Summit Auto Group In 2004-2005, Stephen DiMarco and Tom Kristoff started Summit Autos in Elbridge, NY. Situated at the four corners in Elbridge sat the Buick, Pontiac and GMC store. The shop had about 30 employees to start. DiMarco and Kristoff were friends as well as business partners – Tom had the auto industry knowledge and history while Stephen was an accountant and knew business. This was the perfect blend that would start a great company like Summit. Now the four locations have 125 employees including Chris DiMarco. Chris studied at Syracuse University and majored in Business. During Summers and between semesters, Chris worked for Summit whether it was bringing cars to the service bays or washing them to give to customers. He learned the business from the ground up and found it fascinating. “One day, Tom told me to get out on the sales floor,” said Chris. “I wasn’t sure he meant it, but he did and so I went.” After college and a few years of selling under his belt, Chris was sent to a financial and insurance school specific to the auto industry. Chris had already learned so much from his Dad (Stephen) and his father-in-law (Tom). “I saw how they worked so well
together and I wanted to be a part of that. I tried to be a sponge and absorb everything about the business. I worked every department so that I could get a better understanding” stated Chris. When I asked him why this was important, he replied, “If I understand the whole business, then I can give my customers the best possible service and service is what makes our business work because every employee believes the same way.” Unfortunately, Tom Kristoff passed away and the loss was felt through the whole place. “His were pretty big shoes to fill,” Chris said somberly. Each employee felt the same way, “We’re like family and have very little turn over with staff. Many of our

It also speaks volumes about Chris and his family as well, “It’s very important to us that we stay in touch with our staff. It’s not just a good rapport, we try to connect with our entire staff. We want them to know that their opinion matters.” Before major decisions are made, every staff person is asked for their opinion, then all ideas are considered. Many times, people cannot drive their car to Auburn for repairs so we take a loaner home, drop it off to the customer, and then drive their car to the shop.” And it’s not just for those who live in Auburn or Elbridge, you can live almost anywhere and they will provide the same service. “It’s why I’m willing to drive 45 minutes to work every day.” Chris lives in Fayetteville, but gladly drives to Auburn every day! This attitude is why Summit has so much repeat business. And the repeat customers is why they opened new locations – to better serve those looking to buy a car or to have one repaired. Blade Runner 2049 In the 35 years that have passed since the release of the original BLADE RUNNER, the cutting edge film has emerged as a beloved cult favorite. The lore surrounding the production is almost as fascinating as the movie itself, with everyone from director Ridley Scott to star Harrison Ford divided over the true nature of the protagonist, Rick Deckard (Ford). Set in 2019, where artificial intelligence beings known as Replicants are hunted by law enforcement agents known as Blade Runner’s, it was a dark and deep exploration of the nature of man vs. machine. There had been talk for decades about a continuation of the BLADE RUNNER saga, but it wasn’t until this summer that the project finally hit the big screen. After delivering one of the best films of 2016 (ARRIVAL), director Denis Villeneuve took on the arduous task of reintroducing the BLADE RUNNER universe to the world. In an era when of sequels, prequels, and reboots are released on a weekly basis, there is always a concern that the resurrection of a beloved entity could be spectacular failure. There is, however, also the possibility for greatness. BLADE RUNNER: 2049 is, quite simply, one of the best of 2017. It is the ultra-rare sequel that not only entertains, but builds upon its predecessor in a way that enhances the original. Set 30 years after the disastrous events in BLADE RUNNER, it is a world where Replicants are now produced by the Wallace Corporation.

