e’ve been discussing the idea of having a special issue showcasing the local wine and distillery scene for quite some time. A few years ago, we published a brewery issue that received a lot of attention. In this issue, we are proud to be able to profile a variety of local wineries and distilleries in our First Annual Wine & Spirits Guide. Before we could put together a special Wine & Spirits issue, we had to do some research and a lot of homework. As you could imagine, this project involved visiting many local wineries and distilleries. We encountered very enthusiastic proprietors who were eager to give us tours, explain their processes, and tell us about the history of their establishment and their personal journey. And then there was the wine and spirits sampling – of course we had to sample the products personally! What kind of research project wouldn’t involve sampling? It just seemed like the polite thing to do. We were surprised to learn that there are wineries and distilleries in just about every corner of San Diego County. While most of the distilleries have an urban feel, the wineries were a bit more diverse. There are urban wine tasting rooms that do a fantastic job of sharing their wine. There are small wineries and large wineries. Country wineries and city wineries. Wineries with their own vineyards, and wineries that have offsite vineyards. The bottom line is that there are all types of establishments, and all of them are definitely worth a visit. The Beach & Country Guild hosted over 200 guests at the 49th Annual Dia del Sol luncheon at the Fairmont Grand Del Mar in October, raising $220,000 for United Cerebral Palsy (UCP) of San Diego. The “Age of Aquarius”-themed event included silent and live auctions, gourmet lunch, a GapKids fashion show featuring kids living with cerebral palsy, and a men’s and women’s fashion show. Kimberly Hunt of 10News served as the mistress of ceremonies. “We are so fortunate to have such a hard-working group so committed to our cause, year after year,” said Guild President Deanna Murphy. “Dia del Sol is truly a collaborative labor of love for everyone involved. Teens Create Peaceful Connections Seven students from Pacific Ridge School participated in a peacebuilding summit with nonprofit Hands of Peace over the summer. The students met with Israeli and Palestinian teens who stayed with local host families, each day participating in facilitated dialogue sessions to create connections and break down stereotypes. The group also bonded by painting murals, doing a ropes course, and visiting with students near the United States-Mexico border. Each summer Hands of Peace brings a group of Jewish-Israeli, Palestinian Citizens of Israel, and Palestinian teenagers to San Diego and Chicago for a 19-day, dialogue-based experience, as well as with a comparable number of American teens from Jewish, Christian, Muslim, and other faith backgrounds. The program teaches team-building and leadership skills, helps the participants learn about different cultures and religions, guides them in learning about the conflict from different points of view, and encourages them to take action to incorporate peacebuilding into their personal lives. Local Dancer to Compete in World Championships Thirteen-year-old Carmel Valley resident Katie Albright has been selected as a member of the 2018 USA Tap Dance Team and will be traveling to Riesa, Germany to compete in the World Tap Championships from Nov. 27 to Dec. 1. The USA team includes 78 dancers from 18 states who will compete against tap dancers from over 30 countries around the world. Katie is a four-time national solo champion in tap, jazz, and lyrical dance. She has won 24 regional dance titles and seven national dance photogenic titles. She has also earned numerous Grand National Championship titles with her team at The Element Dance Center. She recently began training in competitive Latin ballroom dance and won her first world championship in September. She is also an active advocate of the Dancers Against Cancer foundation and works to raise awareness and funds for dancers battling cancer. NCDA’s “Dream” Showcase Local dance studio North County DanceArts, Inc. (NCDA) recently presented its annual dance showcase, titled “Dream,” at Canyon Crest Academy’s Proscenium Theater. The showcase was presented in three performances over two days, featuring a variety of dance styles from ballet, tap, jazz, and hip hop to pointe, contemporary, lyrical, and acro dance. Dancers ranged from three years old to adults in all levels of dance, with original choreography by NCDA’s professional instructors. “This entire show bumps you into another stratosphere of performance excellence,” said Steve and Joan Shirley in a review of the show for the San Diego Theatre Review. For 38 years, NCDA has been known as a training ground for many highly visible public personalities in the entertainment world, including television personality Mario Lopez, actress Taryn Manning, and Tony Award winner Karil Kulish, among many others. SDUHSD Appoints New Superintendent The San Dieguito Union High School District (SDUHSD) Board of Trustees has appointed Dr. Robert Haley as its new superintendent. Dr. Haley has served as the Superintendent of CotatiRohnert Park Unified School District in Northern California for the past seven years, and has previous experience in six school districts as a teacher, principal, and district-level administrator. Dr. Haley is well-versed in school finance issues and the operational aspects of school district management, and serves on the State of California Fiscal Crisis & Management Assistance Team Board of Directors. He is also known for his research and work on school safety and is a member of the Association of California School Administrators’ Fatal School Violence Task Force. “Dr. Haley is the ideal superintendent for our district,” said SDUHSD Board President Beth Hergesheimer. “He believes in the team approach to leadership, actively listening, collaborating, and focusing decision-making on what is best for students.” For more information visit www.sduhsd.net.

