PARSNIP CHIPS
British parsnips are available in the shops in the UK for most of the year. They’re a perfect alternative to potatoes when it comes to oven-baked chips!

INGREDIENTS - SERVES 4
�� 250gms parsnips �� 2 tbsp. rapeseed oil �� 1 tsp. dried oregano �� 1 tsp. smoked paprika �� ¾ tsp. onion powder �� ¼ tsp. black pepper
HOW TO MAKE
1. Pre-heat the oven to 230oC (450oF) and pre-heat two large baking trays. 2. Peel and cut parsnips into chips about 10cm long. 3. Combine the oil, oil, oregano, smoked paprika, onion powder and black pepper in a large bowl and add the parsnips and toss I the herby mixture. 4. Place the parsnips evenly on the hot baking tray and bake for 10 minutes. 5. Turn the parsnips and bake for a further 15 minutes until golden brown. Season with salt and enjoy!
