PERFECT BRUNCH PLANNING
IDENTIFY
YOUR TARGET MARKET
IDENTIFYING YOUR TARGET
MARKET AND DEMOGRAPHICS IS A CRUCIAL STEP IN PLANNING AND PREPARING FOR BRUNCH SERVICE.
By understanding who your customers are, you can tailor your menu, atmosphere, and marketing efforts to appeal to them.
To identify your target market, consider factors such as age, income, occupation, and interests. For example, if your restaurant is located in a business district, young professionals may be a key demographic for your brunch service. On the other hand, if your restaurant is located near a family-friendly neighborhood, families with children may be your target market.
It’s also important to consider the demographics of the surrounding area, such as the medium income and age profile. This information can be found through market research and analysis, as well as through customer surveys and feedback.
Once you have a clear understanding of your target market, you can start creating your brunch menu and atmosphere to appeal to them. For example, if your target market is young professionals, you may want to focus on offering a more upscale, trendy brunch menu with unique and creative dishes. On the other hand, if your target market is families, you may want to offer a more child-friendly menu with options such as pancakes and waffles.

EASTER
Commonly found on breakfast and lunch menus throughout the year, ham shines as the main holiday entrée in most Easter feasts. When deciding what kind of ham you’ll be serving this Easter, consider the application and customer expectations. This year since most buffets, banquet and carving stations are suspended, create a family-style brunch to-go including a ham with carving instructions. Also, include a choice of sides and desserts to round out your family meal.
MOTHER’S DAY
As one of the biggest days of the year for the foodservice industry, the heat is on to prepare top-quality dishes and impeccable service for diners. Adjusting your normal menu and service can leave lasting impressions on guests. Go above and beyond to make mothers feel special by offering a single rose, free dessert, cheese platter, or even a cocktail, mocktail, or spritzer.

BALANCING QUALITY & VALUE
THE ART OF BRUNCH MENU PRICING
WHEN IT COMES TO PRICING BRUNCH MENU ITEMS, RESTAURANTS HAVE A DELICATE BALANCE TO STRIKE.
On one hand, they want to offer competitive prices that will attract customers and keep them coming back. On the other hand, they need to make sure they’re covering all of their costs and making a profit. So, what should restaurants consider when pricing their brunch menu items?
01
First and foremost, restaurants should take a close look at the cost of ingredients. This includes not only the cost of the food itself, but also the cost of packaging, transportation, and storage. Restaurants should also factor in the cost of labour, including wages, benefits and taxes.
Restaurants should also consider the time of year when pricing their brunch menu items. For example, prices may be higher during peak seasons when there is a high demand for brunch. On the other hand, during off-peak seasons, prices may be lower to attract customers.
02 03
Next, restaurants should consider the prices of their competitors. This doesn’t mean that restaurants should simply match the prices of their competition, but they should at least be aware of what other restaurants in the area are charging for similar menu items.
Additionally, Restaurants can offer a brunch specials and limited-time promotions to attract customers and increase sales. Offering a prix-fixe menu or a bottomless mimosa option can also be a great way to increase revenue while keeping menu prices competitive.
Another important factor to consider is the type of restaurant and the atmosphere it creates. For example, a high-end restaurant with a fine dining atmosphere may be able to charge more for their brunch menu items than a casual restaurant. Similarly, a restaurant with a unique, specialty menu may be able to charge more for their brunch items than a restaurant with a more standard menu.
Lastly, it’s important to remember that pricing is not a one-time decision. Restaurants should regularly review and adjust their prices as needed. This can be done by monitoring sales, customer feedback, and changes in the local market.