SCIENCE DENTAL IMPLANT DENTISTRY

dental implant is an artificial titanium fixture that is placed surgically into the jaw bone to substitute for a missing tooth and its roots.

There are different types of dental implants ranging from blade to cylinder to screw type, with the screw type being the most commonly accepted design nowadays. Titanium is the ninth most abundant metal on Earth. It has a light weight, is resistant to corrosion, and is biocompatible with living tissue. Swedish surgeon Dr. Per-Ingvar Branemark discovered that when titanium makes contact with living bone tissue, they grow together to form a permanent adhesion. He named this process osseointegration.Osseointegration – defined as direct structural and functional connection between ordered, living bone and the surface of a load carrying implant – belongs to the category of primary bone healing. Right after implant placement, the

inflammatory bone healing phase takes place. This is followed by the proliferative phase where initial bone, known as woven bone, is formed four to six weeks after the implant placement surgery. This bone is low in density but forms rapidly. The third phase is the maturation phase, where osteoid type bone deposited. Loading the implant (using the implant) stimulates transformation from woven bone to lamellar bone. This bone is the weight-bearing bone that is formed; lastly, the resorption and remodeling phase occurs throughout the lifetime of the implant. The implant complex is composed of multitudes of structures: bone tissue, implant, abutment, abutment screw, prosthetic superstructure, retention screw, esthetic facing, chewing surface. Bone tissue, placement of implant, and generally the healing abutment is dealt with by a surgeon or the implant placing practitioner; the rest of the structures are dealt with by the restoring dentist. Most people are candidates for dental implants except for a small group of patients who are compromised medically and/or dentally, demonstrating delayed healing such as immunosuppression, antimetabolic treatment, or uncontrolled diabetes. It takes time for dental implant dentistry to take place due to the rules of the physiology of osseointegration. Conventionally, after a tooth is extracted, with or without bone grafting, it takes about three to four months until the site is ready for the actual implant placement. This time period might slightly vary depending on the quality of the patient’s existing bone quality. Following the dental implant placement, roughly another four months is needed for osseointegration of the titanium to the native bone due to laws of bone physiology. Then the patient’s restoring dentist works on the actual delivery of the crown, which is the only visible portion of this complex. There are also other variations of treatment in regards to dental implant placement and bone grafting, these are discussed on a case by case basis with a patient’s restoring dentist and surgeon working together to reach a customized outcome at the patient’s best interest. 

home to California s first recorded vineyards, planted in the 1700s by Father Junipero Serra. Today, the county boasts over 115 wineries – and more history to be savored with every glass. Our beautiful climate is a key factor for the success of local vineyards, and diverse conditions allow a wide variety of grapes to flourish. Wine grapes tend to be hardier and more water-efficient than other crops, giving them an advantage during drier years. San Diego-grown wines include Albarino, Cabernet Franch, Cabernet Sauvignon, Chardonnay, Grenache, Merlot, Sangiovese, Syrah, Tempranillo, Viognier – the list goes on! THE MORE YOU KNOW A hybrid is two grape types genetically crossed, while a blend combines two grape varieties after fermentation. Terroir is the natural environment for a particular wine – including soil, farming techniques, and climate. A vintage is a specific year or harvest. Craft distilleries have been allowed to operate tasting rooms only since January of 2017, even further expanding their local reach. ven the name says mellow relaxation and big deep breaths: Koi Zen Cellars. This craft urban winery in the heart of Carmel Mountain Ranch has a vibe unlike any other. Like stepping into your best friend’s home, Koi Zen Cellars is a special place for patrons to ‘uncork, sip back, and relax.’ Owner and winemaker Darius Miller’s life was run by pressure for many years, to the point it almost did him in with a stress-induced stroke. After honing his self-taught skills, Darius turned his passion for winemaking from a small-scale project into a beautiful business, allowing guests to reconnect, be in the moment, and take time (and a great glass of wine) to themselves. Koi Zen Cellars’ welcoming and warm ambiance has turned it into a community hangout for wine loving people. Co-owner Lisa Miller attends the Sonoma State Wine Business program, while steward Jon is a Level 1 sommelier en route to his Level 2. Steward Cat comes from the hospitality industry, and “Her infectious smile is loved by all,” Lisa confirmed. Koi Zen sources their grapes from growers throughout California, “giving guests a unique taste experience from all the major wine regions in the state.” Koi Zen creates fruit-forward, approachable, lively, and fun

