They have daily specials including a macaroni and cheese of the day like the bacon beer macaroni and cheese! Cocaire offers modern comfort food that leaves you happy and full! Kyle and I went to Cocaire on a sunny Friday night. We were immediately seated in the cozy dining room. We enjoyed looking around at the traditional decorations that were nods to their long history of being open as an Irish Pub. We started our meal out with two appetizers. First we tried the Ruben Eggrolls. These awesome creations were a hand crafted using corned beef that is prepared right in their kitchen (it should also be noted that they roast all of the meats they use on site). They take the corned beef and mix it with Swiss cheese and sauerkraut and wrapped in an eggroll wrapper. These little beauties are served with a side of homemade Thousand Island dressing perfect for dunking. We also tried the hand breaded cheese curds. Sounds Of Syracuse

by CHUCK SCHIELE

James Horan Practical Passion in Action One thing that makes me crazy is bitching. Seems these days, in our incredibly rapidly growing hyper-sensitive world that everybody is pointing the finger somewhere else, looking for the responsibility to belong elsewhere. To me this is a sure sign of societal illness. We’ve created a sort of, blame culture, by now —all in the quest for convenience. Musicians bitch right along with everybody. They knock the scene, the clubs, each other, digitization and technology, the bass player and even the onset of new music … all in the frustration of trying to make it as a musician. I’ve seen it over and over again. Then there is James Horan. James is no whiney-baby. He innately understands that if you’re the one complaining, then you must be the one not doing enough about it. He’s a great example of what a person with an idea … an inspiration … along with a great “can do-let’s do!” Attitude can do —should do— to the opposite of bitching. He creates his own destiny. A destiny which can be shared artistically with others. He plays classical guitar. He develops and produces shows all over the state. He encourages his peers by his own example and effort. He sticks up for the high art of what we as musicians are doing. He raises the bar to a high level of artistic integrity as opposed to taking anything he can get by way of opportunities that feature musicians as

But, I ran into him a few days ago while shopping for shirts, of all things. We got to talking which lead to this chat. Chuck Schiele: Hi James. Thanks, so much for doing this article for Sounds of Syracuse. James Horan: Thank you Chuck. CS: How did you get started in music? JH: I was introduced to piano lessons at around 5 years old. My mother started all the kids with lessons with a great teacher, Mrs. Plum. This formed the base of my understanding of scales and music notation. I later studied the clarinet until high school when I was exposed to the electric guitar. My buddies Steve Feldman and Rob Coye would jam in an Attic in the University Area and Steve was playing a Les Paul through a 5 watt Vox amp. It was raunchy and out of this world. I went home and found a telecaster for sale for $150 and was hooked. CS: Tell us a brief history of your music. JH: I played piano, clarinet and guitar. I had lessons for the piano and clarinet but was self-taught playing rock and roll guitar. I had the luck to play with some local musicians

The Great Lakes Guitar Quartet including Benjamin Ellis, Christopher Polak, James Horan and John Ferrara around town in the early 1980’s. That career came to a quick close when I was 21 and started a family. About 20 years later I was at a U2 concert in Philly and came away wanting to play the guitar again. A friend of mine (Chris Grenner) had a little shop in Armory Square and he sold me a Martin to start playing with. I met a guy named Dick Ward who had started a thing called the Guitar League and I finally went to a meeting about 6 months later. It was awesome. -I had discovered a peer group of musicians and was totally inspired. I became very involved with the GL and started to help produce the meetings as well as the live concerts we were producing at the time. They were continued on pg 6

James Horan continued from pg 5 bringing in some great players like Stephen Bennet, Laurence Juber (ex-Wings), and the great Tommy Emmanuel. I also became friends with Loren Barrigar and he was a great help in getting me to play again. I was in Nashville with Loren and Dick when I discovered the Classical Guitar. I came back from my first trip to Nashville with a fire in my heart to learn how to play classical guitar. I found a teacher this time and started taking lessons and practicing every day 3-5 hours a day. My interest in the classical guitar has led me to be on the board of the Great Lakes Guitar Society and to help establish the GLGS in the Syracuse area. The GLGS has been involved in promoting guitar and performances in the area for last 7 years. CS: Who inspires you most? JH: I think when it comes to music I am inspired by the passion a person puts into their craft. When you see a person take on their art and really work to develop it so that they can share what they feel inside with you through performance, it is awesome. There is a huge difference between a note and the potential it holds to become music. When you hear great music whatever the genre you know it is such. It takes the listener somewhere. CS: Wow! And ditto! Tell us about the concert series you’re involved with. JH: In 2015 I saw a Guitar performance at the Skaneateles Library by Dr. Timothy Schmidt. The room they have there holds about 90 people and has a great stage. I was sitting next to the Executive Director Nickie Marquis and said it would be a great thing to have a regular perforce series here. She agreed and we started the series with a small grant that was provided through the office of Senator John DeFrancisco. The main focus of the series was to create a venue for music performance that allowed people to play outside of the bars and coffee houses that showcased their art. Bars and restaurants are great patrons of musicians, but often, the performance is lost to the food, drink and televisions. In its third season the series is really well accepted and the audience James during an open mic night at the is very strong. We have Red House Café some really high level players coming across the stage —some local and many from around the nation. In July, Loren Barrigar will be performing a benefit concert for the series. We hope to continue to have classical and other guitarists perform from different genres as well. CS: Please share with us your views on music in the area. JH: When I returned from NYC to live, I was surprised to see the local scene really starting to decline. I think it is a common problem everywhere. I know Europe is suffering the same problems. We have so many well trained and creative people, yet, the outlets have faded away. We all know that other things like YouTube have offered some opportunities to get your work out but that does not come close to replacing “Live” performance. The experience of performing live or seeing a live performance can not be replicated in a video. There are people making an effort to produce small performances. Steeple Coffee

Rampage Although there have been countless cinematic adaptations of popular video games, the majority of these efforts have been complete disasters. Flicks like WING COMMANDER, ALONE IN THE DARK, and, let’s be honest, the entire RESIDENT EVIL series, have been torturous to say the least. So, when I learned that there was an adaptation of the 80’s arcade staple, RAMPAGE, coming out this year, I admit that the prospect of watching it was downright depressing. The only glimmer of hope, was that the film was to star Dwayne Johnson, who, despite the career trajectory of most wrestling entertainers who aspire to be actors, is a bona fide movie star. If anyone could make this plot work, it might actually be him. Despite my initial reservations, I saw RAMPAGE in IMAX, and found myself surprisingly entertained. Johnson stars as Davis Okoye a former special-ops poacher hunter who now heads the primate department at a San Diego animal sanctuary. He is the type of

Golf

The Ultimate Golf Swing Training Program Why isn’t your golf swing improving? Have you ever had your golf swing analysed? That’s not just having a golf professional look at your swing but check out your golf swing plane, posture, your spine angle, balance and general biomechanics. If you haven’t you are not having a true swing analysis done. You understand the basics... how to hold the club, where to stand, but things go wrong from there. The reason your golf swing goes astray when you take your club back is because your biomechanics are faulty. For example, if you have a functional short leg on your left side, when you take your stance your hips will rotate resulting in an open stance. You might think that you are square to the target line, but you are not. With your poor biomechanics the club is being forced into an out-to-in swing so you will hit the ball with a clockwise spine. Correcting your hip and spine angle will square the club face at impact so you can hit the ball with an anti-clockwise spin. The hips and shoulders must return to a square position this will not only cure your slice but you allow

If your posture is corrected your muscles will groove your new swing so you will naturally return to a stance with a square club face.

distance from more power being generated from the correct body turn and the square club face. If your hips are rotated you will not be able to align your feet, hips and shoulders square to the target. If your posture is corrected your muscles will groove your new swing so you will naturally return to a stance with a square club face. Also if your hips are rotated your centre of gravity will not be right this will force your shoulders to turn too quickly with an open stance due to a poor hip rotation the body will be in front of the ball. If your spine angle is wrong you will not setup with your head behind the ball you will begin your downswing before you have complete your back swing with your arms. Every golf swing fault can be analysed this way. That’s why your golf swing is not improving. You are not addressing your main piece of golf equipment...YOUR BODY...and how it affects your golf swing. This is why you have difficulty repeating a good shot. Your biomechanics aren’t grooved to a good swing. Muscle memory is going to return you to a poor Golf Club & Tavern posture unless it is retrained. Your golf professional is telling you to have good balance, keep good posture and maintain your spine angle Serving throughout the shot. plane. Then I looked at the variations in posture. Can they relate to swing faults? ...Yes, they are definitely related to every swing fault. So I came up with a basic equation. Muscle imbalance = poor posture = poor swing. I looked at every posture and muscle imbalance and came up with a simple formula to analyse these faults related to a swing fault. So this is how Get Fit to Golf and the ChiroFit Program was born. If you can maintain a constant posture and spine angle through a shot you will be able to repeat the same swing and return the club face square to the target line. I also looked at well know golf champions past and present, from Ben Hogan, Jack Nickalus, Greg Norman, Tiger Woods etc. Even though they have variations in their swings at first glance, if you break their golf swing down they all have something in common. At the impact zone they have maintained good posture, spine angle and balance, and they are able to repeat this. Tiger woods is a good example. When he first came on the golf scene he had the best posture of any golfer I had seen. If you want to improve your golf game, your golf swing training and analysis should have a physical component. Have your golf swing analysed from a biomechanical standard and then fit it to your game. This is the basis to Get Fit to Golf. An easy to access online assessment process which will highlight and analyse your golf swing faults and then you can download a tailor-made easy to use program all done online. All it takes is 30 minutes of posture balancing three times a week to dramatically change your golf swing and improve your game for life.

The Write Stuff by NANCY ROBERTS

12 Rules For Life by: Jordan B. Peterson In case you’ve been sleeping, or have tuned out the news, Jordan Peterson is the “it” guy of philosophy and psychology. But as it happens, he has some staying power and may very well not be yesterday’s newspaper; certainly not if he can continue to turn out books of this power and merit. And definitely because he is, as the writer of the introduction explains, one who elucidates an IDEOLOGY, not an IDEOLOGUE. “Ideologies are simple ideas, disguised as science of philosophy, that purport to explain the complexity of the world and offer remedies that will perfect it. Ideologues are people who pretend they know how to ‘make the world a better place,’ before they’ve taken care of their own chaos within … That’s hubris, of course, and one of the most important themes of this book, is ‘set your house in order’ first, and Jordan provides practical advice on how to do this.” Peterson came to virtually instant fame for taking a stand: he refused to “use

compelled speech.” A Canadian, he was brought up before the chillingly named Human Rights Tribunal for refusing to use his students’ “preferred pronouns,” but agreed to use the “they and them” unless he was referring to someone in the singular, and otherwise said he would use he or she. He drew a line between refraining from using offensive speech (he agrees with this) and being “compelled” to use madeup words per the individual student’s particular preference. He became the darling of the conservatives, and the bête noire of the progressives. Jordan B. Peterson, the “it” guy of philosophy Along the way, he wrote and psychology. a couple of books that have not only become best sellers, but have provided some solid, researched, and clinically well-documented insights into living a richer, more rewarding, less “chaotic” life. Peterson’s first score was “Maps of Meaning,” and a series of lectures on the subject, in which he explores how human beings find meaning – both because we appear to be specifically wired to do so, and the ways in which we go about doing it. He uses such disparate resources as The Bible, Disney movies, and fairy tales to explain the process. Being a lover of fairy tales, he got my immediate attention. In an early lecture, he asked listeners to consider a baby: you don’t need to explain to a baby “how” or “why” to play peek-a-boo. The child is born “getting” the game. Human beings, it seems, are hard-wired for game playing. Children on the playground take it up a notch and will set minimal rules for a particular game – tag, for example. As we get older, our games become more complex, but our interest in them never seems to fail. And so with the stories we tell: they have meaning far beyond what appears on the surface. If we simply take them at that level, we’ll be entertained. If we dig deeper, we can enrich and improve our lives. This book is a set of twelve —I’m certain he chose the number for many reasons— “rules” for doing what he says is most important for any person: continued on pg 12

House, Nelson Odeon, Auburn Public Theatre, The Redhouse etc. … but the days of a band in every bar or lots of small venues for acoustic music is all but a shadow of itself anymore. CS: Please share with us how you sort of create venue opportunities. JH: One of the things I heard a few years back that really struck me as a key to having meaningful music performances was what guitar great Tommy Emanuel told Loren Barrigar about growing his career. He said “Loren you do not want to play in the bars, you belong on a stage in front of audience that has come to see you.” That stuck with me. I watched Loren grow his career by seeking out places to play in most cases that offer a chance to put on a real show. Not just play for pay. The idea of finding a venue that is right for a performance and then producing a show is a bit daunting to some, but, the rewards can be far greater if you do it. When you perform you have an audience there to listen. You perform early in the evening in most cases allowing more people a window of opportunity to attend. Also people are willing to pay to come and listen. When we first started to produce performances for the Great Lakes Guitar Society we wanted places like small art galleries, great chapels or an outdoor setting that is intimate. If you pack a 100 seat venue to the walls it is the best feeling when you perform. I know as an audience member I love a full house too. I would love to see some of our local musicians in venues that inspire. The downside of self produced small shows is low and the experience is extremely rewarding. My quartet once put on a performance in a boutique wine store in the Hawley District. We cleared the floor, put out 50 seats and had a concert and wine tasting. It was SRO and everyone loved it. It was so far form normal that you could only win. CS: Advice for new or budding musicians. JH: The only thing I know about starting out is that if you have that fire in your stomach to get better at what you are learning —you need to serve that passion. You need to learn, practice, attend live performances and perform if you have something to share. CS: What’s in your music near future? JH: I am producing the Skaneateles Guitar Series at the Skaneateles Library every month and rehearsing with the Great Lakes Guitar Quartet. We will open the show in July at the Library with Loren Barrigar. CS: How do we stay in touch with your and your music? JH: www.skaneateleslibrary.org

12 Rules For Life continued from pg 10 “clean your room.” By that he means set about establishing some order in the chaos that is inherent in life – oddly enough, so that you can ENJOY the chaos. Managed chaos, evidently, is the ideal point of balance for a life that is interesting, but not terrifying; exciting, but livable. (And, in his lexicon, male = order, female = chaos. Together, they are a creative force. Apart, things stall.) The rules themselves are NOT the Ten Commandments. Or even the Twelve Commandments. They are guidelines for getting more “juice” out of your life. And while they seem simple, even simplistic, the more you consider them, the more they help smooth the snarls out of the knotted hair of everyday life. Take Rule #1: Stand Up Straight With Your Shoulders Back. (I will confess to actually taking this to heart in the simplest of ways: every so often I’ll catch myself slumping over, and I’ll take a moment and correct my posture, sit up or stand up straight – and yes, it works, if even just on a “boy my back feels better” level!) Peterson explains the straight-out chemistry of this, using the primitive lobster as an exemplar. It turns out that “boss” lobsters, the ones who win the fight, get the girl or guy lobster, and the best, safest hiding spots, are the lobsters who have the most serotonin (the feel-good chemical depressed people often lack) and who, in circular feedback loop fashion, spread out the most, stand tallest, with claws most widely displayed. The more they do that, the more they win, the more serotonin is produced, the more likely they are to win the next time, and so on. He

