Local Baby Basil & Acai Vinaigrette Procedure
Ingredients 0ne 100 gr. pouch or 3.25 oz. Açai berry (Sambazon pouch) 2 oz – White wine vinegar 4 oz – Extra virgin olive oil 1 Tbsp – Agave nectar ½ Lime – Juice or to taste 1 tsp – Prepared mustard 2 Tbsp – Local Baywater Greens baby basil, chopped Salt and pepper
Combine all ingredients. Whip until smooth.

Super Salad Ingredients One each - Head Baywater Greens Bibb Lettuce 1 oz – Baywater Greens microgreens 2 oz – Fresh local blueberries 1 ⁄2 oz – Shredded carrot 1 oz - Fresh cucumber chopped 1 oz – Queso fresco – or feta cheese, crumbled Croutons Salt and pepper to taste
Procedure Remove the inner part of the bibb; plate the remaining leaves. In a bowl, combine the chopped inner leaves and the micro greens. Toss with one Tbsp of dressing. Plate on top of the leaves, then garnish the top of the salad with the rest of the ingredients.