BRUNCH OPERATIONS BEST PRACTICES
BRUNCH RUSH?
BE PREPARED WITH THE RIGHT STAFFING STRATEGY
PROPER STAFFING AND SCHEDULING ARE CRUCIAL FOR A SUCCESSFUL BRUNCH SERVICE. HERE ARE A FEW CONSIDERATIONS TO KEEP IN MIND WHEN PLANNING FOR YOUR BRUNCH SERVICE.
By keeping these staffing and scheduling considerations in mind, you can ensure that your brunch service runs smoothly, providing your customers with a great experience and keeping your staff happy.
PLAN FOR A BUSY RUSH:
Brunch is typically a busy time for restaurants, so make sure you have enough staff on hand to handle the rush. This includes servers, cooks and dishwashers.
SCHEDULE STAFF FOR PEAK BRUNCH HOURS:
Be sure to schedule staff for the busiest brunch hours. This will ensure that you have enough staff on hand to handle the rush and provide excellent service to your customers.
CONSIDER PART-TIME STAFF:
Part-time staff can be a great option for brunch service as they can be scheduled for specific hours and are usually more flexible.
TRAIN YOUR STAFF ON BRUNCH MENU:
It is important to have a well-trained staff that knows your menu and can make recommendations to customers. This is especially important for brunch service when menu items are different than lunch or dinner.
HAVE A PLAN FOR ABSENCE:
No matter how well you plan, staff absence can happen. Have a plan in place for dealing with unexpected staff shortages to minimise disruptions to your brunch service.
CONSIDER CROSS-TRAINING YOUR STAFF:
Cross-training your staff can be a great way to ensure that you have enough staff on hand to handle any situation. Train your servers to do some of the tasks of baristas, hosts, and bartenders and vice versa.
01 02 03 04 05 06 07
BE FLEXIBLE:
Be prepared to make adjustments to your staffing and scheduling as needed. Be open to feedback from your staff and make changes as necessary to ensure a smooth brunch service.
HOW TO BEST
PACKAGE YOUR TAKE-AWAY & DELIVERY
HOT / COLD
Separate hot and cold items. Use different compartments or delivery bags based on product temperature. This showcases your thoughtfulness and integrity of your menu items. Good packaging will help control temperature and ensure customer satisfaction.
02
PLACEMENT
Test your takeout packaging, place your topselling items and beverage in your current packaging. Close the take-out bags and boxes as if it was ready for pick-up. Set it on the counter and let it sit for at least 20 minutes. Open it up and make a judgment call on the quality. Is it fresh? Do you see room for improvement? Consider making adjustments to your packaging or menu item.
Be sure to use perforated sections on the packaging for ventilation to allow steam and moisture to escape. If you do not have this type of packaging, cut holes and retest. If it improves your quality, consider purchasing ventilated packaging. Ventilation is important for crispy items like fries and chicken tenders brunch menu.
PACKAGING
With the increase in take-out and delivery, many consumers prefer environmentally preferable packaging. They will value your sensitivity to the environment and will create repeat business.
TAMPER-EVIDENT
Ensure your customers’ safety and peace of mind by utilising tamper-evident products. Leads to a greater trust in your restaurant, especially if they are a first-time dinner.
DRINKS/COCKTAILS
Make sure lids stay securely in place.
Choose a lid that will not leak during transit. 04

TOP TIPS
AN EXCELLENT CUP OF COFFEE DOESN’T HAPPEN BY ACCIDENT. CONSIDER THESE TOP TIPS…
THE PERFECT GRIND
Having the grind right is so important. If your grind is too coarse, your extraction time will be too fast and the coffee will be sour and lack flavour. To get the perfect grind, use a medium-to-high setting, and pulse the grinder for three to five seconds at a time. Continue pulsing until you have a fine ground.
PUT IT TO THE TEST
Your coffee grind needs to be tested every day before opening. It will usually need a small adjustment, but not always. It also always needs to be adjusted if a fresh batch of coffee is put into the grinder, so encourage your team to start taste testing so you can be confident that every cup is as good as the first.
MILK IT
Steamed milk is smooth, heated milk with no bubbles. Use cold milk and a steel jug to ensure you get this right. To make perfectly steamed milk, first place the steam wand just below the surface of the milk until lightly foamed. Then plunge the steam wand into the milk to heat it further. Take care not to overheat it.
WASTE NOT
To ensure quality texture and hygiene, always serve milk fresh and never hold onto milk that has already been steamed. Get to know how much milk is required for each cup, and take care when pouring the milk so not to waste it.
HYGIENE IS KEY
When you’re done heating the milk, purge and wipe the steam wand after every use and remember to wipe the portafilters when you’re done, rinsing them with the water from the espresso machine before putting fresh grind into them. This will avoid stale grinds getting into a fresh coffee.
TAKE YOUR TIME WITH LATTE ART
Latte art is a skill that takes time to learn. When starting out, find an art design that works for you and perfect it. Then you can start expanding your skill. A heart is a popular first choice for a first latte art piece, so consider starting there. And remember, practice makes perfect.

BRUNCH AMBIANCE
4 WAYS TO STAND OUT
CREATING THE PERFECT ATMOSPHERE IS KEY TO ANY DINING EXPERIENCE AND BRUNCH IS NO EXCEPTION. WHEN IT COMES TO BRUNCH, CREATING A BRUNCH-SPECIFIC ATMOSPHERE AND AMBIANCE CAN HELP SET YOUR RESTAURANT APART.
One way to create a brunch-specific atmosphere is by decorating your restaurant in a way that’s fitting for the meal. This could include things like using pastel colours, floral arrangements, and natural light to create a cheerful and inviting space. You could also play with the furniture, for example, using comfortable booths and tables with benches to create a more casual and relaxed feel.
Another way to create a brunch-specific atmosphere is by incorporating music that fits the meal. For example, playing soft jazz or acoustic music in the background can help set a relaxing and leisurely tone.
It’s also important to consider the time of day when creating a brunch-specific atmosphere. For example, if you’re serving brunch on weekends, you might want to create a more laid-back atmosphere with a focus on relaxation and leisure. On the other hand, if you’re serving brunch on weekdays, you might want to create a more professional atmosphere with a focus on productivity and networking.
But it’s not just about the visual and auditory elements. The way you serve brunch can also play a big role in creating a brunch-specific atmosphere. For example, offering a buffet-style brunch can create a more casual and relaxed atmosphere, while offering a sit-down brunch service can create a more formal and elegant atmosphere.
Ultimately, creating a brunch-specific atmosphere and ambiance is about understanding your customers and what they’re looking for in a brunch experience. By considering the visual, auditory and service elements, you can create an atmosphere that’s perfect for your customers and helps set your restaurant apart.
