation and parks
departments. This fall, we started having classes in Rancho Cordova and Carmichael. I’m also working on getting grant funding to offer guitar classes to foster youth, giving them the one thing that will remain a constant in their lives—music. Other exploratory endeavors include sponsoring a chapter of a national program called Guitars not Guns, which brings guitar music to at-risk youth. We hope to inspire children to consider music not just as a hobby but also as a profession.

While many of us look forward to Thanksgiving dinner, it’s also a notorious time for overeating. “Chances are, we’re going to eat more at this meal than perhaps any other of the year, which can be a problem if you’re watching your weight,” explains Laura Elliott-Sisterson, MS, RD, clinical nutrition educator at Kaiser Permanente Folsom Medical Offices. “What starts as one meal can be the beginning of months of overeating, if you allow it to happen. However, being cautious about food choices and portions can help you stay on track.” Here, local health and fitness experts share their tips to help you have a healthier holiday.
FITNESS “Sign up and train for a turkey trot. It’s a great way to stay motivated and hold yourself accountable while giving back at the same time,” says Jennifer Collins, head trainer at Orangetheory Fitness Roseville/Rocklin. “Plan a post-meal walk. As soon as you arrive at your Thanksgiving celebration, announce your plan to take a walk after the

Sugarless cranberry sauce has no refined sugar and tastes just like the real deal. Garlic mashed cauliflower is a great substitute to buttery mashed potatoes,” Collins shares. “Use a regular nine-inch plate for your meal. Oversized plates are popular for seasonal table settings, but if you have the option, stick to the normal plate size [to] help with portion control,” says J. Bianca Roberts, MD, at Mercy Medical Group, a service of Dignity Health Medical Foujndation in Natomas. “If you’re tempted to go back for seconds, opt for vegetable dishes,” Roberts says.

“Enjoy sugary drinks and alcohol modestly, [and have] a tall glass of ice water with your meal,” Roberts says. “Drink a glass of water 15-20 minutes before meal time, be mindful and eat slowly, enjoying each bite. It typically takes 20 minutes to feel full, so the longer we take to chew and enjoy, the less likely we are to overeat,” says Sky Baucom-Pro, MAS, RD, patient services manager in Food and Nutrition Services at UC Davis Health. “Be aware of liquid calories. If you know you’re eating richer foods, such as stuffing, mashed potatoes with butter, sour cream or gravy, aim to save 500-plus calories by choosing to drink water or sparkling water. Alcohol can add hundreds of calories with just a few drinks,” says Barbara Lusk, MFCS, RD, LDN, FAND, clinical nutrition manager in IP Nutrition Services at UC Davis Health.

Beautiful floor covering can truly transform a room, but it can also be one of your biggest interior design expenses, so planning ahead is essential. Before deciding on materials, colors and textures, consider these design basics:

Ceramic Tile
To create the biggest impact, use a single type of flooring throughout most of your home, breaking it only at bedrooms and wet areas. Plain colors make a room seem larger, and a solid color is easier to decorate around; light colors exude spaciousness and help brighten a room without much natural light, while dark colors help anchor furniture and make larger rooms feel cozier. If you choose to change the color or type of flooring between rooms, picture how the transition will look when the doors are open. How a room is used will also affect your choice of finishes. The genus coffea is native to tropical and southern Africa and tropical Asia. The plant was originally exported from Africa to countries around the world, and coffee plants are now cultivated in over 70 countries. The earliest credible evidence of coffee-drinking appears in the middle of the 15th century in the Sufi shrines of Yemen. The word "coffee" entered the English language in 1582 via the Dutch koffie, borrowed from the Ottoman Turkish kahve, in turn borrowed from the Arabic qahwah. Beans from different countries or regions can usually be distinguished by differences in flavor, aroma, body and acidity. These taste characteristics are dependent not only on the coffee's growing region, but also on genetic subspecies (varietals) and processing. Varietals are generally known by the region in which they are grown, such as Colombian, Java and Kona. The two most commonly grown beans are the highly regarded arabica, and the less sophisticated but stronger and hardier robusta. Arabica coffee beans are cultivated mainly in Latin America, Eastern Africa and Asia; while robusta beans are grown in Central Africa, throughout Southeast Asia, and Brazil. Rent a raft, canoe or kayak at Johnson’s Beach and laze your way down the mellow water for a sun-drenched day of play. Head to Armstrong Redwoods State Natural Reserve to see what originally put the treehugging hamlet on the map (in the late 1800s it was a logging community; hence the nickname “Stumptown”). Whether you choose to hike, go horseback riding or simply snap a quick pic of the oldest (Colonel Armstrong) or tallest (Parson Jones) tree, the 805-acre park is bound to take your breath away—just like Guerneville itself. Meaty, plump and moist, they were so good they could’ve stood on their own, sans the sweet and spicy dipping sauce, but I recommend dipping them anyway. I had to try the Vietnamese sandwich (bahn mi), and I’m glad I did. Packed with pork, cilantro, carrots, cucumber and jalapeños, it hit all the right flavor notes and had just enough heat to require some extra napkins—for my nose. The addition of a spattering of plum/hoisin sweet sauce and mayo helped cool it down…a little. The bread was also spot on—soft inside with a firm but not “rip the roof off your mouth” exterior. Overall, it was a fantastic sandwich—one of the best I’ve had locally. Finally, it was time for the main attraction (although the sandwich was worth the drive from Roseville): seafood pho. As any a-pho-cianado will recant fervently, “It all begins with the broth.” Well, actually it all begins (at least the anticipation) when the server places the plate of fresh basil, crunchy bean sprouts,
jalapeño slices and lime on the table. When the fragrant basin of steaming, sumptuous soup arrived, every taste bud began to sweat in anticipation. Rich, savory, umami, pleasing, choose your adjective here, the broth was almost sinfully X-rated good. Chock-full of shrimp, surimi, rice vermicelli noodles and vegetables, it’s so succulent that when your stomach tells you it possibly can’t take any more, you’ll ignore the warning and slurp on. With 10 different variations of pho, including beef, chicken and vegetarian with tofu, plus Vietnamese coffees and boba (tapioca pearls) smoothies, there’s something to appease all palates…from the timid to the adventurous.

