eing able to work from h o m e u s e d to b e my dream. Wearing pajamas till noon without worrying if I brushed my hair or teeth? Not having to hit the highway and face my fear of the freeway? Getting to spend the formative first years of my daughter’s life with her? It all seemed pretty spectacular. But be careful what you wish for. Nearly one year into this new norm, and the struggle, and juggle, is real. Trying to balance a job, domesticated duties, and mom life leaves little time to take care of me, or my partner. It doesn’t help that our house is small, and my husband is also home 24/7—teaching via Zoom from our dinner table. Luckily, we’re planning to put our daughter in daycare soon, and we’re also in the process of (hopefully) remodeling, which—if all goes as planned—will mean more square footage, a flex space (i.e., my own office!), and an improved aesthetic. If you can relate—and are also wanting to revamp your home, or relationship—then this issue is for you. Turn to our feature, “Coming Home” (page 57), for three rad renovations, including a whole-home makeover you have to see to believe. We also share 17 fabulously foolproof design tips in case you want a change without spending a big chunk of it. One thing I learned? Lighting can make a home shine, in more ways than one, and oversized artwork (even better if it’s from an area artist!) is imperative. Another must-have for any home? Lots of love. If you’re struggling to keep the peace in your partnership, check out “Together Forever” (page 28) for 13 tips to make your marriage stand the test of time. Spoiler alert: Filling your own emotional bucket and learning each other’s love language are keys to living happily ever after. Another surefire way for couples to connect? Spending quality time together—away from your comfort zone, and —Bunny Williams the comfort of your home—doing something that’s new to both of you. Temple Coffee Roasters (templecoffee. com)— a quality-focused, Sacramentobased coffee roaster and wholesale purveyor—is opening its eighth location in Folsom this year. The 1,750-square-foot space at 2776 East Bidwell Street, Suite 500, will feature ethically sourced coffee crafted with care, along with locally made pastries. Pho Vegan (pho-vegan.com) opened a second location in Folsom (the first is in Rocklin) at 329 East Bidwell Street. Mariam Ryder is tenacious, smart, compassionate, and all of 14 years old. She’s also the CEO of LEOA (Love Each Other Always) Foundation in Loomis, an organization formed out of Ryder’s yearning to feed the hungry, and clothe and give to the needy. “Our goals for LEOA Foundation start with bringing dignity and love into people’s lives by modernizing charity,” she says. They provide food, clothes, toys, and education to children, adults, the homeless, and veterans.

And, as he points out, she takes her work very seriously. “Her diligence and commitment to excellence are truly remarkable. As a young CEO she’s always careful when signing any documents

In just three short years, LEOA has managed to spread its efforts across three states, providing almost 7,000 pounds of groceries through their Loomis distribution program and a staggering 18,000 pounds per week in Oregon. Ryder doesn’t wish to stop there, wanting to expand efforts, ultimately eradicating hunger in America by having LEOA distribution sites in every state. “We believe no one should struggle to get what they need because we live on a planet with abundant resources and if we share, everyone can have more,” she says with steely determination. LEOA relies on regional food banks to supply groceries needed per week. They then offer it to people without restrictions. “Instead of telling people they can have ‘one milk’ and ‘one meat’ we allow families to shop for free with dignity,” says Ryder, adding that everyone can help since just

[and] reading corporate contracts, [proving] she’s committed to having a good name and fulfilling her word,” he says. And her efforts have not gone in vain. From families struggling to care for a cancer patient to the elderly with little means, LEOA has touched numerous lives. “I lost my job and times were tight [but] LEOA made it possible for us to stay afloat while I looked for new work. Now I contribute every month to help other families who struggled like we did,” says one grateful patron. LEOA’s education program provides a learning space for children and an instructor who helps parents navigate schoolwork. They also give mostly new clothes to families through donors and partners. “[We’re] always in need of partners with a heart to give and love [for] their communities and those in need,” says Ryder. None of these efforts would be possible without faithful adult volunteers, who are felicitated at an Honors Banquet every year. And since LEOA is all about love, they also host a LEOA Love Gala on Valentine’s Day weekend. The event that probably brings the most joy, though, has to be their Toy Giveaway every Christmas, where families can sign up and receive a gift for their child. According to her dad, Ryder takes the message of “love each other always” very seriously. “The other day I was wearing one of the company T-shirts during the holiday break when I got angry and spoke out of turn. When [Ryder] heard about it later, she asked, ‘You said that with the ‘Love Each Other Always’ shirt on?’” narrates this proud papa who’s constantly humbled and honored to have a daughter—and boss—with such wit and wisdom. “She’s still a teenager and we let her be one, but when it comes to the business of philanthropy and charity, she embodies grace and poise.”

