C

onfession: My first cocktail was a Tokyo Tea—and no, I wasn’t 21 yet. Thanks to my older sister who looks enough like me, I was able to start bar hopping much younger. Hopefully my daughter doesn’t follow in my rebellious footsteps, and if she does, let’s hope she has better taste, because the electric green Tokyo Tea isn’t exactly the most sophisticated of adult beverages. The good news? Maturity has made me appreciate alcohol—as opposed to its effects—and the complexities of what can be done when it’s mixed, muddled, shaken, and stirred with fresh-squeezed fruits, syrups, or sodas. Current cocktail favorites i nclude N e g r on i s , homem ade ja lap eño cucumber margaritas (courtesy of my lingering summer garden), and well-made Manhattans. I still don’t discriminate when it comes to spirits, but at least I’ve graduated from pouring them all into the same glass, right? Speaking of liquor, this month’s feature story, “Drink Up,” is all about alcohol. Pour yourself something strong and then turn to page 53 for 22 must-try cocktails (including the one on our cover from Land Ocean), plus some fun, informative facts about each establishment where they’re available. We also introduce you to four of our region’s most beloved bartenders, recommend home bar musthaves, spotlight local distilleries, and share a handful of beautiful (and boozy!) recipes courtesy of mobile mixologists. No matter how ominous the political (and actual) climate may be, at least we have cocktails to carry us through. For those itching to get away without going terribly —Joe E. Lewis far away, we share five close-to-home destinations that are waiting to be (safely) discovered on page 44. For each locale, writer Suzie Dundas proposes places to stay and things to do, along with tips on finding up-to-date health guidelines. With more people able to work and learn remotely—so long as the Wi-Fi signal is strong—may I suggest a midweek escape? It may be just what the mental health doctor ordered. In honor of autumn, we have a cornucopia of content dedicated to one of the most special seasons. Turn to The 10 Spot (page 18), for creative ways to welcome it—think Apple Hill adventures, foliage-filled drives, and harvest-inspired cooking classes. Speaking of autumnal eats, this issue’s Taste department (page 78) includes mustmake recipes that highlight fall’s most versatile vegetable: the squash. Whether stuffed, roasted, or served as soup, this prized produce pairs perfectly with cooler temps. For all the pumpkin spice latte lovers out there, we have you covered, too. Happy birthday to Folsom resident Louise Morton who turned 102 last month. Morton was honored with a socially distanced walk-by celebration at her Diamond Glen community from prominent Folsom figures, including Mayor Sarah Aquino, Police Chief Rick Hillman, and Fire Chief Felipe Rodriquez. Morton’s four keys to longevity are exercise, a healthy diet, faith, and a positive attitude.

Newcastle resident Jackie DeMartini is serving a one-year term as secretary/treasurer of the Board of Directors for Soroptimist International of the Americas (soroptimist. org), a global women’s volunteer organization that provides women and girls with access to the education and training they need to achieve economic empowerment. Folsom-based real estate developer Elliott Homes (elliotthomes.com) has named Nick Elliott—president Harry C. Elliott III’s youngest son—as its new controller. The family-owned and operated company has been building communities and homes for 100 years in California and Arizona, including Lakeview Oaks at Empire Ranch in Folsom, Saratoga Estates in El Dorado Hills, and Rolling Greens Estates in Granite Bay. Ever since the pandemic began, our ability to come together as a community has been curtailed for the most part. But leave it to the human imagination and creativity to come up with ways around what seems like an impossible hurdle, and you’ve got cleverly crafted events designed to keep us connected. We’ve found some such events that prove physical distancing doesn’t mean life comes to a standstill. Whether it be from our homes or safely in public, we can still partake in, support, and give back to our beloved communities.