Gaslight Company // Gaslight Company, sited on Sutter Street proper and named in honor of the original Gaslight building that it’s
located in, is everything a beer bar should be: 27 rotating brews on tap (many local) along with ciders and an impressive wine list. It’s also home to every buzzed craving possible—from delicious cheese boards to flatbread specialty pizzas. I recently stopped by and instantly felt at ease; the atmosphere was relaxed, light and lively (thanks to the sounds of classic rock) with indoor-outdoor seating, and the staff was so friendly I couldn’t differentiate between them and the customers. Pumped for a pint, I started the night off with one of their most popular beers: Lost Coast Tangerine Wheat. It smelled exactly like the citrus fruit I love and had a refreshing taste, smooth finish and buttery IPA finish. Other patrons’ food looked (and smelled) too good to pass up, so I ordered a Turkey Chipotle Sandwich. Loaded with sliced turkey, melted fontina, sautéed onions, fresh peppers and chipotle aioli on a sweet French roll, it was a mouthwatering mouthful of goodness. Of course, I proceeded to eat the entire thing—it was that good. Beyond their impressive menu and large banquet room, Gaslight also offers live music on weekends, Tuesday night trivia and an open mic night on Wednesdays, so there’s plenty of reasons to pull up a chair and get comfortable. 3 tbsp. unsalted butter, divided 2 tbsp. extra virgin olive oil 10 carrots, peeled and roughly diced
1/2-inch fresh ginger, peeled and roughly diced 1 leek, light green and white parts only, rinsed and diced 1 fennel bulb (fronds reserved) 1 small yellow onion, roughly chopped 1 large clove garlic, roughly chopped 4 1/2 cups chicken stock (or vegetable stock) 1 bay leaf Salt and pepper 1/2 cup crème fraiche (garnish) 2 oz. pancetta or bacon, cooked until crisp (garnish)

In a large, heavy bottomed 6-quart Dutch oven or soup pot heat 2 tablespoons of the butter and olive over medium heat. When melted, add the carrots, ginger, leek, fennel bulb, onion and garlic. Season generously with salt and pepper and sauté for approximately 7 minutes or until the vegetables are softened but not browned.

Add the chicken stock (or veggie stock). It should just cover the vegetables by about 1 inch. Add the bay leaf and bring to a simmer. Cook for 25-30 minutes until all vegetables are cooked through.

Let mixture cool slightly and remove the bay leaf. Add the final tablespoon of butter and purée in batches in a blender until smooth. Taste and adjust salt and pepper as needed. Can be refrigerated up to 2 days at this point.

To serve, place the reheated soup in a bowl and top with a dollop of crème fraiche, the reserved fennel fronds, and crumbled pancetta or bacon. Pairs with

I didn’t find the concept of blow dry bars, but I did find the additional features I added alongside it, including a private party room and a separate room for makeup. At salons, these services are usually done on the main floor, and I felt it was important to separate them to enhance the experience.
Full STEAM Academy (FSA) is a next-level childcare and early educational experience, specifically designed for children six weeks to five years of age. Our team has captured the best practice principles in childcare and early education to introduce The Core Knowledge Sequence and STEAM curriculum, infusing science, technology, engineering, art and math concepts into everyday play. It’s our goal to create an innovative and imaginative place for children and their families to explore and excel. We’ve developed a state-of-the-art facility, technology lab and creative arts studio that will establish our presence in Folsom as a premiere care and educational powerhouse.
What life accomplishments are you most proud of? Excelling in my previous career as a property manager and winning a 2015 Community of the Year Award out of about 50-plus regions, which in that industry is significant; also, building Blow Me Away from the ground up with my bare hands—all while raising my daughter with little help.

What’s your hidden talent?
I’m very resourceful. I can find the answer to anything by researching, networking or sitting in deep thought. My friends often call me with questions on how to do something or with personal concerns, and I seem to be really good at finding an answer or leading them in the right direction.
What’s your favorite local business other than your own? Steve’s Pizza—I stalk and drool over their Instagram pictures.
And finally, customer service is…? The foundation of any successful business in the service industry. It’s an expectation every customer has, and if you can exceed in that area, it won’t go unnoticed. It’s something that no promotion, special or discount can take the place of.
I’m sometimes called the “gentle giant” by FSA parents and children. Contrary to my size, I’m 6’ 8”, little kids seem to relate to me; I easily connect with them and like to see them smile.
What’s your favorite place to eat out locally? Manderes. I like the quality of their food and service, down-to-earth atmosphere and friendly owner.
