A
ccording to tea lore, in the early 1800s the seventh Duchess of Bedford could not contain her hunger long enough to wait for the fashionably late dinner of the time. So she instructed her servants to serve a four o’clock tea along with small cakes and sandwiches. The ritual spread throughout England, and soon women donned long gowns and gloves and gathered daily for a time of tea and talk and gossip. Today, afternoon tea no longer requires fancy gowns and gloves. However, the warm ritual of taking a moment to rest or to connect with a friend over a cup of tea has found its way into tea rooms of Lenawee County.

he dangling tea pot sign of Tecumseh’s British Tea Garden is a welcomed friend on a cold, brisk winter day. The chill melts away as the door opens to the warm fragrance of leaves and spices. “I just want people to feel welcomed and comfortable and pleased when they walk through our doors,” said owner Rochelle Bird. It is quite easy to feel comfortable at the British Tea Garden. The atmosphere is warm and casual with a few cozy booths and bistro tables tucked under mural painted walls. Every cup of tea is charmingly served in a unique china tea cup. The attentive waitresses recommend the perfect tea and even stop by to add a bit of water to make sure the tea doesn’t become too strong. The British Tea Garden has been a Tecumseh staple for 18 years. However, it has also rightly become a destination spot with 85 tea choices and several authentic British entrees such as cottage pie, quiche and the traditional English ploughman’s lunch. The warm and fresh scones topped with real Devonshire cream and strawberry preserves are a must. The combination has a taste that can only be described as Christmas. The second floor of the British Tea Garden houses the Roof Top Café, a quaint space where customers can host showers, parties and meetings while enjoying homemade entrees, delicious desserts and specialty teas. As if the tea and atmosphere and delicious food weren’t enough, there is also a charming gift shop, full of unique jewelry, scarves, tea supplies and other gifts. It is the perfect place to find a special, one-of-a-kind gift. “In a small town it’s nice to have a place where you can buy something unique or give someone a gift that you know nobody else in town will have,” said Bird. “It makes the gift a little more special.”

aking tea at Governor Croswell Tea Room is to drink tea in the presence of history. Located in the 100-year-old Hoefler Building in downtown Adrian, the current tea room was at one time a saloon and sits next to Adrian’s famous Croswell Opera House, where icons such as Susan B. Anthony and Frederick Douglas once took the stage. From the opaque vintage glass to the exposed brick and high ceilings, there is a full and deep beauty to drinking tea in a place where art and architecture blend into one. The experience one finds in Governor Croswell Tea Room is a “china and linen” experience without the pretense. While the setting is elegant, customers casually lounge and chat over steaming pots of tea. The friendly and light
atmosphere seems an extension of owners Al and Phyllis Wilkerson, who mingle about and know many guests by name. “Drinking from the right teacup is very important,” Phyllis said as she motioned to the array of unique tea cups adorning the tables. “We tell our guests they can get up and take any cup from any unoccupied table,” she laughed. “We generally discourage taking an occupied cup.” Everything is homemade and fresh, from the hearty British lunches to the light finger sandwiches served with High Tea. Nothing, however, is quite as decadent as their homemade sweets like the rich chocolate tart or the sumptuous Ayrshire Cream, a rich custard served with raspberry coulis topping that tempts the taster to abandon all manners and lick the plate clean. n 5

he best advice Arlo Brandl never took was from his grandfather who worked in a bakery as a young man. “Don’t ever be a baker,” he told Arlo. “It’s the worst job ever.” For Arlo and his wife Alisyn, creating bread and pastries is nothing like Arlo’s grandfather’s experience of working in a hot, humid basement. Tecumseh Bread and Pastry currently uses the bright, airy kitchen space at 3 Dudes and Dinner, working opposite hours of that lunch and dinner operation. They provide artisan breads to area restaurants, including 3 Dudes and Dinner, Tecumseh Brewing Company, and Evans Street Station. In early 2017 Tecumseh Bread and Pastry will have its own downtown storefront featuring a big window filled with tempting breads and pastries. Until December 2016, Arlo and Alisyn spent midnight to 6 a.m. working every other day at 414 N. Evans St., while spending 40 hours a week working jobs in Ann Arbor. The workload was a challenge, but the excitement of working in Tecumseh as part of a new culinary mecca made it worthwhile. “We fell in love with how cute and charming Tecumseh is,” said Alisyn. Their vision for Tecumseh Bread and Pastry is to create everything from dense German breads to light, buttery French breads to perfect pies and cakes. Arlo and Alisyn believe people want and deserve bakery goods created from local ingredients and made by hand. “I’m not pushing boundaries,” Arlo said. “I’m just trying to do it right here in Tecumseh. We are using the best ingredients we can get our hands on. We focus on taste.” Grain berries of wheat and rye are ground fresh for flour and combined with oats, milk, butter, eggs, cheeses, sugar, honey, chocolate, fruits and vegetables to create bread and pastries like an old-world bakery. They utilize fresh ingredients, and support local farms to make foods both flavorful and healthy.

