Happy Thoughts At Holiday Time When I started to update this introduction, it occurred to me how much progress we have made toward a return to “normalcy.” At this time of giving thanks, we have so Leah S. Dunaief much to be thankful Publisher for. We are rerunning last year’s column as proof. Happy Thanksgiving! LSD Time for Giving, the supplement you hold in your hands or are viewing on the web, is a package of hope. In its pages are gifts for the holiday season that arrives every year, regardless of what else may be happening. These gifts are symbols of caring, of love, of normal. Help is on the way. We are about to be rescued by science. We now know that a vaccine will be available sometime in the next year. That should begin to restore life

as we have known it pre-virus. There is a happy end in sight to this bizarre time. We can all agree, it’s been a tough year. That certainly includes for those small business owners and professionals trying to survive in our villages. Many have been deemed nonessential and have shut down for part of what I call, pandemic-time. Others that have remained open have seen their customer base slip down to a trickle, as worried people shelter in place. And what seemed like an improvement of the monster in the summer is returning, as predicted, to torture us again as we face the cold weather of late fall and winter. Take heart. We may not be able to hug our loved ones and dear friends this season of joy and light, but we can send them cards and perhaps gifts, as we always have, to carry our affection and let them know they are a presence in our lives. COVID-19 has taken away a lot from us, but it can’t take away what we want to express to those who matter to us.

We have tried to be of help by doing what we do every year at this time. We have assembled listings of goods and services that we hope will make your search for the appropriate gifts easier. Vegan Brussels Sprouts Fritters

Vegan Stuffed Mushrooms YIELD: Serves 4 Source: Violife INGREDIENTS: • 12 button mushrooms • 2 tablespoons olive oil, divided • 1 large sweet onion, diced • 2 medium zucchinis, diced • 4 to 6 sun dried tomatoes, chopped • 2 to 3 garlic cloves, minced • 1 large handful spinach • 1 pinch rosemary • salt, to taste • freshly ground black pepper, to taste • 1 pack vegan shredded cheese • finely chopped chives DIRECTIONS:

Preheat oven to 350 F. Use damp kitchen towel to clean mushrooms. Remove stalks from mushrooms. Rub with 1 tablespoon olive oil and place on lined baking sheet with empty sides up. In frying pan, saute onions in remaining olive oil until soft then add zucchinis, tomatoes and garlic. Add spinach until wilted. Remove from heat and add rosemary, salt, to taste, and pepper, to taste. Stuff each mushroom with vegetable mixture and sprinkle with cheese shreds. Bake 15 to 20 minutes. Sprinkle with finely chopped chives.

YIELD: Serves 8 INGREDIENTS: • 35 ounces Brussels sprouts • 3 green onions, finely chopped • 1/4 cup gluten-free all-purpose flour • 2 teaspoons salt • 1 teaspoon black pepper • pink pepper • 1teaspoon paprika • 1/4 teaspoon garlic powder • 1 flax egg (2 tablespoons flax and 2 tablespoons water) • 1 pack vegan shredded cheese • 2 to 4 tablespoons olive oil • mint, roughly chopped DIRECTIONS:

Wash Brussels sprouts and finely slice. Place in bowl with green onions. In separate bowl, whisk flour, salt, black pepper, pink pepper, paprika and garlic powder. Add dry ingredients and flax egg to Brussels sprouts mixture then add cheddar shreds. Mix well and let rest in refrigerator 10 minutes. In frying pan, heat olive oil. Use hands to make one patty with 2 tablespoons of mixture. Shallow fry 4 minutes on each side. Remove and place on plate with paper towels to drain excess oil. Repeat with remaining mixture. Garnish with mint.

Appetizers Maryland Crab Cakes

Recipe courtesy of Bob Willemstyn, Country House Restaurant YIELD: Makes 8 crab cakes INGREDIENTS: • 2 1/2 cups mayonnaisse • 2 tablespoons mustard • 1/4 red onion, finely diced • 1 tablespoon Old Bay Seasoning • 1 tablespoon Worcestershire Sauce • 1 egg • 1 cup of 1/2 inch diced red peppers • 1 tablespoon of Tabasco sauce • 3 tablespoons chopped parsley • 1 1/2 cups celery, finely chopped • 1 sleeve crushed saltine crackers • 1 lb Maryland lump crab meat, canned or fresh DIRECTIONS:

Combine all ingredients except crab meat. Mix crab meat in and let chill for 30 minutes. Form into 2 ounce cakes. On medium low flame, heat up 1 fluid ounce of vegetable oil on saute pan. Once pan is hot, add 2 crab cakes to pan at a time for about one minute each side, until they reach a golden brown color. Put in 350 F

oven for 6 to 8 additional minutes before serving. Serve with cocktail sauce, tartar sauce, aioli or remoulade sauce or a fresh squeeze of lemon.

