Spicy Hunter's Summer Chicken Stew

Ingredients • 8-10 spicy chicken pieces • 1 tbsp olive oil • 3 carrots, chopped into rounds • 1 large red onion, sliced • 3 garlic cloves, crushed • 2 tbsp, black olives, roughly chopped • 1 bottle of Slightly Different Sauces, hunters kickin BBQ sauce • 200g Nutbourne’s campari tomatoes To Serve • 100g Sussex charmer, grated • Toasted sourdough bread Method 1. Pre heat the oven to 180c. 2. Heat a large oven proof casserole pan with the olive oil and fry the chicken pieces until lightly browned all over. Once browned remove the chicken from the pan and set aside. 3. With the pan back on the heat add the carrots and onions. Fry gently until golden brown, then add the garlic, tomatoes, olives, and hunters BBQ sauce, mix well before placing the chicken pieces back into the pan. Bring to the boil, cover with a lid, and bake in the preheated oven for 1 and ½ hours. 4. Season well and serve with toasted sour dough and grated cheese.
