Montana breweries and taprooms are meeting places for people from all walks of life. Stroll in to any one of the more than 20 in the state and you’re sure to find world-class beer with a friendly atmosphere. From Wibaux’s Beaver Creek Brewery on the eastern plains, to Butte’s Quarry Brewing, to Whitefish’s Great Northern Brewing Co., Montana is one of the states with the most breweries per capita. All those breweries produce more than 2.3 million gallons of some of the best handcrafted beer in the U.S. That’s no small feat. The Treasure State’s craft beer industry uses about 5 million pounds of malted grain — about half of it grown in Montana – to create beers and generate about $20 million in revenue each year. As the taste for craft beer grows, so does the quality and innovation. Award-winning concoctions can be tasted in taprooms large and small, in the forms of India Pale Ale, Porter, Stout and more in picturesque settings. Breweries continue to pop up around the state and existing ones continue to grow. In Missoula, Big Sky Brewing Co. is bottling and canning more beers than ever before. Kettlehouse Brewing Co., “The Little Brewery That Cans,” has two locations, one that churns out 16 oz. pounders. And Bayern Brewing Co. bottles some of the best German-style beers in the West. All over Montana in places like Helena, Stevensville and Polson the trend persists. State brewers in 2009 saw an 8 percent increase in the amount of beer they produce. Craft beer is deeply personal and intensely social. It’s to be enjoyed, celebrated, shared and explored. Beer is made with hard work and dedication, principles this state lives by. So get out there and taste Montana, the possibilities are as big as our sky. 4

Basic Beer Tasting Guidelines Pouring your beer In many taprooms, this will be done for you. But, if you buy beer to take home, these tips might help you get the full flavor out of your beer. Upon opening the bottle, tip the bottle and allow the beer to pour slowly into the center of the glass, creating a little bit of foam. Then move the stream to the side of the glass and fill the glass. If the head is not forming, move the stream back to the center of the glass. Appearance Hold your glass up to the light and check for clarity, cloudiness or color and match those up with the style of beer you are drinking. Many hefeweizens will be cloudy, while a Pilsner-style beer should be golden and clear. Ports and stouts will retain a dark color and in most cases, you should see very little light through the beer. Aroma I like to leave a little room at the top of a bowl-shaped beer glass in order to swish the beer around and create more aroma. Whichever way you aerate the beer, you’ll want to have some room to stick your nose down in there and give it a good smell. Look for beer smells like malt, yeast, alcohol and hops. You can also note floral smells as well as resiny and bready smells as well. Many styles have a unique and signature smell.
Taste After completing the steps listed above, taste the beer by taking a small mouthful and breathing in slightly as you taste the beer. This will open up all your senses and let you get a complete picture of what you are tasting. In the proper glass, the beer should hit your tongue denoting bitter and sweet flavors on the parts of your mouth that can discern those tastes. Take a second taste and swish the beer around in your mouth slightly to move the beer across all your flavor sensing areas. Mouth feel By tasting beer, you should be able to determine the mouth feel. Some beers have a heavy, almost oily mouth feel to them, while other beers are light and dry and offer very little by way of mouth feel. Becoming familiar with beer styles will help you determine what type of mouth feel is common with each style. Finish Some beers finish with a sweet, pleasant aftertaste, while other beers finish bitter and even dry. When you taste your beer and swallow it, ask yourself what it leaves behind? What’s the last thing you taste? With a sweeter finish, you’ll end up with a sharper leftover taste impression in the front of your mouth, while with a bitter beer, you’ll taste it more in the back of the mouth. With a dry finish, it will leave very little in the way of taste residue, especially overly sweet tastes. Dry usually denotes the absence of sweet.

A g u ided tour to Craft Beer Color (5pts) _ ________________________________________________ Twenty-five years ago, “craft beer” exploded onto the scene and literally redefined how people think about American brewers and their offerings. Today’s beer lovers are trading up to “better” beers for their own consumption and as gifts. A 12-pack of a world-class American craft beer is about the price of an undistinguished bottle of Champagne or wine. Beer has become the beverage of celebration. In fact, according to a recent survey conducted by Wakefield Research for Samuel Adams, 60 percent of men would rather toast with beer than Champagne. This is probably the best time in history to be a beer lover. Craft brewers are experimenting with styles that challenge people’s perception of what beer can be. For example, Samuel Adams is offering Infinium, a Champagne-like brew that is the result of a collaboration with the Weihenstephan Brewery in Bavaria, Germany. Infinium is a completely new style of beer; it is brewed with Champagne yeast, and offers beer lovers a unique drinking experience. Infinium retails for around $20, making it a great option for holiday gifting and toasting. 12