Muffaletta Bites

Recipe courtesy of 'Southern Appetizers' (Chronicle Books) by Denise Gee YIELD: Serves 6 to 8 INGREDIENTS: • 1 16-ounce jar Italian olive salad, drained • 1/2 cup shredded smoked provolone cheese • 1/4 cup finely chopped salami • 1/4 cup finely chopped ham • 2 12-ounce cans refrigerated flaky biscuit dough • Fresh Italian flat-leaf parsley for garnish DIRECTIONS:

In a medium bowl, stir together the olive salad with the cheese, salami and ham. Cover and refrigerate for about 1 hour. Preheat the oven to 350 F. Lightly coat two 12-well miniature muffin pans with cooking spray, if necessary. On a lightly floured surface, place the biscuit dough in two even rows and, using a rolling pin or clean finger, gently flatten/pat into a 1/2-inch-thick rectangle. Firmly press the perforation to seal. Cut each rectangle into 24 squares (each about 2 inches wide). Place one square of dough in each of the prepared muffin wells. Firmly press the dough extended over the edges of each well; shape the edges with your fingers or use a fork to crimp it as desired. (The dough will

rise at times; just press it back down until you can add filling). At this point, you can cover the muffin pan and refrigerate up to 1 hour. Spoon a heaping 1 tablespoon of the filling into each well. Bake until golden brown, 10 to 12 minutes. Let cool for 5 minutes. Remove the tartlets from the pan and garnish each with a parsley leaf. Serve warm or at room temperature.

Dijon-Herb Rub:

• 1/4 cup minced fresh Italian parsley • 1/4 cup minced fresh oregano • 1/4 cup minced fresh thyme leaves • 1/4 cup minced fresh rosemary leaves • 3 fresh garlic cloves, minced • 1 tablespoon Dijon mustard • 1/2 cup canola oil • 1 teaspoon kosher salt • 1/2 teaspoon ground black pepper • 1/4 teaspoon smoked paprika

Prime Rib Roast:

INGREDIENTS: • Prime Rib Roast (4 pounds), thawed • kosher salt, to taste • ground black pepper, to taste • 1/4 cup canola oil

Garlic Butter Mushrooms:

• 6 tablespoons olive oil • 1/2 cup small diced yellow onion • 4 fresh garlic cloves, minced • 1 pound button mushrooms, cleaned and quartered • 1pinch kosher salt • 1pinch ground black pepper • 1/2 cup chicken stock • 2 tablespoons unsalted butter • 1/4 cup finely chopped Italian parsley DIRECTIONS:

To make rub: In medium bowl, whisk parsley, oregano, thyme, rosemary, garlic, Dijon mustard, oil, salt, black pepper and paprika until well incorporated. To make prime rib roast: Pat prime rib roast dry on all sides with paper towels. Season generously with salt and pepper, to taste. Allow roast to come to room temperature about 30 minutes. Rub Dijon herb rub all over prime rib roast and allow to stand 10 minutes. Preheat oven to 250 F. In large cast-iron pan, warm

Roasted Beet Risotto with Walnuts and Goat Cheese

YIELD: Makes 6 servings INGREDIENTS: • Roasted Beets (see left) • 2 teaspoons olive oil • 1 1/4 cups Arborio rice • 1 32-ounce carton organic vegetable broth • 11/4 cups water • 1/4 teaspoon salt • 1/2 cup (2 ounces) crumbled goat cheese, divided • 1/4 teaspoon freshly ground black pepper • 1/2 cup chopped walnuts, toasted • Parsley leaves (optional)

DIRECTIONS:

Prepare the Roasted Beets. While beets bake, heat oil in a Dutch oven over medium-high heat. Add rice; sauté 2 minutes or

oil over medium-high heat. Sear roast on all sides until golden brown, 2 to 3 minutes per side. Place seared prime rib on wire racklined sheet pan and place in oven. Cook until internal temperature is 10 F below desired cooking doneness. Rest 15 to 20 minutes before slicing. until lightly toasted. Combine broth, 11/4 cups water, and salt. Add broth mixture to pan. Cook, stirring frequently, until almost all liquid is absorbed, about 20 minutes. Stir 1/4 cup goat cheese and pepper into rice mixture. Divide mixture evenly among 6 plates. Top evenly with Roasted Beets, remaining 1/4 cup goat cheese, and walnuts. Garnish with parsley leaves, if desired. To make roasted beets:

INGREDIENTS: • 1 1/2 pounds beets (about 7 small), peeled and cut into wedges • 2 teaspoons olive oil • 1/4 teaspoon salt • 1/4 teaspoon freshly ground black pepper • Cooking spray • 1/4 cup fresh parsley leaves

To make mushrooms: In large pan, warm olive oil over medium-high heat. Add diced onions and saute about 1 minute. Add minced garlic and lightly saute until fragrant, about 20 seconds. Add mushrooms and pinch of salt and ground pepper to pan. Saute 3 to 4 minutes, or until mushrooms are tender. Add chicken stock and reduce to onethird in volume, 3 to 4 minutes. Add butter and parsley to pan and saute until butter is melted and incorporated. Immediately remove from heat and season, to taste, with salt and pepper. Serve mushrooms with prime rib roast. DIRECTIONS:

Preheat oven to 450 F. Combine first four ingredients on a large rimmed baking sheet coated with cooking spray. Bake at 450 F for 26 minutes or until tender, stirring once. Toss with parsley just before serving.

Cranberry Maple Glazed Lamb Chops YIELD: Serves 4 INGREDIENTS:

Glaze:

• 1 cup fresh or thawed cranberries • 1/3 cup maple syrup • 1/4 cup fresh orange juice • 2 teaspoons orange zest • 2 garlic cloves, minced • 2 teaspoons Dijon mustard • 1/2 teaspoon salt • cracked black pepper

Lamb Chops:

• 8 to 10 lamb rib chops • 1 teaspoon brown sugar • 1 teaspoon chili powder

• 1 teaspoon smoked paprika • 1 teaspoon salt • 1 teaspoon garlic powder • olive oil DIRECTIONS:

To make glaze: In small bowl, whisk cranberries, maple syrup, orange juice, orange zest, garlic, Dijon mustard, salt and pepper. Set aside. To make lamb chops: Pat lamb chops dry with paper towel. In small bowl, whisk brown sugar, chili powder, smoked paprika,

salt and garlic powder. Sprinkle dry rub on lamb chops and press mixture into meat. In large skillet, heat thin layer olive oil over medium heat until drop of water sizzles in pan. Sear rib chops 2 minutes on each side, or until internal temperature reaches 140 F. Remove chops from pan and set aside. Add glaze to pan and cook 3 to 5 minutes, whisking constantly until reduced by half. Drizzle glaze over chops before serving.

Citrus Pomegranate Prosecco Punch YIELD: Based on number of guests INGREDIENTS: • 1/2 part orange juice • 1/2 part pink grapefruit juice • 1/4 part pomegranate juice • 1 part Ruffino Prosecco, well chilled • Slices of assorted citrus and pomegranate seeds, to garnish

In a large pitcher or punch bowl with plenty of ice, combine the fruit juices. Pour the Ruffino Prosecco over top. Garnish generously with sliced citrus and pomegranate seeds. Cherry Chocolate Love Truffles

INGREDIENTS: • 3 tablespoons Kirschwasser • 1/3 cup finely chopped dried sweet cherries • 3 oz milk chocolate • 6 oz semi sweet chocolate • 2/3 cup heavy whipping cream • 8 oz dark chocolate • 1 cup cocoa powder • 2 tablespoons fine red sugar (optional) DIRECTIONS:

In medium glass bowl, add Kirsch to finely chopped cherries, microwave 30 seconds and set aside. In small saucepan, scald cream (just bring to boil and remove from heat). Add milk and dark chocolates and stir to melt. Stir into Kirsch and cherry mixture until well combined. Cover with plastic wrap, refrigerate until completely cold, 1 to 2 hours.