full-bodied wines – Bordeaux, Burgundy, and Rhone-style reds and red blends among the broad-spectrum list of choices. Their most popular offerings include Cabernet Sauvignon, Viognier, and Zinfandel. The San Diego U-T readers’ poll awarded Koi Zen the best local winery for two years running, and their wines have won awards in competitions from local to international, earning points in the 90s. They give back to local charities and schools by hosting fundraisers. Koi Zen even received the Think Local First championship in 2017 by the San Diego North Business Chamber. Their fundraising efforts and Holiday Gift Extravaganza, coupled with hosting local musicians on the weekends and active memberships in local networking groups and the North San Diego Business Chamber, highlight the business as involved community members. Their tasting room and winery can double as a unique event space for corporate, private, and holiday events. ince 2007, Principe di Tricase Winery has been making wine the traditional way – no added ingredients or sulfites. “We believe that grape juice should be the only ingredient in wine,” explained owner Alfredo Gallone. Alfredo is committed to making the wine the “ancient way,” following in the footsteps of small-country wineries in Italy. Pairing the rustic, old-world style winery with Italian family ambience makes a tasting at Principe di Tricase an unforgettable experience. The winery offers a selection of Italian wines, including Aglianico, Nebbiolo, Aleatico, Barbera, Sangiovese, and Moscato. “Our Dark Rose Aglianico rosé style is very unique,” Alfredo explained. “Aglianico is one of the most ancient wine grapes with a special self-preserving capability that is transferred into the wine, giving it a very characteristic flavor.” A number of their wines have been awarded medals from both national and international wine competitions. Principe di Tricase complements their Italian selection with a number of French wines. The wine list includes Petit Sirah, Sirah, Cabernet Franc, Cab Sauvignon, Malbec, Merlot, Chardonnay, and Sauvignon Blanc. Since the arrival from Italy of daughter Raffaella and son-in-law Alberto, wine tastings are hosted Thursdays through Sundays. It’s a family affair, and Alfredo, Alberto, and Raffaella are proud to personally host guests. They’re joined by Joaco Sanz, a 25-year veteran of the wine industry in Spain. Joaco may look familiar to some as he has been on a number of TV shows about wine and wine pairings. “He was known as ‘El Professor Del Vino,’” Alfredo shared, “the wine professor.” Tasting flights start at $10, but the tasting fee is waived with the purchase of a bottle of wine. Balsamic vinegars and olive oils are also produced in house and available for purchase. A unique pairing on the winery property is the Highland Valley Christmas Tree Farm. “Since we purchased the property, we have been selling Christmas trees, continuing a long tradition,” Alfredo said. For many years, families have been choosing and cutting their Christmas trees on the property. “The smile on the children’s and parents’ faces makes it worthwhile.” Producing excellent wines and maintaining their strong Italian family ambiance are priorities at the winery. “Principe di Tricase and our family are here for you,” Alfredo said. “Please come and visit us and share in the love of excellent wines and an unforgettable experience.” 

They currently offer a Chardonnay, a Cabernet Sauvignon, a Syrah, and two Merlots. Each of the wines includes a description of how it was made and from the tour you’ll learn about the special care that goes into every bottle they produce. For food, they provide some munchies with a wine tasting and also offer a cheese plate for $12. You can even bring your own food and make it a picnic! It was then purchased by George Ferrara in 1928 and re-opened in 1932 with the passage of the 21st Amendment ending prohibition. During the following 75 years, Ferrara Winery grew to prominence in the California wine industry, and was designated a California historic point of interest in the late 1970s and a historic site by the City of Escondido in 1989. It was operated by three generations of the Ferrara family until 2010. Forgotten Barrel Owner Rodger Grove purchased the winery in 2016, working hard to restore this historic property while continuing to tell the story of the Ferrara family. The winery now offers wines produced on location in Escondido as well as wines produced at its Napa Valley winery. Forgotten Barrel’s winemaker sources grapes from Napa, Sonoma, Central California, and San Diego County. The property’s rustic charm provides a one-of-a-kind setting for weddings, birthday parties, or corporate events, either in the barrel room or in one of its outdoor venues. service. “We will accommodate safe and wellattended overnight visits, we will take your pet to play, swim, and treat your loved one to a variety of special treats we offer here at our resort,” explained the Floreses. “And if needed, we provide top quality training with career professional trainers. The full grooming salon is staffed with professional groomers that have been here for several years.” The staff even provides your pet with outings and activities while they wait to be groomed. Pet safety and overall wellness is a top priority at Markim. “At the beginning and end of every playtime, the caregiver will thoroughly examine the pup’s ears, eyes, underneath the tail, overall body and fur to make sure the pet does not have anything alarming in the fur or on the skin,” said the Floreses. “We also have detailed reports of any medical issues that occur during the stay. We notify the owner immediately and provide a full report when they pick up their pet.” Markim is well-known for its unique Camp Runa-Muck program, which is a “play all day” option for its pet guests that are being boarded or who need daycare. STUDIO WEST OFFERS AFTER SCHOOL WORKSHOPS FOR STUDENTS A