Roseville BikeFest is back to spread the message that helmets save lives. Things will look a little different this year, and there actually won’t be any bikes—but there will be helmets (while supplies last)! The event on October 10 and 21 will allow you to drive by in your car and receive free helmets for the family. David Lobenberg by HEATHER L. NELSON

Beginning his studies in meteorology at UCLA in the ’60s, the horrors of integral calculus and quantum mechanical physics soon steered David Lobenberg toward the College of Letters and Art. With a packed portfolio of drawings at the end of the semester, he was accepted into their art program where he’d earn his bachelor’s and master’s degrees. “I discovered I was smitten with watercolor at the age of 16, after my parents signed me up for a class taught by Richard Yip who painted ‘wet on wet’—a very difficult and lovely technique,” shares Lobenberg. “There are precious few options to correct or make color changes with watercolor; and, when mastered, the medium has a beautiful, spontaneous, and translucent life to it.” Previously exhibiting his work at Elliott Fouts Gallery and Archival Gallery, the artist now sells most of his work through portraiture commissions and via his online California Vibe School of Watercolor™ art courses and Zoom workshops. He’s also been featured in prominent publications—including Southwest Art and Watercolor Artist—and served as an on-air expert at the KVIE Art Auction since its first broadcast in 1998. HLN: WHAT IS YOUR ARTISTIC STYLE? DL: I work in pencil, charcoal, acrylic, and—within the past five years—mostly watercolor. I especially like portraiture and have developed a very expressive, colorful, and energetic style that I’ve coined California Vibe Watercolor Portraiture™. I’ve conducted workshops on this across the U.S.

My favorite definition of the medium, “controlling the flood,” came from the pen of José Montoya—once poet laureate of Sacramento and member of the Royal Chicano Air Force. HLN: HOW DID YOU FIRST DISCOVER YOUR TALENT? DL: I grew up with a pencil in my hand. When I was in second grade living in Stockton, the school nurse contacted my parents expressing concern that I did all my creations in pencil, shying away from color crayons and paint. Through the years, as they witnessed my talent blossom, the nurse’s concern became something to laugh about. I later realized that at that young and tender age, I had an innate appreciation and interest in controlling my dark, middle, and light values as I drew! During my workshops, I often say “value does ALL THE WORK and color takes ALL the credit.” Value control is the bedrock foundation of drawing and painting. HLN: YOU BEGAN IN GRAPHIC DESIGN. WHAT LED YOU TO FINE ART? DL: I entered the workforce as a budding graphic designer in Los Angeles and put my art sensitivities to work to earn a living. I was in this business for about 30 years, through which I met and married my wife, Cheryl. We’re both graphic designers and established Lobenberg Graphics in Sacramento in 1982, but I’d often use my painting talent for clients like Mercy Hospital, the California

In my latest trend research with the National Kitchen & Bath Association (NKBA), several ideas bubbled to the surface. We discovered that form is following function in a whole new way, accommodating not just actual use but serving the way different generations, individuals, and family units design their home space—especially kitchens and baths. Here, we share the four overarching themes that emerged.

want their kitchens to promote human interaction—and the connected devices, appliances, and systems will be in place to serve that end. Open-plan kitchens will be inviting, cozy, and warm—perhaps to take the edge off all the tech—and will need to work for different styles and skill levels of cooks. For 82%, inclusion is important, especially with visibility from the kitchen to other parts of the living space. Other top priorities? Spaces that are conducive to entertaining and the need for strong Wi-Fi and Internet connection to call up recipes, cooking inspiration, and instruction.

Connected Living It’s easy to assume that “connected living” means connected devices, WiFi-enabled products, smart appliances, and home theater. But because the world has become so “connected” in the technology sense, it’s important to emphasize the connection among people, too—something most of us crave now more than ever. Homeowners

The days of tchotchke-filled rooms are becoming a thing of the past, so appropriate storage becomes key. Some 80% of respondents said minimizing clutter, cleaning, and a sense of organization is a critical design request; 69% want their bathrooms to be an escape; and 61% design spaces for easy meal prep—think plenty of countertops, easy access to tools and ingredients, and non-congested layouts. This includes utilizing cabinetry that organizes more in less space and specifying low-maintenance material choices or commercial finishes and fabrics that are easy to clean and long-wearing.

Among designers and architects, 67% expressed the desire for clients to remain in the family home as the top factor influencing this type of design. This was followed by 65% who said ensuring the bathroom is a safe and comfortable space for all generations, and 59% saying kitchens that are safe and easy for all ages and skill levels to use. Among the top design solutions are non-slip flooring or tile in the bathroom, tub, and shower; putting a seat in the shower; and zeroclearance shower entry or no doors, wider doorways, and attractive, noninstitutional-looking grab bars.

