Aperture and Amplitude A view of the music scene through the lenses of Sandy Roe and Juan Junco This month we’re going to take a “look” at the scene. I’ve always felt that its important to document things like music. Obviously, we have recorded sound documents, thus the name “records.” And we also have photos that document the artists who are so colorfully engaged in the craft. After all, music has always had respect for the visual presentation as looking the part supports the presentation. Enter the paparazzi. (I use the term lightly, affectionately and all n good fun) Good scenes have ‘em. And here in Syracuse we have plenty. All of whom are superbly gifted withe science of low-level light techniques, and a heavy knack for capturing (click!) the honest moment. Having said that, with respect to all, I am focusing here on photographers, Sandy Roe and Juan Junco. While they share a high place in the local music scene photography stratosphere, they are further distinguished by their prolificness. They are everywhere. It is with great odds I will run n to them at a show. Between the two

of them, a variety of cameras including video, they operate more like—and I think of them as a mobile unit. Their photographs are remarkable and stunning. And, all the musicians find it a treat to be in them. Neat. But the important part is what they capture beyond the recognizable faces is that they also catch a very wide spectrum of the scene and­—oh! my favorite part and point of this story— the spirit of the scene. They get it. And impressively prolifically. They locate the special moments and perspectives, immortalize them, and share them with you. They are equally part of the scene.

So we’re sharing what they see, with you. Being very personable folks I always look forward to seeing them whether I’m on the show or not. CS: How long have you been snapping shots of the scene? Sandy Roe: I used to go to a lot of shows, back in the late 70’s and early 80’s, but then got married and had kids. The Magic is in the Malt As a child, I couldn’t get enough of those Whoppers chocolate milk balls or malted milkshakes. Perhaps the natural progression to loving beer had something to do with a specific ingredient they all have in common: barley malt. One of the four essential ingredients in beer, barley malt (also known as “malt”) is a cereal grain used in making beverages (e.g. malt whiskey, beer, Latin American malta) and sweetening foods. As with other cereal grains, there are different varieties of malt; some are used specifically in beer. While hops and their characteristics are usually at the forefront of craft

beer discussions, barley malt is extremely important (and necessary) in making that delicious libation you crave and enjoy. So what exactly is it and why is it essential? Barley malt provides enzymes, starches, sweetness, flavor, foam, body and color to that light lager, amber ale, stout and all the beers in the world. It also balances that hop bitterness that some of us love and others not so much. Basically, barley malt is barley that’s been soaked in water up to the germination point and then dried with hot air in a kiln before they sprout. The kernels have bursted with enzymatic reactions; the heating stops the kernel from sprouting and halts the starch-to-sugar conversion. The end product is malted barley. How do brewers choose which malts to use? In brewing, two kinds of barley are used for making malt: six-row (barley with six rows of kernels on the stalk) and two-row (two rows of kernels on the stalk). Generally speaking, six-row has less starch and more protein. Larger commercial breweries prefer the six-row while craft brewers lean towards the two-row for its thinner husk, which keeps a certain amount of protein and enzyme content. Other grains (such as oats and wheat) are also used in conjunction with barley malt to add another dimension of aroma, flavor, body and appearance. Wheat beers such as hefeweizens and Belgian wits have distinctive characteristics when compared with barley malt only beers. As with the many varieties of hops, there are different types of barley malt that brewers choose to achieve a specific color, aroma and flavor profile for their beers. Base, Specialty, Caramel and Roasted malts are all used to