“Basic” Pumpkin Spice, Craft Brew Style! Happy Autumn! Just a brief introduction that I’ve joined the Table Hopping crew as your new craft-brew-loving gal who will be bringing you your monthly pour of beer education and the low-down on all things beer related in the immediate CNY area and beyond. Along the way I hope that I can give a few recommendations for your grocery lists, event suggestions and local hotspots for an afternoon out with friends or planning a date, and if not for nothing, perhaps enlighten you with some random knowledge that you can amaze your teammates with at trivia night – or at least give you and your pals a suggestion on what to drink at the bar! Singing the Soul of Syracuse She walked in. Cute as a Disney bug. Bubbly in her enthusiasm. Seemingly bouncing. Hugged everybody, chit chatting … This was my first impression of Sheela Tucker as I met her arriving to a show we were both playing. Bouncing. I remember wondering, “How is this petite lady a soul singer?” One has to push a lot of air to be a soul singer, after all. We made our introductions, and even HAPPY HOUR DAILY 5-7PM shared a tequila or two and fast became pals. “Let’s see what she can do,” I thought. Chuck Schiele: Thanks for doing this interview Sheela. Salut! [clink!] Sheela Tucker: Oh my God, what is this stuff? I love the red bottle? CS: Corralejo, Añejo. I like to sip it. ST: Mmm. with 4 older siblings and having parents that played music daily, sparked my passion early on. But, I was extremely shy growing up. CS: Yeah. Shy. Mm hmm. Who are you working with currently? ST: Brass, Inc. band which, honestly, has to be one of the best horn bands playing in this area, right now. I also have my own band, called Little Queen. We are a 1-hour opener band covering songs of HEART and Pat Benatar. CS: You say your music path started at 6 years old. Whatcha been doing all this time? ST: Although I did sing as a child as early as 1st grade, I was a very shy and timid kid right up until I was in my late 20s —and started singing ‘professionally’ at age 40. I did play clarinet early on, beginning in the 3rd grade right up until about 10th grade. I let someone borrow my clarinet and she left it at school. I had a strong passion for singing, but never believed I could do anything serious because of my shyness, until I tried karaoke. CS: Sounds like a lot of fun. What inspires you as a singer? CS: Right. Shy. Mm hmm. ST: The ability to feel the story in a song, no matter what type of song it is. I’m still quite ST: That was a very strong and powerful tool for me to conquer my stage fright. Our Holistic Histories This November brings with it an election in which NYS is asking voters if they want to hold a Constitutional Convention. A yes vote to a “Con-Con” will result in a 2018 election of paid delegates. In 2019, those delegates would then convene to draft constitutional amendments which voters would then consider. Current law requires NYS voters to consider a convention every twenty years. Federal law fixes the fourth Thursday in November as Thanksgiving Day to commemorate a dinner shared by Puritan Pilgrims and Wampanoag Indians near Plymouth Rock in Massachusetts. Today, Thanksgiving calls on celebrants to acknowledge those things for which they are grateful. I am grateful to have access to many newspapers, magazines and books. It’s wise to read widely and in depth about given subjects as well as to learn about different things. There are many little discussed coincidences in history. History reveals dark eras where scientists and institutions used psychiatry, psychology, psychosurgery
and psychopharmacology experimentally to heal and intrusively for social control. Chance observations of head injury patients provided the basis for what we now know about brain function including the probable locations of the specific brain areas involvein memory, speech and emotion as well as how, over time, a person can regain lost mobility and cognition. All living things, even disease, develop holistically always within some environment and always over time. In a recent issue of The New Yorker, physician/author Dr. Siddhartha Mukherjee writes that in “oncology, ’holistic’ is a “patchouli-scented catchall for untested folk remedies” when instead, “the true meaning of ‘holistic’” takes “the body, the organism, its anatomy, its physiology … as a whole.” continued on pg 42

BLADE RUNNER delved into the nature of mankind and their place in the evolving world, and 2049 explores that concept in much more complex and thought-provoking ways. As K delves deeper into the mystery of the skeletal remains found within the confines of the box, his humanity begins to seep through. Despite the fact that he was created for a specific purpose, he develops a level of consciousness that forces him to question his very existence. In Gosling’s hands, the character is far more complex than anything we’ve seen in the franchise before, and despite the fact that we already know he is a Replicant (as opposed to the ambiguous origins of Harrison Ford’s character in ’82) the

