a time when we brush ourselves off from a long hard winter and wrap ourselves in new concepts. And above all, it’s a time to celebrate beauty.

That’s the theme we opted to pursue in our May issue, as we spring at the opportunity to share with you a wonderful array of items to highlight colour, beauty and renewal. On page 6, we present our own cross-pollination of art and fashion, as the imagery of the art melds with the colourful appeal of the wardrobe being showcased.
With all that renewal going on, we encourage you to chill from time to time, which is why on page 24, we also introduce this year’s Pantone colour, Living Coral, a very relaxing shade. Bella Maas, the local fashion and style retailer Bella Maas is featured in the Meet You There on page 34 and we explore the interesting renewal of estate jewellery. Discover the appeal surrounding these old valuables on page 36. This issue of T8N marks a first for us in that we’ve never dedicated a great deal of space to fashion, but given the beauty theme that illuminates this edition, we felt this was the ideal time to show off this season’s hot apparel. As spring is well into the swing of things, we hope you find this month’s issue refreshing. As a bonus, for those wondering about the results of our annual Best Of T8N survey, we’ve got the winners listed in this edition. After counting many hundreds of ballots, we fully acknowledge the support everyone in St. Albert has given them. So, by all means, celebrate the most outstanding of what this city has to offer, as these folks and many other businesses work hard to be the best.

Dr. Hardy grew up in Edmonton and attended the University of Alberta for the majority of her training. After completing dental school, she went south to Los Angeles for a year of advanced training at the University of Southern California. Berbere Roasted Cauliflower Wraps Berbere is an Ethiopian spice blend where the main flavour is chili, but also features the flavours of fenugreek, coriander, cumin and ginger. It can be made from scratch, but the one used in this recipe was found at The Silk Road Spice Merchant. ⅛ c. olive oil 1 tsp. kosher salt ½ tsp. Ethiopian berbere spice blend 1 tsp. chicken bouillon powder ½ head of cauliflower, cut into evenly sized florets Flour tortillas Freshly chopped cilantro Yogurt dip (see note) Chopped roasted red peppers
Preheat the oven to 450°F. In a small bowl, whisk together the olive oil, salt, spice blend and chicken bouillon powder.

On a baking sheet, toss together oil and spice mixture with the cauliflower florets. Ensure the cauliflower is evenly coated with all the ingredients. Roast in the oven for 30-50 minutes until they are slightly charred and crispy. Make sure to toss halfway through the cooking time. To serve, warm the tortilla, fill it with the roasted cauliflower and top with roasted red pepper, chopped cilantro, and a drizzle of yogurt dip. For the yogurt dip combine ½ c. Greek yogurt, ½ tsp. of both salt and pepper, a splash of lemon juice, 1 tbsp. olive oil and 1 tbsp. finely chopped cilantro. This spice blend is also delicious on toasted whole almonds as an appetizer!
Seed Butter-Chocolate Chip Muffins Lunch and snack ideas can be challenging when dealing with nut-free environments. For that reason and many others, seed butters are on trend for 2019. These seed butter muffins give that nutty flavour while maintaining “safe status” to be sent to school or any other place where nut allergies are present. 3 c. bran flakes
½ c. whole wheat flour
1⅓ c. milk
½ c. brown sugar
1 egg
1 tbsp. baking powder
⅓ c. flavourless oil
½ tsp. salt
½ c. seed butter(sunflower and pumpkin work best)
3 tbsp. cookie butter ⅔ c. mini chocolate chips
½ c. white all purpose flour
Preheat the oven to 400°F and grease or spray a 12-cup muffin tin, set aside. In a bowl, combine the milk and the bran flakes, set aside for 10 minutes while assembling all the other ingredients. In a bowl, whisk together the oil, egg, seed butter, cookie butter and sugar. In a separate bowl, combine the flours, salt, baking powder and chocolate chips. Add the wet mixture into the dry mixture bowl and stir to combine. Fill each muffin cup ¾ of the way full and bake for 15-18 minutes. Cool on a wire rack. These muffins freeze well, so they are a great make and use in the future recipes!

Treating cocoa powder to an alkalizing solution, reduces the acidity and darkens the colour of the cocoa powder. Extra-alkalized cocoa powder or black cocoa powder has a deep, rich colour.
Black Cocoa Sandwich Cookies Black cocoa makes for a dramatic look in this decadent crunchy, creamy sandwich cookie. For a touch of whimsy roll the sides of these cookies in sprinkles! Cookie tops & Bottoms: ½ c. black cocoa ¾ c. brown sugar ¾c. white sugar, extra for rolling the tops and bottoms 2½ c. flour 1 tsp. baking soda ½ tsp. salt ¼ tsp. baking powder 2 eggs 1tsp. pure vanilla extract Icing: ½ tbsp. vanilla bean paste ½ c. room temperature butter 1¼ c. icing sugar