The rules themselves are NOT the Ten Commandments. Or even the Twelve Commandments. They are guidelines for getting more “juice” out of your life. suggests simply stand up straight – even if you don’t “win,” you’re going to feel better. It is within Rule #1 that he introduces us to a concept that will recur, so it’s worth noting: the Pareto distribution. Mathematician Vilfredo Pareto noted, in the late 1800s, that wealth wasn’t spread out on the famous “bell” curve, but that from time to time and place to place and economic model to economic model, wealth would clump in the hands of a very small number of people – no matter how it had originally been distributed. The same was true of things like words: 90 percent of communication occurs using just 500 words (out of many thousands). In fact, the principle is ubiquitous in the distribution of things. What has that got to do with Stand Up Straight? Go back to that idea of “winning,” or getting rewarded. If Pareto’s distribution is on target, and it appears that it is, odds are most of us won’t “win” most of the goodies. There is a thing he calls the “Dominance Hierarchy,” and while you may not sit at the top of it —in fact, probably you won’t— your life Mathmetician Vilfredo Pareto can nevertheless be happier and more rewarding, so why not make it so? “To stand up straight with your shoulders back,” he writes, “is to accept the terrible responsibility of life, with eyes wide open. It means deciding to voluntarily transform the chaos of potential into the realities of habitable order.” Rule #2: Treat Yourself Like Someone You Are Responsible for Helping. I still recall a day when it dawned on me that, as an adult, I could take care of the vulnerable kid that still resides in all of us, no matter how old or accomplished we become. It was a wonderful insight – and greatly liberating, yet at the same time laughably simple. You needn’t be a victim, even when you are a victim – bad things will happen, life is unpredictable and even “unfair.” “Chaos is where we are when we don’t know where we are, and what we are doing when we don’t know what we’re doing. It is, in short, all those things and situations we neither know nor understand.” (Later, we learn that it’s also what makes life so INTERESTING.) Helping, of course, is the “policeman” who walks a lost child home (but Reserve your Mother’s Day & Graduation parties for parties of 5 or more who can become the intolerant bully), the orderly line in which we wait our turn (but which can turn into intolerable bureaucracy). It’s also the disorderly kindness and selfless acts of love and courage (which can become smothering refusal to let you run or jump or explore for fear that you might skin your knee). “It is far better to render beings Our Famous Clam Bar Chicken Wings 1/2lb. Rampage continued from pg 7 down a building, or saving multiple lives while battling a gigantic ape as a plane hurtles towards the ground, the crowd-pleasing performer known as “The Rock” executes it all with a believable bravado. His charisma is infectious, and the scenes he shares with a smooth-talking government agent played by Jeffrey Dean Morgan makes me hope that this isn’t the last time we’ve seen the two share the screen together. The action scenes in RAMPAGE are as over-the-top as you’d expect them to be, and when seen in the IMAX format, it’s pretty easy to get lost in their grandiose absurdity. The special effects are excellent, with George and his wolf counterpart effectively filling the screen and wreaking havoc throughout. George is a likable monster who goes from flipping the bird to flipping over skyscrapers, and is equal doses of terrifying and endearing. The violence is often fairly brutal, so parents need to be aware that the PG-13 rating is certainly to its limit at times. The wolf’s jaws tear flesh with a bloody savagery, and innocent bystanders are tossed, crushed, and devoured throughout the entirety of the final act. This is when the creatures truly take over, and the effects become the focal point. While George and the wolf were the main players for most of the film, director Brad Peyton does an excellent job of giving brief glimpses at the crocodile creature throughout, but effectively saves him (I’m assuming it’s a “him”) until the moment the movie needs him the most. This revelation provides another unexpected level of entertainment in a film that had more of these moments than anyone could have expected. A special thanks goes to Regal Cinemas at Destiny USA for allowing me to attend this month’s film in the IMAX format.

My Mind To Yours

Thinking Naturally Like animals in the wild, we’re instinctual. The serotonin that resides in our guts and our brains is the same neurotransmitter that, in nature, causes grasshoppers to swarm. Knowing how our fight/flight responses operate and feel helps us better regulate and choose our own reactions. Nature wires our brains and nervous systems to keep us fed, learning, and communicating. Nature communicates, and my deck railing is a meetup place for doves. The doves dance toward and away from each other, sometimes lingering together long and close, nuzzling each other, their feathers fluffing out, all of it appearing fluid, natural, and very unlike another mating behavior I once heard about in anthropol-

ogy class; mallard males sometimes gang up on a single female. Once at Onondaga Lake Park, I watched several males attack a lone female who struggled to run and fly away but never managed to get more than ten or so feet into the air before being dragged down to the ground by her pursuers. There are many mallards at the park; I’ve only seen this phenomenon once. Why then? Canada geese mate for life. In my neighborhood a couple years ago, a flock of crows chased and pecked at a large owl who, for a painful moment, seemed to stare pleadingly at me from a low tree limb where she tried unsuccessfully to rest. The crows quickly succeeded in forcing her into a slow labored upward flight. I felt terrible for her. How do I know the owl was a she? I don’t. I was projecting. Freud defined projection as the conscious or unconscious attribution of one’s feelings to others. We learn in context, and theory of mind, a capability common to seven-year-old children and adult crows, is the awareness that “we” think our thoughts, “they” think their thoughts, and those thoughts are not the same. Thinking that everyone thinks or should think what you think creates conflict and fight/flight stress. Uncontrollable stress leads to anxiety and depression. Many people say they feel stressed out. I sought help for anxiety and found a therapist who pushed me to sign up for a week-long co-dependency program. It’s been said that codependents would rather carpet the world than wear bedroom slippers. I say so-called codependents might just seek a better world. Anyway, in one recovery exercise, I participated in a group instructed to surround and poke a fellow codependent who stood mutely. When I wouldn’t poke the guy, everyone turned on me. I physically pushed out of the encircling. The facilitator pushed me back in. The group closed in on me making it more difficult for me to escape. I later learned that this exercise was individually scripted just for me to provoke me into saying, “stop!” continued on pg 41

The Pier I sat across from three excited, paint-splattered, slightly tired, but cheerful and enthusiastic team members on lovely Chiavari chairs and listened as they told me about the soon-to-open venue on the water, The Pier. The location has a CNY history – back in the 30s it was Smith’s Pier, and as a 1935 article in the Syracuse Herald shares, the restaurant was a “popular rendezvous at Brewerton,” presenting “artists well known to radio listeners,” with “public dancing and favorite beverages.” In 1956, it burned, and over the years has been the site of many varied enterprises. In its new incarnation, the location will become a venue unlike any other: a completely renovated, flexible, top of the line facility for parties, weddings, and events of all kinds – right on the water. The Pier is owned by Chuck and Robin Orlando, of Limp Lizard Barbecue fame. “But,” Robin explained, “this location is completely different.” Not that it won’t serve barbecue if that’s what the guests want – but The Pier isn’t a retail restaurant space. It’s a venue for events – everything from a corporate affair to an organization gathering and most especially, weddings. With its location literally next to the water, brides (and grooms!) will “be able to have their dream wedding,” said Nick Ford, a manager and planning consultant. “If they want rustic, with burlap and a casual feel,” added partner

and manager Brenda Hazemyer, “they can have it. But if they want sequins and crystal, they can have that. We want it to be perfect.” Open space, atrium doors leading to a large deck, high ceilings and dark wood flooring all make it easy to picture the space being transformed into just about anything a party could wish. The venue will accommodate up to 250 guests, with ample parking and a beautiful view. Nick also explained that the team has been working together for several years, and have developed a rhythm for getting it right. “We’ve all worked together for about ten years,” he said. “We each bring our strengths to the team, and best of all we work well together.” That’s important, as anyone who has planned an event —particularly a wedding — will know. Having a calm, collected, professional catering team helping you plan is a definite plus for any bride —or mother of the bride— eager to have the perfect nuptial. continued on pg 17