Healthy Living

To meet these needs, design solutions for the kitchen include more refrigerator space and flexible cool drawers to accommodate fresh produce, meats, and dairy; giant sinks to clean all of that produce; integrated areas to prep meals; and recycling and composting centers. In the bathroom, health and wellness elements include body jets in the tub or shower, aromatherapy, a sauna, chromatherapy, and shelves for candles. Some even cited a float tank for sensorydeprivation therapy among elements promoting the bathroom as a spa-like place to escape, relax, and heal the body. Kerrie L. While I enjoy the simplicity of the classics, I also love the tiki culture and island vibe. There are so many directions you can go when there are no rules. I was lucky enough to represent California in the National Mai Tai Championship 2014 in Kona, Hawaii, and it left a positive mark on my creative process. What do you drink at home? s of this writing, it’s late summer 2020, and outdoor dining is still the mandate. To compound the issues, our friends in the hospitality industry are facing unusually warm weather, and the air is dense with smoke from the fires that seem to be a yearly cycle here. But through the apocalyptic forecasts of some, there are still determined entrepreneurs providing soulful sustenance to those of us willing to seek it. And so it is with Porottas, a Roseville restaurant serving scratchmade South Indian cuisine. On my recent visit, owner Kavita Mohan greeted me at the door with menus before I proceeded to the makeshift patio. First up was medu vada—three savory doughnutshaped fritters made with urad dal (black lentil) batter served alongside coconut chutney and sambar. The latter is a lentil-based vegetable stew/dip that can be prepared to suit your capsaicin tolerance. Even though medu vada is typically eaten for breakfast or as a snack, I would love to have it as an appetizer with a cold IPA (beer and donuts? Yes, please!). Next, I followed Kavita’s recommendation and ordered Hyderabadi vegetable dum biryani, which is a mouthful—both figuratively and literally. The aromatic entrée featured fresh vegetables marinated with yogurt, alongside fried onions, spices, saffron, coriander, and cashews cooked with long-grain basmati rice. Served with raita and salan (a curry-style condiment), the flavors and textures in this dish seem to come at you from every angle: the savory vegetable and spice-infused basmati, the fiery and fragrant cumin/chili/tamarind salan, and the cooling raita sending waves of sensory stimulation to your frontal lobe. Finally, what seems to be everyone’s favorite: the masala dosa. For the dosa neophyte, it’s a crispy crépe made from lentil and rice batter. The masala version from Porottas is massive, and it conceals a 4”x4” portion of warm potato masala (seasoned potato “salad”). For me, the combination was a bit bland, although the chutneys and sauces served with it added some balance. Next time I’ll opt for the rava onion masala dosa and increase the heat level. I’ll also leave room for a mango lassi, chai tea, or Kumbakonam coffee (a piping hot blend of frothed milk and fragrant, fresh-ground coffee beans), for which I will undoubtedly return soon, Stop in and try all of Kavita’s family recipes; you won’t be disappointed.

// Mysterious happenings occur every evening at a new locale in Historic Folsom. Perhaps it’s the spirits of inhabitants from a century past, or just some spirited trickery and unique décor by owners John and Tahni Voelz—I’ll let you decide. I can tell you this: Every day at 4 p.m., the café “resets” into a nighttime venue replate with live music on weekends (when COVID-19 restrictions lift), different lighting and uniforms, and a happy hour from 4-6 p.m. (Monday through Thursday). But no matter which iteration you choose to attend, they continue serving a carefully curated, eclectic menu—as well as hyperlocal beer and wine (sourced within a one-hour drive of Folsom), coffee, and tea. I stopped in on a Sunday for brunch and was rewarded with their California Brunch Board and Soppressata and Fig Flatbread coupled with some fresh–brewed black iced tea. The brunch board included rosemary ham, fresh fruit, avocado mash, brie, sliced baguette, fig jam, my pick of two, house-baked pastries (I chose a seasonal scone and morning cookie that was packed with oats, sun-dried apricots, and warm spices with a white chocolate drizzle and crushed pistachios), and other assorted accoutrements. The spreadable brie was topped with a tantalizing square of honeycomb, whose flavor and texture immediately transported me back to my childhood when a neighbor would tempt us with it fresh from the hive. The scratch-made flatbread—which featured fig spread, goat cheese, salty soppressata, crushed pistachios, and a blend of mozzarella and provolone—was a hit and the perfect “shareable” for a brunch party. Butternut Squash & Ginger Soup

