My first passport stamp came from South Korea when I was 11 years old. My sixth-grade teacher met—and became fast friends with—an educator from Seoul while in Beijing at a conference, and they decided to organize an independent exchange between both classes. We spent the better part of the year fund-raising, learning about Korean culture, and preparing for the experience.Though it was optional to host a student and go on the twoweek adventure, my parents were adamant I avail of the opportunity. I remember feeling fearful and telling my mom (who ended up chaperoning) I didn’t want to go. Traveling out of the country, no matter your age, is indeed scary. How will you survive without speaking the language? What if you get sick? Who in their right mind would want to sit on an airplane for more than 10 hours? It’s all too easy to let doubt discourage you. In the case of Korea, I ended up going, and it was the start of my lifelong love of gallivanting the globe. I tried, and became a fan of, (then) foreign foods; met friends I still keep in contact with; and realized that people, though we may physically and culturally be vastly different, are similar in so many ways. It should come as no surprise then that this month’s feature, “Explore More: Your Passport to Adventure” (page 35) was an especially “Travel makes one fun one. Understandably, modest. You see overseas voyages aren’t what a tiny place for everyone, so we have you occupy in the destinations both near world.”—Gustave and far—including “grape” Flaubert escapes with where to sip, snack, and stay; summertime festivals worth traveling to; and a 10-day journey to Japan that will hopefully have you eager to explore one of the safest, most scenic, and cleanest countries. We also consulted local travel agents for their top tips and must-see places. I hope it inspires you to jump out of your comfort zone and do something different, or go somewhere new, sometime soon. Keeping with the travel theme, Kerrie L. Kelly, our über talented and accomplished Home Design contributor, takes us “Around the World in 7 Designs” on page 30, providing plenty of ideas on how to bring your favorite country’s aesthetic into your own crib. In Taste, take your appetite on an adventure with the recipe for Creamy Cucumber and Dill Gazpacho on page 56. And in this month’s Cause & Effect article (page 28) Linda Holderness writes about the international nonprofit Rotary—an organization whose “1.2 million members from all continents and cultures come together to exchange ideas and form friendships and professional connections while making a difference in their backyards and around the world.” I’d love to know where you’re headed this summer and would be delighted if you brought Style along for the ride. Megan Lewis
F
or Megan Lewis, becoming the executive director of Roseville Theatre Arts Academy (RTAA) was about coming home. As a child,
both she and her family—including both her parents—were frequent participants in RTAA (formerly Roseville Theatre) productions; as a result, she grew up with a deep-seated love of theater and the sense of belonging it can provide to kids. “It gave me a place where I could express myself and feel accepted,” she recalls, adding, “the theater was my home away from home.” After college, Lewis worked for Project Tomorrow, a nonprofit in Southern California that exposes kids to career opportunities in STEM fields, and later went on to a successful career in the tech industry—first as a project coordinator for Google and later as part of LucasFilm’s

favorites product development team. Yet Lewis secretly longed to return to Roseville and her family. When the opportunity arose to take the helm of RTAA, it seemed a perfect fit. Now settled into her new role, she remains passionate about providing a place for kids to feel supported in their creative endeavors. To that end, RTAA provides annual scholarships to collegebound high school students, and Lewis is currently applying for grants to support RTAA’s Constellation Theater program, an acting workshop for kids with autism. For Lewis, however, none of it would be possible without the participation of area residents, including the many volunteers who lend a helping hand with workshops and performances. “I love this theater and this community,” Lewis enthuses. “It’s good to be home.” —Amber Foster