Handwriting is a complex task which requires various skills – feeling the pen and paper, moving the writing implement, and directing movement by thought, says Edouard Gentaz... upon sight – show us something, and if we’re focused, we’ll likely remember it. Fewer people are organized with sound as our lead input system. If we hear something, we’ll remember. And fewer still are organized spatially or “kinesthetically,” that is, based upon where we are and what we’re physically doing as we learn. His thesis was that while all of us use each of these systems to some degree, we have one system that is the one we rely upon the most, and the other two lag behind in some sequence. And of course, the act of taking notes, which you see, while listening to a teacher (whom you hear), and are busy physically writing on paper (a spatial/kinesthetic experience) puts all these systems to use at once. That all made sense – though I never followed up to learn why typing didn’t seem to have the same power, for me at least, that writing did – but I wondered if young learners of today will simply be wired for typing (or “thumbing”) over handwriting. Moreover, when I learned that many schools today have simply dropped “cursive” off their curricula and teach children only keyboarding and printing, I was not the only one to wonder what this would mean (aside from losing the ability to read old letters and papers, as we have lost the ability to read cuneiform and other ancient written styles) to our brain development. According to scholars, our brains do very different things when writing (especially cursive) than when typing. “’Handwriting is a complex task which requires various skills – feeling the pen and paper, moving the writing implement, and directing movement by thought,’ says Edouard Gentaz, professor of developmental psychology at the University of Geneva. ‘”Children take several years to master this precise motor exercise: you need to hold the scripting tool firmly while moving it in such a way as to leave a different mark for each letter.’” “Operating a keyboard is not the same at all: all you have to do is press the right key. The Emoji Movie Every year, there is at least one film that simply defies explanation. It can be very any number of reasons; maybe the story is non-existent, or the performances are terrible, or the special effects are lackluster. Other times, it is
The situations that unfold are baffling, generic, and standard-issue family fare, infused with built-in marketing ploys that would make Disney blush. obvious from the moment of its inception that a movie is destined to fail, and there are a laundry list of reasons that make you wonder how it was ever produced in the first place. Now, this may come as a complete shock to you, but THE EMOJI MOVIE is the exact perfect storm of awfulness that I just described. In the bustling virtual city of Textopolis, Emojis live for the moment when they called into action. Baby Emjois grow up dreaming of the moment when they can get themselves scanned, and delivered, via text message, to an eager recipient. One such Emjoi is Gene (TJ Miller) who is supposed to make the “Meh” face when it’s his time to shine. UnforVOTED CNY’S We Love Our tunately, when his big BEST BURRITO! This has real-world consequences for tweenager Alex (Jake T. Austin) who was attempting to send a clever Emoji to a girl he is interested in. As a result, Alex begins to doubt the capabilities of his smartphone, and Gene is labeled as a “malfunction.” Basically, Gene is going to be destroyed due to his inability to make the correct face. As he flees into the underworld of Textopolis, he is accompanied by Hi-5 (James Corden) who helps him navigate the perilous situations he encounters along the way. With inner conflict being the crux of storyline, THE EMOJI MOVIE was just like INSIDE OUT, had INSIDE OUT been a terrible, 90 minute commercial for text messaging. The situations that unfold are baffling, generic, and standard-issue family fare, infused The Emoji Movie: F with built-in marketing ploys that would make Disney blush. I realize that this movie was just supposed to be a lighthearted, brightly colored romp that was meant to illicit laughs from little ones, and maybe a few chuckles for parents along the way. There are, shockingly enough, a fistful of Poo-Emoji jokes. There are a number of different bits that involve other Emoji favorites, each one more forgettable than the one before it. The colors certainly pop off of the screen, and the animation is fine, but other than that, there is no redemptive value in the entire production. Oh, and those laughs I mentioned earlier? They never happen. Ever. It’s confounding to me that so many talented people signed on board to the disaster. Aside from Miller and Corden, Maya Rudolph (who is the only one who comes even close to eliciting anything that resembled a smile), Sean Hayes, Anna Farris, and Patrick Stewart all lend their voices to the most inane and pointless characters they’ve ever had the displeasure of associating themselves with. continued on pg 18

Stop Bellyaching! I’m guilty. -Guilty as charged. I’ve been guilty for almost 30 years. Guilty of prescribing what I thought was an innocuous medication that now I think is so dangerous I never prescribe it anymore. It’s a whole class of drugs really … called proton pump inhibitors.