7 cups butternut squash, peeled and medium diced 1 red onion, medium diced 1 tbsp. garlic, minced 4 cups vegetable stock or water 2” piece ginger, peeled and diced small 6 tbsp. coconut oil Salt and pepper, to taste Crème fraîche

Combine squash, onion, garlic, stock, and ginger in large soup pot. Bring to a boil and simmer until squash and onions are soft, about 20 minutes. Add coconut oil and purée with a hand blender. Season with salt and pepper to taste. Serve warm with crème fraîche.

Vegan Spaghetti Squash Nests with Ratatouille

Preheat oven to 400. Split the squash horizontally, scoop out seeds, and cut into quarters. Place in a baking dish with 1/2” water. Drizzle with olive oil and season with salt and pepper. Place on top rack of oven and roast until golden and tender (about 35-40 minutes). To prepare ratatouille, heat olive oil in a large frying pan; sauté onions,

eggplant, zucchini, and garlic for 10 minutes. Add tomatoes, herbs, capers, olives, pepper, and vinegar. Cover and cook for 10 minutes, stirring occasionally until vegetables are tender and mixture is thick. When squash is done, gently scrape the strands with a fork. Serve with ratatouille ladled on top; garnish with fresh basil.

Acorn Squash with Quinoa, Asparagus, & Radicchio

• 2 medium-sized winter squash (acorn, delicata, or kabocha work best) • 2 tbsp. ghee or grapeseed oil • 1 cup tri-colored quinoa, soaked overnight, rinsed and drained • 2 cups vegetable stock or water • 2 shallots, finely chopped • 1 lb. asparagus, ends trimmed • 2 cups radicchio, thinly shredded • Sea salt, to taste • ¼ cup pepitas Autumn Vinaigrette • ½ cup apple cider vinegar • ¼ cup olive oil • 2 shallots, finely chopped • 1 tsp. whole-grain mustard

Preheat oven to 400. Cut squash in half, lengthwise; scoop out and discard pulp and seeds. Brush the inside and edges with melted ghee or grapeseed oil. Sprinkle with sea salt. Bake for 30 minutes or until tender when pierced with a fork. In a small saucepan, bring quinoa, vegetable stock or water, and a pinch of sea salt, to a boil. Reduce to simmer and cook until all of the liquid is absorbed, about 15-20 minutes. Make vinaigrette by whisking the apple cider vinegar, olive oil, shallots, and whole-grain mustard together. Set aside. In a small saucepan over medium-high heat, sauté shallots for one minute. Add asparagus and sauté for three minutes until tender. Add the quinoa, radicchio, and vinaigrette. Toss until well combined, and divide the quinoa mixture between the four squash halves. Finish with pepitas, and serve immediately.

Butternut Squash & Portobello Tacos

1 butternut squash 2 large portobello mushrooms 1 medium sweet onion 1 red bell pepper 1 poblano pepper or green bell pepper 2 swirls of olive oil 2 cloves garlic; 1 whole, 1 minced Pinch of your favorite Mexican spices/taco seasoning or ground cumin • 2 limes, juiced • Salt and pepper, to taste • Artisan corn tortillas Toppings • Sour cream or Mexican crema • Grated cotija • Jalapeños • Limes • Cilantro • Salsa Cut off squash where it begins to round out. Use the top portion for this recipe. Peel off skin and cut into wedges, about 4” long. Slice portobello into 1/3” thick slices. Peel onion and slice into 1/3” pieces, cutting from top to bottom. Cut bell and poblano peppers lengthwise in strips; remove seeds and stems. Place all vegetables on a baking tray. Heat olive oil in a large frying pan. Sauté one whole garlic clove and squash. Once squash begins to brown, add remaining veggies and minced garlic and cook until al dente. Add spices and lime juice; season with salt and pepper. Stir occasionally, letting vegetables caramelize. Warm tortillas on a gas burner or use a lightly oiled pan. Fill with vegetables and garnish with toppings.