Andre The Giant There are few aspects of a film production that can have more sway on me than an appeasement of ON DEMAND: Until May 20 nostalgia. ANDRE THE GIANT, while far less emotionally taxing than the aforementioned films, is no less engaging than these classics. Well, the suspension bothered me and finding out that kids are inundated with something like 49 doses of vaccines by 6 years old bothered me but I was also, as a believer in freedom over safety, bothered by the mandatory compulsory vaccine schedule. If the vaccines are so safe and effective why would it matter to you if my kids don’t get vaccinated and yours do? Why cant I send my kids to school without having given them the chickenpox vaccine? Again … your kids have had all their shots so why would my by DR. BARRY kids lack of shots affect your kids. Well, one of the reasons is that the shots don’t work that well for that long. Now, my kids had all their shots and seem fine. I don’t have a personal dog in this hunt but my heart goes out to people who have had a child they think was injured by vaccines. The CDC says they have done extensive testing that proves there is no association between Autism and vaccines so that’s the end of it no? Real proof is not in yet because additional studies have been discouraged. Maybe our current vaccine schedule This all started with my suspension. hesitancy in having their kid get so many vaccines in one setting they are labeled a nut and an anti-vaxxer. Maybe they are just pro safety. Maybe they are just concerned about the children. I have respect for the pediatricians but I can’t respect a practice where informed parents are fired for having questions about what’s being injected into their children. I think your pediatrician should be up to the challenge when you ask them questions like … Can you name 4 ingredients in that vial? Can you tell me doctor about the formaldehyde in that vial? Can you tell me about the thimerosal? Can you comment on the neurotoxic properties of Aluminum? Is it true doctor that if I gave the contents of that vial to my child by mouth instead of by shot I could have charges made against me? Is it true that in some states if you drop and break the multi dose flu vial you are supposed to call a HAZMAT team and evacuate the area? Let’s not even focus on the thimerosal issue. Let’s look at aluminum. Aluminum is put into shots to make a stronger immune response. The problem is that Aluminum is toxic. According to the FDA the maximum amount of aluminum per kilogram of weight is 5 micrograms. Anything containing more than 25 micrograms is supposed to have a label warning that aluminum may be toxic to the nervous system and to the bones. For some reason vaccines don’t carry this warning. As I mentioned earlier 99 percent of babies are given the Hep B vaccine on day one of their life. Most kids weigh in at about 8 pounds. Doing the math shows that the maximum aluminum allowed should be 18 m icrograms. Well the Hep B vaccine has 250 micrograms. More than 10 times what the FDA says is safe and we are injecting it into newborns! That’s just one shot! Add in the Hep A shot, the DTaP shot, Besides making money on the actual vaccines your doctor is also paid on HIB shot, what percentage of patients are compliant with the schedule. Pneumococcal shot … all of which contain

If people didn’t want a shot, if they didn’t want a mammogram or a colonoscopy or a stress test for that matter, that was up to them. As long as they made an informed decision I respected that. It’s their body and they literally can live or die by their decisions. They have that freedom … They have that choice. Why is this so different with vaccinations? aluminum. There are textbooks written about aluminum toxicity so this is not some new or unproven concept. We physicians got the same education about vaccines that we did about nutrition. -Very little. Here is the vaccine schedule. Vaccines are safe and effective. Make sure the kids stay on the schedule. Besides making money on the actual vaccines your doctor is also paid on what percentage of patients are compliant with the schedule. What incentive does that give for real informed consent? I too used to give all shots on the schedule. I prided myself on being one of the most immunizing doctors. After all, it was an easy way to judge my performance and I thought I was protecting people. But if people didn’t want a shot, if they didn’t want a mammogram or a colonoscopy or a stress test for that matter, that was up to them. As continued on pg 21

Word on the Street by BILL MCCLELLAN

Juanita Perez Williams For Congress Omnibus Bill. So named as the large size and scope limit opportunities for debate and scrutiny. It is the tax bill, passed unread by your purchased leaders. John Katco voted for this bill. John Katco is a Trumper. This is the tax bill supported so much by folks who have no idea what is in it. Buried deep in its 2200 pages you will find it is designed to hide the diminishment of health care for all. This is a Trump technique. Katco is fine with this. It is a 1.3 trillion-dollar expense with fully 82% of this going to the 1%. That is over a trillion to the 1%, which is 1,000 billion. 1,000 million is a billion. All just to the super rich. The rest is not remarkable and serves appeasement. You get a few hundred in feel good money. It is a National disgrace fully supported by John Katco. Take a drive in the Hamptons on Long Island. You will note statues in front of mansions worth far more than your home. As Central New York infrastructure crumbles, Jobs are lost, Town and City issues are left forlorn, Public Education is left to squander, John Katco voted to give the 1% your taxes. Polls reveal that without Juanita Perez Williams we are very likely to lose this seat again. John Katco can no longer claim to be a moderate. This tax Bill he voted for is beyond extreme. Time and again he supports Trump and his extreme agenda.

Following a well fought Mayoral campaign on both sides Juanita Perez Williams was waiting on the sidelines, taking a breath and following events. In the meantime her extraordinary efforts in the Mayoral race did not go unnoticed. Local, State, and National officials had been encouraging her to join the Congressional race. The Democratic Congressional Campaign Committee (DCCC) is the official campaign arm of the National Democratic Party in the House of Representatives. Their focus is determining, supporting and electing “top tier” Democratic candidates throughout the country. Their mission is to take back the House of Representatives. Democrats need to win at least 24 seats to reclaim the 218-seat majority. Those chosen as “top tier” candidates have sound personal qualifications and have demonstrated strong abilities to design and build winning campaign strategies. Juanita was one of 33 to be chosen in this elite “Red to Blue” program reserved for those with the highest potential across the

land. The DCCC observed that Katco’s support of the Tax bill and other missteps have tarnished his moderate image. They believe he is vulnerable and Juanita is our best chance to retake this seat. Juanita not only has the best chance of winning but it is glaringly clear that if she does not run that this seat will almost certainly be lost again. I am baffled at the few local Democratic Party officials that have condemned Juanita’s participation, when in fact, it is legal and proper and so clearly affords the best opportunity to regain this vital seat. These local officials need to understand this race is about America, not about dislike of perfectly proper process. This is a calling that outweighs the mysterious disapproval of clear legal process and strongly increased potential to win a Congressional seat. America needs us to win. Please know that Juanita has every regard and respect for all that has been achieved. But also please know she and most others in the Local party feel with great certainty that her run is in the best interest of the Democratic Party, and above continued on pg 22

A Shot Across the Bow continued from pg 19 long as they made an informed decision I respected that. It’s their body and they literally can live or die by their decisions. They have that freedom … They have that choice. Why is this so different with vaccinations? Please don’t bring up the concept of Herd Immunity because that may hold true for populations that have had the actual infection but has not been demonstrated in populations that have been vaccinated. Getting the flu and recovering … as 99% percent of us do … gives you lifelong immunity from that flu and has been shown to be a positive thing for your immune system. The flu shot … not so much. I can see you rolling your eyes … This loser doctor has lost his mind. Doesn’t he know about the many lives saved by vaccines? Doesn’t he know that smallpox and polio were eliminated by vaccinations? That’s the story you know but it’s not the real story and you can find out just by doing some elementary reading. You can’t just read the titles … The devil and the truth are in the details. Read the compelling work of Dr. Suzanne Humphries: Dissolving Illusions. Research smallpox and the town of Leicester in England. England had forced vaccination and in Leicester despite mandatory vaccinations they had epidemics of smallpox. When the people of this city won their freedom of choice vaccination went down from 95 percent to 5 percent. When the people there used isolation and quarantine the smallpox rate plummeted! As quoted in the World Health Statistics Annual 1973-1976 Volume 2: “There has been a steady decline of infectious disease in most developing countries, regardless of the percentage of immunization administered in these countries.” Looking only at first world countries … America has the most aggressive vaccination schedule in the free world and yet we rank very low in childhood health. That doesn’t mean they are related but shouldn’t it be investigated?