Celebrate Chinese New Year

hinese New Year occurs every year according to the lunar calendar, which is partly why it’s also called Lunar New Year (countries like North and South Korea and Vietnam celebrate it, too). This year, it lands on February 12 and marks the beginning of the traditional Spring Festival that runs till February 22 and celebrates the season brings: plantings and harvest, new beginnings, and fresh starts. Legend has it that the monster “Nian” would terrorize villages once a year, but villagers finally determined that bright red decorations and loud fireworks kept the monster at bay. So, Chinese New Year itself became a day for fighting off monsters (hence the fireworksfilled celebrations), but also praying to gods and honoring deceased loved ones. These important ceremonies are believed to bring good luck in the new year. According to the Chinese zodiac calendar, 2021 is the year of the ox. Hardworking, intelligent, and reliable without demanding praise, oxen are valuable animals; therefore, babies born in 2021 or in other years of the ox (2009, 1997, 1985…) are considered to be trustworthy and gentle yet confident and stubborn. Choose your lottery numbers and colors accordingly, as numbers one and four and colors blue, yellow, and green are considered lucky! Steer clear of three, six, red, and brown. Although one of the most important holidays in China, more than 20% of the world celebrates Chinese New Year, according to chinesenewyear. net. Luckily, we have some ideas for local ways to honor the occasion. Although cancelled this year, the Chinese New Year Culture Association in Sacramento normally hosts a celebration downtown.

In a large bowl, combine the ginger, garlic, pork, cabbage, scallions, and 1/4 cup of the soy sauce. Stir until well mixed. In a small bowl, whisk together the remaining ¼ cup of soy sauce with the black vinegar and sesame oil. Set aside. Fill a small bowl with water. Place 1 teaspoon of filling horizontally on the center of a wonton wrapper in the shape of a football. With two fingers, paint the perimeter of the wrapper with water from the bowl. Fold the wrapper in half to enclose the filling and form a halfmoon shape, pressing firmly along the perimeter to remove excess air and seal the dumpling. Repeat this process with the remaining filling and wrappers. Bring the salted water to a boil over medium-high heat. Add the dumplings and cook for 2-3 minutes, until the dumplings float and the wrapper is translucent. Drain the dumplings and serve with the sauce. Note: Avoid overfilling the wrapper. If the filling gets on the edge of the wrapper, the dumpling won’t seal. Makes 4 dozen dumplings.

It’s inevitable: Your house will become dated. And although it still may be livable, it’s not always lovable. Eberle Remodeling recently took on a kitchen remodel requiring more than just new appliances and a cabinet refresh. “The owner wanted to open up the kitchen to other areas to create a large space to entertain and capture the views toward the back of the house,” explains Kent Eberle, president of Eberle Remodeling. hat sounds better on a chilly, Covid-mandated outdoor dining night than warm food shared with friends and family? And what better way to warm your insides than a steaming cauldron of fondue? That was the plan as I headed to Cameron Park to experience owner and executive chef Carie Toeller’s new venture, Fondue 152. There were some challenges beyond appropriate outdoor attire,