produce fine beers that are enjoyed all over the world. Base malts are used in virtually all beers – domestic two-row pale and English pale malts are examples. Specialty malts are those heated at higher temperatures and toast the malt after drying. The result is darker colored malt. Copper and amber colored beers that are sweeter are the result of these malts, such as Vienna, Munich, and Biscuit malts. notch musicians all over the city. There’s nothing I enjoy more than watching a musician that is really enjoying what they are doing, expressing themselves through their music. It’s art to me. JJ: I am a giver by nature so nothing makes me happier than to provide the musicians with photos and videos of their performances. It also exposes me to a lot of different music that I probably would never hear. CS: Do you play music, yourselves? SR: I played trumpet when I was a kid. I was in band for a while, and did get awarded a medal in a competition, but I didn’t like staying after school. JJ: Yes, I am a guitar player and still have several instruments from my pre-1975 music career in Boston. When I moved to Fulton in 1975 to work at Miller Brewery I tried several times to put a band together but it just wasn’t clicking for me and I eventually lost interest. CS: Tell us about some of the shows and artists you’ve photographed. SR: I have photographed the NYS Bluesfest, Jazzfest, Northeast Jazz & Wine Fest, Beatlecuse, (which all had major headliners), The Mayor’s Ball, Syracuse Acoustic Blues Fest, The Youth Music & Art Fest, Solstice at The Cathedral, Ben Mauro’s CD Release, and Tommy Emmanuel’s shows here and in Rochester. I’ve shot numerous open mics, lots of local bands, shows at Kellish Hill, Nelson Odeon, Jazz Central, and others. I’ve helped with several CD covers. A photo shoot with Slow Train. And, there are probably a lot that I’m forgetting. It’s been a bit of a struggle for me, as I am not comfortable being in front of the crowd. I also do not like having to fight for a shot, or deal with drunks. There are some venues that I really prefer not to go to for that reason. I think that Juan and I are a good team for that, tho. He doesn’t have a problem with any of it. And, our shooting styles are similar, but we also see things that the other doesn’t, so it’s a good combo. I also can get lost in the music if I don’t focus on what I’m doing. Sometimes you want to just stand back and watch that guitar player shred, or the drummer go off on a solo, etc, but that’s also exactly the energy you want to catch and

Let me start a little geeky on you (though granted, #beginnergeek). When computers identify what to do with information, they do it as only a computer can - or would care to. In very strictly delimited “strings” of symbols that, to the computer, mean something. For that reason, naming files used to be very clearly limited to certain characters - others were forbidden, such as a / or a \ (and by the way, that is a FORWARD slash, then a BACK slash, though many people insist on saying the opposite). These were forbidden because, to the computer, they meant that what followed had special significance and

The “hashtag,” is simply the information that follows the “hash mark,” or “number sign,” or “pound sign.” It designates a searchable string of letters, usually spelling out a word or phrase.

So, if a string of characters was between “ marks (quote marks) it was a LITERAL, and was to be treated as exactly what appeared between the quote marks (typically, typed out that way). A tag was, in certain forms of coding, enclosed within < and > brackets. This told the computer that what was within the brackets was a “tag,” and was to be treated as a set of instructions. So, the “hashtag,” is simply the information that follows the “hash mark,” or “number sign,” or “pound sign,” depending on how you first encountered it. It designates a searchable string of letters, usually spelling out a word or phrase. In social media, hash tags are used in essentially the same way from platform to platform (from Facebook to Twitter to Instagram), which is to say, if you use a particular phrase and put it after the hash tag, all other references to that particular tag will be searched out - and your reference will be included among them. Now is when it gets a little tricky. In essence, the first user of a tag more or less “owns” it. That can mean something, or little, depending on how “branded” what you are referring to is. A bunch of diners were enjoying their meals at the tables on the deck, soaking in the sun from one of this year’s first warm days. We were immediately seated by the friendly server. Everything on the menu looked so delicious that we decided to begin our meal with two appetizers, the sampler platter with chicken tenders, mozzarella sticks, breaded fried mushrooms and onion petals served with a variety of dipping sauce. Jon Favreau’s JUNGLE BOOK transports the viewer to the beautiful and dangerous realm of the jungle. In the opening scene, young Mowgli (Neel Sethi, in an incredible debut performance) races amongst the treetops in an effort to flee from an unseen creature. He seemed to be putting distance between he and his pursuer, until a branch breaks and he tumbles to the ground. Almost immediately, the panther Bagheera (Ben Kingsley) springs upon him, and gives him further lessons on how to evade danger. Mowgli

