High pricing driven by relatively short supply has created a quiet market. Low availability may delay any price corrections until the Spring.

FISH FACT King Crabs hunt small fish and plankton in the oceans and are often found close to coral reefs or rocky areas where there are plenty of places for the king crab to hide.

Fishing for Halibut will resume in Mid-March of 2012. In the meantime, fishermen and processors are bracing for another round of large quota cuts to be announced soon by the IPHC. FISH FACT The female halibut is usually larger than the male.

Inclement weather throughout Florida, California and Mexico have caused berry markets to tighten. These conditions are expected to last through the weekend.

Excellent Lettuce quality and supplies. However, occasional winter defects have been noted such as fringe burn, discoloration and under-sizing.

BROCCOLI & CAULIFLOWER Broccoli and Cauliflower supplies are plentiful. Quality is good.

CELERY Supplies are steady coming out of California and Florida.

Quality is good.

CITRUS – LEMONS Good supplies and quality.

CITRUS – LIMES Rain throughout the growing regions of Mexico has caused quality issues such as styler. Markets remain strong.

CITRUS – ORANGES Navel supplies are great. Excellent quality and flavor.

CUCUMBER & EGGPLANT Good supplies and quality on Cucumber coming out of Honduras and Mexico.

Eggplant supplies have improved. Markets on both commodities are steady.

GRAPES Green Grape markets have firmed up as we transition into new growing areas.

Quality is expected to improve within the coming weeks. Red Grapes are plentiful with good quality.

MELON –HONEYDEW ALERT! Honeydew markets are extremely tight.

These conditions are expected to last another few weeks. Pro-rating may take place.

MELON – CANTALOUPE

Brix A percentage of soluble

solids in fruits are almost 100% sugar, therefore refractometers are widely used to check maturity in fruits. The number will be % of solids as sucrose.

Honeydew and Cantaloupe are all averaging about

10-11%

Cantaloupe markets have firmed up.

Small size fruit is still limited.

ONIONS Excellent quality coming out of Idaho, Oregon and Washington.

GREEN PEPPERS & SQUASH Green Pepper and Squash supplies are steady coming out of Florida and Mexico.

Quality is good.

RED PEPPERS Red and Yellow Pepper markets are steady coming out of Mexico.

Brix Scale Low: 8-10% | Avg: 11-13% | High: 14-17%

PAPAYA Small papaya are extremely short due to heavy rains in growing areas. Until these conditions improve, larger size fruit can be substituted.

POTATOES Markets are steady. Quality and availability are good.

The Choice 174 short loin 0x1 and Choice 180 strip loin 0x1 are both expected to have significant rallies into this spring, especially from early Mar into Apr/May. Peaks in front of the Memorial Day holiday could be in the $640-65 area for both of these cuts. The pace of increase on some of the loin cuts could slow in the next few weeks, but setbacks would likely be modest and short-lived for the Choice product.

DAIRY MARKET Butter—“The CME cash butter price continues to steadily decline on basically a daily basis, the lowest cash price in nearly two years. Churning activity across the country remains strong. Cream supplies are plentiful to churns with some cream volumes clearing from one region to another to secure a buyer or processing capacity. Current churning activity continues to surpass demand and clearances to inventory continue. Domestic buying interest is fair. Reports indicate that overall orders have slowed, which is typical for a time when the cash price is weak and declining. Again this week, Cooperatives Working Together (CWT) announced the acceptance of export assistance requests for nearly 3.4 million pounds of butter for shipment now through June 2012. The announcement also included cheese assistance with the destinations for the various dairy products being: Asia, Europe, the Middle East, and Northern Africa. Within the past two weeks, 14.4 million pounds of butter have received export assistance through CWT.”

Rib: The spread between Choice and Select boneless lip-on rib eyes was extremely wide last fall (over $250 in Nov) but has collapsed in recent weeks to near even. The % of cattle grading Choice has increased seasonally in recent weeks, but has been running 1-2 percentage points behind last year. The Choice grade % should continue to increase through Feb, but remain behind year ago levels. The pace of increase on the Select 112A boneless lip-on rib eyes is expected to slow considerably and may even flatten out over the next few weeks.
