1 GET AHEAD OF THE GAME
It really does pay to plan in advance, giving you plenty of time to explore our range of quality products, devise the perfect menu and ensure you get everything you need for seasonal celebrations. Shop in store or online at tesco.ie to stock up. Remember to keep your eyes peeled for availability dates on selected products, and go back online to pop them in your basket when you can.
2 SIMPLIFY YOUR MENU
Sometimes less is more, so we suggest putting together a carefully planned menu this year with fewer - but better - components for the main event. Invest in a generous centrepiece (p10) with plenty to go around and pair it with a smaller number of luxurious sides (p22) guests can help themselves to. Readyprepared food will also free up extra time to spend with loved ones rather than being stuck in the kitchen. Easy does it!

The buffet is back! Assemble your favourites from our party selection (p28), tell everyone to dig in and kick back with a glass of something fizzy (p34). Remember: by adding a larger variety of dishes, the less you need of any one thing.

CREATE A DIY DRINKS STATION
Forget mixing and muddling cocktails over the festive season and set up a DIY drinks station so guests can serve themselves. Just set out glassware, prepared garnishes like sliced lemons and limes, plenty of ice and bottles of spirits and mixers.

REMOVE AND ALLOW TO REST
If you plan to roast your beef slowly on a low heat for juicy and tender results, select topside, rump or silverside. These are also good for braising or stewing. Or, for a quicker cook and perfectly pink slices, opt for sirloin or fillet, which should be seared in a pan before finishing in the oven.
Allow your joint to sit at room temperature for at least 30 minutes before putting it in the oven. If it starts roasting when it’s closer to room temperature it will cook more evenly, which is particularly helpful for thick or uneven cuts. It’ll also cook a little quicker, so is less likely to dry out.
Whatever your cut, always season the beef well in advance with rock salt and ground pepper to allow them to penetrate the meat for a deeper flavour before cooking. You may also want to massage in olive oil and add garlic, herbs or a rub, depending on the final dish you’re aiming to achieve.
Finally, remove the meat from the oven just before it reaches your desired level of ‘doneness’, and rest it for 5-10 minutes. The beef will continue to cook a little as it rests and, as it relaxes, the juices will flow through the meat to keep it moist and tender. Carve, serve… and take a well-earned bow.

SIMPLE TAHINI NUT ROAST
Serves 8
Takes 2 hrs
1 medium butternut squash, peeled and cut into 1cm cubes
2 tbsp olive oil, plus extra for greasing
4 tbsp milled flax seeds
2 large onions, thinly sliced
3 large garlic cloves, crushed
5g fresh rosemary sprigs, leaves picked and finely chopped, plus extra to serve
6 fresh thyme sprigs, leaves picked and finely chopped, plus extra to serve
1½ tsp smoked paprika
390g tin green lentils, drained and rinsed
1 vegetable stock pot, made up to 300ml
300g pack cashews, roughly chopped
100g white bread, blitzed into crumbs
125g tahini
15g fresh parsley, roughly chopped pomegranate seeds, to serve (optional)
1 Preheat the oven to gas 7, 220°C, fan 200°C. Tip the squash into a large roasting tray, drizzle with 1 tbsp of the oil, season and toss. Spread it out over the tray and roast for 35-40 mins, turning halfway through, until golden and tender.
2 Meanwhile, tip the flax seeds into a small bowl, add 120ml water and stir. Set aside to thicken. Heat the remaining oil in a large frying pan over a medium-high heat, then add the onions. Season, then cook, stirring regularly, for 10-12 mins until golden and caramelised. Reduce the heat if they start to turn too dark. Add the garlic, herbs and paprika and cook, stirring, for 2 mins. Add the lentils and stock and simmer for 5-6 mins until most of the liquid has evaporated.
3 Transfer the lentil mixture to a large mixing bowl. Once the squash is done, reduce the oven to gas 4,
180°C, fan 160°C. Add the squash, flax seed mixture, cashews, breadcrumbs, tahini and parsley to the lentil mixture, season well and mix gently. Grease a 27cm nonstick bundt tin (or 23cm round cake tin) with oil, transfer the mixture to the tin and smooth the surface with the back of a spoon.
4 Bake for 1 hr, or until golden brown and firm. Carefully invert the tin onto a large serving plate while it’s still warm, then garnish with pomegranate seeds and sprigs of rosemary and thyme, if you like.

