Leeks And Rosemary

Hats of to the leek, for there are few veg quite so versatile. It works happily in a casserole, adding its gentle sweet onion flavour – but have you tried it just simmered until al dente, tossed with parsley, olive oil and a splash of vinegar? Or fried in butter until golden, piled next to fish and potatoes? Give it more space on your plate next time! And rosemary – now there’s a herb that packs a punch. A little goes a long way, so snip a bit onto roast meat or even into a batch of homemade biscuits. And for a sauce that’ll knock their socks of, bash up a sprig with a little garlic, anchovy, olive oil and lemon juice.
