THE DISH: SPANISH FLAN

This recipe comes from my grandmother - mi abuela - Ursula Ruiz. She used to make it exclusively for birthday celebrations. It was always served with the birthday cake. Lots of sugar, but we kids used to love every single bite. It is also a great treat to serve on Mother’s Day.

INGREDIENTS:

1/2 cup of sugar 1/4 cup of water 5 eggs 1 can condensed milk 1 can evaporated milk

PREPARATION:

In a medium sauce pan, heat sugar and water stirring until color turns light brown. Pour into a 10 inch round baking mold. Tilt mold coating the bottom and sides. Set it down.

Mix eggs, the condensed milk, evaporated milk and vanilla extract well. Pour into caramel coated baking mold.

SPANISH FLAN

Place mold in a deep roasting pan. Add water to roasting pan halfway up.

Bake it for one hour in a 350 degree preheated oven. Let it cool for another hour on wire rack. Chill in refrigerator overnight. Take it out of mold running a knife around edges of mold and place it on a serving plate. Enjoy!