chose three proteins from one of three price ranges: traditional/ decadent/exotic or one from each (“mix it up”). We both chose the latter and landed salmon, filet mignon, lobster, calamari steak, smoked pork belly, and shrimp. What a feast! A little patience was required for the cooking process, due to the cold, but we adapted, overcame (i.e., drank wine), and were rewarded with a great main course. The four house-made dipping sauces (lemon butter, teriyaki, horseradish, orange coulis) and side of sliced, pre-cooked potatoes to grill were a nice touch, too. It’s probably wise they don’t make fondue forks longer and sharper, as a sword fight may have erupted over the dessert course. We (OK, make that I) chose the Bailey’s and coffee fondue of semi-sweet dark chocolate and Bailey’s Irish cream liqueur with a splash of coffee. The recipients of the warm cocoa bath were pound cake, blondies, Rice Krispies Treats, strawberries, grapes, and bananas. Fortunately, there was such an abundance of food that the other diners observed only minor skirmishes. Chef Carie has a tasty takeout menu, too (with the current suspension of on-site dining*), so don’t refrain from giving them a call—let’s support each other!
namely Chef Carie’s call-out to name all the film stars of yesteryear pictured on the restaurant wall. Maybe a surprise to Carie, but not to me; my companion nailed it, recording an A+. A good start for us! So, on to the four-course fondue. We started with the bacon and brie—a can’t-miss for me. Who doesn’t like warm brie with salty cured meat topped with a dollop of preserves on soft sourdough? This was a melted version of the cheese board favorite, and along with bread, there were also sliced apples and peppers, cheese, and another surprise: pickles. Course number two—caramelized Brussels sprouts topped with candied bacon butter sauce—was a big hit. We also ordered a bowl of rustic potato soup; though flavorful, it was texturally a bit of a miss (for me). Next, the entrée course—cooked on a raclette grill—where we each

on a chilly winter evening having wine and small plates can be most enjoyable. There’s nowhere I would recommend more to partake in this activity than Willamette Wineworks—sited in Folsom’s historically significant Roundhouse. According to their website, “Willamette Wineworks, a micro-winery, is a wine, blending, and food experience created by Willamette Valley Vineyards. The unique hands-on wine-blending experience will allow our guests to learn more about the process of winemaking and enjoy their own wine creation.” Although I wasn’t able to partake in the wineblending experience (I have it on my to-do list when circumstances allow), the wine drinking and tapas-style dining, combined with grand vistas and superior service, warmed the soul. I started with the Oregon Estate Wine Flight as an homage to the founders—“brothers Jim, the founder of Willamette Valley Vineyards in Oregon, and Jerry, the local builder of Historic Folsom Station.” I paired the wine with the Seasonal Cheese Board featuring Cypress Grove Midnight Moon, Cypress Grove Purple Haze, Fiscalini Smoked Cheddar, prosciutto, salami, candied spiced raisins, sage garlic cashews, and orange cranberry relish (the nuts and relish all made in-house at nearby Karen's Bakery). I also recommend the locally made focaccia bread (Village Bakery) and house-made tomato bisque. Celebrate your loved ones with something seriously sweet on February 14. From cakes to custards, these chocolaty treats are bound to impress your nearest and dearest. Cracked Flourless Chocolate Cake
Submitted by Savannahs Savory Sweets, Sacramento, 661-205-9984, savannahssavorysweets.com, @savannahssavorysweets • 1 lb. bittersweet chocolate (chopped in small pieces) • 1 stick unsalted butter • 9 large eggs (separated) • ¾ cup + 1 tbsp. sugar • 2 cups heavy cream (cold)
• Powdered sugar, to sweeten and for dusting Raspberry Sauce • 1 half-pint fresh raspberries • ½ cup sugar • ¼ cup water • 1 cup seedless raspberry jam • 1 tbsp. framboise liqueur
Make the sauce. Combine the raspberries, sugar, and water in a small saucepan. Bring to a boil, lower the heat, and simmer for 4 minutes. Pour the cooked raspberries, jam, and framboise into the bowl of a blender or food processor. Blend till smooth then chill.
Beat the egg whites in a mixing bowl until stiff peaks form and fold into the chocolate mixture. Pour into the prepared pan and bake for about 20-30 minutes—until the cake is set, the top begins to crack, and a toothpick inserted comes out with moist crumbs. Let stand for 10 minutes, then remove sides of spring pan. While the cake is cooling, whip the cream until light and fluffy and sweeten with powdered sugar. Serve at room temperature with whipped cream, raspberry sauce, and a dusting of powdered sugar. TOP BAKING TIPS: Always follow instructions, patience is key, and practice makes perfect.

Preheat oven to 350. Butter a 9-inch spring form pan. Put the chocolate and butter into the top of a double boiler (or heatproof bowl) and heat over (but not touching) 1 inch of simmering water until melted. Meanwhile, whisk the egg yolks with the sugar in a mixing bowl until light yellow in color. Whisk a little of the chocolate mixture into the egg yolk mixture to temper the eggs (this will keep them from scrambling).