then returns home to a pack of wolves, where he has been raised by Raksha (Lupita Nyong’o) and Akela (Giancarlo Esposito) since he was toddler. Much like Disney’s animated classic, the film follows the trials and tribulations of Mowgli as he is escorted back to humanity with the help of Bagheera. Seeing the boy’s presence as a dangerous sign of what is to come, the vicious and feared tiger Shere Khan (Idris Elba) makes it clear to the wolves and every other four-legged jungle dweller, that he aims to destroy the boy. It’s difficult to fathom the actor working in front of a green screen, because the suspension of disbelief is so complete, that you truly believe he is floating on the belly of Baloo, and swinging from the vines of an ancient tree. Word from the Vineyards It’s spring here in the Finger Lakes. We’ve had a handful of bright sunny days and I am contemplating removing the snow brush from my vehicle and packing my collection of winter boots away until fall. Since it is Upstate New York, however, I did just rattle my knuckles on my wooden desk out of superstition. I would not want to jinx it; we’re not out of the woods yet. With the increase in UV rays streaming through, daffodils and tulips now add a touch of color to flower beds and the grass begins to transition back to the luscious green that promises us summer is on its way. As always, with spring comes the question, “how are the grapes”? In his most recent Glenora Gazette, Gene Pierce, owner of Knapp Winery, stated “this is the most intense time period of the year in the vineyards”. A long list of extremely time-sensitive projects must be completed in a very short period of time, which are all weather dependent. About a month before spring, vines must be pruned in order to maximize the production potential of each plant. In the pruning process, depending on how vigorous the vines are, old growth is cut back to encourage new growth that should produce more fruit. Pruning must be completed early so that the vines can be tied to the trellis before buds begin to grow, otherwise you risk knocking them off in the tying process. Less buds means less grapes and less grapes mean

less wine. Once that is complete, the vineyards must be sprayed before weeds begin to grow. Harvest is tiresome work, but many more sleepless nights occur during the spring time as vineyard specialists hope Mother Nature is kind in their race against the clock. As one can imagine, all the pruning, tying and spraying is best to occur after the extreme cold and before very warm temperatures. In every vineyard manager’s dream world, once the warm temperatures began, they would remain warm throughout the end of fall. Those of us who know upstate New York weather; know that anything is possible, including blizzards in May. All spring long, industry conversations revolve around the condition of the vines after the cold season. I called on an expert, Vineyard Manager Chris King of Knapp Winery and various others throughout the Finger Lakes, to get an accurate update on this year’s crop. Most grapevines can survive a really cold winter, but struggle with severe drops in temperature. This past February, on what is now being coined “the Valentine’s Day massacre” by some, Eastwood’s Neighborhood Wine Store temperatures dipped to as low as -18 degrees overnight across Seneca and Cayuga lakes, causing some unwelcome damage. The shock to the vines resulted in approximately 60% bud loss for Knapp’s Riesling and Cabernet Franc. In a normal year, loss averages about 20%. In instances like this, when a cold snap affected the dormant vines, pruning is extremely important. We have seen some very low temperatures this Spring, but most vineyards were pruned in time, so most were protected from bud loss. Chasing Longevity Some pundits opine that with advances in medicine the average life span can be extended to 120 . After all ,wasn’t the average lifespan just 30 or 40 years of age something back in the 1800’s?….we are so far advanced from that time period it should be easy to extend life from 80 to 110 or 120? Well, It turns out that the real life expectancy has not changed much in 2000 years. After all Socrates died at the age of 70...and it wasn’t from natural causes at that. It turns out that the claim that average life expectancy was 35-40 was very much skewed by infant mortality and that the usual span of life hasn’t really changed over time. Sure, we have made strides with public sanitation and infection control but that just means that the average person is living longer not that we have extended maximum life expectancy over time. Sure there is evidence from manipulating the environment in nematodes , yeast, mice, etc you can increase longevity in these lower species but really..?? Really? Are you serious about comparing human beings to worms and yeast?? I would trust more the research from the primate world….that at least might have some real relevance to our species. Nature magazine published in 2012 a study of 25 years of primate research that involved caloric restriction as a means of living longer. Caloric restriction is one of THE leading concepts in life extension. Eat less and live longer has been shown to extend life in much lower life forms. The Nature article showed no

