Annual Unannounced Audits by third party auditing firms approved by Sysco Quality Assurance Annual Social Responsibility Assessment (part of the approval process as well) for suppliers in designated regions of the world to ensure compliance with International, Country and Local labor laws as well as Syscoโs Supplier Code of Conduct . Sysco Quality AssuranceAudits . Compliance with Sysco Quality Assurance Point Source Inspection program which involves Portico product quality and safety inspections. Third party personnel trained to understand Portico quality specifications

Grilled Oysters with Grapefruit & Red Peper Relish Ingredients

For the Relish, heat oil in medium sautฤล pan on medium heat. Add onion and garlic; cook and stir on medium heat 3 minutes or until softened. Add 1/2 of the grapefruit segments and bell pepper; cook and stir 30 seconds. Remove from heat. Stir in honey, basil, salt and red pepper. Set aside. Grill oysters, flat-side up, over medium-high heat 3 to 5 minutes or until oysters begin to open. (Discard any oysters that do not open.) Remove oysters from grill with spatula or tongs. Remove the top shells. (Oysters will be hot.) Loosen oysters from the bottom shells with oyster or paring knife. Top each oyster with 1 tsp. (15 mL) of the Relish and 1 of the remaining grapefruit segments. Grill oysters 3 to 5 minutes or until heated through. Sprinkle with parsley. Serve immediately.

For the Salmon, mix orange juice, oil and 1 teaspoon of the thyme in small bowl. Place salmon in non-reactive container. Add marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor. For the Relish, mix all ingredients in medium bowl. Cover. Refrigerate until ready to serve. Preheat oven to 400รยฐF. Mix brown sugar, paprika, remaining 1/2 teaspoon thyme and salt in small bowl. Remove salmon from marinade. Discard any remaining marinade. Rub salmon evenly with paprika mixture. Place salmon on lined baking pan. Bake 10 to 15 minutes or until fish flakes easily with a fork. Or, grill salmon over medium-high heat 6 to 8 minutes per side or until fish flakes easily with a fork. Serve salmon with Orange Relish.

Preheat the oven at 325 degrees and the grill. Season the swordfish with salt and pepper and grill on both sides, finish cooking in the oven. Combine the corn and bean blend, jicama, cilantro, oil, and vinegar. Season to taste and keep chilled. In a sauce pan, boil salted water and cook the potatoes until fork tender. Cook the squash until tender. Split the potatoes in half, heat a pan with 1 tsp oil and roast. In a small sauce pan, heat the cream with the orange juice concentrate and the lemon juice. Keep warm.
