Roasted aromatic chicken thighs

Served with lemon rice & a simple tomato & feta salad

Ingredients - Serves 6 - 8 • 2 Packets of skinless chicken thighs • 2 tbsp Carla’s aromatic seasoning • 1 tbsp Carla’s ground cinnamon • 1 tbsp Carla’s dried parsley • 1 chilli, chopped into rounds • 150ml Susana & Daughters kefir drink and a little extra for serving • Ground pepper to season • ½ lemon Method 1. Place the chicken thighs into a bowl, sprinkle the aromatic seasoning, ground cinnamon and dried parsley over the chicken, mix well to ensure an even coating. 2. Pour the kefir drink into the bowl along with the chopped chilli’s, season with ground pepper and combine well. 3. Cover the chicken with foil and leave in the fridge to marinate overnight or if time does not allow a minimum of 2 hours will do. 4. Remove the bowl of chicken from the fridge and place the chicken pieces into an oven proof dish. Meanwhile pre heat the oven at 190oc. 5. Place the chicken in the oven for 1 hour or until slightly crispy and cooked through. 6. Remove from oven, squeeze the juices of half a lemon over the chicken and just before serving drizzle over a little extra kefir drink. Side dishes •500g of rice and 1 lemon, To cook the rice, use the theory of 1 part rice to two parts boiling water, simmer until the water is completely absorbed (500g rice - 1litre of boiling water) once the rice is cooked finish off with the juice of 1 lemon.
