Regular Cream Cheese A fully-cultured product that delivers a smooth, rich, and creamy cream cheese. Legal Definition: 33% Butter Fat, 45% Solids

Soft Cream Cheese Same legal definition as regular cream cheese. Processing alters the texture to make it softer.

Whipped Cream Cheese Same legal definition as regular cream cheese. Whipped with nitrogen for “fluffiness.” Spreads easily on “fragile” baked items such as bread, muffins, wraps, and crackers.

Neufchatel Cheese Offers 1/3 less fat and 30% fewer calories than regular cream cheese. Has a smooth, creamy, lighter texture with a milder taste than regular cream cheese, although it can be more sour or acidic in flavor. Legal Definition: 20-30% Butter Fat, 35% Solids

Light Cream Cheese Light cream cheese offers 50% less fat and 40% fewer calories than regular cream cheese. Legal Definition: < 16.5% Butter Fat

Process Cheese

Melting Cheeses

Process cheese has been classified by the FDA according to Butter Fat and Moisture content.

Prepare with 5 cups of milk/water per 5 pounds of cheese. Thin with water.

Pasteurized Process American Cheese Most closely resembles natural cheese in flavor, fat, and moisture. The standard is Butter Fat at least 50%; Moisture under 40%.

Queso Seguro Pasteurized Process American Loaf The standard is Butter Fat at least 50%; Moisture under 40%. Shreds extremely well and performs in topical melts and cheese sauces.

Pasteurized Process Cheese Food Same as pasteurized process American cheese, but costs less due to less fat and more moisture. The standard is Butter Fat at least 23%; Moisture under 44%. Pasteurized Process Cheese Spread Same as cheese food with the highest allowable moisture, the lowest fat, and the lowest cost. The standard is Butter Fat at least 20%; Moisture under 60%. Pasteurized Process Cheese Product No standards defined by FDA. Typically the same as cheese spread but with even lower fat and higher moisture.

Nacho Blend Pasteurized Process American and Imitation American Loaf Standardized Product. Referred to as substitute and imitation cheese. Both use casein and vegetable oil in place of milk solids and are virtually cholesterol-free. Substitute cheeses are made to be nutritionally equivalent to their natural and process cheese counterparts. Both retain desired appetite appeal, convenience, and performance at a lower cost.

Crab Rangoon Recipe using Culinary Selection® Culinary Cream Cheese Spread Crab Rangoon Yields 48 Crab Rangoon 8 oz. Culinary Selections Culinary Cream Cheese Spread 8 oz. fresh crab meat or canned crab meat, drained and flaked 1/2 tsp. worcestershire sauce 1/2 tsp. light soy sauce Freshly ground black pepper, to taste 1 green onion, finely sliced 1 large clove garlic, smashed, peeled, and finely minced 1 package won ton wrappers In a small bowl add 2 cup water and 1 tbsp. cornstartch for wetting wontons Oil for deep-frying, as needed Method:

• Combine the Culinary Cream Cheese Spread and crab meat • Mix in the remaining six filling ingredients one at a time • On a flat surface, lay out a wonton wrapper in front of you so that it forms 2 triangles (not a square). Wet the edges of the won ton

• Add 1 tsp. of filling to the middle, and spread it out toward the left and right points of the wrapper so that it forms a log or rectangular shape (otherwise the wrapper may break in the middle during deep-frying)

• Fold over the edges of the wrapper to make a triangle. Wet the edges with water and press together to seal

• Keep the completed Crab Rangoon covered with a damp towel or paper towel to keep them from drying out while preparing the remainder

• Fry in oil at temperature between 360 - 375 degrees, carefully slide in the Crab Rangoon, don’t overcrowd the fryer. Deep-fry until they are golden brown, about 3 minutes, turning once. Remove with a slotted spoon and drain

• Serve hot with Sweet and Sour Sauce or Chinese Hot Mustard