Shouldn’t studies be ongoing? Let me close with a very chilling quote on this from our friends in the government. From the DHHS Federal Register volume 39 number 107 from June 1984 … which are about the final rules for polio vaccination campaigns in the USA: “Any possible doubts, WHETHER OR NOT WELL FOUNDED, about the safety of the vaccine cannot be allowed to exist in view of the need to ensure the vaccine will continue to be used to the maximum extent … ” Well founded doubts about vaccine safety should not get in the way of vaccination programs?!?! Talking about vaccines is like talking about politics … people get all riled up. Can’t we have a civil conversation? Can’t we look at some statistics? Do you really think all the families with doubts about vaccine are nuts? Doing my research I found that the pro vaccine lobby was far more vicious than the anti vaccine lobby. Most of the anti vaccine lobby are not against all vaccines but they are against the aggressive, unproven, and ever expanding vaccine schedule. Did you know the most likely group NOT to vaccinate are affluent, well educated, white people. What’s that tell you? Let the science and the facts lead where they will. Did you know there are over 150 vaccines in development? How many of them will be mandatory for school, work etc. People tell me not to write about this issue … I will somehow get into trouble … I will get my medical license pulled somehow. I love what I do especially since I switched to my current style of personalized practice but I can’t suppress these issues when I have researched them. There’s always UBER. Until next article, if there is another article … get well … stay well.

Juanita Perez Williams For Congress continued from pg 20 all, the American people. The Trump agenda is grave and damaging to the very fibre of this land. That is why Juanita is running. As the Corporation Council for the City of Syracuse and Assistant Attorney General for the State of New York and as a Lieutenant Commander in the United States Navy Staff Judge Advocates Corp, Juanita has a wealth of legal and prosecutorial experience. On her first day she will be fully prepared to deal with the folly and the investigations and the legal processes inherent to Trump’s enormous trail of legal woes. She will insure partisan interference and corrupt activity is addressed and fair process is observed. Juanita will be a shining example of the words of General Douglas McArthur: Duty, Honor Country. As you read you will see that Juanita Perez Williams has an impressive array of professional qualifications that set her apart from most Politicians. Fully in keeping with, and strongly complementing these qualifications, Juanita has the gift of her birth as a Mexican American Woman. She also served 5 years in the United States Navy achieving the rank of Lieutenant Commander. These attributes have forged a belief system that embraces Women’s Rights, Immigration Fairness, Human Equality and the major component missing in today’s Government, Political Integrity. My research in over 35 years of writing this column has shown me that we have more in common than we realize. Our problems are more systemic and to this, Republicans and Democrats agree. They are rooted in a bribery that evolved as wealthy influence overpowered our leadership and the intent of our Founders. Wealth sent our work, the tool of the American Dream to other lands and paid our leaders to allow this. The best that humans can be was purchased. The lesson is that only our finest will lead with honor and far too few are in the arena. Juanita Perez Williams will pursue the intent of our Juanita Perez Williams served 5 years in the Founders fully in keeping United States Navy achieving the rank of with the lyrics penned by Lieutenant Commander. they did, to be the best that we can be. That is what I am trying to do here. Because I know that is exactly how Juanita will perform in Washington. We have a very special opportunity in Central New York. And readers of Table Hopping have an opportunity to play a very important role in the future of our country. I have been writing this column for 35 years. We have a wide distribution in Central New York and the 24th Congressional District. When I have mentioned the Special Forces and the 173rd Airborne in previous columns I was speaking as one whose heart and ideas were forged by that experience and when I write about Juanita in this fashion I am putting the integrity of that experience and the integrity of this column which is and always has been written with the finest I am able to be on your behalf, on the line. This kind of accolade would never be seen here unless I had determined with certainty that the subject of such accolade was truly one of the talented few. The few desperately needed and far too rare, to redirect the systemic failures in this great land. Juanita Perez Williams is running for Congress to represent New York’s 24th Congressional district. She is a MexicanAmerican whose grandparents migrated from Guanajuato, Mexico. Her parents played an important role in her life, always struggling to make ends meet however devoted to activism in the farm workers movement. As a child, Juanita participated in one of the first Early Head-Start programs, was a recipient of free school lunches, attended college through the Equal Opportunity Program and in 1986 received her undergraduate degree from the University of California, San Diego. After receiving her law degree, Juanita served five years in the United States Navy Judge Advocates Program (JAGC) where she handled high profile criminal cases, attaining the rank of Lieutenant Commander. Upon completion of her military service, Juanita relocated with her family to Upstate New York where she accepted a position with the New York State Department of Education where she worked with Law Enforcement directing investigations in 19 Upstate Counties. In 2001, Juanita accepted a legal position with Syracuse University and soon thereafter was promoted to Associate Dean of Students. Juanita also served as an adjunct professor teaching legal issues in higher education. During this time, Juanita was selected by then Senator Hillary Rodham Clinton to be a member of the New York State Military Selection Review Board. In 2008, Juanita was appointed by then Attorney General Andrew Cuomo to serve New York State as an Assistant Attorney General. Two years later, Juanita was appointed by the Mayor of Syracuse to serve as Corporation Counsel and lead the city’s legal office. Juanita is the mother of four grown children and a grandmother. She sits on several Central New York Boards including Onondaga County Catholic Charities, La Liga (Spanish Action League), Clear Path for Veterans, CNY Workforce Investment Board, Bishop Ludden High School Trustee, is co-founder of UMEA, the new minority chamber of commerce, and is a proud member of the Valley American Legion. We need those with the bravery and heart to heed this enduring call: The main reason why this United States Navy Lieutenant Commander should be our choice to represent us in the House of Representatives in the Congress of the United States of America. I will leave you with what matters most which is embraced in verse from Major John McRae’s poem -In Flanders Field:

Tales from the Vine

by KATHERINE CHASE

How to Plan Your Wine Tour Spring is officially here! Or is it? Mother Nature has definitely been very fickle lately, but even still, it can only mean one thing: wine tour season is upon us! It’s not always easy to plan a wine tour if you aren’t from the area, so here’s a few pointers get you started in the right direction. Step 1) Set the date! There’s no bad time to go wine tasting, but fair warning, Saturdays and Sundays in September and October are the busiest days of the year. You will get a more personalized experience if you go on a weekday, or during the colder months. Step 2) Pick a spot. Determine your pick-up and drop-off spot where everyone can leave their cars and can

relax and have a snack or meal afterwards before venturing home. Step 3) Set a budget. Transportation cost will vary depending on your group size and the duration of the reservation (in hours). Tasting fees vary from $4-10, depending on your group size. Be sure to set some cash aside from wine and souvenir purchase! Step 4) Get a driver. Once you have an idea of how many people you’re traveling with, contact transportation companies (listed on our website) for rates. The sooner you call, the more likely you are to find the right size vehicle on your preferred date for a good price. Picking a transportation company located nearest your pick-up location may save on cost, but some companies don’t charge until you’re picked up, so shop around for the best deal. Step 5) Set your Path. Each winery has different reservation restrictions, but the general rule to follow starts with groups of 8 or more. Contact each winery you plan to visit. When planning your route, plan for an hour or so in between each stop to allow time to taste, shop, take pics, potty breaks and travel time. Visit our website, winery websites, and Facebook pages to pick which you’d like to visit. Step 6) Think food. Nobody wants to travel with hangry friends. Many of the wineries do carry snack items, but there are restaurants along the Trail for something more substantial. Americana Vineyards, Toro Run Winery, Knapp Winery, Thirsty Owl Wine Co., and Cayuga Ridge Estate Winery all have When planning your route, plan for time for restaurants on site. To tastings, shopping, pictures, potty breaks and expedite time, make a travel time. continued on pg 43

