MOUNTAINSIDE Magazine We have experienced a period of growth at Mountainside as we welcome new families to the community and continue to refine the Outfitter program. As the community matures, each new family has a chance to grow and add energy making Mountainside into the friendliest neighborhood in the Sierra. We’ve been able to enhance our programming to include more weekend socials at Tree House, optimize Play Acre and implement some terrific events utilizing the outdoor kitchen and sport court. At the same time, we are excited to welcome Mountainside Builders as the new management team for the community. The combination of new vision and experienced operators have solidified a bright future for Mountainside. In 2019,

Greetings from Mountainside Builders As the new master developer for Mountainside Northstar, we could not be more excited to play a role in continuing to form this great community. My family and I have been living part time on site and have enjoyed getting to know our owners intimately. What I’ve come to discover is that Mountainside has drawn together some of the most intelligent and entrepreneurial minds into a setting where people can be themselves and spend quality time with family. While these are industry titans from diverse walks of life, they are bound together by an appreciation for the outdoors and the laid back lifestyle inherent to Mountainside. In our short time at Mountainside, we’ve already welcomed the final families to Stellar Residences and Townhomes respectively and look forward to bringing more great people into Boulders in the year to come. Additionally, we are excited to announce a strategic partnership with Paradigm 8 Partners to begin Phase 2 of Boulders, completing the vision for our most exciting project to date. Beyond these projects, we are looking to create a longer-term land plan for Mountainside that introduces more single-family homesites for custom homes and consolidating density around Tree House. Our goal is to enhance Mountainside’s position as an inclusive community supported by exquisite homes in one of the most beautiful places on earth. I look forward to seeing you around Mountainside.

gets a fresh new look
Northstar California’s mountaintop culinary experience is transformed after the ski-in, ski-out Summit Smokehouse was renovated physically and conceptually. Improvements include perfecting the science of slow-cooked meats, taking a stance on environmental standards and serving up a menu you wouldn’t expect at a typical ski lodge. Immediately noticeable, the indoor seating has increased by nearly 50 percent with a new flare. The dining space features a communal table, poised for shared meals, surrounded by classic family eating spaces and fixtures inspired by the Sierra. The design details left no stone unturned and thought of everything a skier or snowboarder would need to enjoy a meal, including coat and helmet racks placed throughout the restaurant and on chair-backs for ease. On the walls, a regional chalk artist crafted custom murals depicting mountain scenes and honoring BBQ cuisine. Behind the scenes the Summit Smokehouse is leading the way in waste diversion, minimizing the impact on our beautiful Lake Tahoe environment. By introducing reusable drinkware, on top of continuing to use reusable plates and silverware, the restaurant will cut down on significant tableware waste. The kitchen is also expanding post-consumer composting efforts, the food leftover after a meal is finished, to continue reducing the impact to landfills. Finally, the Summit Smokehouse will be the first Vail Resorts location to not offer plastic bottles, with the exception of water. In the middle of all the upgrades, some things never change. The Summit Smokehouse remains a mountaintop mixer where Tahoe locals and travelers can rub elbows and celebrate good times at 8,610 feet elevation. It continues to be a place with great food, this time serving smoked macaroni and cheese, pork belly small plates and a fried green tomato that will win the table over. Not to mention the BBQ platters, smoked low and slow for 12-14 hours, with perfectly paired savory, sweet and spicy sauces. It’s the perfect spot to wait for the Backside to open, have a Bloody Mary or soak up the views from an Adirondack chair outside. With the sweet sounds of country rock and bluegrass, a game of corn hole or dominoes at the picnic table was never more inviting.

Low and Slow: The Science behind the Summit Smokehouse Executive Chef Steve Pirro
Nestled at the top of Northstar at 8,610 feet elevation lies a hidden gem. The Summit Smokehouse serves up the finest slow smoked BBQ in the region, embracing the true meaning of low and slow smokehouse cooking. After years of experimentation in brining and smoking, we have developed techniques yielding juicy,

