Nothing like the classic Fish and Chips to pair with any beverage on St. Patrick's Day. With a busy day like this holiday, kitchens may want to lean on some value added products like pre battered fish, batter mixes or frozen/blanched fries.
But one easy way to make something from scratch in advance would be to make your own tartar sauce. I love making mine with capers to create a briny flavor & unique twist to this classic sauce. A grilled lemon wedge is also a unique garnish to add some visual texture to this fried dish.

a large pot of salted water to boil.
Once boiling, add in the pasta and cook for until al dente.
Drain and set the pasta aside.
In a large saucepan over medium high heat, add in 2 tablespoons of butter and once melted, add in flour, whisking constantly, cook for 1 minute or until the flour begins to gain a light brown hue.
Pour in milk, cream and Guinness and while continuing to whisk, bring to a low boil. Don't let anything stick to the bottom of your pot.
Add in your seasonings and continue to stir.
Remove from the heat and whisk in 3/4 of your shredded cheese.
Whisk to combine and once all the cheese is melted, check for seasoning and flavor.
While you are preparing the sauce, add 2 tbsp butter to a skillet over medium heat and once melted, add Panko breadcrumbs. Stir to combine and lightly toast. Remove from heat when they are lightly browned.
Combine the pasta and the cheese sauce and pour into a 9 x 9 baking pan.
Sprinkle with the remaining cheese and buttered breadcrumbs and bake
uncovered for 25 minutes.
