Cola Chili con Carne Yield: 24 servings 6 pounds BCH RSV beef chuck roast, fat trimmed, cut into ½-inch chunks 3 tablespoons olive oil 3 ounces onion soup mix ½ cup plus 1 tablespoon IMP/MCC chili powder 3 tablespoons IMP/MCC ground cumin

6 pounds canned chili beans 5¼ pounds canned diced tomatoes, undrained 9 cups cola 5¾ cups tomato sauce Toppings: sour cream, diced red onion, sliced green onions, diced avocado, shredded Cheddar cheese, chopped fresh cilantro 1. In large stockpot, sauté beef in oil until browned, stirring frequently. Stir in soup mix, chili powder and cumin; cook 2 minutes, stirring frequently.

2. Stir in remaining ingredients, except toppings, and heat to simmering; reduce heat to medium-low. Cover and cook until beef is tender (about 45 minutes to 1 hour), stirring occasionally. Serve chili with toppings of choice.

cups SYS CLS yellow cornmeal cup SYS CLS all-purpose flour cup SYS CLS granulated sugar tablespoon SYS CLS baking powder teaspoons IMP/MCC chili powder teaspoon sea salt large eggs cups whole milk cup WHLFARM unsalted butter, melted cup light corn syrup cup minced jalapeño peppers Nonstick baking spray

1. In large bowl, sift together cornmeal, flour, sugar, baking powder, chili powder and salt. In separate large bowl, whisk together eggs, milk, melted butter and corn syrup. 2. Fold egg mixture into cornmeal mixture; mix until just combined. Fold in jalapeños. 3. Spray 2-inch hotel pan with nonstick baking spray. Pour mixture into prepared pan. Bake at 375° for 22 to 25 minutes or until top is lightly browned and toothpick inserted into center comes out clean. Let cool and cut into squares. Refrigerate in an airtight container.

Ingredients

Preparation

t 1 (10 oz) frozen package, chopped spinach, thawed

Preheat oven to 375°F. Drain spinach well. Squeeze out excess moisture; set aside. Cut top ½ inch off tomatoes. Scoop out pulp leaving Ÿ-inch shell. Turn over on paper towels to drain. If using peppers, cut in half lengthwise; remove seeds and membrane.

t 4 large firm, ripe tomatoes or 2 bell peppers, or a combination t 2 tsp olive or canola oil t ½ c chopped onion

2. Heat oil in medium nonstick skillet over medium heat until hot. Add onion and garlic; cook and stir 1 to 2 minutes, until onion is crisp-tender. Add spinach; heat through. Gently stir in chopped tomato, Feta cheese, Italian seasoning, salt and pepper, as desired.

3. Line baking sheet with aluminum foil; spray with nonstick cooking spray (or brush lightly with oil). Arrange tomato shells and/or pepper halves cut side up on baking sheet. Spoon equal amounts spinach mixture into each tomato or pepper. Press lightly to even surface. 4. Break one egg into each tomato cup or pepper half. Sprinkle Parmesan around eggs. Bake at 375°F 25 to 30 minutes, until whites are set and yolks begin to firm, or to desired doneness.

16 oz Pasta LaBella Gobetti 3 Tbsp extra virgin olive oil 1 Tbsp fresh chopped garlic 1/4 cup yellow onions, diced small 3 Tbsp fresh basil, chopped 1 Tbsp fresh rosemary, chopped 1/2 cup white zinfandel 3 cups heavy cream 3/4 cup Parmesan, grated 1/2 cup crumbled Gorgonzola cheese Salt & black pepper, to taste

Directions

Cook pasta according to package directions. Drain. Heat the olive oil in a large skillet; add garlic, onions and the fresh herbs. Cook for 3 minutes. Add wine, cook 1 minute then add cream. Simmer 3-4 minutes or until the sauce is slightly thickened. Stir in cheeses and simmer until sauce lightly coats the back of the spoon. Salt and pepper to taste. Toss pasta with sauce until evenly coated and serve immediately.

Optional: Top with cooked pancetta.
