Jerk Pork Tenderloin with Spiced Red Potatoes & Grilled Pineapple Prep: 35 minutes plus marinating Roast/Grill: 50 minutes • Serves: 24 91/2 pounds Butcher’s Block pork
tenderloin 31/2 cups Caribbean jerk marinade 3 large ripe pineapples, peeled, cut crosswise into 1-inch-thick slices and cored 1 cup olive oil 21/2 tablespoons kosher salt 1 tablespoon plus 3/4 teaspoon coarsely ground black pepper 1 tablespoon plus 3/4 teaspoon dried thyme 1 teaspoon cayenne pepper 1 teaspoon ground cumin 9 pounds unpeeled red potatoes, cut into 11/2-inch chunks 3 large red onions, cut into 11/2-inch pieces 15 garlic cloves, chopped 1 tablespoon plus 3/4 teaspoon ground allspice 1 tablespoon plus 3/4 teaspoon ground cinnamon
1. Marinate pork with jerk marinade in refrigerator 2 to 6 hours. 2. Brush both sides of pineapple slices with 6 tablespoons oil. 3. P reheat oven to 350 °. In sm all bowl, combine salt, black pepper, thyme, cayenne and cumin. In large bowl, toss potatoes, onions and 3 tablespoons spice mixture with remaining oil. Transfer potato mixture to sheet trays and roast 50 minutes to 1 hour or until potatoes are tender, stirring once halfway through cooking. 4. Stir garlic, allspice and cinnamon into remaining spice mixture in bowl. Remove pork from marinade; discard marinade. Rub pork with spice mixture. Grill pork over medium heat 15 minutes or until internal tem perature reaches 145 °, turning pork occasionally. T ransfer pork to cutting board; let stand 10 minutes. 5. Grill pineapple over medium heat 10 minutes, turning once halfway through cooking. 6. Thinly slice pork and serve with potatoes and pineapple. Island Grilled Beef Prep: 15 minutes plus marinating and standing Grill: 10 minutes • Serves: 24 12 garlic cloves 1 small yellow onion, diced 1 cup plus 2 tablespoons soy sauce 3/4 cup olive oil 3/4 cup pineapple juice 1/2 cup plus 1 tablespoon light brown sugar 2 tablespoons peeled and finely chopped fresh ginger 11/2 teaspoons ground black pepper 91/2 pounds beef flank or culotte steaks 1. In blender, purÊe all ingredients, except steaks. Marinate steaks with marinade in refrigerator 4 to 12 hours. 2. Remove steaks from marinade; reserve marinade. Grill steaks over medium heat 10 to 12 minutes or until internal temperature reaches 135 ° for medium-rare, turning once halfway through cooking and basting occasionally with reserved marinade. Transfer steaks to cutting board; let stand 5 minutes. Thinly slice steaks diagonally across the grain to serve. Discard any remaining marinade. Marinated Hearts of Palm Salad Prep: 45 minutes plus marinating Serves: 24 1 cup plus 2 tablespoons olive oil 3/4 cup fresh lime juice 1 tablespoon lime zest 11/2 teaspoons Dijon mustard 3/4 teaspoon ground cumin 3/4 teaspoon salt 1/2 teaspoon ground black pepper 3 pints grape tomatoes, halved 6 cans (14 ounces each) hearts of palm, drained and cut crosswise into 1/2inch-thick pieces
6 avocados, halved, pitted and cut into 1/2-inch pieces 3 yellow or red bell peppers, diced 11/2 large red onions, diced 3/4 cup chopped fresh cilantro leaves In large bowl, whisk together oil, lim e juice, zest, mustard, cumin, salt and black pepper. Gently fold in remaining ingredients until well blended. Refrigerate 2 to 6 hours to marinate. INGREDIENTS 4 (10-Inch) Flour Tortillas 2 Cups Beef Brisket, Sliced 8 Slices American Cheese 1 1/3 Cup Leaf Lettuce, Shredded 4 Tablespoons Mayonnaise 4 Tablespoons Barbeque Sauce
Servings: 4 Prep Time: 20 minutes Total Time: 20 minutes DIRECTIONS Warm tortillas on a grill or in the microwave. Line each tortilla with two pieces of cheese, spread 1 tablespoon of m ayonnaise over cheese, sprinkle with 2 cups of beef brisket, 1/3 cup of lettuce, and pour 1 tablespoon of barbeque sauce over the lettuce. Fold in both sides of the wrap. Holding in the folded sides, roll up the wrap tightly from the bottom to the top, keeping ingredients firmly packed as you go. Slice each wrap half diagonally and serve.

Garden Tuna Macaroni Salad Ingredients:
24 ounces Ridged Elbows 3 cups creamy Italian Dressing 3 cups peeled and diced cucumber 3 cups diced tomatoes 3 cans (18 ounces) tuna, drained and flaked 3/4 cup sliced green onions Directions:
Cook the Ridged Elbows according to package directions. Rinse with cold water and drain. Combine all ingredients in a large bowl; toss to coat. Cover; chill to blend flavors Prep time: 10 minutes Cook time: 10-11 minutes Serves: 12

Ingredients 12 oz. Portico Bounty flake style Surimi 1 1/2 cups cooked rice (preferably short grain Japanese rice) 1/2 cup cucumber, peeled, seeded and chopped 1/2 cup avocado, peeled and chopped 1 cup Asian-style salad dressing, bottled (preferably with ginger and wasabi), or for a lighter version use a low-fat dressing 1/4 cup pickled ginger, chopped, optional garnish 1/2 cup toasted nori (seaweed), optional garnish 3 Tablespoons toasted sesame seeds, garnish 1 head iceberg lettuce
Directions Lettuce cups: Cut off the bottom third of the lettuce head. Soak lettuce top in ice water for 10 minutes – this will help separate the leaves. Separate the outer lettuce leaves, one at a time, to make the cups. Using scissors, trim each lettuce cup to form circles. A head of iceberg should yield 8 to 10 lettuce cups. Save the lettuce core for a chopped lettuce salad.
Salad: Combine Alaska Surimi Seafood, cooked rice, cucumber and avocado in a large bowl. Add dressing; toss to coat. Place lettuce cups on a large plate and fill each with 1/2 cup of the Surimi-rice filling.