I looked at the problem … indigestion and said what do we have to treat this with … I should have been asking what causes the problem? Drugs like Nexium, Aciphex, Protonix, Prilosec, Omeprazole, Dexilant and others. These drugs are used to treat ulcers, acid indigestion, reflux, heartburn, gerd … its stomach pain with many different names. Now if you have a serious esophageal problem called Barrett’s Esophagus you should stay on these meds. You would only know if you had Barrett’s if you had an endoscopy … thats a procedure where they put a flexible periscope down your throat to look around. I highly recommend this test for anyone with longstanding persistent stomach troubles. What I don’t recommend is giving everyone with heartburn these medications. I used to prescribe these meds because they are very

was also a gorgeous as it was delicious. For our entrees I ordered the Filet Mignon Combo with scallops and Kyle ordered the Lobster Combo with a lobster tail and steak. Both entrees came with fried rice and a shrimp appetizer. After we had ordered our entrees our server quickly brought our first course, a cup of warm and flavorful soup. Our next course was a house salad with freshly made ginger dressing which is just the perfect amount of sweet and tangy. While we were enjoying our first two courses our talented chef was busy creating our entrees while making onion volcanos, bating hearts of fried rice, squirting sake, and tossing zucchini. The entire performance was entertaining and interactive- even if I couldn’t manage to change the zucchini in my mouth! Everything on our heaping plates was extremely high quality, super flavorful and cooked to perfection. The meal is also served with a two dipping sauce that compliments all of the flavors of the meal. We enjoyed every bite of our meals at Yamasho and we also enjoyed it again as lunch the following day thanks to the gigantic portions! Although we were full, and had enough for lunch the next day, we simply could not pass up an order of fried ice cream for dessert. I like to remind my overweight burger-and-fries-eating clients who are candidates for diabetes, high blood pressure and heart disease that the real cost of eating cheap fast food could very well be an expensive doctor’s visit. Today, so many grocery stores and farmers’ markets are selling local fresh produce that prices are coming down, and it’s becoming just as easy to pick up quality fresh fruits and vegetables as it is to head to the drive through.
I don’t know what to eat. I hear this excuse all the time and the solution is simple. Eat three meals a day and two healthy snacks in between. Try to eat around the same times every day and keep portion sizes small. Focus on lean proteins, good monounsaturated and polyunsaturated fats like olive oil and canola oil, low-fat dairy and fiber-rich fruits, vegetables, beans, and whole grains. Doing so will help control blood sugar and keep you satisfied throughout the day.

