Seasonal recipe - Banana Bread
SUITABLE FOR VEGANS BANANA BREAD
Banana bread gets a rough ride as it’s usually made when bananas need using up but during lockdown, it’s become a must-bake recipe for staying at home!

Ingredients - Serves 8-10 How to make
♥ 3 large ripe bananas ♥ 75ml vegetable or sunflower oil ♥ 100g brown sugar ♥ 225g plain flour (or you can use self-raising flour and just 2 heaped tsps. of baking powder) ♥ 3 heaped tsp. baking powder ♥ 3 tsp. cinnamon or mixed spice ♥ 50g dried fruit and/or walnuts
1. Heat oven to 200C/180C fan/gas 6. Mash 3 large black peeled bananas with a fork, then mix well with 75g vegetable or sunflower oil and 100g brown sugar. 2. Combine plain flour, baking powder and cinnamon, and mix well. Add 50g dried fruit and/or walnuts. 3. Bake in an oiled, lined 2lb loaf tin for 20 minutes. Check and cover with foil if the cake is browning too quickly. 4. Bake for another 20 minutes. Test by inserting a Get creative with your skewer until it comes out clean.“ toppings! Toast some walnuts and mix 20g icing sugar with warm water until it forms a sticky glaze for the top. Finally, slice, eat and enjoy! 5. Allow the cake to cool a little before slicing. It’s delicious freshly baked, but develops a lovely gooey quality the day after. ”