Bake the cake until a skewer inserted into the center comes out clean, about 40 minutes. Let cool for 15 minutes. Invert a platter on top of the pan and then invert the plate and pan together. Lift off the pan. To make the glaze: In a small saucepan, combine the sugar, orange juice, and lemon juice over low heat, stirring to dissolve the sugar. Brush the glaze on the cake. It will seem like a lot of glaze, but the cake will absorb it. Let the cake cool to room temperature. Slice the cake and serve with raspberries, blueberries and cream, if desired. Note: Experiment with other berries for the holiday season, such as sugar-dusted cranberries.

Remove from refrigerator. Using melon baller or two teaspoons, scoop 1” “balls” of chocolate mixture out of the bowl and place onto wax paper lined cookie sheet (preferably with sides). Put into freezer for 30 minutes or until firm (not longer or they will freeze). Remove from refrigerator and, using a bit of powdered sugar on your hands, roll each “ball” into a more perfect ball shape. Return to freezer for 15 minutes. Meanwhile, prepare for dipping. Combine cocoa powder and red sugar in small bowl. This will be your “coating”. If the red sugar is too coarse, it can be made finer by putting it into a small plastic Ziploc baggie and crushing with a rolling pin or bottom of a drinking glass. Melt the remaining dark chocolate in a small glass bowl by microwaving for

one minute, take out and stir, microwave 30 seconds, take out and stir, etc.... each time cutting microwave time in half. It is very important to melt the chocolate slowly, so as not to burn it. Stop when completely melted and smooth. Set aside. Set out a shallow 9 x 13 pan for the finished truffles. Find a friend. It is easier to dip the truffles with another set of hands, nevertheless, it can be done alone. Remove balls from freezer. With a clean hand, pick up a ball, dip in melted chocolate move it between your fingers so it is entirely coated in chocolate but not dripping. Place it into the cocoa mixture. Have your friend with clean hands, lightly toss the truffle around in the cocoa until thoroughly coated. Place in finish dish to dry. Proceed this way until all are finished. If you are doing this step solo, use one hand for chocolate and the other for cocoa. When dry, the truffles maybe cupped in paper cups or placed on a pretty dish for serving. Enjoy truffles at room temperature, for the best flavor and texture.

YIELD: Makes 12 servings INGREDIENTS:

Sweet Tart Crust:

• 1 1/4 cups flour • 1/3 cup walnuts, finely chopped • 1/3 cup powdered sugar • 1/3 cup salted butter, softened • 1 large egg • nonstick cooking spray

Filling:

• 1 can (15 ounces) pumpkin • 4 ounces low-fat cream cheese, softened • 1/2 cup brown sugar, packed • 2 teaspoons pumpkin pie spice • 1 teaspoon vanilla extract • 1 egg, plus 1 egg yolk • 1/2 cup walnuts, coarsely chopped DIRECTIONS:

Pour the milk, vanilla extract, and instant coffee into and heavy based saucepan, and bring to a boil. Meanwhile, in a medium bowl whisk in egg yolks and sugar until pale. Make a little incision on the bottom of each cream puff big and small and fill them up with the pastry cream. Glaze each puff with the fondant, and assemble by putting a small cream puff on top of a large one. Set a very small star tip with a pastry bag and fill it with buttercream.* Pipe the buttercream to form a collar around the base of each small cream puff. Refrigerate the religieuses until needed. * Note: Any buttercream can be used or substituted with whipped cream.

YIELD: Makes one 12-ounce beverage INGREDIENTS: • 1fluid ounce coffee or 1 shot • espresso, such as Starbucks • Christmas Blend or Starbucks • Espresso Roast Coffee • 1⁄2 cup milk (or dairy alternative) • 2 tablespoons peppermint-flavored syrup • 3 tablespoons mocha sauce • Whipped Cream • Dark chocolate or shaving DIRECTIONS:

On a stovetop, heat milk on medium setting. Whisk the milk to make foam about 30 seconds. Set aside. Pour two tablespoons chocolate sauce and two tablespoons peppermint syrup into bottom of 12-ounce or larger coffee mug. Add one shot of brewed espresso. (Don’t have an espresso machine? Make concentrated coffee by using less water in an alternative brewing method.) Fill mug with steamed milk. Top with whipped cream and garnish with chocolate or peppermint shavings.