Exercise & Fitness by JENNIFER NASTASI GUZELAK

Why a Group Fitness Class? Well, why not? Whether you’re looking to shake up your routine, get a full body workout in less than an hour, or meet people who have similar fitness goals, a group fitness class is just what you need! Group exercise classes are more than the loud music, fast movements and shouts of encouragement that are seen and heard from inside of the fitness room. These onehour blocks of time offer social inclusion opportunities, health benefits and emotional support. From Kickboxing and Barre, to Yoga and Spin, your group fitness instructor will challenge you, encourage you, and be another tool to help you reach your fitness goals. If you are new to exercise, you are more likely to get better acquainted with exercise in a group setting than you would working out on your own. Is this your first time? Don’t worry about being the new kid in class! You don’t have to pick a spot front and center next to the instructor. You’re not teaching the class! Find a place in the room that makes you feel comfortable and remember that each class you attend will become more familiar. If you’ve tried a group fitness class in the past and didn’t think it was your “cup of tea,” I would encourage you to try another one. A different instructor can make all the difference in the world and everyone has their favorites! Champions Fitness Center’s General Manager and Group Fitness Instructor Kelly Sherwood

Champions Fitness Center’s General Manager and Group Fitness Instructor Kelly Sherwood says it best. She says, “Participating in a group exercise class challenges you to get out of your comfort zone and try exercises that you wouldn’t regularly perform on your own.” She’s absolutely right! In a group setting you will work harder and beyond your perceived limitations. The instructors are trained to safely push you and other participants to your limits. There’s nothing more motivating than completing a class and leaving with a sense of accomplishment!

Health and Form Benefits

Most fitness centers have a variety of different group fitness classes for gym patrons to choose from. Champions Fitness Center offers over fifty! If your goals are cardiovascular improvement and weight loss, select aerobic-based classes such as Insanity & Bag, Zumba, Kickboxing, Spin, or Cardio Splash. Select weight training, calisthenics or a class like Total Sculpt or 360 Fit if you also want to improve your muscular endurance and strength. If flexibility is your goal, a Pilates or Yoga class is a great option. If you are new to the group fitness arena you would definitely benefit from using proper form. Doing things incorrectly can increase your risk of injury and the probability that you will come back for another class. The instructors are well aware of who is new in class and they will keep an eye on you to make sure you are doing things correctly.

Accountability and Support

A group exercise setting helps hold you accountable! If you attend class regularly, the instructor and other participants will know when you are absent. When they see you, they will most likely ask where you were! It’s not because they are nosey. Well, maybe a little bit. They are genuinely concerned about your well-being! Who doesn’t like to be missed?

How many calories are burned in a Group Fitness Class?

Group exercise classes come in all types and intensities, so an hour of Barre will definitively not burn the same as one hour of HIIT Challenge. Also, the more you weigh, the more calories you’ll burn doing the same activity. For example, a one hundred and fifty-five-pound person will burn four hundred and twenty-two calories in an hour of aerobics, while a one-hundred-and-thirty-pound person will burn three hundred and fifty-four calories. Keep in mind several other factors are involved as well.

Low-Intensity Classes

Low-intensity classes feature steady activity. They usually don’t have bursts of intense movement and aim to maintain the same heart rate throughout the class. Low-intensity classes usually have less effect on joints and bones. They’re a good choice for people with health issues that need a slower paced activity. Low-impact aerobics burns an average of three hundred and fifty-two calories per hour, while a dancing class (such as Zumba) can burn up to four hundred and twenty-two calories.

High-Intensity Classes

Participating in a group exercise class challenges you to get out of your comfort zone and try exercises that you wouldn’t regularly perform on your own

Laurie Beth Tyldesley Pestle’s Barre Class. In each class you will get a full body workout that focuses on creating a strong, lean, and toned dancer- like body.

High-impact aerobics can burn up to five hundred calories an hour. A Spin Class can burn up to five hundred calories in forty-five minutes. However, keep in mind that in high-intensity classes, the amount of calories can vary greatly depending on how much effort you put into the workout. For example, you can burn anywhere from two hundred and eleven and seven hundred and thirty-nine calories an hour using a stationary bike, depending on the intensity of the workout. Kickboxing is another high burner, with three hundred and fifty to four hundred and fifty calories burned during a standard fifty-five-minute class.

TWINTREESRESTAURANT.COM

Non-Aerobic Classes

Yoga, Pilates and strength-training classes might not be your idea of high-calorie burning choices, but depending on the intensity used, they can burn lots of calories too. Thirty minutes of Pilates will burn about one hundred and forty calories. The calorie burn comes primarily from the repetition of movements, which increases muscle burn and strength intensity, even though the cardio workout doesn’t feel as intense. You can also burn a lot of calories taking a Yoga class. It all depends on the type of Yoga class you are attending. Thirty minutes of power yoga will burn up to three hundred calories.

In Conclusion:

So, what are you waiting for? If you want to get your heart pumping, blood flowing, and feel like a million bucks, a group fitness class is just what you need! A group fitness class is the perfect opportunity to meet people who have similar lifestyle goals. There’s no other place you can be social, get psychological support, get a great workout, and leave feeling better than when you arrived! So, before you say you’re not a “Group Fitness Kind of Person,” give it a try! It may just be what the doctor ordered! Good luck to you. I have been a personal trainer for over seventeen years and I absolutely love what I do. I honestly feel that I have one of the best jobs out there! The most rewarding part of my profession is helping one of my clients succeed at reaching their personal fitness goals. Making a difference in someone’s life makes it all worthwhile. alternative to trying to keep a single document in a “final” state no matter where you access it. You don’t need any particular software, you can access it anywhere you have an internet connection, and whatever you do to it “it” is updated. But needless to say, for photos or spreadsheets or other types of applications it’s not a workaround. Then along came Dropbox. I hated it, to be honest. I never “got it,” and while eventually I was able to download items from a shared location, whatever I had done wrong at first blush I never “unlearned,” so to this day while people rave about it and it is preferred by many —particularly graphic artists and Mac users!— I find the interface a little clunky. Still, it serves the purpose: you can add items to a folder and share that folder with others. 2GB of storage are free and then you start to pay. I have a Dropbox account, but it’s not what I think of when I think of sharing files. Google Drive was what really turned me on to online storage. With a Google account, you have a BIG free 15GB and 1TB is $10/month. Since I do a lot of video, that seems like a very inexpensive way to share video files! Perhaps because I’ve been a Google user for a long time, the interaction seemed more logical: your “drive” is simply a tab on your browser into which you can drag and drop files or folders, and you can synch these to your desktop selectively to open into a special program. Google Drive interacts automatically with Google’s version of the Office Suite, so you can “open” a Word Doc in Google Docs, an Excel sheet continued on pg 33

9 Ways to Appeal to Millennial Shoppers Most demographers define millennials as having birth years from the early 1980s to roughly 2000. Millennials may not have much disposable income, but they tend to spend more freely than the generations before them. So it makes sense to update your online store to cater to this group, which has, reportedly, $1.3 trillion of annual buying power. According to a study by Charles Schwab, millennials trump Generation X (early 1960s to early 1980s) and Baby Boomers (early 1940s to early 1960s) when it comes to buying the latest gadgets, clothes, and experiences. How does a store that doesn’t necessarily target millennials tap into their everincreasing purchasing power? Here are nine ways to facelift a store to convert millennial shoppers.

1. Everything mobile. More than 85 percent of millennials use smartphones. Every aspect of your website must load fast and work well on mobile.

4. Convey value.

Millennials like getting a deal. However, they’re also looking for the perceived value of a product — its ability to streamline tasks, save time, and eliminate pain points.