Living to 120 is only going to prolong the most difficult chapters not the most desirable chapters. been able to avoid dementia at an earlier age eventually have more trouble with memory and cognition. There are a very few people living into their 90’s and beyond with remarkably preserved mental function. Most people hit the memory wall at or before the age of 85 plus or minus 5 years and it’s all downhill from there. Is there a point to living until 120 years of age if the last 10 years are in diapers? On a more philosophical note I would suggest that most people have a much more limited existence after a certain age….Depending on the person this could be at age 50 or age 75 but sooner or later most people start to really “ turtle up”. They do less and less...don’t go out as much, don’t interact with family as much, don’t travel as much,, do less and less in their social groups, the church, etc ..in short….don’t live as much.. Is it too offensive to say they are slowly shutting down and I think their quality of life dwindles incrementally ?. My sister Marijo, tells me that I am too judgemental….If they are happy to go from bedroom to couch to kitchen with slippers and doing the tea and toast thing and slowly slip away who am I to judge? I just don’t think that’s the best way to spend your golden years. I’m just saying that most people don’t do more, try more, press onward as they reach the last chapters of their life and I am afraid that living to 120 is only going to prolong the most difficult chapters not the most desirable chapters. I close by exhorting you to carpe diem! Living long is, I am sure, a desirable thing but Living well I think might be a better goal. Until next month….get well ...stay well!

In fact, America (for all that it may have been birthed as a consequence of conquest), was an experiment in whether people could, perhaps even should rule themselves - if they had that capability. And that, is perhaps, the crux, of Kupelian’s argument that the experiment is over, and has failed. That people lack the skill, the will, and the (okay, I’m rhyming, but it makes sense) thrill garnered from calling their own shots, and sometimes, in fact, often, failing, to do a decent job of self-governing. Kupelian suggests that we simply haven’t hit the mark; we don’t want to do the hard work; and we haven’t come up with the “stuff” necessary to have our government obey us, but have settled down to agreeing to obeying the government, in return from the largesse it doles out, in what it considers to be fair helpings. And worse, perhaps we have been ruthlessly set up - drugged, lied to, hypnotized, over-fed and paid off - to fail. Naturally, from neither the point of view of the Right nor the Left does Kupelian’s exploration actually work. From the point of view of the Right those who put forth the effort have had their rewards taken from them; from the point of view of the Left the oligarchs still take far more than they’re worth, and hand out pitiful shares to those who do the actual work. Both would agree with Kupelian, however, that neither side is making out very well in the deal - except for the very, very few with an immense amount of power. Kupelian errs, if err he does, on the side of the Right - though the reader ends up feeling more as though both sides have a valid point, and that the better solution would be closer to the original idea of individual effort and individual reward. As with most books of its kind, this book won’t convince you if you already have a contrary opinion, and will reward you if you are already on “his side.” But he does an excellent job of quantifying the loss of that which we once considered “American,” and considering what, exactly, will replace it. And what that will mean to you, and your children.