• 1 ½ tsp. pure vanilla extract • 1/2 cup plus 1 tbsp. sugar • 1/4 cup plus 1 tbsp. allpurpose flour, divided • 1 tsp. baking powder • 1/4 tsp. salt • 1 pint vanilla ice cream
Preheat oven to 350. Heat the butter, 4 ounces of the chocolate chips, and the unsweetened chocolate together in a medium heat-proof bowl set over simmering water just until the chocolate melts. Remove the bowl from the heat and allow to cool for 15 minutes. In a large bowl, stir (do not beat) together the eggs, coffee powder, vanilla, and sugar. Stir the chocolate mixture into the egg mixture and set aside to cool to room temperature. In a medium bowl, sift together ¼ cup of the flour, the baking powder, and salt; stir it into the chocolate mixture. Toss the remaining ½ cup of chocolate chips and 1 tablespoon of flour together in a medium bowl and stir them into the chocolate mixture. Spoon the mixture into 4-5” individual cast-iron skillets and place them on a sheet pan. Bake for 22 minutes exactly (avoid overbaking). A toothpick inserted in the center will not come out clean. Serve warm with a scoop of ice cream. TOP BAKING TIP: The secret to every delicious chocolate dessert is to use high-quality cocoa and/or chocolate; it's worth the investment.

1 large egg plus one yolk (room temperature is best) 1/3 cup plus 1 tsp. sugar 1/8 tsp. salt 1/2 cup chocolate chips or small chocolate chunks (60%-70% cacao) 2 tbsp. chocolate liquor (substitute vanilla extract, or other liquor) 1 2/3 cups heavy cream
Place oven rack in the middle position and preheat to 300. Boil water for a bain-marie (water bath). Whisk together the eggs, granulated sugar, and pinch of salt in a mixing bowl. Set aside. Place chocolate chips and chocolate liquor in a second mixing bowl. Set aside. In a 2-quart saucepan on medium heat, bring the heavy cream to a rolling simmer (small bubbles throughout, not a full boil). Stir throughout this process to avoid burning or developing a skin. Ladle a small amount of the cream (about 1/3 cup) into the egg and sugar mixer and whisk together. Repeat this process until all of the cream has been incorporated. (This is referred to as “tempering” your eggs. You don’t want to incorporate the cream too quickly, as it can “scramble” the eggs.) Add the hot egg and cream mixture to the chocolate mixture, whisk by hand to incorporate, and then emulsify with an immersion blender (or pour into a standard blender to emulsify.) Ladle mixture into oven-safe containers and place into a cake pan, leaving room to pour water. Gently pour boiling water into the pan, about 1” deep (or 1/3-1/2 height of containers), to form a water bath. Be careful not to get water into your pots de crème. Bake for about 30 minutes or until pots de crème are set with a slight jiggle. The actual bake time is dependent upon your oven calibration, and how deep you fill your containers. If using a timer, start at 25 minutes, and increase in 5-minute increments, as necessary.
Carefully remove pots de crème from the oven and allow to cool for about 5 minutes in the bain-marie. Remove each container, dry the bottoms on a towel, and cool at room temperature on a cooling rack. Once cooled, refrigerate until needed. Serve with crème chantilly (whipped cream), fresh fruit, and chocolate shavings, or drizzle with chocolate or raspberry sauce. TOP BAKING TIP: Have everything in place. Read through the entire recipe and gather all your ingredients and cookware—preferably in the order in which you need them— before you begin baking.

Easy Oreo Cake Mix Donuts

1 box chocolate cake mix 1 cup water 1/4 cup vegetable oil 1 egg Chocolate frosting Crushed Oreos
Preheat oven to 350 and spray a 6-count donut pan with non-stick cooking spray. Combine the chocolate cake mix with the water, oil, and egg. Scoop the batter into a piping bag or gallon size freezer bag. Seal and snip one corner with kitchen scissors. Gently squeeze the batter into the donut wells, filling each about 3/4 full. Bake 12-14 minutes. Remove from the oven and let cool completely
Remove donuts from the pan and repeat the baking process with the rest of the batter. Once the donuts have cooled, heat the frosting in the microwave for about 10-15 seconds (you want it soft but not completely melted). Generously frost each donut and top with crushed Oreos. TOP BAKING TIP: Bake your sweet treats (cupcakes, cookies, donuts, etc.) for 2-3 minutes less than what the recipe calls for and allow them to finish cooking in their baking dish. This assures they don’t get over-baked and ultimately produces a moister dessert.
