Recent reports said that using red plates for Alzheimer’s patients helped them to eat more. However, a newer study demonstrates some faults in that concept. The newer study was set up to explore the Delboeuf Illusion’s bias on serving and eating behavior. The Delboeuf Illusion is an optical illusion of relative size perception. The best-known

image exemplifying this illusion is two circles of identical size placed near each other. One is surrounded with another circle. The Delboeuf Illusion makes that one look larger than the other. It is not. We are influenced by more than plate color. The researchers in this newer study, “Plate Size and Color Suggestibility,” did confirm that red plates for dementia patients could cause increased consumption, but only if there was significant contrast with the food on the plate. They also discovered methods that will help people eat less. Their study revealed that all of the following methods would encourage people who struggle with vision issues or interest in food to eat more: 4Use larger dinnerware to serve meals. Larger plates make it seem like there is less food on the plate.

4Use dinnerware that contrasts greatly in color to the food (for example, white food on red plates and red food on white plates). 4Use dinnerware that closely matches the color of the tablecloth. Because of the Delboeuf Illusion, how much one consumes is highly influenced not only by plate color but also by plate size and even the tablecloth the plate is placed upon. So to eat less, I reduce the contrast between food and plate color? Not exactly. The study also showed there is a difference between being served and selfserving food. We have a strong tendency to over-serve ourselves if we are placing food onto a plate that has little contrast to the food. It may seem a little confusing, but it all comes down to how visible the food is on a plate. In

the process of self-serving, you will put more greens onto a green plate than you would a white plate. If you are serving Alfredo, then use a red plate. With a red plate you are better equipped to see how much Alfredo you are serving yourself. The contrast between food and plate actually influences you to make the serving smaller. The same occurs with a large versus a small plate. A large plate influences you to put more food on it than a small plate does. What plate color and size to choose lies in the goal. So which is it? High contrast or low contrast? Large plate or small plate? It depends on what your goal is. If it is serving yourself smaller portions, then you want high contrast between your plate and your food. It helps you delineate your food from your plate, and it will influence you to serve less food. A small

plate also encourages you to selfserve smaller portions. However, when it comes to encouraging the elderly to eat more, you have to be aware of your self-serving tendencies when plating the food. Using a larger plate is easy. It will look like less food to the finicky eater. Choosing a plate with a high contrast from the food allows the elderly to clearly distinguish the food from the plate. It also makes the food more appealing. The natural effect of the Delboef Illusion will influence the elder to eat more. Keeping plate color and size, food contrast, and who is doing the serving clearly in mind before plating a meal can help you achieve concrete goals of increasing or decreasing food consumption.