Take Me Out to the Ball Game Comparatively speaking, this past winter wasn’t nearly as bad as what we have grown accustomed to here in Central New York. This, however, doesn’t mean that we weren’t counting down the days until the start of spring. There is no doubt that life changes for the better when the grass is green and the birds are chirping. The sunshine means something a little different to everyone, but in our house, it means that baseball season has finally arrived. As I am apt to tell anyone who is willing to listen, I am in love with the game of baseball. There are plenty of writers who possess the ability to wax poetic about the game far more gracefully than I, but the bottom line is, there are very few things I would rather be doing outdoors than taking in a game with my family. This is due, in large part, to the fact that from a very early age, my parents took me frequently to see the Syracuse Chiefs. Throughout the years, I have attended countless games, although I will readily admit that my interest in the team waned for a brief period not so long ago. The intangible magic that used to reverberate through NBT Bank Stadium had dissipated, and the allure of spending a few hours watching the game I adored began to fade. That all changed when Jason Smorol took over as general manager of the club in October, 2013. The 2016 Syracuse Chiefs season is now under way, and the future is cer-

Somehow, this essential factor had fallen by the wayside under previous management, and Mr. Smorol realized that this was an essential element to getting fans back into the seats. It’s Time to Change If I had a dollar for every time I started my weight loss journey, I’d have enough money to pay for a gym membership, a trainer, and a whole year of Weight Watchers, Jenny Craig and Nutrisystem combined. In the past, I’d begin each one of my weight loss endeavors with good intentions. I would purge the pantry of all sweets, ramp up my exercise routine and drink copious amounts of water. Here are a few tips to get you started: 1. Go public. Most people that are obese are embarrassed and have a tendency to keep things to themselves. For a lot of people, it’s somewhat humiliating to talk about their struggle. However, you’ll find that more often than not, the people that love and care about you are going to be thrilled when you tell them about your decision to lose weight. They will more than likely volunteer to be your support system along the way. Plus, they will help keep you accountable and motivated throughout your journey.

2. Get involved. Get involved in something official. Whether it be registering for a race, signing up for your first 5k, or taking a spin class three times a week, anything you do that will help you meet people with the same goals is a plus. The ultimate goal is to make your lifestyle change part of your everyday routine and having an obligation and accountability system is crucial to your success.

3. Overhaul your eating. This is the biggest obstacle for most people. You can’t really become obese without an eating problem, so this means you will have to dig deep, be hon-

Don’t just rely on the scale to show you how far you’ve come! If it has a number, besides your weight and you are looking to improve it, write it down. Yes, seeing numbers drop on the scale is exciting, but so is seeing numbers fall off your pant size, stopwatch, and belt holes.

6. Know that at first, you will suck. The first stationary bike session you complete? It’s going to suck. The first time you do a few laps in the pool? Suck. The first mile you run? Suck, suck, suck. The important thing to know is that you will get better. The encouraging news? If you stay with it, it won’t take very long.

7. Set realistic goals. Don’t go into this thinking, “I have to lose 100 pounds, let’s get started.” You will end up biting off more than you can chew. Aim to reach smaller goals by breaking it down into smaller increments, maybe ten to fifteen pounds at a time. Reward yourself when you hit big milestones.

8. Be prepared for failure. You aren’t going to be perfect. There are going to be many times when you eat way too much pizza and drink way too many beers. There will be times when you miss three consecutive workouts in a row. Anticipate these occurrences, move on from them, and get back on the wagon. A few missed sessions at the gym will not ruin all of your hard work just like a few thousand extra calories will not sabotage your weight loss goals. It’s easy to feel sorry for yourself and give up, but don’t.

9. Download a Weight Loss App. For example MyFitnessPal. It may be exactly what you need to stay motivated. You can keep track of everything you put in your mouth and every calorie that you burn during exercise.