Preheat the oven to 350°F. Line two baking sheets with parchment or use a silicone baking mat, set aside. In a bowl, combine the flour, baking soda, baking powder, salt, black cocoa and baking powder. Whisk to combine. Using a stand mixer or a hand mixer, cream together the butter and the two types of sugar. Add in the eggs and then scrape down the bowl. Add the vanilla and beat to combine. Into the mixing bowl, slowly add in the dry ingredient mixture. Start on low speed and blend the dry ingredients into the butter, sugar, egg mixture. Mix until fully combined. Using a small ice cream scoop, scoop out as many tops and bottoms as the dough will allow and place on the lined baking sheet. In a small bowl, put about ½ cup of granulated sugar. Dip the bottom of a drinking glass in the sugar and then press
down on each cookie. Flatten them all to the same thickness. Bake the cookie bottoms and tops for 15-18 minutes. Let the cookies cool on the sheet for 10 minutes and then transfer to a cooling rack to completely cool. While the cookies are cooling, Mix the ingredients for the filling together. To get a smooth consistency, a stand mixer or hand mixer work the best. Finally, assemble the cookie sandwiches by spreading ½ tablespoons of the filling on each cookie bottom and then placing a top cookie on and squeezing the two cookies together so the filling reaches the edges. Enjoy! The cookie tops and bottoms can be made ahead and frozen. Just bring them up to room temperature when you’re ready to assemble!
Jamaican Curried Sweet Corn and Coconut Rice Turmeric is one of many “it” spices for 2019. With its bright yellow colour (thanks to circumin) and its many touted health benefits, it might be worth checking out this year. Try making this Jamaican curry powder blend coupled with sweet corn and rice for a new fan favourite. Jamaican curry blend: 2½ tbsp. turmeric 1 tbsp. coriander seeds, toasted 1 tbsp. cumin seeds, toasted 2 tsp. fenugreek seeds, toasted 2 tsp. yellow mustard seeds, toasted 2 ½ tsp. black peppercorns 1 tsp. allspice berries, toasted 1 tsp. ground ginger ⅛ tsp. cayenne 3 whole cloves
For the seeds that need to be toasted, heat a skillet over medium heat and combine the coriander, cumin, fenugreek, mustard and allspice in the pan. When the spices become aromatic, it is time to pull them off the heat. Add the now toasted spices to the turmeric ginger, cayenne and cloves. Either a mortar or a spice grinder will whiz this mixture up into a powder. This curry blend will keep in an airtight container. Note: A cheap coffee grinder works wonders as a designated spice grinder! Curried corn: In a skillet, heat olive oil over medium heat until it shimmers. Then add the corn from 6 ears of corn, 2 tsp. salt, and ¾ -1 tsp. Jamaican curry blend. Cook 5-8 minutes or until all the ingredients have combined and are warm. Coconut rice: Any rice works, but to balance this out into a main course, brown rice is the ticket. Soak 1 cup of brown rice in a pot filled with water overnight. Drain and rinse and then add ¾ c. coconut milk and ¾ c. coconut water with 1 tsp. of kosher salt. Bring the rice mixture to a boil and then turn down to a simmer. Continue to cook the rice for one hour until the liquid is absorbed, stir a few times throughout the cooking process. Once off the heat, let it sit for a few minutes then fluff and serve. Homemade Chai Mix Chai tea lattes are like a spice market in a mug. They are warm, inviting and fragrant. Have this spicy tea mixture in the fridge and simply froth it together with warm milk when the other side of the world beckons! 4 black tea bags (decaf or full caff) 5 c. water 4 cinnamon sticks knob of fresh ginger
6 cardamom pods 6 black peppercorns 1 vanilla bean pod 2 allspice berries ⅓ c. - ½ c. honey
4 whole cloves
Use enough milk for a 1:1 ratio of mixture to milk, depending on how much is used at a time. In a medium saucepan, combine the water, cinnamon sticks, ginger, cloves, cardamom pods, black peppercorns, vanilla bean and allspice berries. Bring the mixture to a boil and then reduce to a simmer. Simmer this mixture for 20-25 minutes. Pull this mixture off the heat and add in the tea bags, steep for 20-25 minutes. At this point add in the honey; the exact amount can be varied based on personal preference to sweetness. Pull the tea bags out and strain the mixture into a glass jar. This mixture will keep in the fridge for up to two weeks without the milk. Take it out and mix equal amounts of spice liquid and milk for a comforting, aromatic treat day or night.