REMIND MOM WHY

YOU’RE HER FAVORITE CHILD WITH A GIFT FROM

5. Be transparent.

Millennials demand transparency on all levels. They expect companies to be clear about how they operate, both internally and externally. They also want companies to admit mistakes and explain how they will prevent future ones. continued on pg 30

2. User-generated content.

From customer reviews to user-submitted photos and video, millennial shoppers listen to their peers more than anyone else. They also take pride in having their content published across key channels and embedded on various websites. If you feature them, they’ll likely spread the word about your company.

6. Use stellar photos.

By some accounts, the number one brand preferred by millennials is Apple. But purchases in physical Apple stores aren’t feasible for most shoppers. So it’s crucial for Apple to provide a compelling online product experience. That means powerful imagery. While Apple’s website does contain detailed video, its most powerful media is photos. Apple’s product imagery is very high quality. Many of the site’s moving elements are actually still photos that glide across the screen.

7. Support a cause.

Millennials believe that companies should give back in some way. Whether it’s advocacy for saving animals or donating a percentage of sales to a worthy effort, a store that supports meaningful causes will often outperform one that doesn’t, even if it doesn’t have the best prices.

8. Use age-appropriate models or age-neutral photos.

It’s difficult to target products to a younger demographic if the models used are much older. If the product is designed for millennials, the models used should fall in that age group. For products being targeted to multiple age groups, use creative photos and cropping to minimize age-specific mindsets. The Coach landing page conveys products that are suitable for several age groups. Displaying products targeted directly to millennials, Coach puts more focus on the product itself and leaves the age of the model up for interpretation.

9. Use meaningful video.

While the sweet spot for video length is about one minute, it’s more important that product videos be meaningful. Each video should address millennials’ needs and tell a real story. Humor is often a plus, especially when targeting niche audiences. Since millennials will focus on images and video, it’s important to tell the right story. Should it be funny, serious, or a bit of both? Should it focus more on a product’s specifications or its usage? Should it include instructions? This varies for the product type, the interests of the audience, price points, and more. The best videos, though, use the voice of the company to communicate with the younger audience. For example, Nine Line Apparel’s 30-second video quickly addresses a pain point: a hoodie that holds your beer. The multiple problems experienced by the actor create humor and explain an issue many viewers may not have realized was that big of a deal.

Requirements Change This is by no means a complete list of everything millennials demand from online stores. But it’s a good starting point. We can expect many new requirements as technology changes. Thankfully, catering to millennials doesn’t mean you have to give up on older generations.

What should I wear?

Dress for the weather of the day. Parts of the brewery that you’re touring may not be heated, or air-conditioned, as well, you might even have to walk outside for portions. Layers are good. In addition, please remember that you’re in not only a place of business, but also a “factory” of sorts. Closed-toed shoes are recommended as you be standing, walking, and possibly climbing stairs. If you, or a member of your party, has physical limitations, tour guides are most willing to accommodate. continued on pg 32

What should I bring?

Friends, cash/credit or debit card, a growler for a fill-up of your favorite beer, and your ability to listen and learn. It is usually not recommended (and in some cases not allowed) that people bring their children on a tour; check with the brewery directly if you have questions regarding toting your young ones along. Day Trip: Brewery Tours continued from pg 31

Should I plan ahead?

Yes. Many breweries only offer tours of their facilities at certain dates and times. Others you may have to specially request, including making reservations, and sometimes breweries do not offer any tours at all. It’s best to do your research —the internet is all you need, or a phone call if you like to rock it old school— before showing up in expectation that you’re going to get a tour upon arrival. There are things that need to be factored in. Tours are limited based on time (plan on the tour being approximately one hour from start to finish) and the amount of people allowed. Some tours don’t have any limitation on group sizes, but this depends on the size of the brewery. The amount of persons on average walking through the brewery on a tour reaches it’s threshold of approximately 20 persons at one time. In addition, there may be only a few sessions during an afternoon, so plan to arrive early. Some breweries also charge per person for a tour. Usually it’s only a few bucks, but you’re able to get samples, tastings, and/or even a souvenir glass at the end. If you’re looking to get a large group of people together for a fun outing (i.e. College group, extended family fun, bachelor and bachelorette parties) you’ll want to make sure the brewery can accommodate all y’all, and it never hurts to ask for a private tour.

What should I expect?

When you arrive, most likely you’ll be part of a larger group. If there is payment required, you’ll do that first. You will have a tour guide who might be an intern, hired staff, or possibly even the brewer or owner of the brewery themselves. The folks taking you on tour will be exceptionally knowledgeable and will normally cover the history of the brewery, the elements used in brewing, the brewing process, the different types of beers brewed, the final results, the bottling/canning process, and distribution. You’ll see (and sometimes even get to touch and taste) the grains used, and view the pipes, tanks, equipment, storage, labs, and lines used in each and every step of brewing. Many times people are actually working while you’re touring too, so you’ll actually get to see the brewery in action. It’s best not to touch any equipment unless you ask or the guide states so. As well, you’re expected to stay with the group and not wander off on your own. It’s always okay (and readily welcomed!) to ask quescontinued on pg 36

in Google Sheets, etc. (And once stored this way, you can download them, or a partner can, in the Office Suite and vice versa.) The one downside, thus far (at least for this user) is that the items synched to the desktop will use up valuable local computer space, and can quickly cause a drain on your hard drive if not monitored. Still, you can share a folder (even a folder with a folder, or a document with a folder, selectively) with another user, who simply needs to have the location and/or log in to access the data. You can both work on a file at the same

time, sharing comments - and another person’s access is visible to any or all users active on a particular file. It’s a very simple way to collaborate. OneDrive is Microsoft’s pushback on Google Drive. Working within Windows 10, it offers the same integrated convenience of Google Drive in that stored files open in their native applications automatically and the offering provides 5GB free with modest upgrades, plus a Mac specific version. Evidently, since I have not used my OneDrive, it excels at photo sharing across a wide variety of apps, as well as your phone (so, you needn’t synch your phone with anything in order to store your photos in the cloud – and as we all know, photos are notorious space hogs). iCloud is the predictable Apple version. Your iPhone will offer cloud storage of photos and contacts and so on, and you get 5GB free. You’ll be able to work via Mac if you have an iPhone with from phone to desktop, but if you have a PC plus an iPhone you’ll need the client to share. (Again, with Google, I can read or write to a Google Doc via my phone – a very handy feature!) My phone automatically backs up to iCloud, though I rarely if ever access my data, and prefer to manually download photos to my desktop to clear them off my phone. (This last is sheer laziness and/or habit – iCloud would make the chore much easier!) Techradar.com has further listings of additional, newer entrants into the cloud storage sweepstakes, include Mega, Box, and SpiderOak and more – but my prediction is that whichever one you start with, unless it ramps up its pricing unreasonably, you’ll remain with. Between muscle memory and habit, we develop our systems and patterns and are reluctant to change them. So if you haven’t ventured into this Brave Not-So-New World, you have lots of choices – and don’t go by price alone. Review the security ratings, the pricing, and the ease of use, as well as the inter-operability with people you’re likely to share files with, and take your pick based on what’s important to you. So many choices, so much storage.

tions during the tour and there are no stupid questions because every brewery has different steps to their brewing processes. At the conclusion of the tour, your tour guide will direct you to your beer tastings.

What else is there to do at the brewery?

Besides having a pint or two and socializing, many places offer complimentary pretzels and popcorn to snack on all the way up to a full kitchen with an extensive pub-fare menu and plenty of seating. There might also be a food truck available in the parking lot of the brewery on any given day. Sometimes there are cards and board games, a fire-pit and patio, and even live music. Every brewery is unique in their offerings. There will also be all sorts of merchandise from T-shirts and koozies to glasses and coasters for sale. Purchases of beer in bottles, cans, growlers and/or crowlers are usually available as well.

