Lemon-Blueberry Biscuits Ingredients: 2 cups Flour 1/3 cup Sugar 2 tsp Baking Powder 1/2 tsp Baking Soda 1/4 tsp Salt 1 cup Lemon Yogurt (8oz) 1 Egg, slightly beaten 1/4 cup Butter, melted 1 tsp Grated Lemon Peel 1 cup Fresh Blueberries Glaze: 1/2 cup Powdered Sugar 1 tbsp Lemon Juice 1/2 tsp Grated Lemon Peel

Directions: 1. In a large bowl, combine the flour, sugar, baking powder, baking soda & salt. 2. In a small bowl, combine the yogurt, egg, butter & lemon peel. 3. Stir in dry ingredients just until moistened. Fold in blueberries. 4. Drop by tablespoonfuls 1 inch apart onto a greased baking sheet. Bake at 400 degrees for 15-18 minutes or until nicely browned. 5. Combine glaze ingredients; drizzle over warm biscuits. Note: I never tried this recipe before, but when I do, I will either pour batter into muffin cup liners OR into a 9”x13” pan. I am guessing that the directions say to “drop by tablespoons 1 inch apart onto greased baking sheet” because biscuits are not typically supposed to be perfectly shaped, as in “rounded” muffins or cut up “squares” from a 9”x13” pan.