Pearl Couscous Pearl couscous is a delicious pasta alternative. It is larger than traditional couscous so it holds up well both at room temperature and as a cold salad addition. This recipe works well with any seasonal vegetable and is just as tasty the next day for a great lunch. 1 tsp. kosher salt 2 tsp. red wine vinegar 1 tsp. black pepper 3 tbsp. olive oil 1½ c. pearl couscous (follow the cooking instructions on the package) Cooked corn kernels from 2 ears of corn 1 chopped and roasted zucchini (see note on roasting) 1-2 tbsp. fresh basil, finely chopped
Whisk together the salt, red wine vinegar, black pepper and olive oil, set aside. Combine the cooked couscous with the corn, roasted zucchini and basil, stir to combine. Drizzle the dressing over top and sir. Serve warm or at room temperature. Chop the zucchini into chunks and toss with ½ tbsp. of kosher salt and 1tbsp. of olive oil. Roast in an oven set to 425°F for 12-16 minutes until slightly golden brown. Great as a side or as a pasta addition. t8n T8N May 2019 33

AS FAR AS St. Albert neighbourhoods go, Erin Ridge
isn’t particularly old. Just shy of 40 years, it has only been around for a small fraction of the city’s 158-year history. But while many neighbourhoods settle into a tranquil routine following their decade or two of development, the hustle and bustle continues, especially in Erin Ridge North. So count on many more stories for this neighbourhood to tell as time goes on.
1980s The lands of Erin Ridge were first annexed by the City of St. Albert in 1980, as part of a new phase of residential development. The timing was ideal, since the boom during the 1960s that escalated in response to housing demands had finally subsided. This time, city planners could exercise a lot more patience with Erin Ridge, and experiment with new styles of neighbourhoods. One of those styles was the expansion of green spaces in Erin Ridge, and the creation of a sprawling set of parks, interconnected by walking paths. So elaborate are these trails, Erin Ridge residents can walk from one end of the neighbourhood to the other without ever having to come in contact with a city street. One of those parks in that sprawl, Eldorado Park, was set aside for a school site once families with enough school-aged children moved into the area. Most neighbourhoods in St. Albert received a school not long after they were built, but Eldorado Park remained empty long after the residential construction was complete.
1990s In 1992, Sturgeon Hospital opened its doors, replacing the old hospital site that had sat along McKenny Avenue since 1970. While the original hospital had a big problem securing space for growth and expansion, this new site was planned to allow the hospital to grow along with the city’s ever-increasing population.

Every December, the residents of Elliot Place, a residential street in Erin Ridge, get together to set up an elaborate display of Christmas lights that stays up throughout the holiday season. In addition to bringing a little cheer to the dark winter days, the residents also encourage visitors to bring food items to donate to the local food bank.
2000s By the time the new millennium had rolled around, Erin Ridge had begun to settle into its role of a quiet neighbourhood on the edge of the city. The vacant housing lots were almost completely filled, though Eldorado Park still sat empty. In 2005, Citadel Care Centre opened its doors next to Sturgeon Hospital, offering extended care within close reach of medical services. In 2007, St. Albert expanded once again, annexing parts of Sturgeon County immediately to the north. This opened more room for residential and commercial development, and planning for Erin Ridge North began. From a zoning perspective, Erin Ridge North is a distinct subdivision from Erin Ridge,with more of a commercial focus than its southern counterpart.
2010 to Today St. Albert’s Costco opened in 2013, starting off the commercial development of Erin Ridge North. It was followed by a variety of box stores and restaurants that serve both the residents of St. Albert and the greater Sturgeon County region.
FUN FACT École Alexandre Taché is named after Alexandre-Antonin Taché, the archbishop of St. Boniface, Manitoba from 1853 to 1894. He was a friend and travelling companion of Father Albert Lacombe, St. Albert’s founder. According to some, it was Taché who came up with the name St. Albert, as a way to honour Lacombe’s patron saint.

In 2016, Erin Ridge finally got its first school, École Alexandre Taché, which currently serves a much larger purpose than its original intent. Rather that teaching children in the immediate neighbourhood, it now belongs to the Greater North Central Francophone division, one of four Francophone school districts in Alberta. Erin Ridge North got its own school a year later, named after Alberta’s 15th Lieutenant-Governor. Lois E. in nearly any shopping district, but nine years ago when Lindsey Hedstrom purchased Bella Maas, her boutique was a bit of a rarity. Now, the owner of a shop for trendy 30-somethings is using her grounded take on style and heart for giving back to serve easy style options for moms on the go. The boutique operates under a culture of benevolence, and in an age when Instagram likes are top priority, Hedstrom’s attitude is a breath of fresh air. “Everything comes back to kindness for me,” she says, “If you can be kind to somebody and give them a good experience, hopefully they can take that into their day and pass it onto someone else.” She’s used her business platform alongside her personal take on retail to spread kindness in the community through Bella Maas Gives Back. Last year, Hedstrom started a blog on the boutique’s website, interviewing a different inspiring woman each month and donating a portion of sales to the
advocate’s chosen charity. The women are styled in Bella Maas’ trendy wares and photographed for the blog post, putting a face and style to the cause. The campaign mirrors Hedstrom’s own attitude about fashion. To her, everyone should feel genuinely good in their clothes, but getting dressed is just the beginning of a day filled with meaningful
activities. “My day revolves around being a good mom, a good boss and a good friend,” says the mother of two. “That, to me is important.” Many of the women featured on the site run their own charities, or make philanthropy a way of life. Hedstrom’s interest in business had an unlikely start. Growing up on a dairy farm, she handled bookkeeping and payroll. “I realized I really liked business,” she says. With self-taught savvy under her belt, she started looking for a boutique-style business to invest in, and in 2010 she purchased Bella Maas. The business owner’s personal style revolves around fashion that accommodates her schedule, whether she’s at the hockey rink with her kids or at one of the store’s two locations. A good pair of jeans, a T-shirt and a blazer get her through most days. And with a clientele not unlike herself, she tries to keep the boutique stocked with fun apparel and accessories to fit their busy lives. For Hedstrom, fashion and function go hand-in-hand. Add making a difference in the community with a kind word or gesture of support, and you have a beautiful design. “What I’m doing makes me happy every day,” says Hedstrom, “and that’s all I can hope for.”