There is a link between lack of sleep and weight gain. Now, again, for any persistent stomach issues see your doctor and get a scope done because you have to check for cancer, pre cancer (Barretts), and or an infection called H Pylori which can cause ulcers. Once you know it’s nothing serious you can do the detective work to find out what is bothering your stomach and eliminate it from your diet. How many ways can your body try and communicate with you? You aren’t getting text messages or following your stomach on twitter. When you have pain there is a reason and instead of treating the pain find out the cause and let your body heal itself. Ok, but what’s wrong with the PPI’s (?) … or the Proton Pump inhibitors I listed earlier? Well, it’s very very clear that those drugs affect your absorption of Vitamin D and Vitamin B12. They clearly have been implicated in osteoporosis which is thinning of the bones

leading to increased fracture risk. There are also reports from the European literature that these drugs may be implicated in increased risk of stroke and dementia! How is that for a side effect! Also there was a recent study reported in the British Medical Journal of 350,000 men followed for approximately 5 years. In this large study men taking PPI’s regularly had a 50% percent, that’s right 50% increase rate of death! How many of you out there have been blithely taking these meds for years! Finally … these drugs work by impairing the proton pumps in the cells. Not just the cells we thought they worked on in the stomach but also in the cells in the rest of the body. These drugs affect the powerhouses in your cells called the mitochondria. So when you inhibit the acid secretion in your stomach you also inhibit activity in all your cells and that doesn’t sound like a healthy thing to me. Of course, work with your health care provider … but work with them to get off these meds and get to the bottom of your indigestion which I remind you is almost certainly that you are eating something wrong ! Look at you … it’s probably not just one thing but multiple things that you should avoid because they are not good for you. One easy way to check your stomach symptoms is to do a three day rice diet. Nothing but white rice for three days. Billions of people live on essentially this diet all the time. I am asking you to go on rice only for three days. You could alternatively fast instead of the rice but I know you and fasting is something you don’t think you can do. If you eat rice and nothing but rice for three days all your stomach problems should go away. If they don’t, it’s not your diet, and you should have further investigation. If all your symptoms go away, and I suggest that they will indeed all go away for the vast majority of you … you then know it’s your diet and you can start cleaning it up. Not as easy as popping a pill but in the long run much healthier for you. That’s what’s important … getting healthy and staying healthy for the long run. Why haven’t you had this conversation with your healthcare provider? You and they should be focused not on covering up the problem with medication but solving the problem with your diet. I can, and do, make the exact same argument for diabetes … we can keep throwing more medications into you or we can finally correct your diet and improve your diabetes naturally!

The Ins and Outs of the Harvest Season When you think of Fall what do you think of? That’s easy – changing leaves, apple picking, cider donuts, cozy sweaters, pumpkin farms and hayrides. If you work in the wine industry, you’re more likely to think of harvest: early morning picks, the constant hum of a tractor, grape stained fingers, and the smell of freshly pressed juice. But, they absolutely love it!
The rain this summer was also helpful in a restorative manner. The overall result from the summer we had is that the area vineyards have the best crops they’ve seen since 2013! Hearing the sounds of harvest from my office window at Knapp has become second nature. I can hear the forks from the forklift clanking as it picks up a bin of freshly picked grapes as they get ready to be loaded into the crusher. The lights will dim for a split second as the generator kicks on to run the pump putting the juice into the tanks for storage. If I stand at the window, I can even watch the bins being dumped into the crusher, which is quite mesmerizing. And the smells! I will never get tired of smelling the freshly pressed grapes, even at 9am! Everyone is curious how harvest is going. The biggest concern on everyone’s mind this year seems to focus on the wet, mild summer we had. The wetter conditions prevailed through most of July, unlike last year when we got little to no rain at all. This resulted in the vine having plenty of water to produce full, plump bunches. The dry spell that occurred in August came just in time to help improve quality

and reduce problems from fungus disease. The rain this summer was also helpful in a restorative manner. After having a couple extremely cold winters, the vines needed to recuperate after having an excessive loss of quality buds. The rain we got renewed much of the growth that was lost. The overall result from the summer we had is that the area vineyards have the best crops they’ve seen since 2013! Diets don’t work for me. I absolutely agree! Quick weight-loss strategies definitely don’t work. Whatever short-term weight you may lose will most likely be put back on and some. For a diet plan to work, it must have variety and give you the opportunity to enjoy a wide range of nutritious foods over the long haul. So here we sit … and sit. It’s time to stop blaming everything else – our genes, our jobs, our families, our stress, and do something about it.
Here are a few tips to help you get started: Get moving. Aim for an hour of moderate-intensity exercise like brisk walking or bicycling 3-4 times a week. Even doing 10 minutes at a time helps. Eat less. Cut calories. Lopping off 500 to 1,000 calories a day can help you lose 1 to 2 pounds a week. Make healthy food choices. Go for fruit, veggies, whole grains, and fat-free or lowfat dairy foods. Fish, lean meats, beans, eggs, and nuts are also great choices.