Unfortunately, many children in our community aren’t able to afford a swimsuit and the opportunity to take lessons is even less likely. To that end, and because learning the important skills of swimming and water safety can be lifesaving, Operation Swim was created. DID YOU KNOW? // Green bean plants are known to have been cultivated for thousands of years in Mexico and Peru, but can be found all around the world today. They initially spread through South, Central, and North America by migrating Native Americans; in the 16th century, Spanish explorers introduced them to Europe. Presented by SactoMoFo, Roseville Food Truck Mania at the Vernon Street Town Square runs from 5-9 p.m. on June 14 (and every second Thursday of the month through November). "Food Truck Mania brings people from all over the area to rediscover Roseville's downtown core," says Pam Allen of Roseville Parks and Recreation. Enjoy trucks such as Bacon Mania, Hefty Gyros, and Local Kine Shave Ice, as well as live music and a kids’ zone. If you prefer your meal with a movie, Food Truck Cinema is coming to Woodcreek Golf Club on June 16 (and every third Saturday through October) with Dirty Dancing and a plethora of good eats. irst connecting with his creative side as a musician, Edward Mallory discovered his passion for painting after retirement and is now an award-winning impressionist oil artist. In addition to producing romantic rural and city life scenes where brushstrokes create the visual focus and lines are minimized, Mallory also teaches popular workshops tailored to beginners. “I believe art exists in Intermission each of us and the pursuit of it fulfills our humanness,” shares Mallory. The artist has shown his work at High Hand Gallery, Gold Country Artists Gallery, and A Well Hung Art Collective; on June 2 and July 21, he’s teaching an “Introduction to Oil Painting” workshop at The Bag Lady in Folsom. HLB: WHAT DO YOU HOPE VIEWERS SEE IN YOUR WORK? EM: I like to bring a feel-good nostalgia to my paintings—something people can find themselves in or relate to: a captured glimpse of a familiar moment, a bus ride, a beautiful coastal sunset, children at play. I hope people can find something of themselves in my paintings.

HLB: YOU ALSO ENJOY PLEIN AIR PAINTING. WHAT CHALLENGES DOES IT PRESENT? EM: Many painters don’t find setting up and painting in nature difficult, but it’s much harder than painting the same scene from a photograph. Standing on a Pacific cliff with the colors changing rapidly as the sunlight moves across the rocks, water, and cliff faces is challenging. You can’t stop things from changing and you can’t chase them. You know you’ll soon be painting something you’re no longer seeing. What helps is I don’t think of it as difficult; rather, I think of it as different. If you approach plein air like the controlled environment of your studio, you’ll be in for a frustrating day. HLB: AS AN INSTRUCTOR, WHAT HAVE YOUR STUDENTS TAUGHT YOU? EM: Teaching has helped me a great deal as an artist. Anyone who has ever taught knows doing it well is one thing, but to teach well you need to know twice as much. When you slow it down to teach, you’re sitting in the audience; it has to make sense. The process of unwrapping “the how” and “the why,” in order to explain it well, has forced understanding of not only what works but why it works. HLB: DO YOU HAVE ANY WORDS OF WISDOM FOR NOVICE PAINTERS? EM: Anyone passionate about learning to paint can learn to paint well [but they can’t] be afraid of failure or obsess about accuracy and need to keep pushing ahead. My first painting was an apple June 30 – The World I’d placed on the kitchen table. I’d bought a couple tubes of paint of Color Ballet. Enter an exciting world with names I couldn’t pronounce, a canvas, and a couple of brushes. of magic as your favorite Disney songs I pulled a water glass from the cabinet and traced a circle on my come to life on stage canvas. It’s no understatement to stress how important quality sleep is to our overall well-being. “Sleep should be a major priority,” says Chuck Tolbert, clinical sleep specialist at Specialized Sleep Diagnostics in Roseville. “While you sleep, your body moves through different phases of shallow and deep sleep, which allows your body and mind to realign. This is also when physical healing occurs. [Over time, lack of proper sleep can cause] health problems to occur—everything from fatigue and headaches, to weight gain, memory loss, and more.” To help you hibernate, we asked local doctors and sleep experts to share their tips for getting the best night of sleep each and every night.
Rest Rituals