fter working in large factory bakeries and small artisan bakeries, Arlo understands that each ball of dough presents unique and specific challenges in coaxing it to rise to greatness. Alisyn and Arlo know they cannot force their bakery delicacies to transform into their vision. Instead baking requires adapting to what each batch of dough can do, and changing the environment to coax the transformation they desire. Arlo recalled how a recent cool morning in the kitchen was a problem for one batch of bread dough, and required problem-solving. Suspending the dough over boiling water, Arlo created the heat and humidity the dough craved to rise to great heights. Baking is both an art and a science. While the ratio of ingredients is specific and a particular type of environment works best, the daily process can vary, and requires a baker who understands the subtle messages of these delicate creations. An FDA testing group at Cornell University included Arlo as well as other bakers and scientists. During testing the bread was not responding as expected, Arlo made a suggestion that fixed the issue. When
asked how he knew, Arlo responded simply the change was just what the dough wanted. The scientists were confounded at a solution based on empathy rather than scientific parameters, but the other bakers just nodded in understanding at Arlo’s explanation. While Alisyn has always been a baker, Arlo was once a scientist. He started his college studies in radiology, while Alisyn attended the Great Lakes Culinary Institute in her hometown of Traverse City and received certification as a pastry chef. After working in a job he disliked while taking classes in a field in which his interest was waning, a friend told Arlo he should do something he loved. “I just wasn’t happy,” said Arlo. “Two days later I left school and quit my job.” He realized to relieve the stress of working and college he had been coming home and baking bread with his mother. To test how happy bread making really made him, Arlo started working every day at 3 a.m. in a bakery. He was happy. From there, Arlo sought out culinary training, certification and experiences, all the while dreaming of owning his own bakery.

lisyn and Arlo met when she needed a bakery internship to complete her degree. “And the rest is history,” Alisyn said. Discovering Tecumseh was the final piece to create their dream. The friendly community, with its focus on supporting small business has made it possible for Arlo and Alisyn to have their dream business about 15 years before Arlo thought it would be possible. Te c u m s e h Bread and Pastry has a solid wholesale business with the local restaurants who need good bread and pastries. Alisyn and Arlo appreciate Chris Wanke and Cori Chrestensen at 3 Dudes in sharing their kitchen facility until the Tecumseh Bread and Pastry storefront opens. “Everywhere we go, people are excited for us,” said Alisyn. “Everyone in Tecumseh – the mayor, Paula Holtz, the Downtown Development Authority – has been kind and gracious and asked us, ‘What can we do to help?’” Arlo said.n

olidays are all about traditions in our family. Year after year it is how we build our memories as a family unit. Menus are often the same old cast of characters, predictable but welcomed. Another phenomenon of holidays is the hostess is typically overwhelmed with not just visions of sugarplums but how to get everything done. Cookie trays for the neighbors, treats for our child’s classroom, cute little “Pinterest” inspired food gifts and show-stopping fancy meals pictured on the cover of a "foodie" magazine. It is enough to make any hostess want to hide in bed with the covers over her head. I confess, I love to entertain, ours is the ‘go-to home' for the family. Be it bridal showers, funeral luncheons, birthday celebrations, neighborhood soirees and always the major holidays. If a gathering is needed just call me, I’m your girl. Christmas Eve is the Grand Poohbah of events in my book. As a child, it was always my favorite night of the year and it has never disappointed. Every year some 30 of my nearest and dearest gather at our home to celebrate. Traditions run rampant. I actually “make” everyone come into the living room prior to the meal, dim the lights, join hands and sing "Silent Night." Teens snicker, the 30-somethings roll their eyes…but year after year we continue this tradition. I hope that after I hang up my apron one of the little darlings will continue the tradition.

ver the years I have come up with simple guidelines for entertaining: 1. Follow the 80/20 rule. Make 80 percent of the dishes ahead. Many recipes allow for flexibility. Make use of the freezer, bake the cakes the weekend before. Peel the spuds the day before, assemble your casseroles…whatever can be done ahead, do it. 2. Set your tables a day or two prior to the big event. Anything that will make it less stressful. 3. Let 80 percent of the dishes be the old standbys. Keep the ‘phyllo encrusted pesto tenderloin’ for a dinner party. Holidays call for traditions. Eighty percent of your menu might be predictable. Every family has their pre-set menu that defines them. However, allow the remaining 20 percent reflect your wide and crazy side. Always give your guests a couple of unknown tastebud challenges. 4. Welcome help. If your guests ask if they can bring a dish or two, take them up on it. Give suggestions so you don’t have three pretzel salads. When I have fancy dinners I like to do most cooking myself, however Christmas lends itself to contributions. ‘Tis the season of giving after all. 5. Make a list and check it twice. Write down what you are serving and what others are bringing. Double check it prior to serving, otherwise you will find that great salad in the basement fridge two days later.

Speaking of traditions, for every holiday as far back as I can recall I have eaten my Mother’s recipe for cranberry gelatin salad. Mom passed in 1994, but it won’t be a holiday without her salad. Four generations now consider it a prerequisite for any holiday. Sure there are much more elaborate cranberry salad recipes but this is one of the traditional dishes that help keep our family memories alive. Happy Holidays! n

Mix the two liquids together and place in freezer for 5-10 minutes.