A growing trend in the craft beer movement is the burgeoning availability of seasonal options. Whether at a fireside winter gathering, or getting ready to welcome spring, beer lovers are now seeking brews designed to suit the season. Clever hosts can change it up a bit by putting a new spin on the classic wine and cheese party and hosting a craft beer and cheese party. Each guest brings a cheese to pair with a favorite beer (e.g. aged cheddar paired with an American lager, blue cheese paired with spicy, wintery brews, or aged goat cheese paired with fruit beers). Since beer is so versatile, guests won’t feel pressure to come up with precise matches, and everyone will be pleasantly surprised by the flavor combinations. It’s hard work, but the best way to learn about craft beer is through sampling. One popular idea is to ask each guest to bring a six- or 12-pack of their favorite brew. At the beginning of the party, set all of the beer out on a table and let the guests take turns picking different beers to sample, allowing everyone to try something new. Have you ever found yourself staring at your goblet of wine, not understanding what all the fuss is about while those around you massage, woo and lovingly caress their glassware? You don’t have to be pretentious or well versed in the art of wine-speak to participate intelligently - in wine conversation. Nor do you have to write for Wine Spectator to be qualified to rate the glass of wine you’re holding. The single most important rule of wine tasting is this: know that your taste is the only one that matters. As one wine expert friend once said to me, “Wine is like music. There are lots of experts, but it all comes down to what you like, it’s extremely personal.” Sure, it can be intimidating to sit with the seemingly incomprehensible language of the trendy wine drinker whirling around you. But if you follow seven simple steps, all beginning with the letter S, you’ll be relaxed and confident enough to enjoy, ask questions and learn. The 7-S System. See. Swirl. Smell. Sip. Swish. Spit or Swallow. It’s a simple approach and will provide the tools to feel comfortable in the wild world of wine, whether you’d like to conquer the most arduous tasting or simply better understand wine and your own palette while sitting on your back deck. See. See the wine and examine the color. Wines come in many colors and may give good clues about the quality and characteristics. Is the white wine pale yellow, a fair orange, or vibrant gold? Is your rosé a blushing pink, an intense crimson or a pale orchid petal?

What about the many shades of red? Ruby, copper, maroon, purple, brown, garnet, black cherry – these are just a few of red wine’s many colors. Here’s a tip: hold your glass of wine up to a white wall, dinner linen or a piece of white paper to get a truer idea of the color. Keep in mind the color of the wine doesn’t always indicate its intensity. A dark red, for instance, might surprise you with its crisp, light flavor. Also check for sediment and clarity in your glass: sediment or muddiness can be attributed to winemaking methods used in fermenting, filtering and organic production, which cause yeast production. Different species of yeast can change the flavor, just as does the length of time the grapes are fermented. Swirl. Swirling the wine in your glass essentially prepares you for the next step of smelling. Swirl the wine counterclockwise in your glass for two to three seconds to allow your wine to interact with the air, providing more surface area to liberate the bouquet to enhance the wine’s natural aromas. Smell. Now stick your nose deep into the chamber of the glass or goblet. Concentrate. Is the smell inviting or offensive? Does the odor remind you of anything? Try to associate the aroma of the wine with smells from your everyday life. Talk about them with others when possible; it may cue your brain in to what smell you are associating with it. Pick out notes of aromas found in flowers, spices, fruits, plants or your father’s old smoking jacket. Tip: if you get hints of wet cardboard, vinegar or rust through your nostrils, take heed. Sip and swish. Okay, SWIG! Take a big gulp of your wine. But don’t swallow just yet! Let the wine roll around in your mouth and on your tongue, chew it up and let it tickle all the different taste buds in your mouth. Notice if the wine is dry or sweet. A sweet wine is one that has a higher level of residual sugar, giving the wine a sweeter taste. An off-dry wine is one that is slightly sweet, and a dry wine is not sweet, as all the sugar has decomposed into alcohol. Determine if there are notes of fruit, bitters, floral or earth (yes, this can resemble dirt). Define the flavors as the wine saturates your taste buds. If none of these descriptions stand out, consider the wine balanced. Is it light, medium or heavy bodied? The bolder and more robust the wine is in your mouth, the heavier it is. Tip: If the wine burns a little in your mouth, this is a good indicator it has a higher alcohol content. You’ll want to keep this in mind as you continue to the next step. Swallow or spit. Taste how the wine changes in your mouth as it settles. Now spit or swallow, the choice is yours, but either way savor the finish - a good wine will linger long after it leaves your mouth. The finish can help you decide about food pairing. Does the wine
stay on your tongue with an oily finish? Or is it crisp and dry? As a very general rule, bolder wines will stand up to heavy or rich foods, lighter wines will pair well with lighter food. Tip: If you’re tasting a large number of wines or pairing several courses with a different wine (more than two), it may be in your best interest to taste and spit, as if you have consumed too much wine you may not know what wines you really enjoyed. Also, as you explore and taste more wines and become a more interested critic, you might consider taking a few notes for recollection and a better understanding of how a wine changes with age or vintage.