SQUASH, CRANBERRY
& MUSHROOM WELLINGTON
Serves 8 as a side Takes 2 hrs plus cooling
CLEVER SWAP To make it vegan, swap the cheese for 1 tbsp nutritional yeast. Glaze the pastry with a dairy-free milkalternative instead of egg.
1.2kg butternut squash, peeled 2 tbsp olive oil
1 onion, diced
3 garlic cloves, crushed
1 tsp dried sage
150g chestnut mushrooms, diced
100g pecans, roughly chopped
50g dried cranberries
1½ slices of bread, blitzed into crumbs (about 60g)
1 egg, beaten
640g block puf pastry flour, for dusting
85g Parmesan, finely grated
1 Preheat the oven to gas 6, 200°C, fan 180°C. Cut the squash into thirds along its length, then cut each piece into 6-8 chunky wedges (discard the seeds). Transfer to a lined baking tray, toss with 1 tbsp oil, season then roast for 30-40 mins, until tender. Set aside to cool.
2 Meanwhile, heat the remaining oil in a large frying pan over a medium heat and fry the onion for 5 mins, or until softened but not coloured. Stir in the garlic and sage, cook for 1 min, then add the mushrooms. Fry for another 10 mins, stirring, until the mushrooms have reduced and any water released has fully evaporated. Next, stir in the pecans and cranberries and cook for 1 min.
3 Remove the pan from the heat and gently stir in the breadcrumbs and half the beaten egg. Set aside to cool to room temperature for around 15-20 mins.
4 To assemble, cut off about a third of the pastry and roll out on a large, lightly floured sheet of baking paper to a rectangle about 18 x 26cm. Arrange the roasted squash down the length of the pastry, leaving a 3cm border around the edges. Stir the Parmesan through the mushroom stuffing and then season. Pack the stuffing on top of the squash to create a rounded log shape.
5 Roll out the remaining pastry on a lightly floured surface until it’s large enough to cover the Wellington. Brush the pastry border around the squash with beaten egg, then lift the second pastry sheet on top to cover, using your rolling pin to help. Firmly press the edges together with a fork. Trim to neaten, then press the pastry edges frmly together to reseal with a fork. Cut out shapes from the pastry trimmings and use to decorate the top, sticking on with more egg, if you like. Brush all over with the remaining egg.
6 If eating on the day, chill the Wellington for 1 hr (if making ahead, freeze until solid, then wrap well in clingflm or foil).
Preheat the oven to gas 6, 200°C, fan 180°C. Bake for 30-40 mins, until golden brown and crisp.

1 orange
45g caster sugar, plus 1 tbsp
85g butter, softened
295g icing sugar, sifted, plus 1 tsp
4 ginger nut biscuits
750g box panettone
1 large egg white
1 pack (100g) mini gingerbread men biscuits
1 tbsp golden galaxy sprinkles
2 rosemary sprigs, bottom leaves removed
1 Line a dinner plate with nonstick baking paper. Peel the orange with a vegetable peeler, then slice the zest into thin strips. Juice the orange; set aside.
2 Put 45g caster sugar in a pan with 3 tbsp water; heat gently until the sugar has dissolved. Add the orange strips; simmer for 3 mins. Remove from the syrup; put on the plate to cool. Put the 1 tbsp sugar in a bowl, add the orange strips and toss to coat, using your fngertips to curl some of the pieces; set aside.
3 Meanwhile, put the butter in a mixing bowl with 2 tsp orange juice. Whisk until creamy, then add 170g icing sugar in batches, whisking until smooth and spreadable. Add an extra 1 tsp orange juice if it’s too thick. Blitz the ginger nuts to fne crumbs, then stir through the buttercream.
4 Spread a small amount of buttercream on the bottom of the panettone, then put on a cake board or plate (this will
stop it from moving). Use a cutlery knife to spread the buttercream over the whole panettone; use a damp palette knife to smooth, occasionally wiping clean and re-dampening.
5 Whisk the egg white until frothy. Gradually add the remaining 125g icing sugar, then whisk for another 3-4 mins until the icing holds soft peaks. Spoon over the panettone so it drips down the side, reserving about 2 tbsp.
6 Lean 3 gingerbread men against each other on top of the icing; stick the rosemary sprigs between them; scatter with the golden galaxy sprinkles and the orange curls.
7 Dip the feet of the other gingerbread men in the rest of the icing and stick around the bottom, dotting the backs with icing if needed. Serve immediately or let the icing set for 4 hrs or overnight, then dust with icing sugar.

CHRISTMAS TREE BITES
Makes 40 Takes 1 hr
475g pack ready-rolled puff pastry
75g grated Parmigiano Reggiano
10g sesame seeds
10g poppy seeds
1 egg, beaten
Tesco Finest sweet tomato relish, to serve (optional)
1 Preheat the oven to gas 6, 200°C, fan 180°C and line 2 baking sheets with nonstick baking paper. Unroll the pastry on its paper and, with a long side facing you, vertically slice in half. Re-roll one half and return to the fridge, wrapped in baking paper. Cut the other half into about 20 x 1cm strips. On the paper from the pastry pack, zigzag each piece to create a Christmas tree shape, leaving room for the pastry to expand. Transfer each ‘tree’ to the tray, spacing out well.
2 Mix the cheese, sesame and poppy seeds in a bowl with a
good pinch of salt and black pepper. Brush the pastry trees with beaten egg, then sprinkle over half the cheese mixture, using a spoon to press the cheese onto the pastry.
3 Bake for 20-25 mins, until pufed, golden and cooked through. Transfer to a wire rack to cool. Repeat with the
remaining pastry to make about 40 trees in total. Serve warm or at room temperature with the relish for dipping, if you like.

1kg pack baby potatoes
2 tbsp olive oil
100g Creamfields French Brie, sliced
12 fresh sage leaves
1 orange, zested, plus 1 tbsp juice
50g cranberry sauce
1 Preheat the oven to gas 6, 200°C, fan 180°C. Put the potatoes on a baking tray and drizzle with 1 tbsp oil; season. Roast for 45-50 mins, shaking the tray every now and then, until golden and easily pierced with a knife.
Serve up these party bites in minutes when speed is of the essence
