TAKING STOCK OF THE BONE BROTH TREND

Health, wellness and fitness communities around the globe have been making a fuss about bone broth for years now. Bone broth has actually been a part of many cultures’ traditional diets, only making its way into the trendy social-media ecosystem in recent history. WHAT IS BONE BROTH? Bone broth is a clear nutrient-dense soup that is made from cooking down animal bones, cartilage and meat. Bone broth can be made with beef, pork or even seafood. When you reduce and simmer down meat and cartilage from bones in boiling water, they melt and become tasty, nutritious, liquid gold. This slow-cooked meat stock is made from bones boiled long enough to allow the connective tissue and marrow to dissolve into a liquid: this takes a minimum of six, and up to 24, hours. A good broth should jiggle when cold because of the natural gelatine that’s plentiful in bones rich in connective tissue.

BOASTING THE BENEFITS OF BONE BROTH

Bone broth is mostly water and protein. The protein unique to broth comes in the form of gelatine dissolved from connective tissue and cartilage. Bone broth not only packs a protein punch, it also contains amino acids, the building blocks of protein in the body that perform several other important functions. The gelatine in broth contain a handful of these building blocks called proline, glycine and glutamine. In the nutrition world, these are called “conditionally essential amino acids”.

A jiggly, gelatine-rich broth is a naturally high source of nutrients known for strengthening the delicate villi that pave our intestinal lining. In the same way we use aloe vera gel on sunburn, emerging research from Italy has shown the potential role of gelatine in healing intestinal gutbarrier damage, which is common in coeliac disease, inflammatory bowel disease, and IBS. Bone broth is also a plentiful source of glutamine, which plays an important role in looking after the health of our gut lining. It boosts the immune system and encourages scar-tissue healing. Other studies suggest the collagen derived from chicken cartilage is effective at improving pain, stiffness and joint function in patients with osteoarthritis.

THE GLOBAL BROTH MARKET

Recent analysis from MarketWatch has noted that the production of bone broth is more cost-effective than other animal protein production and involves the use of by-product from the meat industry as input which is anticipated to drive manufacturers to invest more into the market, making it more sustainable and profitable. Added benefits like the presence of macro and micronutrients in good proportion with a high concentration of protein are expected to drive the consumer towards bone broth products as an

alternative to other protein sources resulting in substantial growth over the forecast period.

• 2 eggs

• Preheat air fryer to 190o degrees.

• 1 1/2 tbsp self-rising flour

• Melt the dark chocolate and butter then set aside.

• 3 1/2 tbsp sugar • 100g unsalted butter • 100g chopped dark chocolate

• Whisk the egg and sugar together until frothy. • Pour the melted chocolate into the egg mixture. Add the flour and combine til even. • Grease and flour 4 oven safe ramekins. • Pour the cake mixture into the ramekins til 3/4 full. • Pop into the air fry for 10 minutes.

• Once done, remove the ramekins from the air fryer and let it cool for 2 minutes. • Remove cake from the ramekin and enjoy!

THE AVIATION THAT FLIES FREE FROM ALCOHOL The Aviation is a classic cocktail made with gin, maraschino liqueur, crème de violette, and lemon juice created by Hugo Ensslin, head bartender at the Hotel Wallick in New York, in the early twentieth century. Harry Craddock’s influential Savoy Cocktail Book (1930) omitted the crème de violette and many later bartenders have followed Craddock’s lead, leaving out the difficult-to-find violet liqueur.

INGREDIENTS:

HOW TO:

• 2 shots (60mls) Terps & Co gin-like

• Add gin-like, lemon juice, and liqueur to a cocktail shaker. Fill with ice and shake until cold. Strain into a coupe glass, then garnish with a lemon twist. Extra Maraschino cherry brine can always be added for those with a sweeter tooth.

Luckily, Terps & Co’s gin-like already has a beautiful light purple hue, making it the perfect non-alcoholic alternative for this classic drink.

THE GREEN APPLE MOCKARITA This is a refreshing take on the Margarita, of which the history is one of folklore due to its numerous origin stories. According to Jose Cuervo (the Tequila brand), however, the cocktail was invented in 1938 by a bartender in honor of Mexican showgirl Rita de la Rosa. Regardless of where it came from, Margarita are very popular, especially for sharing and this recipe is for a jug which will make approximately four servings.

• Salt to serve

• Place salt on a plate. Run the cut side of the lime around the rims of serving glasses. Dip in the salt to coat.

• 1 lime, halved • 3 cups sparkling apple juice • 2 tsp finely grated lime rind • 2 tbsp lime juice

• Place sparkling apple juice, lime rind, lime juice and ice in a blender and blend until smooth. Pour evenly among the glasses.

• 4 cups ice cubes • 4 slices green apple • Lime zest to serve

THE COSNOPOLITAN While the Cosmopolitan cocktail is widely perceived to be a more modern creation – rising in popularity in the early 2000s as the drink of choice for the ladies in the hugely popular television series, Sex and the City, there is a recipe for a Cosmopolitan Daisy which appears in Pioneers of Mixing at Elite Bars 1903–1933, published in 1934. Old or new, this cocktail remains a firm favourite and can easily be made into a non-alcoholic alternative with help from Seedlip.

• Pomegranate Seeds to serve

• Place pomegranate seeds in an icecube tray. Cover with water. Place in the freezer for 2 hours or until frozen.

• 4 cups chilled lemonade • 2 cups ruby red grapefruit juice • ½ cup lime juice • ¾ cup of orange and mango juice (or flavoured sparkling water)

• Combine the lemonade, grapefruit juice, lime juice, orange and mango juice in a serving jug. Top with pomegranate ice cubes. Divide among serving glasses and serve immediately.
