Happy Mother’s Day The second Sunday in May was officially proclaimed “Mother’s Day” by President Woodrow Wilson in 1914. But it had a long history before then. In the 19th century, Anna Reeves Jarvis organized Mother’s Work Day to heighten awareness of local sanitation issues in the her home state of West Virginia, and then expanded her efforts to improve health and sanitation during the Civil War. Julia Ward Howe (who wrote the words to “The Battle Hymn of the Republic”) promoted a “Mother’s Day for Peace” in 1872. On May 9, 1905, Anna Reeve Jarvis’s daughter Anna Marie Jarvis, privately commemorated her mother’s death two years before. Then, in 1908 Jarvis organized a larger celebration of motherhood at her church in Grafton, W. Va., with more than 4500 children and their mothers participation. SUPC

After that, Jarvis began working for a national day of recognition for mothers. West Virginia recognized Mother’s Day first, in 1912, followed by Wilson’s proclamation in 1914. Ironically, the younger Jarvis never had any children of her own.


Ham & Gruyere Breakfast Rolls

INGREDIENTS FOR THE DOUGH 12x16 pre‐sheeted pizza dough FOR THE BÉCHAMEL 4 Tbsp. Bu er 4 Tbsp. All‐Purpose Flour 1 1/3 c. Milk Nutmeg 2 Tbsp. Dijon Mustard (or to taste) FOR THE FILLING 1/2# Gruyère, grated (about 2 c.) 2/3# Ham, thinly sliced (about 10 slices) TO FINISH 1 Egg

Thaw the dough on a sheet pan covered in the cooler overnight., then put the dough in a proofing cabinet or in a warm place to rise. While you wait for the dough to rise, prepare the béchamel sauce. In a small sauce‐ pan set over medium heat, melt the bu er. Add the flour and whisk un l the mixture is lightly golden, about 5 minutes. Slowly whisk in the milk. Cook over medium‐low heat, constantly s rring, un l the sauce is smooth and quite thick, about 5 minutes. Remove from heat, season with salt, pepper, a pinch of nut‐ meg, and Dijon mustard. Allow to cool completely. To form the buns, turn the dough out onto a floured counter and roll into an 12 x 16 in. rectangle. Spread the béchamel sauce in a thin, even layer over the dough. Cover with slices of ham and sprinkle with the grated cheese. Roll into an 12 in. log and, using a serrated knife, gently cut the log into 10 even sec ons. Place the rolls into a cake or pie pan, lined with parchment paper. Cover and allow to rise at room temperature for 2 hours or in the refrigerator over‐ night. If refrigera ng them overnight, allow the rolls to sit at room temperature for an hour or so in the morn‐ ing before baking. Preheat oven to 350°. Whisk the egg with 1 Tbsp. of water and brush over the tops of the rolls. Bake un l tops are golden and the cheese has melted, 30‐35 minutes. Allow to cool for 5‐10 minutes before serving. Caramel Macchiato Popovers Place parfresh mix and salt in a large bowl; set aside. Cook egg yolks, sugar, and ½ cup cream in a me‐ dium saucepan over medium heat, whisking constant‐ ly, un l thick enough to coat a spoon, about 4 minutes. Pour over chocolate mixture and whisk un l chocolate is melted and mixture is smooth. Let cool. Using a whisk, beat remaining ½ cup cream in a bowl un l so peaks form. Fold into cooled chocolate mix‐ ture; cover and chill un l cold, at least 2 hours. Popovers And Assembly Preheat oven to 425°. Lightly bu er 10 cups of a stand‐ ard 12‐cup muffin n or two 6‐cup popover pans. Whisk eggs in a medium bowl to blend. Bring cream, milk, salt, and pepper to a simmer in a medium sauce‐ pan; whisking constantly, gradually add to eggs. Whisk in flour, then cheese (no lumps should remain).

INGREDIENTS FOR THE MOUSSE: 6 oz. barfresh caramel macchiato mix, melted, slightly cooled ½ teaspoon kosher salt 3 large egg yolks ¼ cup sugar 1 cup heavy cream, divided FOR THE POPOVERS: Unsalted bu er (for pans) 2 large eggs ½ cup heavy cream ½ cup whole milk 1 teaspoon kosher salt ¼ teaspoon freshly ground black pepper ¾ cup all‐purpose flour ½ cup grated white cheddar Nons ck vegetable oil spray 1 cup sugar

Divide ba er among prepared muffin cups, fill remain‐ ing cups halfway with water, and bake 15 minutes. Re‐ duce heat to 350° and bake un l popovers are puffed, golden brown, and crusty, 20–25 minutes longer. Turn out onto a wire rack and let cool. Working quickly and with 1 popover at a me, dip bo oms into caramel and set, caramel side down, on prepared baking sheet; let cool. Once caramel has set, mix mousse with a rubber spat‐ ula to loosen. Transfer to a pastry bag fi ed with a ¼” pastry p. Working 1 at a me, poke holes in tops of popovers with pastry p and fill popovers with mousse. Prep Time: Cook Time: Servings:
