Lyalta Gardens is a year round local hydroponic grower of butter lettuce, watercress, micro greens and basil during the summer months. Peak of the Market has grown quality produce for 80 years and supplies a wide varieties of vegetables. Bassano Farms Ltd

Farmers' Fresh is a family owned mushroom farm in Abbotsford, BC. They produce a wide range of conventional and specialty mushrooms. They're "just a cap above"!

The plants in your cooler are still alive and are still in need of water in order to perform at their peak of freshness. During transportation from the field to your location produce loses between 12% to 15% of water. This is normal but we can reverse this process by crisping items before serving them.

Crisping is a method used to improve produce visual quality, texture, flavour, appearance and yield. The process involves placing an inch of the product in tepid water so as not to shock it. followed by refrigeration for 4 to 6 hours or overnight for best results. After a move to a clean container for storage.

Getting started

Any produce that has capillaries can be crisped through this process. Vegetables & produce like romaine lettuce, kale, asparagus, broccoli, celery and even some root vegetables like carrots and turnips. If needed you can repeat this process again.

Storing Fruits & Vegetables Make sure to place it in the back of the fridge where it is coldest away from any fans and covered to protect it. Ideally the temperature should be 34-36F or 2-3C.

Produce Tip:

Remove all rubber bands and ties as they can restrict the water flow and can fall into other foods.


Chili Lime Potato Salad Fresh locally owned Potatoes from The Little Potato Company are the perfect ingredient for this spicy take on potato salad. Yellow creamer potatoes, roasted peanuts, red Thai chilies and cilantro are added to the mix. The dressing is made using olive oil, lime, honey, chili garlic sauce and cayenne. This will be sure to warm up any guest this season.

Roasted Fingerling Potatoes with Dill & Goat Cheese

These perfectly tender garlic roasted fingerling potatoes are tossed with Canadian goat cheese, dill and peas for the perfect potato side dish!!


Pulled Chicken Tack Lettuce Wraps

Fresh local Butter letter topped with spicy taco seasoned pulled chicken, avocado, cilantro, drizzled with Baja BBQ sauce. A great healthy and flavorful menu items your customers will love, these lettuce wraps great for lunch, dinner, or appetizer. (for delivery and take-out order, pack ingredients separately and allow your customers to build at home)

Arugula & Quinoa Salad with Sweet Onion Vinaigrette Fresh local Arugula and hartly protine packed quinoa make this a great salad for any season. Add a side salmon or pair with avocado toast for a meal that will have your guest ready for the day.