listening to relaxing music, stretching, or giving yourself a hand massage. Taking a warm bath or shower or drinking noncaffeinated tea can also help set the mood for sleep,” says Analila Valencia, ND, from Revolutions Naturopathic, with locations in Folsom and Roseville. “Anxious individuals should schedule worrywart time two hours before bed to journal any ideas, concerns, etc., which can often alleviate ruminating thoughts,” advises Kimberly Hardin, MD, professor of pulmonary, critical care, and sleep medicine at UC Davis Health and director of UC Davis Health System’s Veterans Administration Hospital Sleep Lab. “To get the sleep you need, three things [are essential]: giving yourself sufficient time for sleep, the mind switching from busy mode to calm mode (for sleep onset and to maintain sleep), and the ability to easily and freely breathe through the nose,” says Amer Khan, MD, a neurologist and sleep specialist with Sutter Health Independent Physicians and founder of Sehatu Sleep Clinic in Roseville. “Staying disconnected in the morning allows your mind to wake more gradually, instead of being confronted by the rapid information processing that comes from scrolling on our phones. Meditating before bed can help your mind to quiet and unwind. Stretching in the morning helps your body wake up after being stagnant throughout the night, while doing so before bed can be relaxing for some and stimulating for others; check in with yourself and see how you’re responding,” Siegle says.
Timing Is Everything Sleep Design in Folsom. “The success is not in the steps themselves, but in the repetition of these activities and your long-term association with sleep. Putting your phone away, turning the television off—these things are intuitive to us but difficult to execute because we feel bored waiting to fall asleep.” “Most parents have a routine for kids before they go to bed. Adults also need to do the same for themselves, [including] no screen time 30-60 minutes before bedtime. Other recommendations include meditation or visualization, deep breathing, reading,
“Someone who gets four hours of deep sleep and cycles through two full REM cycles is going to be more well-rested than a person who sleeps for eight hours and wakes up tossing and turning every 30 minutes. Each time we interrupt the REM cycle, it must start over from the beginning and all five stages of REM sleep can take up to two hours to complete,” says Steve Metzgar, chief executive officer at Sleep Choice Mattress Centers with locations in Folsom and Citrus Heights. “[Don’t] lay in bed for hours watching the clock at night. If you’re unable to sleep for more than an hour, get out of bed and try to do something non-stimulating, like reading
a book, listening to calm music, or drinking a warm non-caffeinated beverage, until you’re truly tired and ready to go back to sleep. Stay away from all electronics and bright lights,” Tolbert recommends. “Don’t over-focus on sleep. Fitbits and other means of constantly measuring one’s sleep can often lead to more anxiety regarding it,” Hardin says.
Set The Scene
“Optimal sleeping temperatures range from about 65-68 degrees. Make sure your bedding is clean and free from potential allergens. The best thing to do is always have a backup set of linens—have one in the wash and one on the bed. An allergy encasement can also protect your mattress from absorbing dust mites and dead skin cells that make it harder to breathe and, in turn, harder to sleep,” says Derrick Compton, vice president of sales at Sleep Choice Mattress Centers with locations in Folsom and Citrus Heights. According to Compton, “People usually wait an average of two years too long to replace their mattress. A typical one will last structurally for 10 years; however, the comfort life of that same mattress may only last six to eight years, which means your mattress may not break down, but your body will. Once we allow our body to acclimate to the discomfort, we don’t even notice it anymore.”
Travel Tricks
“When traveling to a new time zone, it can take several days for our circadian rhythm to adjust and get back to its original schedule. Adjusting your sleep time forward or backwards—about a week before your trip— should help you adjust to the new time. And if your schedule allows, don’t be afraid to take a nap,” Tolbert says. “Stay awake until 10 p.m. local time. Avoid stimulants to [do so] and take short naps. Get plenty of sunlight,” says Robert Chase, MD, ENT specialist with Marshall Medical Center. “Humans are creatures of habit, and our bodies can take up to 60 days or longer to adjust to a changed level of support. A pillow supports 30 percent of your spine, so bringing your custom-fitted pillow from home essentially gets you 30 percent closer to still being in your bed at home,” Metzgar says.

nce dreaded, polio outbreaks are now a fading memory. In the world, only 17 cases occurred last year —and those in just

This year, through a grant from Rotary Foundation, the district as a whole is tackling one of the region’s most troubling issues: human trafficking—“a dire problem,” Gordon says, “because we are a transportation crossroads.” Sacramento has one of the highest trafficking rates in the country, with girls ages 1214 the primary target. Rotary’s strategy focuses on two areas: education (for grades 5, 7, 9, and 11) and outreach to raise public awareness. Similar campaigns in other cities have achieved marked success, says Roseville Rotarian Brian Gladden, who—along side past district governor from East Sacramento Rotary, Bob Deering—is spearheading the effort. In the U.S., anyone interested in humanitarian service, locally and abroad, can join Rotary. Women have been active since 1987 and once-stringent attendance rules have been relaxed. “Meetings are fun,” says Rotary Club of Placerville President Cher Williams. “Through the fellowship, we build lifelong relationships.”