The Bottom Line: So can your lifestyle trump your genes? Without question genes play a role in obesity, but the vast majority of cases can’t be blamed on genetic factors. Genetics load the gun, our lack of exercises, poor eating habits and our couch potato lifestyle pulls the trigger. Almost anyone who is overweight can lose weight by making healthy food choices and getting regular exercise. So focus on yourself in the best way possible by grabbing the chance to be more healthy and fit, and turning that chance into lasting change for the better. The feeling of well-being that you’ll experience will be more than enough to keep you from falling back into old bad habits. Every musician, and singer that has had me come up on stage to share their spotlight with me when it was their time to shine but gave it to me for that one special moment. Those are my best memories, and there are many more to be made. CS: How about a funny war story from gig life? ST: I’m not sure how to answer that. I don’t think war and funny can be in the same sentence, but I think I know what you mean. Don’t think I have any that I can recall, which must mean I tend to look past it in order to move on. But, from where I stand on stage, I’ve seen plenty of funny and bad things out there, which I’m sure we all have, but I stay in the song. CS: Wow. Cool answer. How bout this? What is your best advice for those getting into the music biz? ST: Patience, Positive action, Persistence, and Plan B is what will make your dream come true. Respect those ‘seasoned’ musicians who have been in the biz for years and take their advice. Keep an open mind and cautious thought to what others say and how others play, and remember every moment is a lesson. It will teach you how to be and not to be. Don’t be fooled by those who tell you that you can only get somewhere through them, you can get there yourself with a lot of self-respect, and self-drive. Be honest and when it’s your time to shine, your passion will fuel your light. CS: (Smiles at this reply … ) Thoughts on the Syracuse Music scene? ST: The music scene is a versatile explosion of talent constantly evolving and revolving. I wish all musicians (as well as their sound techs) got paid much more than what they do and more venues made sure the gear and instruments are protected and secure before, during and after a performance. One of the best things about this area is it’s many talented musicians and singers, and there are so many we don’t get to hear as much as we would like. CS: How about you? Whats in your near future musically? ST: I enjoy being in 2 different types of bands. Brass Inc. is a high energy band and I sing their songs. I look forward to the 2018 BeatleCuse show as one of the lead singers of the dance from start to finish. But, I have another side of me that most people my age rarely FabFemmes. I love doing harmonies as much as I do singing lead, and hope the opportunity get a chance to see, and that’s the rocker in me. Two of my favorite female singers were and comes along to help others in their studio work on covers or originals. Ale, for instance, causes flatulence, colic and cholera, and constant consumption of ale gives the drinker a constant fever “and is therefore injurious.” Porter “agrees” with some types of people, “but not with others,” and the text gives an example of a young woman who drinks a porter and it magically clears up her heart palpitations. Spruce beer is “very wholesome” and “very beneficial” in curing scurvy. Pumpkin and bran beers “partake of the virtues of the ingredients” and were also prepared and prescribed by physicians to treat a variety of ailments. (Useful for a colon cleanse perhaps? Where’s the poop emoticon when you need it?!) Another reference to pumpkin beer in colonial America was made by historian Edward Field in his work “State of Rhode Island and Providence Plantations at the End of the Century: A History,” that was published in 1902, that encompassed the time period before the American Revolution through the 1800s. Saranac Pumpkin Ale by Saranac Brewery (F.X. Matt Brewing Co.) – Saranac brews are a staple for most of us here in CNY, and they give us yet another hit with their 5.3% ABV pumpkin beer. While not as sweet as many others, and with a less heavy pumpkin