s the new school year begins, students are once again getting to create music at a world-class recording studio by participating in the Studio West After School Workshops. The workshops are led by Andy Walsh, who has been associated with Studio West for over 10 years and brings a wealth of experience as a producer, engineer, and musician. Andy is a 2012 graduate of our own music production program and also holds a B.A. in Music Humanities from UCSD but, most importantly, he creates an amazing environment for students to explore their musical creativity. The workshops center around collaborative and individual projects that challenge students, giving them the tools they need to make their musical ambitions a reality. Students develop their skills by listening to and critically analyzing

the music they love. From this insight, along with the experience of working in Studio West’s professional recording facility, students have the unique opportunity to make recordings that bring their creative visions to fruition. Students meet weekly for 90 minutes in focused groups of three to six students analyzing music, working on original compositions and arrangements, and ultimately recording their performances in the amazing studios. Students learn production techniques and get hands-on time with industry standard hardware and software packages such as Ableton Live and Pro Tools. Recruitment is ongoing and Andy and the Studio West team are always happy to oﬀer tours of the studio to interested students. We look forward to hearing from you! 

The founder of New Life House was inspired to start the program after experiencing addiction treatment. He saw the need for a program to serve as the missing link between short and long-term recovery. In fact, every staff member has experienced the program first-hand, offering insight into what residents may be experiencing. “The program has an unprecedented ability to hone in on the life struggles specific to 18- to 35-year-olds, and allows them to have a community around them in the same age range that can help out with direct experience,” explained David Saruk, Chief Operating Officer. Community is a cornerstone of the program. Family members are integrated throughout the recovery process, and residents build lifelong relationships. The active alumni program is proof of these bonds. “Our goal is to remain successful long after graduation, so we provide a resource for all our alumni to tap into anytime they need assistance,” David said.

The commitment to long-term sobriety sets New Life House apart from other treatment programs. “Trust people that have experience, and realize that recovery is a process that can’t be completed inside of a few months.” The average stay at New Life House is 13 months. Although people struggling with addiction “will be looking to manipulate the situation any way they can to avoid doing the rigorous internal work required to live a good life in recovery,” David acknowledged. This is a tough position for loved ones who are trying to make the best decision. “Building a foundation in recovery takes ample time, and it’s not something that can be accomplished inside of 30 days.” That foundation at New Life House is based on teaching vital life skills alongside treating the character of each resident, including the importance of a strong work ethic, living honestly, benefits of community, and essential coping skills for sobriety. “New Life House understands that abstinence is a vital stepping stone to true development of an individual,” David shared, “and our hands-on approach focuses on giving our residents the platform to become the best person they can be.” 

New DMUSD Leadership DISTRICT WELCOMES NEW PRINCIPALS AND DIRECTOR

el Mar Union School District (DMUSD) recently named new principals at two of its schools as well as a new director for its Early Childhood Development Center (ECDC): Mr. Jason Soileau (Del Mar Heights School), Mrs. Alison Fieberg (Sage Canyon School), and Ms. Brigitte Blazys (ECDC). Mr. Soileau comes to DMUSD from Texas, where he served as a principal, assistant principal, and teacher. Mr. Jason Soileau He is a highly respected and accomplished school leader and educator known for building positive school culture that supports the success of children. Mr. Soileau replaces Wendy Wardlow, who retired after serving as principal for 18 years. Mrs. Fieberg has been with DMUSD since 2004. During her career, she has been an assistant principal at two schools, a teacher on special assignment doing district-level work, and a primary and upper grade classroom teacher. She has also served on numerous district-level committees, is a skilled presenter, and excels at establishing strong relationships and supporting Mrs. Alison Fieberg children, families, and staff. Ms. Blazys joins the district after serving as Director of Pacific Beach Presbyterian Preschool for the past five years. Her experience, both as a preschool teacher and director, has positioned her well to lead the ECDC. Ms. Blazys is a skilled educator who loves working with young children and building relationships with families. All three leaders were approved by the Governing Board of Trustees in early August, and officially assumed their roles at the start of the Ms. Brigitte Blazys school year. 