Pagan southern Europeans honored Flora, goddess of flowers. In northern Europe May Day celebrations revolved round maypoles, flower baskets and bonfires. As Christendom spread northwestward via Rome from the Eastern Mediterranean, May Processions and May Altars honoring the Virgin Mary replaced May Day celebrations. The term May Day also refers to the international labor movement observance celebrated in many In 1925, a group known as the nations but not here. My favorites tend to be the musicians that really get into their music and put on a great show and involve the audience instead of just standing there making me feel like I would get the same thing by listening to a record. Even though I have shot many national acts I prefer the locals. There is great musical energy in Central NY. CS: Do you know how many CNY music photos you’ve taken? A million? Do you have an ultimate goal with all this, or is the satisfaction purely in the zen of it all? SR: I really have no idea how many photos I’ve taken. I’ve got probably ten times more shots than ever get posted, too. It would be easier to measure in terabytes. 12. Quality matters. While it’s important to track how much food you’re eating in terms of calories and macronutrient content, try to focus more on food quality over calorie restriction. Sure you want to lose weight, but what’s more important is the quality of food you put in your body. There’s a BIG difference and your body will thank you for it.

In Conclusion:

I just woke up one morning and decided that I didn’t want to feel like this anymore, or ever again - so I changed. I had lots of excuses for being overweight, for not being able to change, but at the end of the day, they were just that - excuses. You can say ‘people don’t change,’ but I can tell you first-hand, that it changes people lives for the better every day. The ability to change, being able to change, starts with your decision to change. As much as we all want a magic pill, there isn’t one. My advice would be this. Stop trying to be skinny and start trying to be healthy. When you do, your weight will take care of itself. The journey will be a challenge, but in the end it will be worth it. Remember to surround yourself with people that support you throughout your journey and don’t forget to celebrate every success along the way! Do it for your health and most importantly do it for YOU!

After the colossal success of “The Force Awakens,” there is little doubt that this will be one of the most popular and entertaining promotions of the year. For each home game, the company will have a “Fan Experience Tent” set up outside the front gate, which features a prize wheel and corn-hole to play before you head in to the stadium. Finally, BlueRock will also be holding their “Gnome Hunt” contest from June 1-15th. Each day, a gnome will be hidden somewhere within the Syracuse area, and if you are clever enough to be the first person to solve the clue as to its whereabouts and find the gnome, you’ll win a $100 gift card. If, on any particular day, the little guy isn’t found, the $100 prize will be added to the next day’s reward. Winners will be able to claim their prizes on the pitcher’s mound at NBT Bank Stadium on Father’s Day. Among the litany of other notable promotions throughout the season, local youth get their time to bask in the spotlight on Girl Scout Night (June 18th) and Boy Scout Night (June 25th). Vegetable-and-Ravioli Lasagna Recipe by GRACE PARISI Ingredients: 1 tablespoon extra-virgin olive oil 4 sweet Italian pork or turkey sausages One 24-ounce jar marinara sauce 1/2 cup water Two 14-ounce packages fresh cheese ravioli One 14-ounce package fresh spinach-and-cheese ravioli 12 ounces (3 cups) shredded mozzarella cheese 3 tablespoons grated Parmesan cheese 1 1/2 pounds mixed roasted or grilled Vegetables, cut into 1-inch pieces

Directions: Preheat the oven to 375°. Bring a large pot of salted water to a boil. In a large saucepan, heat the olive oil until shimmering. Add the sausage meat and cook over moderately high heat, stirring and breaking up the lumps with a wooden spoon, until no longer pink, about 5 minutes. Add the marinara sauce and the water and simmer for 5 minutes. Add the packages of fresh ravioli to the boiling water and cook until al dente. Drain the ravioli and return them to the pot. Add the sausage marinara and toss gently with the ravioli to coat.

Spoon one-third of the ravioli and sauce into a 3-quart baking dish in an even layer. Sprinkle with 1 cup of the shredded mozzarella and 1 tablespoon of the Parmesan. Layer another one-third of the ravioli on top, followed by all of the vegetables, 1 cup of mozzarella and 1 tablespoon of P8rmesan. Top with the remaining ravioli,oning on any remaining sauce and sausage. Sprinkle the remaining 1 cup of mozzarella and 1 tablespoon of Parmesan on top and cover with foil. Bake the ravioli lasagna for 30 minutes, until bubbling. Uncover and bake for 25 minutes longer, until lightly browned and bubbling. Let the lasagna stand for 10 minutes before serving.
