“
utchers are like bartenders,” Gary Smith tells me. “They both have regulars that come in every week and chew the fat.”
Unable to keep from laughing at his own punny joke, a playful smile crawls across his face as he begins to explain the importance of a good butcher. We’re sitting downstairs in Keynote market, where Gary leads the meat team. Meat is usually the focus of the meal so it had better be good, he says. You need a butcher you trust to recommend the right cuts, have what you need in stock and have the skill to cut custom requests. That’s why the meat counters at the suburban markets (Britannia Plaza, Keynote, Lendrum Shopping Centre and West Market Square) are open concept; customers can chitchat with the butcher while they watch their meat being cut. “If someone wants a specific cut of meat, we’ll do it on the spot,” says Mary-Jane Adam, Gary’s counterpart at Lendrum in Edmonton. Want thicker rib-eye steaks? Chickens deboned? Chateaubriand? Done. Mary-Jane and her team even make lamb noisette on a regular basis for one customer. It’s that commitment to helping customers combined with exceptional quality meat that recently brought Ramil Salimbacod to Sunterra, where he’s leading the meat team at Britannia Plaza. “We have special products,” Ramil says. Like showcase counters full of fresh seafood, marinated kabobs, satays,
stuffed chicken breasts, seasoned burgers and sliders, marinated steaks and more. Then of course, there’s Sunterra Farms premium pork, Lone Pine certified humane chicken, SunGold halal lamb and Sunterra Farms naturally raised AA or higher beef, all from Alberta. And then there’s Valbella packaged smokies, bacon, ham and sliced charcuterie offerings, made in Canmore using Sunterra Farms pork. So what products do these experts, who have a combined 78 years of experience, recommend? Gary says you can’t go wrong with burger packs. Starting at $14.99 for four handmade patties with all the fixings, there’s no better deal around. Ramil loves a classic cut-to-order tenderloin or rib-eye steak. For Mary-Jane, it’s all about the pork. As a student at NAIT before joining Sunterra, she learned about the Pig Improvement Canada program and the Price family farm and now recommends Sunterra Farms pork to all her customers. “It’s the best pork I’ve ever seen,” she says. Whatever meat you’re looking for, anything from a pork crown roast to turducken, porchetta or cowboy steaks, just ask the butcher at your next trip to the market. If they don’t have what you’re looking for, they’ll order it in or find a substitute for you. “We take a lot of pride and passion in the meat here,” says Gary.
