This gently sparkling scarlet refresher is a classic turn of the century cocktail; perfect for ushering in the brighter – and fruitier – days to come.

Ingredients 25ml Mermaid Gin 25ml cherry liqueur 25ml Benedictine 50ml pineapple juice 25ml lime juice Angostura Bitters Soda water

Method

Mix Mermaid Gin, Cherry Liqueur, Benedictine and Bitters with ice until the glass cools. Pour into a tall glass, top up with pineapple, lime and soda. To garnish: a segment of pineapple and a cherry

Island Roasted have been working with small-scale Honduran producer Leidy Chinchilla for five years now. From their high-altitude micro farm of just 0.7 hectares in La Labor, each year’s crop of just 10 sacks is produced exclusively for Island Roasted – meaning you won’t find this coffee anywhere else in the world!

Leidy Chinchilla inherited the farm from her grandmother, and although her main income is from coffee, she also grows bananas, limes and mangoes. The semitropical climate and rich volcanic soil are the perfect combination for shadegrowing her Pacas and Catui coffee plants. When at optimum ripeness, the coffee cherries which house the beans are picked carefully by hand, before being washed for 24 hours and dried in greenhouses.