two countries: Afghanistan and Pakistan. Much of the credit for conquering this cruel disease goes to an unusual source: Rotary International’s PolioPlus campaign. The worldwide service club has been working to eradicate polio since 1979, and its success, notes Rita Gordon, public image chair of Rotarys District 5180—which covers 41 Northern California clubs—will be the first time a non-government organization has wiped a disease off the planet. Members of Rotary—1.2 million worldwide—literally put boots on the ground delivering the oral vaccine to more than three billion children. “Boots on the ground” has been a Rotary hallmark since Paul P. Harris of Chicago founded the organization in 1905 to provide humanitarian services and advance peace around the world. But Rotary’s sights are set not only on diseases—such as polio, malaria, HIV/AIDS, and diabetes—but also on improving education and economic conditions for disadvantaged people both internationally and locally. With polio nearly extinct, “clean water is now bubbling to the top of the list,” Gordon says. Most of the world takes clean water for granted, but contaminated water in developing nations causes around 842,000 diarrheal deaths a year, according to World Health Organization data. With “Service Above Self” as Rotary’s motto, local clubs are responsible, often quietly, for a variety of local programs, including dental care for disadvantaged kids, literacy support, refurbishing bikes for needy youngsters, student scholarships, enhancing parks, and sponsoring foreign

Kemem Ethiopian and Middle Eastern Restaurant A World of Flavors
N
ever have I ever been so by LORN RANDALL // photos by DANTE FONTANA completely unaware of what I was about to consume. Ethiopian cuisine was a mystery (as I’m sure it is to the average suburban diner). If, like me, you’ve yet to sample it, you’re missing out. The warm, almost sensuous flavors and spices entice the palate and coerce the brain to keep eating…even as breathing becomes a chore. Our table began with a couple of appetizers that were familiar, including falafel—deep-fried fritters of mashed chickpeas seasoned with cumin and coriander that boasted a wonderfully crunchy, goldenbrown crust and soft, airy, breadlike interior. Served with fresh pita triangles, a tomato-cucumber salad, and a tangy, cool, yogurt sauce, they were a perfect introduction for the food that followed. The lentil sambusas were another solid starter. Similar to an Indian Lentil Sambusas samosa, Kemem’s version featured f r ied past a w rapper s st uf fed w it h g round lent ils and were accompanied by a tomato-chile sauce reminiscent of what my Mexican mother-in-law would call red chile mole (read: spicy and addictive). Our server, Bruk (Brook), was kind enough to give us a demonstration on the proper etiquette for the consumption of this type of cuisine, specifically injera—the spongy, gluten-free rolled bread (similar in taste to sourdough) that was served with our entrées. “We eat with our hands,” he explained as he placed a sheet of injera on the plate, covered a section with beef zilzil tebs, then tore a piece off and deftly manipulated the fajita-like strips of meat and bell peppers into a neat

package to be devoured. Sensing the potential for unwanted dry cleaning, I opted for a fork. In either case, the resulting mouthful was an epiphany…a symphony of flavors and ingredients, including chile, cardamom, turmeric, bell peppers, and beef. Throwing caution to the East African wind, I ordered doro wot: the national chicken dish of Ethiopia featuring piquant and savor y braised chicken legs and a whole hard-boiled egg with a combination of spices known as berbere (chile pepper, garlic, g inger, dr ied basil, Ethiopian cardamom, black and white pepper, fenugreek, and r ue —the latter of which is a bitter shrub). It’s no wonder this is the national dish—every bite revealed another layer of exciting flavors. There was also a buffet featuring several more intriguing items, i nclud i ng nu merous vegan and vegetar ian options. If you’re in a hurry, I recommend it as everything is made inhouse, including the injera. If not, order off the menu and enjoy...your patience will be rewarded.