What if I’m being dragged to a brewery against my will and I hate beer?

Well, for one, try a sample or two, or a flight – you never know what might be palatable. Secondly, it’s still a good time and at the very least, informational and educational. Thirdly, there may be other offerings of cider and/or wine. Many breweries nowadays wish to cater to everyone, even when some of their patrons are not particularly fond of beer. Most of the breweries in the greater CNY area have brewery tours available. Some particularly great ones to check out include the Saranac F.X. Matt Brewing Company in Utica, Empire Farm Brewery in Cazenovia, Red Hawk Brewing on Onondaga Hill in Syracuse, and Brewery Ommegang in Cooperstown. Each is unique in their offerings and tour styles and it is highly recommend and encouraged to visit a few to see the similarities and differences of each. Cheers!

Andre the Giant continued from pg 16

Hehir’s outstanding documentary effectively illustrates the daily difficulties of being over 7 feet tall and weighing over 500 pounds. It forces the viewer, perhaps for the first time, to ponder what it was like to be Andre when the cameras weren’t rolling. Whether it was flying in an airplane, riding in a car, or going to the store, there wasn’t a second in his life where he didn’t draw stares, and far too often, relentless ridicule. Stories are told by those who knew him best, including close friend Tim White, “Mean Gene” Okerlund, Vince McMahon, and Hulk Hogan, and regardless of who was speaking, there was nothing but adoration, respect, and love. Through their words, we learn that Andre was kind, thoughtful, and ultimately burdened by the very thing that caused him to be one of the most recognizable figures in the world. ANDRE THE GIANT features a collection of incredible clips from his matches, interviews, and television appearances, yet the film has mass appeal that goes way beyond wrestling. You cannot tell his story without focusing on the sport that launched his career, but ultimately, this is not the essence of what defines him. Committed to his craft, and enamored with the time he spent in the squared circle, he is a fascinating character study regardless of what you thought of his profession. Tortured yet triumphant, Andre remains an enigma decades after his death, and this stunning HBO production finally shines a bright light of one for more complex characters in the world of entertainment. ANDRE THE GIANT is currently streaming on HBO Now and HBO Go.

Thinking Naturally continued from pg 14

This therapy program further sought to challenge participants’ denial. Freud identified denial as a personal defense mechanism by which someone avoids some painful truth or emotion. I left the week-long program having learned new communication techniques, but with my “denial” intact. Years later, in November 2011 during a walk at Clark Reservation, a recipe discussion triggered a memory that led to other memories about events I didn’t remember but should have. There is no denying that. And there is no denying this: people live with physical brain injuries they don’t know they have, maybe struggling for their own minds amid psychological

labels and projections. I’ve read enough about it to believe I’m not projecting. Now, I want to go back to my owl story, which I shared with a friend who insisted the owl I’d seen must have been a hawk. I defended my perceptions. The tall distinctive bird I’d seen, from no more than ten yards away, was an owl. I’ve seen many hawks. This bird was an owl. My friend who’d not been there disagreed and said she’d check with her friend, who also hadn’t been there. Lucky for me, my friend’s friend told her, and she told me, that the bird I saw being chased by crows perhaps was an owl because owls sometimes raid crows’ nests in search of eggs to eat. My friend’s friend said that I should not worry: owls are tougher than crows and an owl would do just fine against a crow. I’m not so sure that this owl did fine. For much of that morning, the crows’ caws would diminish and grow louder as the avian battle moved from tree to tree with ever larger crowds of crows menacing the lone owl. The cawing eventually stopped. I hoped for the best. One more bird story: I heard an alt-right activist compare white liberals to reed-warblers. Reed-warblers are birds who sometimes gestate cuckoo eggs dropped into their nests by cuckoos. Cuckoos, according to bird guides, are one of several bird species known as avian brood parasites. Cuckoos mimic other birds to get access to their nests. In human parlance, cuckoo is not defined as “like a cuckoo bird,” but rather, “foolish or silly” or, “mentally ill.” In human terms, avian cuckoos are crafty strategists; misled reed warblers might be labeled “cuckoo.” Language shapes perception. We all share nature, but do not share the same natures. I know what I know, and I believe what I believe. Belief best evolves from experience and learning, or so I think. What do you think?

and when Deanna and Mark took over they were begged to keep this crowd favorite on the menu. This is a frighteningly delicious sandwich! They start with a pretzel bun, pile on a generous portion of roast beef (that was roasted to perfection on site) and top it with caramelized onions and melted cheddar. They serve it with a side of homemade horsey sauce and a cup of au jus. Kyle went with the traditional fish and chips. This was possibly the biggest help-

ing of haddock we had ever seen. The fish was battered with their one of a kind beer batter (a secret mix of Guinness and Labatt blue) and fried to a golden brown perfection and served with a heaping portion of fries. We were totally full but when we heard that Deanna was a trained pastry chef we knew we just couldn’t skip dessert! We decided to split a very large piece of her homemade bread pudding, a wonderful mix of flavors topped with two scoops of vanilla ice

cream. It was the perfect ending to a great meal. One of the other nice things about Cocaire at the Wayside is that they offer local delivery! Just give them a call at (315) 760-2023. How to Plan Your Wine Tour continued from pg 24

TABLE HOPPING

This Month’s Recipe Oven-Seared Beef Tenderloin with Herb Pan Sauce Recipe from AllRecipes.com

A good group of friends and a designated driver are must have’s for a memorable wine tour!

reservation for your lunch as well! The purpose of a wine tour is not only to have fun with friends or family, but to experience the area, the wineries, and to sample wines you might not otherwise try. You never know, you may walk home with a case of delicious wines to share at your next dinner party!

Ingredients

2 beef tenderloin steaks (1 1/2 inches thick) 1/4 teaspoon kosher salt 1/2 teaspoon coarsely ground pepper 2 tablespoons vegetable oil

Prep Cook Servings 30 m

20m

2 Portions

Directions

 Preheat oven to 425 degrees F (220 degrees C).

Herb Pan Sauce:

1 tablespoon unsalted butter 2 tablespoons finely diced shallots 1 tablespoon deli-style brown mustard 1 cup Beef Stock 1 tablespoon Worcestershire sauce 2 tablespoons heavy cream 2 teaspoons chopped fresh parsley 1 teaspoon chopped fresh chives 1 teaspoon chopped fresh thyme 1 teaspoon chopped fresh oregano

 Pat the steaks very dry with paper towels; season both sides with salt and               

pepper. Allow steaks to rest at room temperature for about 30 minutes while the oven pre-heats. Heat a 10-inch cast iron pan over medium-high heat for about one minute. Add the oil to pan and swirl to evenly distribute the oil. Place the steaks in the pan, allowing room between steaks. Cook without moving steaks for 2 minutes. Using tongs, lift the steaks and flip them over. If properly seared the steaks should release easily, without sticking to the pan. Immediately place cast iron pan into the hot oven. Cook steaks until firm and reddish-pink and juicy in the center, about 7 minutes. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove skillet from oven and transfer steaks to a warm plate lightly tented with foil. (The internal temperature of the steaks will increase by about 5 degrees while resting.) Melt unsalted butter in the same skillet over low heat; add diced shallots. Cook and stir, releasing the browned bits from the bottom of the pan, about 1 minute. Stir in the deli mustard. Increase the heat to medium-high. Whisk in beef stock and Worcestershire sauce, continuing to scrape up browned bits from the pan. Bring to a boil and cook until slightly reduced, about 5 minutes. Reduce the heat to medium. Whisk in the cream; simmer until sauce clings to the back of a spoon, about 2 minutes. Stir in the parsley, chives, thyme, and oregano. Spoon the herb sauce over steaks; serve immediately.
