Meet Lyle Koch of

Antonella’s Ristorante

KP: Tell us something about yourself and what led you to opening Antonella’s? Lyle: My entire life, I have loved to cook. I was inspired by my mother who was a great cook. I was very fortunate to have learned from some of the best chefs in Europe - first in Berlin and then in Italy. I returned to the U.S. and received degrees in Culinary Arts and Business Management. I became the Regional Manager for Scott’s Seafood Restaurants in California and Hawaii and then Ruth‘s Chris Steak Houses. The opportunity of my opening Antonella’s in 2001 was a dream come true. KP: What makes Antonella’s the special restaurant that it is? Lyle: Thank you. I like to think it is for many reasons, some of which are the attentiveness to detail and the wishes of our guests. We like to keep things simple. Everything is made from scratch, there are no bases. Everything comes in fresh daily. Our staff is very gracious and the ambiance, for lunch or dinner, always delightful. Also, private parties of any size, such as birthdays, anniversaries and weddings, are always very enjoyable here. We cater, as well. Every day, there are companies and private homes from all over that call us for meetings, special events and parties that they are hosting. They love calling us. I love that, too.

KP: What are some of the rave reviews you often hear? Lyle: The food. People who love Italian, in particular, truly appreciate the choices and deliciousness of the food. Also the selection and the pairing of the wines. The ambiance, too. It feels like you are at a Bistro in Tuscany. It very much smells and tastes like it, as well. It’s an enjoyable meal, a pleasant and happy memorable time for everyone. F

or those who are tired of the typical restaurants and would like to add some excitement to their dining should consider going out for Cuban food. Cuban food is a blend of many different ingredients. There are Spanish, African and Caribbean influences within Cuban dishes. Many of these same spices are incorporated in Cuban dishes. The reason Cuban food has a large amount of Spanish influence is due to the fact that during its colonial times Cuba was known for its trading and many of the Spaniards who were residing in the country brought their own dishes along with them. Many Cuban dishes use a base that is known as criollo. This base consists of garlic, onions, green peppers and oregano. Those who have had the opportunity to try criollo agree that the explosion of flavors is amazing. This base is one of the most popular bases that chefs use. The ingredients are common in Cuba and can be easily

found throughout the island. Cuban restaurants have many different options on their menus. They are known for serving traditional Cuban dishes that most people find hard to replicate. Many of the main Cuban dishes include some sort of meat. The most commonly used meats would include chicken and pork. Even though there are many influences found in Cuban dishes, they all are unique and enjoyed by everyone those that have tried them. Enjoy!