Moksa Brewing Co. // “Beer will always be more than availability and alcohol content. Beer is about individuality, heritage,
friendship, tradition, exploration, taste, and smell captured in a glass.” Those wise words may not be mine, but I’ll gladly pass them along thanks to Moksa Brewing. The 3,000-square-foot taproom lives by this mantra, as evidenced by the relaxed, friendly vibe you’re greeted with upon entering and variety of complex, hop-heavy offerings on tap. Outfitted with brewing equipment and reclaimed wood walls, the industrial ambiance is warmed by the helpful staff that’s more than willing to offer suggestions based on your palate’s preference. I’m a fan of lighter brews so I had the Rocklin Ale, a dry hopped pilsner-style ale they describe as having subtle floral and spicy notes. I would describe it as cold, refreshing, and perfectly delicious. They had plenty of other beers to choose from on my visit as well, from a hazy pale ale with coconut (Island Fuzz) to an unfiltered West Coast-style IPA (Sir Dirk Westerton) and oatmeal milk stout with cacao nibs and espresso on nitro (Café Moksa)—all made in the same room that you get to enjoy them in. Priding themselves on quality over quantity, many of their offerings have limited availability, but rest assured: Whatever they’re pouring is guaranteed to please. And if you hate leaving your dog at home or paying top dollar for a babysitter, no worries: canines and kids are welcome to join the party, too. Seasonal Recipe and Beer Pairing CREAMY CUCUMBER AND DILL GAZPACHO WITH PEA SALSA AND SUMAC This is my Swedish take on a Mediterranean classic. The Greek yogurt and avocado give it a wonderfully creamy texture and trick you into thinking you’re having something really quite rich and indulgent when actually this is a fresh, light dish with a major focus on vegetables. Add the chillies according to your taste—they vary a lot, so do taste a little before deciding. I prefer a decent kick.
Lagom: The Swedish Art of Eating Harmoniously by Steffi KnowlesDellner (Quadrille Publishing, 2018, $29.99)
• 1 cucumber, roughly chopped
• 3 tbsp. extra virgin olive oil
• 2 yellow bell peppers, roughly chopped
• 1 avocado, stoned, peeled and cubed
• 1–2 green chillies (depending on taste), finely chopped • 1/2 garlic clove, very finely chopped • 2 spring onions [scallions], roughly chopped
• 1 cup Greek yogurt, plus extra to serve • 1 small bunch of mint, roughly chopped • 1 small bunch of dill, roughly chopped • Pinch of sugar, or to taste • Sumac, for sprinkling
FOR THE SALSA:
• 3/4 cup frozen peas • 1/2 red onion, finely chopped
• 1 lemon, zest and juice

Blitz the cucumber, peppers, chillies, garlic, spring onions, 2 tablespoons of the oil, and all but 1 tablespoon of the cubed avocado together in a food processor. Add the yogurt and most of the herbs and continue to blend until smooth. Season with

salt, pepper, and sugar to taste. Add a little water if the soup seems too thick.

Blanch the peas in a pan of boiling water for a minute, then refresh in cold water. Drain thoroughly, then mix with the red onion, lemon juice and zest, remaining oil, and reserved avocado. Sprinkle in any leftover herbs.

To serve, pour into chilled bowls and top with a dollop of yogurt, the pea salsa, and a sprinkling of sumac. Serves 4.

It definitely found me. When looking for healthy, all-natural treats for our dog—a vizsla named Pippa—I wasn't happy with the ingredients in most of them, so I started making treats myself. Pippa loved them. Friends’ dogs went crazy too, and that’s when I knew it might be a great business. In 2017, after several months of perfecting recipes, I launched Campfire Treats online to provide all-natural treats and chews to dogs across the nation. In April of this year, we added a small store to serve local customers in person.The factor that led me to start the business became a key element of the company philosophy: ingredients. I care a great deal about what goes into our treats. To that end, every single ingredient is from the U.S. and of a quality that you and I would eat as well. We don’t use any additives, preservatives, fillers, or dyes; each treat is handcrafted in our Rocklin kitchen.
In 1978, I worked for a solar company in Minnesota. My first job in California was installing solar panels in Beverly Hills. I came to Sacramento on October 5, 1979, and it was 105 degrees. Where better to start an air conditioning business? A year later, I founded American Energy Air, and we’ve been helping clients in Sacramento, Placer, and El Dorado Counties keep cool ever since.When you schedule a service with us, we send a highly qualified technician who’s prepared to solve your problem—not a salesman trying to sell you an expensive new HVAC unit.We do installations, but we never recommend a new air conditioner just to make a buck.We also service commercial refrigeration needs for numerous businesses. Our new product—an intelligent solar battery system—allows customers to easily manage their energy consumption, resulting in maximum savings and independent power in the event of an extended power outage.