presence and more malt, this still evokes the same blend of pumpkin spice we all know and love – with perhaps a bit of ginger thrown in for good measure. It’s a solid brew made by a solid brewery. Basic Becky by Stout Beard Brewing Company – If you’re looking for something even closer to home, this Syracuse brewery offers a new pumpkin beer worth checking out. have crisp, clean fruit flavors and should prove once again to be outstanding.” For the vineyards that were able to let the Chardonnay hang until a much later than normal harvest date, they have found that the fruit was an excellent quality. There was a concern at the end of the summer that the reds wouldn’t get ripe or that they’d have surprisingly high sugars. Although they’re still being harvested, it’s appearing as though they should be average to slightly above average in quality. Something that piques many wine drinkers interest is handpicking vs. machine harvest. It’s all dependent on the winemaker. Reasons for handpicking can include

Some smaller production wineries don’t have the equipment to process machine harvested grapes. Some winemakers want machine picked because they do have the equipment to handle it, it’s faster, and you can process more tons in a day. Sometimes though, Mother Nature is a deciding factor. With the warmer fall, there’s some late ripening which means the fruit needs to hang for longer in order to drop acidity and raise the sugar content, but the fruit is in jeopardy of rotting before then, and the machine is the best way to secure the grapes quality. Harvesting isn’t always a glamorous job, either. Oftentimes, vineyard workers are asked to start harvesting at 3 or 4 in the morning. Harvesting before the sun comes up helps to keep the sugar levels stable and keeps surprises from happening during fermentation. It sounds rough but the advantage to being at work that early is getting to be in the vineyard along the lake and watching the sun come up from the top of the harvester or the seat of a tractor. For a vineyard worker, harvest is the climactic end to what they do. It’s the reason they prune, shoot position, and spray all year. It’s literally the fruit of their labor! Once their work is done, they hand their ‘babies’ over to the winemakers to work their magic. From the reports I’m receiving, 2017 is going to boast some beautiful and delicious wines! Cheers to each and every worker that help to make that happen!

Stuffed Turkey with Ricotta & Italian Sausage Recipe from Delallo.com INGREDIENTS:
5 table spoons DeLallo Extra Virgin Olive Oil 5 cloves garlic, smashed 1/2 pounds ground sweet italian suasage 1 bulb fennel, trimmed & diced 2 leeks, chopped (about 1/2 cups) 1/2 cup chopped shallots 1/2 cup dry white wine 2 cups cubed day-old italian bread 1 cup DeLallo Grated Parmesan 1 cup DeLallo Whole-Milk Ricotta 1 cup low sodium chicken broth 2 large eggs 1 tablespoon chopped fresh sage 1 teaspoon salt 1 teaspoon ground black pepper 1 (2-3 lbs) turkey breast half (skinned, deboned & butterflied) tooth picks Kitchen twine
DIRECTIONS:
Stuffing: Heat 3 tablespoons olive oil in large saucepan over medium-high heat. Once hot, add garlic and cook until golden, about 2 minutes. Remove garlic cloves. Add sausage and sauté until cooked through, about 6 minutes. With a slotted spoon, transfer sausage to a large bowl. Add diced fennel, leeks, and shallots to the saucepan and sauté for about 8 minutes. Add wine to deglaze the pan; cook for 3 minutes, scraping up browned bits. Scrape into bowl with sausage. Allow to cool. Mix bread cubes, Parmesan, ricotta and chicken broth into stuffing. In a separate bowl, whisk eggs, sage, salt and pepper. Gently stir into stuffing. Turkey: Preheat oven to 350˚F. Arrange turkey breast between two sheets of plastic wrap. Pound turkey lightly with a meat mallet for a 1/2-inch thickness. Remove only top sheet of plastic wrap. Spread stuffing mixture atop evenly.Starting at one long side, use the plastic wrap to help roll up turkey breast. Use toothpicks and kitchen twine to secure edges. Removing plastic, transfer turkey roll to a roasting pan. Brush with 2 tablespoons of olive oil, salt and pepper.Bake for about 1 1/2 hours, or until roll reaches an internal temperature of 155˚F. Let stand for 15 minutes before slicing.