mouthwatering meats that skiers and snowboarders wouldn’t expect out of a lodge. Most meats absorb the flavor of the chosen wood, Applewood or Mesquite for example, at a low 180 degrees Fahrenheit as a standard rule. The smokers we use at the Summit Smokehouse allow us to separately control the length and temperature of the smoke time from the length and temperature of cook times. This extra layer of control allows us to ensure the meats have the perfect balance of smoke, bark and tenderness beyond the classic standards. We are big believers in dry rubs. We have painstakingly developed four different rubs that we use on our pork, beef, poultry and specialty meats that bring out the best flavors in each protein. The same process was used to identify which smoking wood accentuates each meat and rub. Whether it be a California fruit wood, a Texas mesquite, or the Hickory that defines our turkey, you can taste the subtle low temperature smoked goodness in every bite. It’s no surprise that our turkey is turning out to be a fan favorite. Brining is another key element in the smoking process to achieve maximum juiciness in our meats. We brine our turkeys and pork shoulders for two days in two different baths of apple cider, garlic, bay leaves, salt and sugar mixtures. The salt brings extra moisture to the meat while the other flavors slowly seep in — all sealed by the smoking and cooking procedure. Good BBQ takes time. While you’re sleeping off a great day of skiing, our smokers are running through the night. Our brisket is our longest labor of love with four hours of smoking at 180 degrees Fahrenheit, 10 hours of cooking at 225 degrees Fahrenheit, and an hour of rest to ensure not a drop of moisture leaves the meat. You can taste every bit of the two and a half hours of 170 degree mesquite that flavors our signature tri tip. Even our house KC BBQ and Carolina sauces are a low and slow six hour simmer, marrying the best of regional flavors. Come up to the top and get a taste of what low and slow tastes like!

Changing Downtown Truckee Take a drive through Truckee and you may realize it’s not exactly as you remember. The eastern-most end of historic downtown changed dramatically with the installation of a new roundabout and traffic pattern on Donner Pass Road. Built as part of the Truckee Railyard project, the new roadway will soon provide access to the long anticipated downtown expansion. What was once a rail yard at the end of town is being transformed to complete Truckee’s downtown corridor. Offering dense mixed-use space including new achievable workforce housing, restaurants and retail, a grocery, movie theater and more, the Truckee Railyard will double the size of downtown and offer more for both local residents and area visitors. Construction of the Artist Lofts and the new downtown grocery store space will begin vertical construction in summer 2019, with other spaces expected to quickly follow suit. Although the grocery operator has yet to be named, the movie theater space has been proposed by the owners of the locals’ favorite Tahoe Art Haus & Cinema in nearby Tahoe City. Featuring three auditoriums, the largest will house 199 seats, with two smaller theaters offering 95 and 84 seats each. Similar to how the lakeside business is operated, Truckee residents can anticipate screenings of current feature RAI films, outdoor industry movie LYA RD premiers and the hosting of other community events at the Truckee Art Haus. Luke Sheppard: A Decade of Leadership at Northstar’s Burton Academy If you ask, Luke Sheppard will probably tell you he’s living the dream. A career snowboard instructor, the job led him to opportunities around the world early in his career—in destinations like Verbier, Switzerland, Cardrona, New Zealand and Niseko, Japan. Since 2005, “Shep” as he’s known by many of the Northstar team, has been part of the Northstar Ski & Snowboard School, and has had oversight of the Burton Academy since its inception. In 2008, the concept for the Burton Academy was to use manmade, shaped terrain to reimagine the way instructors have always taught people to snowboard. Shep will tell you he and his team have always been motivated to grow snowboarding participation. Ten years later, the Burton Academy’s terrain-based learning style has not only proven successful, it has been incorporated into all of

Meet Aaron Atkins, Northstar Teams Director Once you get him talking about the team of coaches he works with and the goals they have for the youth athletes in their programs, you’ll be immediately swept up in the passion and enthusiasm Aaron Atkins has for what he does. Northstar California’s Teams Director is experienced, confident and likeable, making it easy to understand why the resort’s programs have had marked success since he’s been at the helm. Atkins grew up in Tahoe, skiing with the Lake Tahoe Ski Club and his dad, a former ski school examiner who was involved with the programs at what was then Ski Incline. He came to Northstar four years ago with a background in race and competition, and a vision for what the resort’s fledgling Teams programs could be. “Our main goal is to create gold medal athletes in life and sport using Alpine skiing, freeskiing, snowboard and big mountain as the conduit for those life lessons,” says Atkins. Top-level coaches who have competed or coached at a national level were recruited for all disciplines, with an athlete to coach ratio of eight to one to ensure each athlete receives personalized attention. Over the past three years, the department’s retention rate has held strong at over 90 percent, contributing to the overall quality of the program and creating a proud, professional staff. Atkins doesn’t hesitate when he says the training arena and environment at Northstar is the best in Tahoe. “Thanks to the commitment and collaboration of the mountain operations team, our Teams programs have access to the venues, terrain variety and best snow surfaces available. Being able to control the learning environment in this way gives kids every possible opportunity to improve and grow in their sport.” With Northstar serving as the home mountain to the current Junior National Champion in Halfpipe, and two female Junior National Alpine skiers who are ranked among the top three in the country, it goes without question that what Atkins and his team are doing is working.