Today, many North A mericans turn to jewellery more for self-expression than superstition, and estate jewellery offers them the opportunity to do just that—at a fraction of the cost of buying new.
Estate jewellery refers to anything that has been previously owned, including antique, vintage, and modern pieces. A piece of jewellery has to be at least 100 years old before it can be coined “antique,” and is further categorized by the era it was created in—like Georgian, Victorian, or Edwardian. “Vintage” classification is often applied to pieces starting at 25 or 50 years old, while modern is newer still. Guillemette, owners of the St. Albert shop located at 11 St. Anne St., have been selling estate jewellery for over 30 years, and are experienced stone cutters—a necessary skill set when appraising used jewellery. Before an item makes it into the estate case, the Guillemettes determine the quality of the stones, the grading of the metals, and whether or not a piece is in need of repairs. “The more difficult the piece is to reproduce, the more it needs to be ready to wear,” Luc notes. Antique pieces that are heavily damaged take a lot of time and skill to revive, and depending on their age and condition, may be restored or disassembled and made into something new. The estate jewellery that remains often contains intricate detail work uncommon in newer pieces, giving buyers a better bang for their buck. Luc notes that in the past 15 years, gold has more than quintupled in price, making it difficult for people to invest in new pieces. Gemport’s estate jewellery offers a more modest price range, starting as low as $100 and going up to several thousand depending on the piece. But the real draw is

the craftsmanship. “We have some pieces that I don’t know anybody who could reproduce them in quality and styling,” he says. When it comes to shopping for estate jewellery, Guillemette first and foremost recommends picking a piece that you like, and buying from reliable source. “Really, it comes down to trust,” he says. Reputable jewellers like Gemport require ID and appropriate documentation—like proof of ownership or appraisal papers— from people selling their estate jewellery to ensure the piece is legitimate. This is good news for buyers, who want to be sure they’re getting an authentic piece, and can learn the story behind the jewels before they take them home. While some scour estate cases looking for something of value, Luc has a different approach: “I never tell people jewellery’s an investment. I tell them that if they want to consider it an investment, it’s an investment in their happiness.” Shopping for estate jewellery requires walking through each piece’s unique
story, and finding one that speaks to you. The pendant you end up with may not denote your rank, but if you’re lucky, it’ll be a unique expression of who you are, with a glimmer of history nestled in its gold filigree. t8n
ANTIQUE JEWELLERY 101 When was your antique estate piece was made? You might be able to tell by these features. Circa 1714-1837: Georgian Jewellery from this era is rare, as pieces that went out of fashion were often melted down and turned into something new. Topaz, garnet, and emeralds were popular in this period, as was ornate metalwork. Circa 1840-1901: Victorian In celebration of Queen Victoria’s marriage to Prince Albert, jewellery in the early part of this age was designed with romantic symbols like hearts and birds. Snakes were also a popular motif—particularly the ouroboros serpent, which symbolizes eternal love.
Circa 1890-1910: Art Nouveau Meaning “New Art” in French, Art Nouveau jewellery was highly influenced by nature. Colour palettes in this period softened, making use of opals, moonstone and amber, and pieces were known for their elegant lines, as well as animal motifs like bird and dragonflies. Circa 1901-1915: Edwardian Edwardian jewellery is characterized by delicate, flowery patterns and lacy filigree. Garland-style bracelets and rings were popular in this time, and featured metalwork in the shapes of leaves and flowers. Circa 1920-1935: Art Deco Unlike the sweeping styles of Art Nouveau, jewellery from this period is known by its geometrical or angular patterns. Art Deco pieces favoured large, eye-catching stones over feminine detail.
